Hummingbird Bundt Recipe MAKES 1 bundt cake Bake at 350°F for 45 minutes
BUNDT INGREDIENTS Flour 1¾ cup White Sugar 1 1/8 cup Baking Soda ½ teaspoon Cinnamon ½ teaspoon Salt 1/4 teaspoon Bananas (ripe & mashed) 1 cup | approx. 2.5 bananas Crushed Pineapple (drained) ½ cup Oil ½ cup Eggs (beaten) 1 Vanilla ¾ teaspoon Toasted Pecans ½ cup FARMER'S BUTTER SAUCE INGREDIENTS White Sugar 1 cup Cornstarch 1 Tablespoon Butter ½ cup Cream (cereal cream or whip cream) ½ cup Vanilla 1 teaspoon PREPARATION · Preheat oven to 350°F · Spray a bundt pan with nonstick spray MIXING · In a medium bowl; whisk together flour, white sugar, baking soda, cinnamon and salt and set aside. · In the bowl of an electric mixer, measure bananas, pineapple, oil, eggs, and vanilla. Mix for 1 minute on medium speed until combined. · With mixer on low slowly add the dry ingredients allowing to mix until just combined. Do not overmix. · With mixer on low, add the toasted pecan pieces. · Scrape mixing bowl and allow to mix on speed 1 until evenly combined. · Remove bowl from mixer and pour batter into bunt pan, using a spatula to smooth top if needed. · Bake for approximately 45 minutes at 350°F; cake should spring back when touched, or you can insert a toothpick to check. Cake is done when toothpick comes out clean. SAUCE · Measure white sugar and cornstarch into a pot. Whisk together to ensure there are no lumps. · Add butter and cream to the sugar mixture. Place pot on the stove on medium heat. Stir until all the butter has melted and the mixture comes to a boil. · Remove from heat and add vanilla. · This may be stored in the refrigerator up to 5 days.
