"I was given this recipe from a past co-worker, every time I make it someone asks me for the recipe. It is always at our friend and family get-togethers and is a crowd favourite."

Mushroom Dip

Prep Time: 30 minutes

Bake Time: 30-45 minutes

1 tablespoon olive oil

10 oz. mushrooms (mixture of white, portobello, shitake, brown – whatever is your favourite)

¼ cup chopped celery

2 – 8 oz. (250 g) packages of cream cheese

(room temperature)

½ cup of mayonnaise

¼ cup parmesan cheese, grated

1 teaspoon garlic powder

¾ teaspoon salt

1 teaspoon pepper

¼ teaspoon cayenne pepper

1 – 14 oz jar of artichoke hearts, drained and chopped

1 Add oil to frying pan on medium heat, add the mushrooms and sauté for about 10 minutes, or until soft, add the celery and sauté for about 5 more minutes.

2 In a medium-sized bowl add the cream cheese, mayonnaise, parmesan cheese, garlic powder, salt, pepper and cayenne pepper. Add in the warmed mushrooms and celery and combine. Once combined, add the artichokes. Mix until well combined.

3 Bake in the oven for 30-45 minutes until bubbling and brown. Remove from oven and serve at a warm, but not hot temperature.

Best served with slices of sourdough bread, or crostini. Place any leftover dip in an airtight container and store in the fridge for up to 5 days.

"I love cake and I love bringing cake to friends. When my friend Nadine asked me if I could bring a pineapple upside down cake to a BBQ, I was short on time, so I picked up a Crave Vanilla Cake Mix, a can of pineapple and in less than an hour I had a delicious homemade dessert to take to the BBQ."

Pineapple Upside Down Cake using Crave’s Vanilla Cake Mix

Makes: One 9-inch cake pan (round or square)

Prep Time: 10 minutes

Bake Time: 35-40 minutes

For the pineapple glaze you will need:

1 can (398 ml) of pineapple slices (save the pineapple juice to add to the cake batter)

2/3 cup (135 g) brown sugar

1/3 cup (75 g) butter, melted

For the cake you will need:

1 Crave Vanilla Cake Mix

2 eggs

1/3 cup butter, melted

¾ cup milk

½ cup pineapple juice (juice from the can of pineapple slices)

1 Melt the butter for both the glaze and the cake in a saucepan or a microwave.

2 Pour ½ the butter (1/3 cup) into the cake pan.

3 Sprinkle the brown sugar over the melted butter, then arrange the pineapple slices on top.

4 Prepare the vanilla cake according to the directions on the package, using ¾ cup milk and ½ cup of reserved pineapple juice.

5 Pour the batter into the cake pan. Using an off-set spatula or the back of a spoon, spread the batter evenly to the edges of the pan.

6 Place the pan in the middle of the oven and bake for 35-40 minutes or until a toothpick inserted into the centre of the cake comes out clean.

7 Remove the cake from the oven and allow it to cool for 15-20 minutes. Then turn the cake upside down onto a plate. Allow to cool completely before serving.

Sumin Choi

Meet The Creative Behind Our Birthday Illustrations

We’re excited to introduce the talented Sumin, the illustrator who brought our vision to life for our 20th celebration. We came to Sumin with a vision to represent every person who’s helped and supported us through the years. Join us as we explore how these illustrations captured the essence of two decades of sweet success and made the celebration truly memorable.

What inspired you to become an illustrator?

Ever since I was a kid, I loved drawing. Art classes were my favourite, and I loved summer art camps. Since I learned that I could do that for a living, I always wanted to be an illustrator.

Where do you draw inspiration from?

Observations! I love translating real-life figures and objects into my illustrations. Relatability is one of the most valuable things in my artistic practice. I believe relatable art sparks conversations.

What are you most excited to be working on right now?

Currently, I'm working on a branding project for a local non-profit group. They are looking for fun illustrations to be part of the brand kit so I've been enjoying creating little characters for them!

What’s your current local love?

There's a store called Moonlight Books and Gifts inside the Dragon City Mall in Chinatown. It's a small shop with shelves full of goods from local small businesses. It's not only a great way to promote local small makers and artists but also to create a community for them to connect!

Where can we find your work?

You can find me on Instagram and Tiktok (@itsminpling) or my website www.suminchoi.com
