YOUNG CHEF TO DESIGN PRODUCT FOR NATIONAL SUPERSTORE A local catering student named as Yorkshire’s best young chef in the latest ‘Golden Apron Awards’ is excitedly awaiting his prizewinning opportunity, to create a product for one of the UK’s leading supermarkets. Seventeen-year-old Kurtus Auty, from Selby, had already scooped last year’s ‘Young Seafood Chef of the Year’ award and was also crowned ‘Junior Chef Competition Winner’ at York Food & Drink Festival in 2015, prior to his latest win, the Golden Apron award. The young ‘masterchef in the making’ is currently studying full-time at Selby College alongside working part-time at the Fat Abbots restaurant in Escrick. Kurtus previously worked at York’s Pavilion Hotel, and as part of his role at Escrick he is also training up junior team members. The Golden Apron competition is run by James Mackenzie, chef/owner of the Michelin-starred

Pipe and Glass Inn at South Dalton, along with the Yorkshire Wolds Cookery School and is open to young chefs aged 14-19 from across the county. The talented young chef beat off fierce competition with his winning dish, herb-crusted fillet of pork, apple and black pudding bon bon, Ampleforth Cider and butternut squash purée. Looking to the future, Kurtus has his eyes on a placement or two at a Michelin-starred restaurant, as fine dining is his biggest passion. Judging by his staggering success at such an early age, it’s safe to say we think we’ll be seeing a lot more of this talented young man.

Yorkshire sits proudly at the top table of fine dining One of Yorkshire’s greatest gastronomic claims is its reputation for first class food and dining. The county’s place at the top table was secured for a sixth year with the release of the 2016 Michelin Guide. Yorkshire chefs continue to top the national culinary league, and with six stars the county has retained the crown for having more Michelin Star restaurants than anywhere outside London. The Man Behind the Curtain in Leeds became one of the new Michelin Stars for 2016. The five restaurants to retain their Stars were The Pipe and Glass Inn in South Dalton, The Yorke Arms in Ramsgill-in-Nidderdale, The Box Tree in Ilkley, The Black Swan at Oldstead and The Star Inn at Harome.

But one doesn’t have to travel miles for an equally discerning dining experience. Much closer to home The Drovers Arms, Skipwith, is fast becoming one of the area’s main destination inns.

Owners Graham Usher and Martin Firth, who have over 20 years’ experience in some of Yorkshire’s best hotels, are justifiably proud. Along with their head chef Jonathan, their combined passion for food has secured them an array of awards.

The Drovers Arms was named one of Yorkshire’s top 30 pubs in both 2014 and 2015 by Welcome to Yorkshire and is a Tripadvisor Certificate of Excellence 2014 and 2015 winner. Customers travel from the outskirts of York, Leeds and Hull, with many making a 30-mile plus journey. An astonishing £750,000 mak into a booming new bus

Situated in the heart of Carlton, newly refurbished pub and restaurant The Odddfellows is forging a new page in the history books thanks to its remarkable transformation. 8

Dating back to 1750, ‘Odddy’s’ already has a rich history. The 18th century pub made the news in the 1980s when an extra “D” was accidentally painted onto the sign, with the mistake not being rectified when locals said they wanted the misspelling to remain. But as the recession took a hold, the future did not look too bright. Sitting on prime building land, the council blocked several plans to knock down the watering hole to make way for housing. Many residents objected, claiming The Odddfellows had been the ‘centrepiece’ of the village for centuries, and could be given ‘a new lease of life.’ Salvation came in the shape of Gavin Smith, a local builder with a lifelong ambition to own his very own pub and restaurant empire. After spending five happy years in Cyprus’s bars and clubs, perfecting the art of being the consummate barman, Gavin returned home to our typical British weather. Quickly growing disillusioned with once again working outdoors in our cold climate,

keover has turned a village local once branded ‘unviable’, siness that puts many a city centre venue to shame.

Gavin decided to finally make his dream a reality. Being local, he was very aware that ‘Odddy’s‘ had a special place in the hearts of many, describing it as: ‘It used to be, hands down, the best pub in the area.‘ Having seen the outcry when the pub faced demolition, Gavin took over the business in March 2015. Along with wife Hannah and parents Donald and Lorna, the plan for a family-run business was set in motion. With a ‘grand re-opening’ date set for November 2, the pressure was on. An intense six months followed. Deciding he was aiming for something modern, with a twist, a budget was set - and quickly bust. But the

decision was made to take things to the next level, they were creating a ‘dream’ and the end result had to be perfect. Completing the work on November 1, and opening the doors on November 2, they were somewhat cutting it fine! The gamble paid off – the clever mixture of strong, quirky branding, melding perfectly with the distinctive, beautifully finished interior creates an exceptionally unique venue. It has a certain ‘manly’ charm, yet the refurb has been so magnificently managed that the result is simply breath taking. Serving up locally sourced, freshly cooked dishes seven days a week, alongside a large selection of real ales, beers and

wine, the reception has been fantastic. The ultimate aim, to offer fine dining plus something that little bit special, has been achieved. Gavin’s dream – to put Odddfellows back where it belongs, as ‘the heart of Carlton’ – has been fulfilled. Looking to the future, the selfstyled ‘Mr Odddfellows’ has set himself another goal. Gavin’s success has been so phenomenal he told Wine & Dine Yorkshire: ‘It’s onwards and upwards! The thing to remember when you are out foraging is to think about what the plants are putting their energy into. In autumn this is obviously fruit and nuts, in summer quite often flowers, now in spring the plants are pouring all their energy and goodness into tender new growth. The leaves and buds of spring are bursting forth and they are some of the sweetest, juiciest greens you can taste. So now is the time to search out the first of this spring bounty! When you first go out foraging, stick to things that are easily identifiable or plants you already know. If you forage nothing else this spring you must try a few stinging nettles (Urtica dioica) and some wild garlic (Allium ursinum). Use these two to make soup, or try your hand at this Yorkshire pesto recipe using some beautiful local produce.

STUDENTS COOK UP NEW IDEAS Students from Read School, Drax were given a taste of the working world when their home economics teacher set them a challenge. Working closely with the chefs and owners at Spuds & Berries, Brackenholme, the Year 9 students were tasked with creating a savoury product to sell in the farm shop deli.

Both products were made for sale in the farm shop with the winners receiving vouchers for a complimentary family meal at Spuds & Berries restaurant, Mr Vincent’s.

An on-site visit to see the chefs in action provided the insight into new product design, whilst owner Ann Tomlinson outlined important factors such as ingredient provenance, costs, consumer focus and allergen consideration. The students then planned and created their dishes, later judged by Ann and head chef, Tom. The winners were chestnut and mushroom roulade (created by Harry), chosen for appearance and flavour combinations; and Mozzarella & bacon straws (created by Oliver), demonstrating a new twist on an old favourite.

THOUSANDS VOTE TO PUT WINNERS IN TOP SPOTS Finding somewhere welcoming when you’ve got hungry children in tow can feel like an uphill struggle, but thanks to a new award scheme, that battle may finally be won. The Little Viking Awards were launched last year to reward the top things in and around York for children, inspired by two main motives: • To let parents know the things worth seeking out; • And to reward the businesses who work so hard to welcome families. A sweet, sisterly thought that’s Truly Scrumptious Taking romance to a whole new level, a local caterer has created and shipped an unusual wedding cake topper thousands of miles, to sit proudly atop of a wedding cake on the other side of the world. Owner Clare of Truly Scrumptious Catering (see page 11) came so highly recommended, that the bride’s sister, Jenna Purdy sought her out for the sweetly unique task.

Jenna’s sister Samantha Cumiskey, formerly of Selby, has emigrated to live with her future husband Karim Brown, in Riversdale, New Zealand. With the groom spending most of his time on the beach (his nickname is indeed, Turtle), that was the obvious choice for the venue and the happy couple are all set for a beach wedding. Clare has created a sugar paste sensation, fashioned on a beach turtle. The miniature

newly-weds endured a very well packaged 32-hour flight from Manchester, with stops in Abu Dhabi and Sydney before arriving at their final destination in Wellington, New Zealand in time for the nuptials.

The mouth watering meals that have inspired rave reviews Sam Ford - Hemingbrough ‘I visited the York Bella Italia restaurant with a friend, and we were made to feel very welcome. Our waitress was lovely. I opted for ‘Pasta Capra’, which comprises curly spaghetti with roasted peppers and onions, tossed in a pomodoro and basil sauce topped with rocket and goat’s cheese. It was lovely, very tasty and not too heavy. My friend had a pizza and was delighted with the option to create your own, that way you know you will like all the toppings. They have a large choice of ice cream flavours, so there really is something for everyone.
