Salmon and Shrimp Meatballs in Homemade Tomato Sauce Have you ever tried fish meatballs? We have prepared these with salmon and shrimp, theyAare very, very tasty and tender. They are ideal, not only for us adults, but also for our kids! They will eat the fish and seafood without really knowing it and get all the nutritional benefits from both of these rich and natural ingredients! Salmon is a popular oily fish, considered to be healthy due to the high content of the fish protein, omega-3 fatty acids, and vitamin D. Salmon is also a source of cholesterol, with a range of 23–214 mg/100 g depending on the species, but well within range of the recommended daily intake. And now we finally share our weekly recipe with you: INGREDIENTS: * 14 oz. (400 grs.) Fresh Salmon, skin removed * 4 oz. (100 grs.) Shrimp, peeled and deveined * 1/3 cup (50 grs.) bread crumbs * 1 Egg * 1/2 White Onion, diced * 1 Clove of Garlic, diced * 1/2 Cup (100 ml) Fish Broth * 1 Cup (200 grs.) Homemade tomato sauce (*) See recipe below * 1/2 Cup (100 ml) White Wine “Gran Mayeto” from El Gato local Winery, a smooth, fruity, aromatic, semi-sweet white wine. * 1 Tea spoon dried Dill * Black Pepper and Salt * All Purpose Flour * Mild Olive Oil
HOMEMADE TOMATO SAUCE This is the way we cook the home made tomato sauce at home :-) You can use it for many recipes, such as Huevos a La Flamenca, Pasta, Fried Potatoes and Eggs, … ! Once you make it you cannot stop eating it :-) It tastes delicious :-) INGREDIENTS: * 2.2 lbs. (1 kg) Fresh Tomatoes, crushed * 1 Med White Onion * 1 Green Bell Pepper and 3 Green Frying Peppers * 1 Garlic Clove * 2 or 3 tablespoons Olive Oil * Salt and Black pepper * Pinch of sugar * Some Cooking Cream PREPARATION: * First of all we are going to chop the onion and green Peppers in cubes. Then dice the garlic clove. * Then we are going to fry the onion on medium heat in a large, well oiled, frying pan. Then we add the garlic and to finish with add all the Green Peppers. * We fry these three ingredients together, stirring occasionally and then when they are cooked, we add the crushed tomato. Then we add some salt and a pinch of sugar and we keep on cooking, continuing to stir occasionally. * Once we see it is cooked (10 minutes approximately on medium heat), we are going to use a food mill or vegetable strainer to separate the pureed, cooked vegetables from the creamy tomato sauce. Discard the pieces of vegetables that don’t pass through the strainer. * And then we are going to stir in a splash of cream to make the tomato sauce even smoother. And these succulent salmon and shrimp meatballs are ready to serve at the table with these yummy stuffed potatoes on the side. PREPARATION: - FOR THE MEATBALLS: * We are first going to dice the salmon and the peeled shrimp. We put them in a bowl. * Dice the garlic and add it to the fish/shrimp mixture. * We add the egg and the bread crumbs, the dried dill, and add salt and pepper. * We are going then to mix it well by hand, form the meatballs, and lightly roll them on a plate with the flour, enough to just coat them lightly. * Add enough oil into a frying pan so the meatballs will be about 1/3 of the way immersed, heat the oil med to med-high heat, then brown the meatballs uniformly. Remove and set aside to drain on paper towels. * Dice the peeled onion, then sauté it in the same pan with oil for about 7 or 8 minutes. * To the sautéed onion, add the homemade tomato sauce, the broth and the wine and we let it cook for 10 minutes. * We then add the meatballs, cover, and cook on low heat for 20 more minutes, stirring every now and then.

Black History Month
B
lack History Month, or National African-American History Month, is an annual celebration of the achievements made by African-Americans. t is a time for recognizing the central role that AfricanAmericans have played in U.S. history. In September of 1915, the Harvard-educated historian Dr. Carter G. Woodson, along with the prominent minister Jesse E. Moorland, founded the Association for the Study of Negro Life and History (ASNLH) which was an organization dedicated to researching and promotng achievements by Black-Americans and other persons of African descent. It is known today as the Association for the Study of African-American Life and History (ASALH). n 1926, choosing the second week of February which alls between the birthdays of Abraham Lincoln and Frederick Douglass, the first observation of “Negro History Week” was established by the ASNLH. The event inspired schools and communities nationwide o organize local celebrations, establish history clubs, and host performances and lectures. In the decades hat followed, mayors of cities across the country began issuing yearly proclamations recognizing Negro History Week. By the late 1960s, thanks in part to he Civil Rights Movement and a growing awareness of Black identity, Negro History Week evolved into Black History Month on many university campuses. In 976, President Gerald R. Ford officially recognized Black History Month, calling upon the public to “seize he opportunity to honor the too-often neglected accomplishments of Black-Americans in every area of endeavor throughout our history.” Since 1976, every U.S. president has officially designated the month of February as Black History Month and has endorsed a theme for that year. The theme for Black History Month for this year has been identified as “A Cenury of Black Life, History and Culture.” Accordingly, Black History Month in the year 2015 will chronicle, and celebrate, the lives and contributions of AfricanAmericans in the world of American art, literature, music, history, sports, science, and pop culture.
There is no doubt that a history of the United States of America cannot reflect the true story of America if t does not include the contributions made by people of color. Despite the fact that legalized slavery and egregation marred much of the first two centuries of the American story, African-Americans overcame barriers of poverty, racial prejudice, inequality and, in many cases brutal suppression, to add to the political, artistic, athletic, scientific, and literary fabric of America. Taking into consideration the stated theme or this year´s Black History Month, an analysis of the past one-hundred year period provides us with admiable examples of struggle and triumph, of suffering and freedom, of honor and courage, and of talent and genius. To try to identify the multitude of BlackAmericans that have made significant contributions o our culture would take volumes and volumes. Accordingly, what I have done is to create some lists of persons who have made significant contributions in heir own fields of endeavor, in order to stimulate your curiosity and to encourage you to find out more about hem. Some are obvious and others are, perhaps, persons that you have never heard of. If, by readng the lists in this article, it will stimulate you to find out more about the persons included in them, then I have accomplished the goal that I have intended in writing this article.
Although a few of the names that I have listed below are persons that may not have lived in the past centuy, there is no doubt that they had a significant impact
