The opportunities are endless with festive food - from mulled wine and bratwursts in the local Christmas markets, to turkey dinners complete with all the trimmings at the pub, there really is something special about food at Christmas time.

We popped along to Fléur Restaurant and Bar. Fléur is among the top three best Bottomless Brunch place in the Leeds Oliver awards.

And we took a look at Yorkshire Heart - an awardwinning vineyard and brewery, based near Nun Monkton village, between York and Harrogate.

Asian street-food is a culinary treasure. Imagine wandering through bustling markets, where each stall offers a unique delight. Dishes infused with personal flair, creating flavours and blending comfort with convenience and tasting the essence of the streets.

Let’s transport you back to 2019, where the journey began. Our dynamic duo acquired a food truck, immediately earning a prestigious five-star health and safety rating. During the weekdays, Cuhan navigated the fast-paced streets of London, while weekends were reserved for culinary creativity in Leeds alongside Daniel.

Then, the world paused as the shadow of COVID-19 loomed large, casting doubt over their venture. However, let’s not linger there, as what unfolded next was nothing short of extraordinary.

In 2021, they won the ‘People’s Choice’ award at the British Street Food Awards. Just six months later, Ossett Brewery invited them to set up at The Riverhead Brewery Tap in Marsden for an initial six-month stint. Now, three years on, they remain there and have expanded to kitchens at The Bingley in Horbury Bridge and Archies Bar in Granary Wharf, Leeds.

Wine & Dine Yorkshire simply couldn’t resist checking out BaoBros23. Was it as incredible as the buzz suggested? Absolutely. We were blown away.

Nestled in the picturesque Granary Wharf, Leeds, BaoBros23 situated in Archies offers a luxurious escape. As you step through the lively Archies bar, a relaxed dining area awaits.

Our evening began in a window booth with a stunning view of Leeds Dock. Two exquisite cocktails in handPornstar Martinis from Archies - we settled in for a night to remember. Cuhan, introduced the evening’s culinary delights, setting the stage for an unforgettable experience. We were left to savour the ambience and revel in the perfect setting.

Six Poor Folk, Knaresborough

YORKSHIRE boasts a stunning array of luxury hospitality venues. Among them, Six Poor Folk stands out as a must-visit destination claiming Bar of the Year 2024 at the Harrogate Hospitality awards.

Nestled in the charming town of Knaresborough, this award-winning café, bar and bistro promises an elegant experience. Set in one of Knaresborough’s oldest buildings dating back to 1480, just off the market square, it’s the perfect place to relax and enjoy good food, great local beers and cider, lovely wines, spirits, and cocktails.

When you step into the place, you’re welcomed with warm smiles and a cozy vibes. We headed upstairs to their dining area, and it was impressive.

The bistro offers amazing views of the town square and has an elegant feel. Our waitress was absolutely amazing. Before we even arrived, we had a special request. Something a bit unusual. And guess what? She totally nailed it, going above and beyond every step of the way.

The menu was a delight for the eyes, offering the best in small plates which are great to share, and large plates too. We decided to share a few dishes and really get a feel for what they had to offer. Here is what we opted for:

Chorizo Bonbons - £8.95

These were light and flavoursome. Each mouthful gave you a hint of smoky chorizo with a light crunch of the panko coating.

Harissa Roast Cauliflower VE GF£7.95

With cauliflower dishes on the rise, we thought we would give this one a try and it certainly didn’t disappoint. The crunch of the cauliflower, the sweetness of the pomegranate topped off with the dressing really did leave us wanting more.

Hassleback Baby Potatoes GF£9.25

What’s a meal without a good serving of carbs. This dish was full flavour.

On entering the complex, the first thing you see is Fléur’s well known pink welcoming sign, making us excited to take our seats.

We found ourselves in the conservatory, a space radiating sophistication and elegance. Our window-side table offered a serene, chilled-out atmosphere with a perfect view of The Light’s captivating ambience. The second dining area bursts with vibrant colours, reflecting the passionate spirit of Chef Geeta - an essence captured brilliantly in every dish. Our waiter, Zac, introduced us to their exquisite two-course meal selection, pairing it with an extraordinary bottle of wine that promised to elevate our dining experience.

We placed our order and, in no time, were indulged with starters that radiated vibrancy and joy.

Served with courgette in a mango and piri piri sauce.

A little flavour explosion in your mouth. Not only was the bowl colourful, it had a firey kick. A brilliant dish which is appropriate all year round.

Crispy Chicken Boa £5.95

Soft bao bun with sliced fried harrisa chicken, sriracha mayo, red jalapenos and spring onion.

With Indian in mind, this little fire in

a bun hit the spot. A mix of India and Asia all in one.

We were already drooling after those starters and couldn’t wait for more. Sipping on some rosé, we didn’t have to wait long before the main course arrived.

Confit & Roasted Duck Leg £16.95

Served with grilled harissa-marinated tenderstem broccoli, crushed bravas potato and purple plant-based labneh sauce.

A true party on the plate, with textures galore, the melt-in-your-mouth duck was the star of the show. Topped with the crunchiest tenderstem brocooli.

Slow braised beef brisket, crushed potato, fried onion, red jalapeno with a fried egg and grilled pugliese bread.

ello Wine & Dine Yorkshire readers! I’m Bobby Geetha, an Indian chef, author of five cook books on Fine-dining Indian cuisine, the founder of Finediningindian.com, an online magazine and website and a finalist in BBC’s MasterChef The Professionals.

You probably want to know a little more about me so I’ll fill you in as best as I can. Despite growing up in Southern India around good food and flavours, I didn’t always want to become a chef. I wanted to be a game developer. But I didn’t quite make the grade. What was my second option? I was always fond of my mum’s cooking and I used to see chefs on the TV and I thought I would go into hospitality management.

I studied for three years to get my hospitality management degree, but soon became fascinated with the cooking side of the industry. I was picked up by luxury Indian hotel company Taj Hotels who trained me in the kitchen, and I spent two years with the hotel group before deciding to move to the UK in 2009. I worked in fine-dining restaurants within Sofitel London, St James, and London’s Hilton on Park Lane, before taking a

role at the legendary Michelin-star restaurant, Noma.

After globetrotting for many years and developing my skills across a number of fine-dining Michelin-starred restaurants, during the pandemic I decided to move back to the UK, specifically Leeds, to set up my own restaurant.

I was privileged to work my way up the ranks in famous kitchens in India, Europe and the Middle East, which helped me achieve great skills and knowledge. Now I want to share this with the younger generation of chefs.

I was a finalist in BBC’s MasterChef The Professionals, a semi-finalist in National Chef Of The Year in the UK and a International Menu Consultant. I have worked with some of Europe’s Michelin-starred culinary greats. I have also won gold in the Hospitality Chef Excellence Award in 2018. I have my own YouTube channel for learning Indian cooking at home.

Why should I get it? This Blaupunkt Milk Frother is easy to operate, one button to heat milk, cream, hot chocolate milk and cold foam. Why should I get it? The perfect dip to get multiple flavours all in one bite. Ever want all the Mexican dips but don’t want to buy them all individually? Here you have salsa, guacamole, sour cream and grated cheese all layered on top of one another.

WINTER RECIPES

These cold, dark months are miserable, and we all need something to make us feel all warm inside. If you are feeling a little rusty in the kitchen and just don’t know what to cook, then here are some of our favourite recipes to indulge in

RECIPES LEFTOVER ROAST DINNER PIE

Ingredients

FOR THE PASTRY

• 300g plain flour

• ¼ tsp salt

• 225g butter, cold and cut into small cubes

• 150ml ice-cold water

• 1 tsp lemon juice

FOR THE FILLING

• 40g butter

• 1 onion, chopped

• 3 tbsp plain flour, plus extra for dusting

• 300ml chicken stock

• 1 heaped tsp wholegrain mustard

• 150ml double cream

• 360g leftover meat, such as turkey or chicken

• 240g leftover vegetables

• 1 free-range egg, beaten, for glazing

• Salt and freshly ground black pepper

Method

1. To make the pastry, put the flour, salt and butter in a large bowl. Rub the butter gently through the flour, make sure that chunks of butter remain in the mixture. Gradually add the water and lemon juice. Use your hands to bring the ingredients together.

2. Tip the dough out on to a lightly floured work surface and form into a ball. Chill in the fridge for 15 minutes.

3. Roll out the pastry into a rectangle that is about 1cm thick and three times as long as it is wide. Fold the top third of the pastry down and the bottom third up over that to create a block. Turn 90 degrees and roll out to the same size rectangle as before.

4. Fold into a block as before. Wrap in baking paper and chill for 15 minutes.

5. Remove from the fridge and repeat the rolling and folding twice (so it has been rolled and folded four times all together). Wrap in baking paper and chill for 30 minutes before using.

6. To make the filling, melt the butter in a large frying pan over a medium heat. Fry the onion for a few minutes until soft and translucent.

7. Sprinkle in the flour and mix well. Cook for 2 minutes, stirring constantly. Gradually add the stock and simmer until the sauce thickens slightly. Add the mustard and cream and stir. If the sauce is too thick, add a splash of stock or water.

8. Take the sauce off the heat, add the leftover meat and vegetables and stir

well. Season with salt and pepper, then set aside to cool completely.

9. Preheat the oven to 200C/180C Fan/Gas 6. Take the pastry from the fridge and cut off about a third of the pastry to use as the lid.

10. Roll out the larger piece of pastry to about 5mm thick on a lightly floured surface and cut out a circle (or oval or rectangle) that fits into a 1 litre/1¾ pint pie dish.

11. Line the pie dish with the pastry and fill with the pie mixture. Brush the

pastry edges with the beaten egg.

12. Roll out the remaining pastry to make a lid and lay over the filling, crimping the edges with your fingers to seal. Trim. Brush the top all over with the egg wash and set aside in the fridge for 10 minutes (or even overnight) to firm up.

13. Bake for 35–45 minutes. When the pastry is golden-brown and crisp all over, remove from the oven and allow to cool for 10 minutes, then cut into slices and serve.

One of our favourite things to do with turkey! It adds so much flavour to a meat that is sometimes perceived as bland. Around winter time, heartwarming dishes are always a go-to, but why not mix it up and have a little fake-away with the meat you have left over.

Ingredients

• 250g leftover turkey

• 1 large onion, diced

• 1 red peppers, cut into chunks

• 2 garlic cloves

• 3 tbsp curry powder

• 1 tbsp ground cumin

• 1 tbsp ground coriander

• 1 tbsp tomato puree

• 1 tin of chopped tomatoes

• 1 cinnamon stick

• 200ml vegetable stock

• Salt and pepper

• Olive oil

• 200g boiled rice

Method

1. Add a healthy glug of olive oil to a pan over a medium heat.

2. Throw in the diced onion and sweat down for roughly a minute.

3. Pop in the chunks of red pepper and sweat for a further minute.

4. Sprinkle in the leftover turkey.

5. Stir in the garlic, curry powder, cumin, coriander and season.

6. Once everything is coated with the spices, add the stock, tin of chopped tomatoes and tomato puree.

7. Mix well, pop the cinnamon stick in and leave to simmer for 20 minutes.

8. Whilst simmering, place rice on the hob to boil. Remember to wash your rice before adding to the pan.

9. Discard the cinnamon stick, serve and enjoy!

GINGERBREAD MARTINI

You just know it’s Christmas when you can smell gingerbread everywhere. Why not make this festive tipple this winter? All you need to do is throw these ingredients into a cocktail shaker and let it do its magic.

Ingredients

• 50ml vodka

• 100ml double cream

• 50ml Irish cream

• 2 tsp gingerbread syrup

HOT TODDY

Ingredients

• 50ml Scotch whisky

• 3 tsp honey

• 1 cinnamon stick

• 1 lemon, half juiced and sliced

• 200ml boiling water

Method

1. Blend the whisky and honey, add the cinnamon stick and 200ml boiling water and divide between two glasses.

2. Add a splash of lemon juice and a slice of lemon and serve.

CHRISTMAS TREE BREAD

Ingredients

• Ready-made pizza dough

• Handful of grated mozzarella cheese

• Parsley for garnish Method

1. Form your pizza dough into balls and then into a Christmas tree shape.

2. Bake until golden then add on the mozzarella and herbs. Here’s where you can switch things up - feel free to swap out the herbs for your preference, or add some extras in like garlic powder or Italian seasoning.
