Once again we can proudly say that this is the biggest and best World of Coffee ever. Over the past few years we have been striving to develop this event into Europe’s premier coffee show and we feel we have achieved that. In doing so we have increased our size year-on-year, become much more professional, and we have started to promote speciality coffee to a much wider audience. This year, there is truly something for everyone. If you are here for business then we have over 150 exhibitors to satisfy your needs. Take a look at the New Product Awards to keep up with innovative trends. If you are here to learn we have the Coffee Information Exchange, Cupping Rooms, SCAE Workshops and the World Roasters Summit. SCAE WORLD ROASTING SUMMIT The SCAE Roasters Summit takes place on Tuesday, 10 June (14.00-17.30 hours). A limited number of tickets are available at the door, priced €67.

FIRST AID & FIRE BRIGADE First aid and fire brigade services are available to the right of the entrance to the West Hall.
TOILETS Toilets are located to the right of the entrance to the West Hall and in Hall A6 near the tobacconist.
ATMS Two ATMs are available in the South Hall.
HOSPITALITY A bar and self-service restaurant are located in Hall A6-C6.

Following its success at its inaugural outing last year, the World Roasters Summit returns in Rimini, offering roasters from across the planet an opportunity to network, share ideas, discuss trends and debate the hot topics in the industry. The Summit runs from 14.00-17.30 on Tuesday, 10 June, in Tiglio 1&2. Tickets are priced at €67 and include a Tuesday pass to World of Coffee. See page 19 for more details.

He will look at how variations in the processing of coffee at origin impacts on the final cup profile when other factors such as variety and altitude remain the same. Attendees will learn how to analyse both brewed coffee and espresso, chart their extraction and troubleshoot the brew to deliver a correctly extracted, well-balanced cup. Using a digital refractometer to measure each cup, participants will learn
how to use the equipment correctly to scientifically compute a coffee’s extraction and reference against its taste.

Rwanda and Burundi’s top quality coffee producers and loyal supporters continue to deal with a defect that causes a random potato flavour in otherwise spectacular coffee. The defect has created huge financial problems for buyers, for farmers and for the African Great Lake countries that are focused on producing speciality coffee. Susie Spindler, of the Alliance for Coffee Excellence, will discuss what is known about the defect, what steps are being taken to reduce it and how speciality roasters can become more involved to help.

Authorised SCAE Trainer and master barista, Andrej Godina, will demonstrate how to create a great espresso. Andrej will provide a basic understanding of coffee, detail the importance of freshness and preparing your workspace and examine grinders (both traditional dosing grinders and on-demand grinders). He will also illustrate the correct dosing and tamping techniques and demonstrate how to fine tune the extraction of espresso to create a balanced flavour.

He will also outline the mechanical needs of power, water, water filtration, drains, lighting and ventilation required when setting up a centre.

SCAE is launching its ground-breaking Coffee Diploma System at World of Coffee this year. Developed by a high-level group of industry experts, the SCAE Coffee Diploma is the most comprehensive coffee education system in the world.
S
CAE’s Coffee Diploma System (CDS) is an expansive certification system providing practical learning and knowledge on every element of the coffee chain, from bean to cup. The system spans three levels, Foundation, Intermediate and Professional, and six modules – Introduction to Coffee; Green Coffee; Sensory Skills; Roasting; Brewing and Barista Skills. Students will earn points for each module completed and candidates who achieve 100 points or more will automatically be awarded the Coffee Diploma.

THE LEVELS
Foundation Suitable for beginners, Foundation level courses provide newcomers with basic skills in a particular coffee discipline. These courses require no previous experience. Points awarded: 10 for the Introduction to Coffee module, five points each for all other modules. Length: Courses at this level take a half-day to a day. Intermediate The Intermediate modules are suitable for those already working in the industry who wish to consolidate their key skills. Points awarded: 10 per module. Length: One to two days, minimum.
EDUCATION Professional Suitable for those who have worked in coffee for some time, the Professional modules help students raise their knowledge and skills to a high level. Points awarded: 25 per module. Length: Two to three days, minimum.

THE MODULES Introduction to Coffee
A great starting point for anyone wishing to obtain a basic knowledge of the coffee industry, this module brings students along the journey of coffee, from its origins on the farm through to its service to the consumer. The Introduction to Coffee is available at Foundation level only, offering students the opportunity to earn 10 credits towards their SCAE Coffee Diploma.
Green Coffee
Available at Foundation, Intermediate and Professional levels, the Green Coffee module teaches basic botany and covers farming and processing methods, plus the supply chain. The module is helpful for green bean buyers and those planning to run their own roastery.
Sensory Skills
Sensory evaluation enables you to evoke, measure, analyse and interpret responses to products such as coffee through the senses. The Sensory Skills course, available at all three levels, helps students embark on the road to becoming a professional taster.
Roasting
This module provides students with all the tools needed to roast with skill and consistency. Spanning the Foundation, Intermediate and Professional levels, the course offers a hands-on approach to learning, with practical and written assessments. Green coffee knowledge is essential before taking the course as the quality of green coffee directly influences roasting. Brewing
Cafés are now offering a range of different brew methods, from the straightforward pour over machine to a v60 hand brewed coffee. This course details hand brewing methods and the science of coffee methods. It is available in three levels.
Barista Skills The Foundation level course in Barista Skills builds on
the Introduction to Coffee module and is suitable for anyone starting work in a café, bar or restaurant, while the Intermediate course helps baristas to raise their skills. The new Professional course is an important addition to the Coffee Diploma System. Highly demanding, this certification is only achieved by the most skilled baristas. It has been developed for head baristas and managers and features financial management and coffee profiling among other topics.
THE EXAMS
Assessments are given at the end of each module. When students have passed all the relevant exams and achieved 100 credits they will receive the SCAE Coffee Diploma.
THE TRAINERS
The courses are conducted by Authorised SCAE Trainers (ASTs) who have been licensed to deliver the courses and certifications in the Coffee Diploma System modules. The written and practical examinations are audited by SCAE. Details of the ASTs and the courses that they offer can be found on scae.com.

Gothenburg will become the first Swedish city to welcome Europe’s greatest coffee event when World of Coffee 2015 takes place at the Swedish Exhibition & Congress Centre from 16-18 June next year. More than 5,000 coffee professionals, from 40 countries around the globe, are expected to arrive in Gothenburg for the 2015 show, which will feature over 200 exhibitors, World Coffee Competitions, workshops, seminars, industry awards and social events. World of Coffee 2015 will also see the introduction of Re:Co, a new high-level symposium where leading stakeholders in the coffee community will gather to discuss the major challenges and developments in the sector and chart the future course for the industry. “When summer hits us, the coffee people of the Nordics and the crew in Gothenburg will host the World of Coffee 2015,” says Johan Damgaard of Nordic Friends, Chair of the Marketing Committee & Working Group WOC 2015. “We will prepare this show carefully and in detail. We know the first question on your lips is “Where’s the best spot for a great cup of coffee?” At SCAE HQ we’re big fans of Caffè Pascucci (V.le Vespucci, 3/a, 47921 Rimini, T: 0541 709165, W: pascucci.it). It’s well worth a visit before you leave town.
Rimini has seen its fair share of action over the centuries, from its time as the Latin colony, Ariminium, through the periods of Byzantine, Lombard and Papal rule, and on to World War II, when approximately 1.5 million rounds of ammunition were fired by Allies on the Germanoccupied city during the ‘Battle of Rimini’. Today, a trip to Rimini is altogether more gentile (although a visit to the resort’s famous nightclubs can be a boisterous occasion) and there are plenty of sites for history buffs to enjoy. Roman Rimini dates from 268BC and remaining landmarks include the main town gate, Arco d’Augusto,

BEACH BABES
Rimini is one of Europe’s biggest and most popular beach resorts with 15km of sand, garlanded by a string of hotels, restaurants and nightclubs along the famous promenade. The Italians descend on this pretty Adriatic resort in their droves during the summer months creating a buzzing atmosphere on the umbrella-packed beaches. Marina Centro and Lungomare Augustore are the most lively, while the beaches farther along the coast are more familyorientated.

THRILL SEEKERS
If relaxing on the beach is too sedate for you then check out the theme parks in the area. Popular spots include Aquafàn, a huge waterpark in Riccione, and Fiabilandia, a fun park for kids. If you’re a serious theme park addict, it’s worth dropping by the tourist office to pick up a Fantasticket for discount admission to multiple parks.
FASHIONISTAS
The Italians love their fashion and a trip to Corso d’Augusto will tempt you with offerings from the top design houses of Gucci, Armani, Prada, Dolce & Gabbana and friends, plus plenty of more affordable options. Rimini’s Romana district includes a huge shopping mall and the promenade offers a range of souvenirs and beachwear. The majority of shops open from 09.00, close from 13.00-15.30, and open until 19.00 or 20.00 in the evenings, although larger shops tend to remain open throughout the day. In the summer, many stores remain open until later at night, particularly along the promenade.
PARTY ANIMALS
A trip to Rimini is not complete without a party on the beach and SCAE, together with our friends in Coffee Kids, are hosting a beach party at the Grand Hotel on Tuesday. Kick off is at 19.00 and tickets can be purchased at the SCAE Shop (we’ll even throw in a free bat and ball, while stocks last).
