It has always been said, “An apple a day keeps the doctor away”, and it is really true !, according to a Welsh proverb. Apples are very healthy and they really should be included in our daily diet. Apples are extremely rich in important antioxidants, flavanoids, and dietary fiber.The phytonutrients and antioxidants in apples may help reduce the risk of developing cancer, hypertension, diabetes, and heart disease. Apples contain almost no fat, sodium or cholesterol. Apples deserve to be called "nutritional powerhouses". They contain the following important nutrients: Vitamin C - a powerful natural antioxidant capable of blocking some of the damage caused by free radicals, as well as boosting the body's resistance against infectious agents, according to the University of Maryland Medical Center. B-complex vitamins (riboflavin, thiamin, and vitamin B-6) - these vitamins are key in maintaining red blood cells and the nervous system in good health. Dietary fiber - the British National Health Service says that a diet high in fiber can help prevent the development of certain diseases and may help prevent the amount of bad cholesterol in your blood from rising. Phytonutrients - apples are rich in polyphenolic compounds. These phytonutrients help protect the body from the detrimental effects of free radicals. INGREDIENTS: * 4 Apples (Fuji) * 5 Eggs * 1 1/16 Cups (1/4 liter) Condensed Milk * 2 1/8 Cups (1/2 liter) Milk * 1 Glass Tintilla de Rota, Sweet Sherry Wine * 1 Teaspoon Ground Cinnamon * 3 Tablespoons Brown Sugar * 1/2 Cup (1 dl) Whipped Cream For the Caramel: * 6 1/2 Tablespoons (Just under 1/2 Cup) (100 grs) Sugar

PREPARATION: * To begin with let's preheat the oven to 350° Fahrenheit (180° Celsius). * Meanwhile we will put the sugar into a saucepan, add the two tablespoons of water and we are going to cook on low heat, stirring constantly until we get a dark caramel. * We will pour the hot caramel into a flan mold, turning it round so that the caramel extends well everywhere to cover the bottom. * We will then peel the apples and cut them into wedges, removing the core. * We put them now in an ovenproof dish and add the wine. Sprinkle them with the brown sugar and the cinnamon. * We bake them for 35 minutes. * Reserve a few wedges of apple and put the rest in the blender. We will blend it into a uniform applesauce puree. * We crack the eggs in a bowl, beat them and mix them with the applesauce. * We add now the condensed milk and the milk, and stir until mixed well. * We pour the mixture over the caramel in the flan mold and place the mold into a larger diameter ovenproof dish. Carefully pour hot water into the outer dish to create a water bath, for bain-marie style cooking. * We cook the flan pudding in the oven at 325° Fahrenheit (170° Celsius) for about 50 minutes until it sets (*). * We remove it from the oven and wait for it to cool in the water bath. Leave the flan in the refrigerator until the next day. * Whip the refrigerated whipping cream with an electric beater. * We carefully unmold the flan, by placing a serving tray over it, and gently flipping it over, and we will serve it decorated with the reserved apple wedges and a few rosettes of whipped cream. (*) To check for doneness insert a tooth pick in the flan. If it comes out dry, it's done. Otherwise, we bake it for a few more minutes. Horses

W

hat could be more Andalusian than watching horses and flamenco in southern Spain? This week, in the nearby town of Jerez de la Frontera, you will have the opportunity to do both. Two classic festivals relating to both horses and flamenco are being held, as separate events. The first event is the International Classic Dressage Competition and the second is the Annual Jerez Flamenco Festival. Both are well-known throughout Spain and will attract fans and participants from all over the world. It is a unique opportunity to see the best of both worlds. The dressage competition is being held at the Real Escuela Andaluza de Arte Ecuestre (Royal Andalusian School of Equestrian Art), near downtown Jerez. It started on the 25th of February and it will end on the 1st of March. The Flamenco Festival is being hosted at various venues, but most of the performances will be held at the Teatro Villamarta, (Villamarta Theater) which is also near downtown Jerez. It started on the 20th of February and will continue on through the 7th of March. HORSES – “Dressage” is a French term which is most commonly translated as "training." Classical dressage, now a competitive equestrian sport, evolved from cavalry movements and training of horses for the battlefield. The International Equestrian Federation refers to dressage as "the highest expression of horse training, where horse and rider are expected to perform, from memory, a series of predetermined movements." The fundamental purpose of dressage is to develop, through standardized progressive training methods, a horse's natural athletic ability and willingness to perform, thereby maximizing its potential as a riding horse. At the peak of a dressage horse's development, the horse will respond smoothly to the slightest command communicated to it by its skilled rider. This form of training has ancient roots in Europe where dressage was an important equestrian pursuit during the Renaissance and the great European riding masters of that period developed a sequential training system that has changed very little since then. In addition to standardized cavalry movements, the horses were also trained to perform a number of “airs above the ground” (or "sauts d'école") leaping movements, which could, theoretically, enable their riders to escape if surrounded, or to fight more easily. Although there are many who still maintain the popular belief that these moves were originally taught to horses for military purposes, most of the “airs” movements, as they are performed

today, would have exposed a horse´s vulnera belly to the weapons of foot soldiers. It is, more likely that the “airs” movements were designed to develop the agility, responsiv physiology of the military horse and rider, r to be employed in combat. FLAMENCO - Flamenco is an art form, comprised of Spanish folk music and dance, which originated and is popular in the region of southern Spain where we live, Andalusia. It includes cante (singing), toque (guitar playing), baile (dance) and palmas (rythmic hand-clapping). This art form grew out of Andalusian and Romani music and dance styles. Flamenco is often associated with the Romani people of Spain (Gypsies or Gitanos) and a number of famous flamenco artists are of this ethnicity. Flamenco´s appreciation as an art form in Spain can be traced back to the late 18th century.

Although the Spanish word flamenco can mean “flamingo,” referring to the bird, it originally meant "flame-colored," as well as “Flemish,” (i.e. someone or something related to Flanders).The predominantly Flemish attendants at the court of King Carlos I of Spain (1516-1556) were known for their colorful dress and exaggerated displays of courtesy, but also for their generally arrogant and boisterous behavior. While no direct connection can be shown to this possible historical origin, the word flamenco came to be used for arrogant or flamboyant behavior, in general, which then may have come to be applied to the Gitano players and performers in the late 1700´s. Palos (formerly known as cantes) are flamenco singing styles, which traditionally fall into three classes: the most serious is known as cante jondo (or cante grande), while lighter, frivolous forms are called cante chico. Forms that do not fit either category are classed as cante. Cante jondo has clear traces of Arabic and Spanish folk melodies. Compás is the Spanish word which refers to the rhythmic cycle, or layout, of a palo, but it actually requires a more intense understanding than just maintaining a repetitive beat. If there is no guitarist available, the compás is rendered through hand clapping (palmas). Baile flamenco is known for its emotional intensity, expressive use of the arms, and rhythmic stamping of the feet. "Flamenco puro" is considered the form of flamenco performance which is closest to its Gitano influences. In this style, the dance is always performed solo, and is improvised rather than choreographed. "Classical flamenco" is the style most frequently performed by Spanish flamenco dance companies, tending to exhibit the characteristics derived from the Seguidilla, a traditional Spanish dance. It is danced largely in a proud and upright way. Unlike the more Gitano influenced styles, there is little movement of the hips, the body is tightly held and the arms are extended, like a ballet dancer. In fact, many of the dancers in these companies have trained in ballet as well as flamenco.“Flamenco nuevo” is a recent style in flamenco, characterized by pared-down costumes Dances are choreographed and include influences from other

dance styles. The Jerez Flamenco Festival will feature many events that focus on the talents of a variety of performers that specialize in flamenco song, dance, or guitar. Because of their number and variety it is impossible to mention them all here. There is one, however, that caught my eye when I was reviewing the schedule. It is a performance that will be held on Saturday, February 28th, at 9 p.m. It will be presented by the Antonio Gades Dance Company and it is based on the play, and movie,“Amor Brujo” (Bewitched Love). This will definitely be worth seeing because of its amazing music and choreography. I highly recommend it.
