The Rimini Expo Centre is connected to the A14 BolognaBari-Taranto motorway, which provides connections to all the major European motorways (see autostrade.it). Exit: Rimini Sud (7 km) – Rimini Nord (6 km).
If arriving before 9 June there is a shuttle bus available from Bologna Airport to Bologna Central Railway Station (E6, ticket bought on board) where you can get a train directly to Rimini Central Railway Station (tickets c.E15).

Rimini – San Marino Airport is approximately 8km from Rimini Expo Centre on the SS16 “Adriatica” road. Take the No.9 bus from Rimini Airport Rimini Fiera Trade Fair Complex. Bologna Airport is 120km from Rimini Fiera (A14 motorway). There is a free Shuttle Bus Service, available only during the exhibition (9-12 June), from Bologna Airport to Rimini Fiera. SCAE will host its second annual World Roasters Summit at World of Coffee Rimini. The World Roasters Summit, which was introduced at last year’s show in Nice, is the only specific union of roasters, and those interested in roasting, in the world. The event was created by SCAE to celebrate the vital role roasters play in the creation of speciality coffee and to provide roasters from across the globe with a platform where they can share ideas, identify trends and debate issues concerning the sector.

TUESDAY, 10 JUNE Session: 10.30-11.15 Topic: Chemical Changes During the Roasting Process SCAE CDS Level: Roasting Professional Presenter: Morten Münchow
Morten Münchow, the creator of the Coffee Diploma System Roasting module, will provide an overview over the chemistry subjects required in the SCAE Coffee Diploma System (CDS) Professional level and will also explain the concepts needed to be understood before taking the exam.
Session: 12.30-13.15 Topic: Impact of Coffee Processing on Flavour Profile SCAE CDS Level: Green Coffee Intermediate Presenter: John Thompson
John Thompson, creator of the Coffee Diploma System Green Coffee module, will present this seminar on flavour profile. He will look at how variations in the processing of coffee at origin impacts on the final cup profile when other factors such as variety and altitude remain the same.
The workshop is mostly practical, being based round a cupping session, but will also involve a discussion of why process changes flavour profile.
Session: 14.30-15.15 Topic: The Science of Milk SCAE CDS Level: Barista Skills Intermediate Presenter: Paul Meikle-Janney
Paul Meikle-Janney, creator of the Coffee Diploma System Barista modules, will present this seminar on milk science. Paul will demonstrate how to get the most from milk by understanding the basic science behind how it is processed, why it foams, or, more importantly, why it doesn’t! Attendees will learn the steps for producing perfect micro foam and the basic principles behind latte art.
Session: 16.15-17.00 Topic: The Art of Brewing Great Coffee SCAE CDS Level: Brewing Intermediate Presenter: Paul Stack
Paul Stack, SCAE Vice President, Chair of the SCAE Education Committee and Operations Director of Marco Beverage Systems, will present this seminar on
brewing. He will outline the secret of making a properly extracted coffee and discuss the essential elements of coffee brewing. Attendees will be able to taste how they can influence the final cup, learn what correct coffee extraction means and understand the core of great brewing: balancing strength and extraction in the cup.
WEDNESDAY, 11 JUNE Session: 10.30-11.15 Topic: Creating a Successful Blend SCAE CDS Level: Roasting Professional Presenter: Jon Willassen
Attendees will improve their knowledge of roasting by learning about the specific difficulties of blending with regards to costs and waste factor in this seminar presented by Jon Willassen of JW Coffeesolutions. Jon will highlight the creativity required when creating your own blend.
Session: 12.30-13.15 Topic: Developing Sensory Skills SCAE CDS Level: Sensory Skills Intermediate Presenter: Léa Desportes
The goal of this seminar is to discover “Le Nez du Café”, a unique product to train the nose and to learn how to recognise the aromas of the different coffees of the world. Following the presentation by Léa Desportes of Editions Jean Lenoir, attendees will be offered an opportunity to develop their skills in a practical session.
Session: 14.30-15.15 Topic: Brewing Extraction and Refractometers SCAE CDS Level: Brewing Intermediate Presenter: David Locker
David Locker, creator of the Coffee Diploma Brewing module, will illustrate how to scientifically measure coffee strength and chart a coffee’s extraction. Attendees will learn how to analyse both brewed coffee and espresso, chart their extraction and troubleshoot the brew to deliver a correctly extracted, well-balanced cup. Using a digital refractometer to measure each cup, participants will learn how to use the equipment correctly to scientifically compute a coffee’s extraction and reference against its taste.
Session: 16.15-17.00 Topic: Water Quality for Brewing SCAE CDS Level: Brewing Professional Presenter: Ronny Billemon
Ronny Billemon from Pentair will explain how water quality is important for brewing coffee and detail which impurities in water will affect coffee’s flavour.

Edouard Thomas, creator of the Coffee Diploma System Sensory and Cup Tasting module, will explore our perception of taste, smell, flavour, examine our thresholds and explain how to be aware of changes to our sensory systems.
Session: 12.30-13.15 Topic: Understanding the Coffee Markets SCAE CDS Level: Green Coffee Professional Presenter: Ludovic Maillard
This seminar will teach the principles in planning and management of green coffee stocks. Ludovic Maillard of Maison P. Jobin will identify the basic market principles that are involved in pricing changes, and show how to create green coffee contracts. Attendees will also learn how to apply knowledge of seasonality in coffee cropping, shipping and storage, quality differences and different certification schemes into green coffee stock management.

TUESDAY, 10 JUNE Session: 10.30-11.15 Topic: Potato Defect in East Africa Coffees Presenter: Susie Spindler
Rwanda and Burundi’s top quality coffee producers and loyal supporters continue to deal with a defect that causes a random potato flavour in otherwise spectacular coffee. The defect has created huge financial problems for buyers, for farmers and for the African Great Lake countries that are focused on producing speciality coffee. Susie Spindler, of the Alliance for Coffee Excellence, will discuss what is known about the defect, what steps are being taken to reduce it and how speciality roasters can become more involved to help.
Session: 12.30-13.15 Topic: Demystifying Green Coffee Certification Labels Presenter: Alberto Polojac
Certification and verification schemes can be powerful tools for value addition, access to a fast-growing market segment and the dissemination of good agricultural, environmental and social practices. In this seminar, authorised SCAE trainer, Alberto Polojac, will explain various aspects of the existing certification programmes focusing on sustainability and highlighting their differences and similarities.

Setting up a roastery is a complex business. Morten Münchow will highlight the basic technical requirements as well as the intuitive and fun ideation processes that can help develop a strategy and a focus for a future business.

Marieke Rodenhuis from the Progreso Foundation will talk about its unique approach to capacity building of farmer organisations and the challenges that farmer organisations face in order to be part of the speciality coffee value chain in a sustainable way.
Session: 12.30-13.15 Topic: Classifying Green Coffee Presenter: Alberto Polojac
Alberto Polojac of Imperator will provide an overview of the different types of defect likely to occur in green coffee and their causes. He will demonstrate how to physically examine green coffee samples, identify physical defects, and use key equipment needed for effective quality assessment of green coffee.

Grounds for Health was founded in 1996 by a coffee buyer travelling in Mexico when he learned about the major human and financial toll of cervical cancer. This seminar is presented by August Burns from Grounds for Health, who will discuss the organisation’s programmes in South America and Africa.
Session: 16.15-17.00 Topic: How to Balance your Espresso Presenter: Andrej Godina
Authorised SCAE Trainer and master barista, Andrej Godina, will demonstrate how to create a great espresso. Andrej will provide a basic understanding of coffee, detail the importance of freshness and preparing your workspace and examine grinders (both traditional dosing grinders and on-demand grinders). He will also illustrate the correct dosing and tamping techniques and demonstrate how to fine tune the extraction of espresso to create a balanced flavour.

Patrick O’Malley, an authorised SCAE trainer from the USA, will discuss various types of training facilities, the layout, workflow and design options. This will include information about the correct equipment, books and tools required to teach the SCAE Coffee Diploma System modules. He will also outline the mechanical needs of power, water, water filtration, drains, lighting and ventilation required when setting up a centre.

These efforts allow coffee farmers to reduce their dependence on the volatile coffee market and confront
Colin Smith has huge experience leading field trips for SCAE. He will explain the value of SCAE educational trips for both participants and hosts, and detail how participants can taste many coffees, meet farmers, learn about the problems involved in growing and processing coffees, make new friends and network with peers.
