Beef Stew with Potatoes and Vegetables (Estofado de Carne con Patatas y Verduras) This week we want to share with you a very rich stew that we have prepared and that we are very sure that you will like :-) Beef Stew with Potatoes and Vegetables, this one is prepared with tender Veal :-) And to make it really tasty and give it a special touch, we have again used a very nice local Sherry wine from El Gato Winery ;-) This casserole can be prepared either in the traditional way by adding potatoes to the stew about fifteen minutes before finished cooking or by frying them beforehand and adding them at the end of the cooking. In both ways, the stew will be delicious ! However you prefer ! As always, when you prepare a stew, it is much better if you eat your stew the day after cooking it. We share now our recipe. INGREDIENTS: * 1 3/4 lbs. (800 Gr.) Veal for stewing * 12 French (Cippolini) Onions * 4 Mature Red Tomatoes * 3 Medium Potatoes * 2 Carrots * 1 Head of Garlic * 2 Bay Leaves * 7 fluid ounces (2 dl) local White Wine (Gran Mayeto) from “El Gato Winery” * 2 Cups of Beef Broth * 4 Tbsp Olive Oil * Salt and Freshly Ground Black Pepper

PREPARATION: * We are going to start peeling the onions without cutting the base so that they will not break while cooking. * Then, we separate the cloves of the garlic head, wash them and make a cut in each clove with a knife. * We wash and peel the carrots and cut them into slices. * We wash the tomatoes and make two cuts in the shape of a cross at the base. * Now we pour four tablespoons of olive oil in a stewing pot and heat it. * We will cut the Veal meat into cubes and season them. We add it to the pan together with the onions, garlic, tomatoes, carrots and washed bay leaves. * We aromatize our stew with ground black pepper, cover the pan and let it cook over high heat for 5 minutes, slightly moving the pan from time to time. * We take the lid off and continue cooking for 5 minutes more, while stirring. * We pour in the wine, allow time for it to evaporate, then pour in the previously heated broth. * Let’s cover the pan again, lower the heat and cook it for 1 hour, approximately until the meat is tender. * We add a little water if we see that the stew is dry. * We peel the potatoes, then wash and dry them. We cut them into cubes and fry them in plenty of oil until they get brown on the outside and are cooked inside. * We remove them from the frying pan with a slotted spoon, leave them on paper towels to drain the excess of oil and season them. * Then add them to the Casserole in the last moment and serve the stew. pringtime in Andalusia is a wonderful time of the year. The weather is pleasant, the sun is out, and the flowers are blooming. Every Spring, the city of Córdoba, just like the city of El Puerto de Santa Maria, blooms into bursts of color. In 1918, Córdoba began its “Fiesta de Los Patios.” Emulating this admirable, and now traditional, concept, the city of El Puerto de Santa Maria began its “Fiesta de Los Patios” about 15 years ago.To understand why a celebration of this type was created, it is important to know a little about Andalusian architecture. Due to the hot and dry climate, private, as well as communal, homes in Andalusia have always been built with a central patio. This is a tradition that dates back to the Roman era and continues to be a common architectural feature, even now, in many newlybuilt homes. Filling this central patio with plants and water-features has always been a way to keep local homes cool. As the main focal point of a person´s home, patio decoration ended up taking on a life of its own. These patios not only offered a visual feast of colorful flowers, stone mosaics, and ceramic decoration, but they also brought out the classic scents of the Andalusian Springtime: jasmine and orange blossoms mixed with a myriad of scents from many other flowers and plants. As could be expected, individual pride in the decoration of these patios gave birth to a desire to share this beauty with others. Accordingly, the “Fiesta de Los Patios” was created. Fortunately, we do not have to travel to Córdoba in order to experience this beauty. It is difficult to imagine a house in the historic part of El Puerto which does not have a patio. Of course, there are many types of patios, along with different styles of architecture. Some are more ornate than others. All of them, however, maintain their historic, traditional, and cultural qualities. For some, they harbor the sweet memories of happy childhood. Approximately six hundred of these patios remain in El Puerto. Many of them are found behind unsuspecting doorways. Some are part of historical buildings, convents, communal homes,

Anyone can compete but they must bring in their tortillas (in a disposable container) beginning at noon and, otherwise, no later than 1:30 p.m. On Sunday evening, at 9:30 p.m., the Hotel Monasterio will host a dinner where Spanish “mantones” (shawls) will be required for the ladies and a carnation boutonniere will be required for the men. The cost will be 25 Euros per person. The map and schedule of activities, in English and in Spanish, can be found at the Association´s website: www.patiosportuenses.com.es . Most of the patios will also be marked with a colorful apron hanging above the doorway. There is no set route, nor order, which needs to be followed. You can visit all of the patios, or just a few. It is a great opportunity to discover some of the hidden treasures for which southern Spain is known, to meet some of our Spanish neighbors, and to enjoy their hospitality. If you plan on visiting any of the patios, or attending any of the activities, our best suggestion would be that you park at the parking lots that are next to the El Puerto bullring, or at the parking lots that are near the Catamaran boarding dock, and visit the different sites on foot.
