Pie v Pasty

Controversy at the British Pie Awards Pie connoisseurs the length and breadth of the country have been left ‘outraged’ as the top prize and ‘Supreme Champion’ title of the 2016 British Pie Awards was handed to… a pasty. The British Pie Awards have become an institution for pie-lovers country-wide. The annual event sees hundreds of upper crust pie-makers gather in a nationwide celebration of the British culinary favourite. Held each year in Melon Mowbray - home of the pork pie - a host of expert pie perfectionists descend to sample and judge the wares from 132 producers. Separated into twenty categories including Chicken, Beef & Ale, Fish, Dessert and this years Speciality Class, a Regal Pie in honour of the Queen’s 90th birthday, the winner of each category is then put forward to compete for the coveted title of ‘Supreme Champion’. This year’s competition held a special place in the hearts of many pastry enthusiasts as it was marked on the calendar for the first time ever to take place during British Pie Week. The controversial decision

to award the top prize to a ‘perfectly produced’ beef skirt and vegetable pasty sparked controversy, generated much debate about what constitutes a pie and even prompted calls for a boycott. The winning pasty, created by small family-run butchers A.F. Huddleston based in the Lake District, was described as pure pie-fection, with its ‘beautiful glaze, perfect crimp, well balanced flavours and delicious gravy’. Pie experts took to social media to vent their disgust, describing the decision as ‘scandalous’. Pierate, a renowned pie reviewer and former judge of the awards described it as a ‘sad day for pie fans’, and debated a boycott of the 2017 awards. Matthew O’Callaghan, Chairman of the British Pie Awards said the award would be ‘life changing’ for the winning butcher, and said pie lovers would be ‘beating a path to their door’.

Tequila beer is to appear on tap following Heineken’s decision to launch a draught version of its Desperados brand. A new stylish ‘schooner’ is being introduced to support the launch, and at two thirds the size of a regular pint the new glass is aimed at promoting responsible drinking, as well as boosting profit margins for operators. The popularity of Desperados can

be attributed to its distinctive taste. Heineken are hoping the launch will fill a gap in the draught market for spirit-flavoured beers, providing their ‘twenty-somethings’ target audience with a fresh and different way to drink them.

The metamorphosis was the brainchild of the team behind not only The Riverside, but also Selby’s popular live music site ‘The Venue’, which sits right next door on Ousegate.

For ten years former owner Ian Wright ran operations at The Riverside and turned it into one of Selby’s most unique locations, drawing bands from across Europe and even the USA to take to his stage. Such was the measure of its success that an expansion was the only way forward and the music side of things shifted to the larger capacity site, The Venue in late 2014. This left The Riverside in need of a new direction. Ian, now operations manager, along with partner Daniella and new owner Steve Cooke put their heads together to come up with a plan. With fifteen years experience in the pub trade, Ian was well qualified to know what would go down well with his regulars - and as a former firefighter he knew just how to get things hotted up! The trio decided that what Selby really needed was a ‘Tex Mex’. This is a unique fusion of Mexican food with a Texan ‘twist’, so a good mix of spicy, wholesome food - tacos, fajitas, chillies and nachos

One of Selby’s most popular bars and former live music venues has undergone a stunning transformation and been reborn as a funky ‘Bar & Tex Mex’ eatery. alongside mouth-watering pizzas, fries, loaded jackets and delicious crispy salads. Plans were drawn up and the bar closed down for an extensive two month refit, beginning in January this year. The doors re-opened in March, the regulars flooded back in and were blown away by the overhaul. Ian and his team have transformed the bar and given it a modern, funky feel with Mexican style furnishings, edgy lighting and stylish built-in water walls adding to the ambience. Speaking to Wine & Dine Yorkshire about the successful re-vamp, Ian said: “The reception has been far better than we ever expected. “We have had nothing but praise regarding the look and feel of the bar and the food on offer. The regulars really love what we have done. The plans changed a couple of times during the refit but we are extremely happy with it. “We have a great culinary team working for us and the transformation is complete - The Riverside is now a great bar, offering great food and the best selection of drinks in town.”

“Will definitely be back and if there’s any justice in these things, this place will go from strength to strength.” Looking to the future, the team at The Riverside are planning more themed nights, longer opening hours during the summer months and customers will also be benefitting from a full refurbishment of the 100-foot beer garden, with work beginning very soon. The bar and eatery has seating for around 40 people, but can cater for larger groups. There is a weekly ‘Chilli Jam night’ every Thursday, a full children’s menu, regular specials to tempt your tastebuds - and free wi-fi so you can snap your ‘food selfies’! Opening times are Monday - Friday, 5 - 11pm and Saturday/Sunday 12noon - 12am. Food served from opening till 9.30pm.

Students battle it out in national competition Having made it to the finals of a prestigious catering competition, a team of hospitality students from York College now have a nail-biting wait to see if they have been crowned national champions.

Student teams from across the UK have been battling it out since the start of the year in the Nestle Professional Toque d’Or 2016 competition. The team from York College included Nicola Simpson, 27, studying Level 3 Professional Cookery, Josh Phillips, 19, studying Level 2 Professional Cookery, and Lauren Whittaker, 18, studying Level 3 Hospitality Service Supervision. The trio beat off fierce competition from 36 other college teams in the regional round in Birmingham, and having taken part in the grand finals in March, now have a tense wait until the overall winner is announced at a ceremony in London at the end of June. The grand final of the competition was a real test of the students’ mettle and included preparing and serving dinner for 40 people alongside a

Michelin-starred chef, and working alongside professionals both front and back of house in various London restaurants. Nicola, who is in the middle of a placement at The Mended Drum, Huby, told Wine & Dine Yorkshire: “I would love to open my own restaurant, and making it so far in this competition means I’m one step closer.” Josh, who has his placement at The Ship Inn, Acaster Malbis, said: “I want to travel and work my way up in the catering industry.” The third team member, Lauren, is learning her craft at The Wild Plum in Harrogate. She told us: “I want a career in event management, and this competition has been an amazing learning curve for us all.” We’re sure you’ll join us in wishing the team the very best of luck!

Will the number soon be up for dodgy food outlets A call has gone out for compulsory ‘Scores on the Doors’ ratings to be displayed in all food premises to allow customers to make a more informed decision on their dining choices. Council environmental health teams currently score outlets from zero to five based on factors such as kitchen cleanliness, cooking methods and food management.

If a business gets a 0 or 1, they need to make urgent improvements, fast. However in England businesses do not have to display their awarded rating. Compulsory display already exists in Wales, and Northern Ireland will follow suit in October this year. Cllr Simon Blackburn, Chair of the Local Government Association’s Safer and Stronger Communities Board said: “Anyone in England who sees

a business without a hygiene rating sticker currently has to decide if they want to eat or buy food there without knowing what’s going on in the kitchen. “People in England should be able to use the rating system to decide if they are happy with their choice of food outlet, or would prefer to go somewhere else with higher standards.” To check a rating for yourself, visit: www. scoresonthedoors.org.uk

Salute to summer

With the sunshine finally starting to make an appearance it’s time to crack out the cocktail list and try some delicious, refreshingly summery thirst quenchers! There’s nothing quite like a blissful al fresco afternoon with friends, the sun beaming down and a pretty drink in your hand - life feels that little bit closer to perfect.

Keep your cool and try your hand at your own ‘homemade lemonade’, then liven things up with your own choice of white spirit, Bacardi, vodka, martini or gin! Here’s a recipe courtesy of The Odddfellows, Carlton: • 3 chopped unwaxed lemons • 1 litre of luke warm water • 140g caster sugar Take all of the above, blend together and sieve into a pouring jug, then refrigerate. Alternatively you can make it in a pan over the hob - you can either juice the lemons, or as above add chopped lemons and sieve the final product into a pouring jug and refrigerate. When ready to serve just add your choice of white spirit. We recommend gin!

Friends in high places thanks to unusual name Fiery TV chef Gordon Ramsay’s latest venue, Gordon Ramsay Fish & Chips, is preparing to open its doors in Las Vegas. The takeaway-style British restaurant will welcome its first diners in late summer and fish and chip shop owner Keely Richardson of Frying Nemo, Carlton will have her eye firmly on the launch following her appearance alongside the celebrity chef on ‘The One Show’. The unusual name of Keely’s business has attracted much attention over the years, but things reached a peak when the BBC invited her earlier this year to appear alongside two other quirkily named fish restaurants in a televised quiz. Gordon and his wife Tana then had to guess the names of the fish and chip shops, which were all film related. Keely told Wine & Dine Yorkshire: “It was a

very exciting experience and felt great to do something so different. “I may be the owner but I don’t stand back and have lots of staff doing everything, I’m hands on, I mop the floors, prep the potatoes and you can usually find me stood behind my fryer - so to be invited was a real treat.” Keely is planning to drop Mr Ramsey a tweet on her upcoming trip to Vegas, asking for a look around his new venue when it opens in August. Their photo together hangs in pride of place in her shop to commemorate her special day.

Sticky glazed drumsticks and sausages

Supplied to us by Brayton Farm Shop

This is a great BBQ sauce which has become a family favourite at Brayton Farm Shop. We love it with chicken, ribs, sausages or steaks – they’re sticky and very moreish! Depending on the weather the recipe can be cooked on the barbecue or in the oven if the weather is not great. We always advise cooking chicken first in the oven and then finishing off on the barbecue to make sure it is thoroughly cooked. SERVES 6 • 6 Brayton Farm chicken drumsticks/thighs or breasts

• 4 tbsp tomato ketchup

• 12 Brayton Farm sausages

• 2 tbsp runny honey

BBQ SAUCE • 4 tbsp Worcestershire sauce

• 4 tbsp Dijon mustard • 4 tbsp apricot jam • Few shakes of Tabasco • Few shakes of balsamic vinegar

METHOD Place all the BBQ sauce ingredients together in a bowl and whisk well. Spoon the sauce over the drumsticks and sausages in separate bowls. Cover with clingfilm and refrigerate for 1 hour, or longer if possible, to marinate. Place the drumsticks and sausages in separate ovenproof containers. Place in the oven and cook at 190°C /gas mark 5. The sausages will take approximately 25 minutes and the chicken approximately 30 minutes. Alternatively the chicken and sausages taste wonderful cooked on a BBQ. Serve with new potatoes and salad.

Rhubarb Juice • 2 rhubarb stalks • 1 star anise • 1tbsp caster sugar • 2 satsumas – zest and juice

For our latest issue of Wine & Dine Yorkshire, Claire exclusively shares a recipe for a deliciously easy, refreshing and nutritious summer drink.

Heat oven to 150c

“If there is one thing guaranteed to grow in my garden, it’s rhubarb. Every winter I look at my root, wish I’d dug it up and separated it and assume the worse. Then, as the soil get a bit warmer around February/March, the little green and pink stalks poke through, and they won’t stop until summer.

2. Grate the zest of the satsumas over the top, and then squeeze the juice on too. Break the star anise up and place on top. Sprinkle with the sugar.

“My garden rhubarb is tarter than the forced variety, but for me this is a plus - I love food with a bit of bite. It is so versatile: use it in cakes and puddings and alongside oily fish such as mackerel or to cut through the gamey richness of venison. “I like to drink my rhubarb. Add a gentle heat, sugar and spice and you’ve got a long drink which is

delicious with as is, or you can add a splash of gin.”

1. Wash and pat dry the rhubarb and cut each in to four or five pieces. Place in a baking dish.

3. Cook in the middle of the oven for 25 minutes then allow to cool. 4. Discard the star anise. Scrape the rhubarb and any juice into a blender with 400ml water and blend for 60 seconds. 5.
