How to Make Horchata Text by Deborah Johnson/ Photo by Lobo, Wikipedia Horchata is a summer drink original from Valencia, in Spain´s East Coast. It´s main ingredient is Tiger nuts which are not nuts but tubers. Besides being very tasty Tiger nuts are very nutricious. They have a nutty milky taste. These tubers are usually sold dry and in order to use them as a snack or to make a Horchata you must hidrate them first.

INGREDIENTS • 1 cup tiger nuts, covered with water by 2 inches and soaked for 24 hours at room temperature • 4 cups hot (not boiling) water • 1/4 teaspoon salt • 1/4 cup plus 1 tablespoon granulated sugar • Ground cinnamon

HOW TO PREPARE: First you will drain Tiger nuts (with a cheescloth) and put them in a blender. Add the hot wáter and blend until smooth. Pour carefully through the cheesecloth. Add sugar and salt and mix. Serve completely cold, with ice and a sprinkle of cinnamon. Enjoy your summer!!

A

rchaeological evidence suggests that, anywhere from approximately 2500 to 5000 years ago, there existed a Bronze Age settlement where the town of Rota stands today. I n a p p ro x i m a t e l y 1104 B.C., the precursor to the current town of Rota was founded by the Phoenicians and was known as Asteroth. It later passed to the Romans, who called the town Speculum Rotae, and, following the invasion of the Moors, the town became known as Rabita Rutta. The Castillo de Luna (the Luna Castle), and the site at which it stands, has always been a significant part of the town of Rota, as is evidenced by its prominent place in the town´s coat of arms. Construction of the Castillo de Luna began in 1295 as part of King Sancho IV's effort to develop strong coastal

defenses, especially near the entrance to the Mediterranean Sea. The ¨castle¨ is actually a fortress and it has been declared a National Site of Cultural Interest by the Spanish government. It´s construction is rectangular in shape, with five watchtowers placed around its perimeter. All of the towers are connected to a central patio. It is very likely that this castle was built upon the same site where a Muslim Rabat (meaning “fortified place”) once stood. The Moors occupied most of Spain from the year 711 and were slowly expelled. The last Moorish stronghold, in Granada, did not fall until 1492. During the Moorish occupation, the town of Rota was known as Rabita Rutta, the origin of which appears to come from the Latin name Speculum Rotae (speculum = mir-

or) Both names include a reference to a rominent Roman road, the Via Augustus, hich ultimately lead to the sea. 1251, King Fernando III captured the own from the Moors, but it was subseuently lost in a Moorish resurgency. In 264, the town was permanently recoved from the Moors by King Alfonso X. 1297, King Sancho IV awarded the town, hich was a part of the feudal estate of anlúcar, to Alonzo Pérez de Guzmán in onor of his illustrious defense of Tarifa. 1309, Pérez de Guzmán gave the town o his daughter, Isabel, as a wedding presnt when she married Fermin Ponce de eon, who was the founder of the House Arcos, thereby passing the castle to

Although it has had several occupants and owners, the Luna Castle is considered to have been primarily a part of the royal House of Arcos, whose nobleman were the jurisdictional lords of the Villa de Rota for many centuries In 1909, the Marquis of San Marcial bought the castle to use it as a summer residence, and accomplished significant restoration of the same, along with some renovations. In 1943, José León de Carranza acquired it and utilized it as the San Ramón school and the San José Hospital. Both institutions were managed by the Order of the Daughters of María Auxiliadora, a Salesian community of nuns. They later donated the castle to the town of

Rota in 1982. In 1987, restoration work was begun, but not completed until 1999, in which year it was inaugurated as the Town Hall. At present, it houses t h e mu n i c i p a l government of Rota, to which it belongs. A visit to this amazing and historical structure is definitely worth your while. Access is easy if you use the Hotel Duque de Nájera as a reference point. I parked at the Marina parking lot and walked towards the hotel. From the hotel´s front door you can see the castle and the adjacent square. While you are there,

don´t miss a visit to the Maria de la O church which is on the opposite side of the square. It is equally as beautiful and s p e c t a c u l a r.
