Marmitako de Atún – Basque Tuna Stew This week we want to prepare for you a very hearty, tasty stew that is also very healthy, the Tuna Stew “Marmitako”. We are in Tuna season now and we really want to enjoy it and make the most of it. It's a stew cooked with tuna, or albacore, which is principally prepared with potatoes, onions, peppers and tomatoes. Its origin is found with the Cantabrian fishermen or Basques, (Marmitako in the Basque Country or Marmita in Cantabria). Tuna is one of the most consumed blue fish in our country.Tuna meat contains 12% of fat, which makes it a fatty fish, but it is a fat that is rich in omega-3 fatty acids, which helps to lower cholesterol and triglycerides levels in blood and also thins the blood, which reduces the risk of atherosclerosis and thrombosis. For this reason, it is recommended that tuna and other oily fish be consumed for those with cardiovascular diseases. Tuna is the most habitual fish in our diet that has a high biological value protein content (23 grams per 100 grams), higher even than that of meat.

When compared with the majority of fish, tuna’s nutritional composition of diverse vitamins and minerals stand out. The vitamins of the B group include B2, B3, B6, B9 and B12. The content in the latter even exceeds meat, eggs and cheese, foods that are natural sources of this vitamin. Compared to most other fish, the proportion of other water-soluble vitamins is superior in tuna, although the amount is unimportant when compared with other foods containing these nutrients such as whole grains, legumes, green leafy vegetables or meat in general. These vitamins augment the benefits of energy nutrients (carbohydrates, fats and proteins). In addition, tuna’s vitamins are involved in various processes of great functional importance such as the formation of red blood cells, the synthesis of genetic material and the functioning of the nervous system and defenses, among others. Tuna also contains significant amounts of fat-soluble vitamins A and D. The first contributes to the maintenance, growth and repair of the mucous membranes, skin and other tissues of the body. In addition, it also promotes resistance against infections and is needed for the development of the nervous system and night vision. It also promotes bone growth and is involved in the production of enzymes in the liver, adrenal and sexual hormones. Furthermore, vitamin D promotes calcium absorption and its fixation to the bone, in addition to regulating the level of calcium in the blood. We are sure you will find this dish very easy to prepare.

INGREDIENTS: * 1 1/8 lbs. (1/2 kg.) (One Piece) Tuna Loin, cubed * 2 1/4 lbs. (1 kg.) of Potatoes * 1 Onion, finely diced * 2 Cloves of Garlic, chopped *1 Green Pepper, chopped * 2 Grated Tomatoes or 4 tablespoons of Crushed Tomato * 2 Dried Red Peppers (ñoras, if possible), chopped * 2 “Piquillo” Sweet Peppers, chopped * 1 tablespoon Sweet Paprika * 1/2 cup (100 ml.) Mild Olive Oil * 1/2 cup (100 ml.) White Wine * 1 splash of Cognac * 2 glasses of Water (or the amount of water needed to cover the stew) * 1 bouillon cube Fish Stock

PREPARATION: * We begin by peeling the potatoes, break them into chunks and put them in a bowl of water. (The breaking can be done by inserting the knife into the potato just a little bit and then twisting the blade so that it breaks off little chunks of potato) * In a pot with hot olive oil we start to cook the diced onion (brunoise style), once it is soft we add the chopped garlic, when golden brown, add the chopped peppers (the green and the red “piquillo” peppers), stirring everything together. * We add the well drained potatoes and turn them on all sides so they cook and absorb the flavor of the vegetables. * We add now the grated tomato, paprika and continue to mix well. * Then we pour in the wine and the cognac and cook it until it evaporates. * We add enough water to just cover the stew of potatoes and add the fish stock cube diluted in a quarter of a cup of warm water. * And now we cook everything on low heat until the potatoes are tender, about 1 hour. * 5 minutes before the end of the cooking we add the tuna chunks, seasoned with salt and pepper. The Galgo Español (Spanish Galgo) is an ancien member of the sight-hound family, and it is very possible that t is a descendant of the Spanish Galgo. Galgos are similar in appearance to Greyhounds, but are disti physical structure. Galgos are taller in the rear than in the fron ter musculature, which is characteristic of endurance runners smaller, lighter in build, have longer tails, and have a very long, gives us the impression that they have larger ears. Unlike Greyhounds, Galgos have two types of coats: smooth coat can provide extra protection from skin injuries while run come in a variety of colors and patterns. Spanish means “hare.” A similar derivation exists in Italian ("levriero") and in French ("lévrier"). In the year 2 A.D. a written reference to an ancient Celtic sight-hound, the "vertragus", was made by Flavius Arrianus, a Roman proconsul that lived near what is now Seville, Spain. He described hare-hunting with Galgos in a manner that is almost identical to what nowadays still exists in Spain. He added that the use of Galgos for hare-hunting was a general Celtic tradition that was not associated with any social class. Later on in the 9th and 10th centuries, however, the Galgo was considered to be a noble dog and was commonly kept only by the aristocracy. The high esteem in which the Galgo was held is obvious as reflected in the many laws of the time that were designed to punish the killing or theft of this breed of dog. In the Last Will and Testament of a Spanish nobleman, written in the year 1081, he bequeaths his Galgo to another, describing it as "a black Galgo with patches of silver." The fact that this dog was such a significant item in a nobleman's will, demonstrates the great value that it was given at the time. In some Spanish art museums, there exist 12th century paintings that depict hunting scenes with Galgos. References to Galgos appear not only in hunting contexts but in literary works such as Cervantes´ "Don Quixote de La Mancha," and even in common Spanish expressions. There are plenty of common expressions in Spain that make reference to the Galgo. For example "A galgo viejo, echadle liebre, no conejo" which means "use old Galgos for chasing hares instead of rabbits" suggesting that it is best to use experienced people for hard tasks and challenges. "Galgo que va tras dos liebres, sin ninguna vuelve" meaning "if a Galgo tries to chase two hares, it will return with none." This expression obviously recommends that a person concentrate on a single effort, and avoid distractions which will only result in failure. Even to this day, the purebred Galgo maintains a reputation in Spanish villages as an excellent hunter. In spite of its ancient roots and historical importance this breed has been relatively unknown both inside and outside of its native country. Only recently, has the Spanish Galgo become more appreciated at home and abroad, as contemporary Spain becomes more conscious of the uniqueness and heritage of this beautiful animal. Unfortunately, due to their primary role as hunting dogs, Spanish Galgos are often treated as if they were livestock and many are subject to abuse. Puppies are often

selected from a litter based on their propensity for hunting or racing, and the rest are abandoned.The puppies that do get selected often do not live very long lives, as the hunters often consider the dog to be too old to hunt once it has reached two or three years of age. Cruelly, and usually after hunting season ends, these dogs are either abandoned, shot, or hanged. For all these reasons, many associations in defense of the Galgo have appeared in hopes of saving them from a terrible fate, provide them with much needed rehabilitation, and find them adoptive homes. Some associations will adopt them out to other locations in Europe, including France, the UK, Germany, Belgium, and the Netherlands. In our immediate area, Galgos and Friends is such an organization. Its members are dedicated to rescuing abandoned Galgos and insuring that they are adopted by responsible pet owners. Their website is www.galgosandfriends.com and, on some Saturdays and usually on every Sunday between 11:30 a.m. and 2 p.m., you can find members of the group, along with prospective Galgo “adoptees,” at the Castle of the Dukes of Medina-Sidonia in Sanlucar de Barrameda. Ms. Lola Bustillo, who speaks English, is the founder of the organization and is a true saint, since she has tirelessly dedicated almost 16 years to the rescue of Galgos in southern Spain. Galgos do have a very similar disposition to Greyhounds.They are calm, quiet, gentle and laid back. And, undoubtedly, they are happy to sleep their day away on a sofa. Galgos are very good with children since they are calmer and less excitable than other breeds. They are very gentle and can tolerate the often over-enthusiastic attention of children. Galgos have a very reserved and almost shy personality. Like many other sight-hounds, Galgos are a fairly healthy breed and make excellent house pets. They tend to get along well with people and other dogs. Outside of sunny Spain, they require a warm coat to keep them warm in cold winter weather. Like all greyhoundtype breeds, they have little body fat and short coats, so extra warmth is preferred for colder climates. They make very nice show dogs and have enjoyed success in the European show ring, although they are not as well known in the American show world due to their rarity outside Europe.
