December 18, 2014 Mantis Shrimp Soup (Sopa de Galeras) We’re getting very close to Christmas and we’d like to share with you this very Christmassy recipe, a delicious “Sopa de Galeras” or “Mantis Shrimp Soup”. The Galera is also known as “Squilla Mantis”. It’s very easy to prepare, appetizing and very tasty. ;) You will love it! It would be great as a starter to a great Christmas Eve dinner or a Christmas Day meal. :-) The “Mantis Shrimp”, even though it has a slightly soft shell, it can be as difficult to peel as a “Cigala” or Scampi Shrimp, yet conceals inside shrimp meat that is very juicy and palatable. Mantis Shrimp (Galeras) have been a much undervalued crustacean, though used widely to provide deep flavor to seafood broth, which guarantees that they are succulent, but it is hardly ever used as the “star of the dish”. Since the Galera does not have an abundance of meat, it reduces a great deal during cooking. We absolutely love to eat them and this is the season, so we’re going to enjoy them, and the more the better! So let’s get on with our holiday recipe that we hope you will like and will enjoy very much:

INGREDIENTS: - 1 ¼ lb (1/2 kg.) of Galeras (Mantis Shrimp) - 4 oz (100 g.) of Shrimp - 2 Ripe Tomatoes, Skinned - 1 Red Bell Pepper - 2 Cloves Garlic - 1 White Onion - 1 Tbsp Flour - 4 oz (125 ml.) of mild virgin olive oil - 1 Squirt of Brandy (de Jerez) - Salt - Freshly Ground Black Pepper, to taste

PREPARATION: - Finely dice the onion and the skinned tomatoes into very small cubes (brunoise style). - Then finely dice the red pepper and the cloves of garlic. - With these finely diced ingredients, we’re going to prepare a stir-fry (sofrito) sauce, taking care not to overcook it. Add the olive oil to a heated frying pan, then add these diced ingredients and sauté on high temperature for a few minutes. Add the flour and stir well, then the squirt of Brandy. Once cooked, crush the mixture to create a thin sauce. - We’ll cook the Mantis Shrimp (Galeras) in salted water. Remove them and retain the resulting stock. - Peel the Galeras and set the meat aside for the moment. Add the shells, tails and heads to a saucepan with ½ Cup of the stock to make it richer and tastier. Bring the heat up to Med and with a pestle, we’re going to crush the shells to extract their entire flavor. Strain and add the resulting liquid to the rest of the stock. - Then boil the shrimp, peel, and set them aside. - To prepare the soup, we’ll use a large earthenware “Cazuela” dish and first, add all the (Galera) Shrimp stock, then the Stir-fry sauce, mixing gently to blend the ingredients. - To mix, instead of using a ladle or large spoon, just move the “Cazuela” dish around gently to keep the mixture from breaking up too much. - Cook for ten minutes, then just before removing from the heat; add the cooked shrimp and the Galera Shrimp cut into small pieces. Taste, add salt as needed and add a touch of black pepper. And you’ll see how delicious this is with its intense seafood flavors :-) and, especially for the cold weather, this dish is perfect. T

he American Christmas season begins the day after Thanksgiving and runs until Christmas Day. The Spanish Christmas shopping season starts at roughly the same time, the beginning of December. But the Christmas season is considered to begin on Christmas Eve and it does not end until January 6th of the new year. So,“Navidad” in Spain includes Christmas Eve, Christmas Day, New Year´s Eve, New Year´s Day, and Three Kings Day (the Day of the Epiphany). Christmas Eve is called "La Noche Buena," literally translated as "The Good Night." In Spain it is usually celebrated with a large family feast, which is eaten late in the evening and can last several hours. Some families may even attend a midnight Catholic mass, although many families

are still finishing dinner around the table at midnight! Traditionally, in Spain, Christmas Eve and Christmas Day were not days for exchanging gifts. Gift-giving was usually done on January 6th, known as Three Kings Day or “El Dia de los Reyes Magos” (The day of the Magi Kings). It was these Magi Kings that normally bore the gifts for Spanish children and placed them near a shoe which the child had left out for them. The shoe would hold a glass of milk, wine, or brandy. Recently, however, the concepts of Santa Claus, Christmas trees, and gift-giving on Christmas Day have begun to be adopted as part of Spanish Christmas celebrations. Accordingly, some Spanish families have begun the practice of dividing the children´s gifts between Christmas Day and Three Kings Day. Apart from the religious implications of this season, the Spanish also utilize this time to gather with friends and family and enjoy traditional food and drink. An example of a typical Spanish Christmas Eve dinner would include several courses starting with some simple tapas or appetizers, followed by the first course, the main course, and ending with dessert, coffee, and after-dinner drinks. The Tapas (Appetizers) might consist of Jamón, Queso, and Chorizo (Ham, Cheese, and Chorizo sausage) on bread. Langostinos (prawns) might also be ser ved. They are usually boiled, then served with a slightly spicy salsa rosa (pinkcolored sauce) that is made by mixing mayonnaise, catsup and Tabasco sauce. Cava by El Pantera,Wikipedia &Turón by D. The Primer Plato (First Course) might include any of the following: Sopa de Pescado y Marisco (Fish and Shellfish Soup) a classic soup for the holidays; Sopa de Carabineros (Prawn Soup) and Esparragos Blancos (White Asparagus); and/or Ensalada de Endivia con Vinagreta (Endive Salad with a Vinagrette dressing) which is made simply with endives, tomatoes, oil, and vinegar. The Plato Prinicipal (Main Course) In Spain, the main course is usually called the segundo plato, the "second" course. Beef, lamb, poultry or game may be served with rice or potatoes .Cordero Asado (Roast Lamb) and Patatas Fritas (Home-Fried Potatoes) are usually served together, and a mixed Green salad will usually be served as a complement to the heavier dishes. Postre – (Dessert) At Christmas time, dessert can include a variety of treats that are only made during this time of year and considered to be synonymous with the Christmas season in Spain. Some examples are: Turrón, an almond candy of Moorish origin that can be hard or soft; Polvorones, a flaky and soft, almond shortbread-type cookie which is usually dusted with powdered sugar; Mazapan or marzipan, a type of almond bread which is sweetened with honey and which are sometimes covered with pine nuts, or can contain a fruit filling; and Mantecado cookies. The Spanish word for lard is “Manteca,” so it goes without saying that the recipe for these cookies includes lard as an ingredient. They can be anise-flavored or can include lemon peel, orange peel, or even red wine as an ingredient. To top off the meal, coffee is traditionally served along with after-dinner drinks which might include Spanish brandies, all of which are produced here in Jerez, or a variety of any number of sweet liqueurs. Of course, a Spanish Christmas would not be complete without several toasts and a few glasses of “cava,” which is a Spanish sparkling wine usually made in Catalonia.The word “cava” refers to the “cellars” in which the wine is produced. These wines are made in the “méthode champenoise” or “Champagne method,” which is the same method that is used to make Champagne. However, only wines made in the Champagne region of France may be called Champagne. Cava should be served very cold, about 46 to 48 degrees Fahrenheit, and in chilled flute champagne glasses so that the bubbles will last longer. The six official types are as fol-

lows, depending on the sugar content: Extra Brut – 0-6 grams of sugar per liter, the driest of the cava; Brut – 0-15 grams of sugar per liter; Extra Seco – 12-20 grams of sugar per liter; Seco – 17-35 grams of sugar per liter; Semi-Seco – 33-50 grams of sugar per liter; and Dulce – more than 50 grams of sugar per liter, the sweetest of the cava. Of course, it goes without saying that in addition to drinking cava, the entire meal will have been graced with any variety of Spanish red and white wines, from Rioja and Ribera del Duero (two red wines that remind me of a Cabernet and a Merlot), to Albariño and Verdejo (two white wines that remind me of a Chardonnay and a Sauvignon Blanc). My wife will refuse to speak to me if I fail to mention another viable option: Sherry wines (she is a sherry-wine advocate and aficionado). Sherry wines can range from a dry Fino or Manzanilla, to Amontillados or Olorosos that are also dry, to a Cream (which is somewhat sweet), to a Moscatel or Pedro Ximenez (which are very sweet). All Sherry wines are locally produced and they truly are an excellent choice for pairing with a traditional Spanish Christmas dinner. The exhibition consists of 33 portraits of relevant characters from Jerez and their relation to Sherry wine. It puts a face on Jerez’s wine culture. Juan Manuel Torreira adds poetic words to the visuals.
