How to Make Spanish Omelette (Tortilla de Patatas) Text & photo by Pilar Ruiz / You can find more of her recipes at ycomomegustacocinar.blogspot.com This is one of the most popular recipes in Spain, and has a lot of variations. We normally cook it with eggs and potatoes, but in this case we have added onions and can be also cooked with green paprika, tuna fish, … It is delicious no matter how we Cook it ! Buen provecho !! INGREDIENTS: • 1 kg of potatoes • 1 big onion • 6 medium size eggs • Extra virgin olive oil • Salt • Black pepper HOW TO PREPARE: • We start peeeling the potatoes and the onion, and will cut them into medium sized squares. • We will add some salt and fry them in hot olive oil in a frying pan until they start getting a Golden colour. • We will beat the eggs in a bowl with some salt and Black pepper.. • Then we will mix it with the fried potatoes and onion, and pour the mix into a frying pan with some olive oil, we used before. • We will cook it at a low temperature for 15 minutes until we see it is getting a nice Golden colour. It is important not to overcook it so that it does not get dry. • Once this side is ready we are going to turn it over using a plate to cover the fry ing pan, and then we will cook the other side for ten minutes.. • Once it is cooked we will serve it at the table and we recomend to eat it with a nice salad Recomendation: It is important to use a nice teflon (non stick) frying pan, and of course top quality ingredients in order to cook the best Tortilla

R

ecently, I had the pleasure of meeting with Pilar Ruiz, Ana Luna, and Auxi Izquierdo at the Rota Town Hall. These ladies are all officials in the Rota government who took the time to introduce me to what the town of Rota has to offer. My initial inquiry focused on the “Cooperation Office” which is just outside the Rota Gate. But, I learned so much more about Rota that I think I will need to write a few articles to share that information with our Coastline readers. The “Cooperation Office” is a part of the “Welcome to Rota” program which was born as a result of vision and foresight. I´m not sure if this was the idea of a single person, or a collaborative effort, but there is no doubt in my mind that all of these ladies, as well as the rest of the residents of Rota, are truly dedicated to what this project stands for: welcoming their military neighbors and making them feel at home by providing them with information and assistance with whatever they may need. Knowing that the Rota Naval Station would soon be the new homeport to four ships, along with their crews and their families, the Town of Rota rolled up its

sleeves and committed itself to provide the best welcome possible for the upcoming influx of new neighbors. Aside from already sharing almost sixty years of cooperative effort with the American military forces, this time they wanted to make sure that it was a more complete effort, and that the Americans present in Rota knew that they, and their dependents, were all welcomed in Spain, and especially in Rota. The persons in charge of this project began by contacting a town in Germany that they knew they could use as a model for their program. The town of Ramstein, Germany has for years maintained an excellent relationship with the U.S. Air Force personnel stationed nearby and has served as a model for the programs developed by the town of Rota. The relationship between the towns has grown to the point that they now maintain communication through mutual internships and visits with the aim of always improving the service that they provide to their respective military neighbors. Now, the town of Rota can proudly boast of its very own “Welcome to Rota”

program. The flagship of the program is, of course, their “Cooperation Office.” I visited the office and spoke with Marijo Resinas. She is a very pleasant and knowledgeable person. The office is clean and well-organized with a colorful play corner for its smallest visitors. There you can obtain information about “everything, and anything,” with a promise that if they do not have an answer for your question, they will get one for you within 24 hours. They are committed to service and committed to doing the best job that they can to assist U.S. personnel assigned to the base, as well as to assist Spaniards who are interested in interacting with the base and its personnel. The Welcome to Rota program also has many other facets that are worthy of note. Pilar Ruiz mentioned the Summer Guided Tour programs that they have established. I found this very interesting because it is not just the same introductory tour that is repeated ad nauseum. Rather, they are varied tours that provide exposure to all types of interesting aspects of Rota history, culture, and shopping. Some examples of these guided tours (in English) include: a tour of the Castillo de Luna (The Luna Castle) which also serves as the Rota´s Town Hall; a tour of the Lady de la O church, located across the square from the Luna Castle; a tour around the historical quarter of the town; a tour of the typical Andalusian patios located around the town; a tour of the ancient stone “corrals” which have served as an ingenious method of capturing fish in coordination with the ocean tides; a tour of the local “El Gato” winery; a tour of the local cheese factory, and goat farm, “El Bucarito;” and tours of the local fish market. There are several more tours that can range from those that are focused on educating small children to a 2-hour tour around the Bay of Cadiz in a sailboat. Recently, there have been new tours focused on what the Rota merchants have to offer. These are particularly interesting since they may include, for example, a tour of restaurants all over town with a sampling of the food that each has to offer. Or, for example, there might be a tour of a fishing boat at the fisherman´s pier, followed by the observation of a fish auction, and culminating with a quick course on how to clean and filet a fish. Throughout the year, there are new, as well as traditional, activities that can keep everyone busy in Rota. Many years ago, I remember the special atmosphere that Rota had especially during Christmas time. It was magical then, and I imagine that now, with so many improvements and with such a dedicated group of Rota residents, it can only be that much better. I was very impressed with the open and warm attitude with which the entire town of Rota is welcoming its new neighbors. I strongly encourage every member of our community to tap into this wealth of information and goodwill.
