How to make Huevos a la Flamenca

(Baked eggs with potatoes, serrano ham and vegetables) by Pilar Ruiz / You can find more of her recipes at comomegustacocinar.blogspot.com This is a very popular dish from Andalusia, very tasty and very easy to make. About the meaning of its name, some people say it is called like this becasue of the different colours it has or becasue when you taste it you just say, Olé ! Whatever the reason is, this great dish is delicious to cook and share it with family and friends have a nice meal

INGREDIENTS (for 4 people): • • • • • • • •

1 kilo potatoes, cutted into small dices 4 big fresh eggs 1 kilo home made tomatoe 200 grs. de previously boiled peas Some sweet red Peppers, some of them to deco rate at the end Serrano ham finely diced Spanish Chorizo (special Iberian Spanish sausage) in small dices Some Iberian Chorizo sausage and Serrano ham slices to decorate

HOW PREPARE • • • • • •

We wash and peel the potatoes and cut them into small dices. We will boil them in salty water during 15 minutes and then drain them. We will keep them. We start warming up the homemade tomatoe sauce in a pan. In a ceramic pot or if not in a normal casserole we are going to put the boiled potatoes, and then we will add the peas, the jamon dices, the chorizo dices and the sweet red Peppers, also finely diced. Then we will add the home made tomatoe sauce and then we stir everything carefully so that all the ingredients mix and get the flavour. Then we will add the eggs (one per peson) and ready to put into the preheated oven at 180º. But befote we put it in the oven we are going to decorate it with the jamon, the chorizo and the sweet red pepper slices, we kept. We will know it is ready when the eggs are cooked the way we like, some of us prefer the eggs well done, and some prefer the eggs less cooked to dip some nice bread

or me, Sunday the 31st of August was the last day of Summer. We decided to venture into the nearby town of Chipiona in spite of the fact that it was the day that thousands of Spaniards were scheduled to be on the road, returning from their summer vacations. It was late in the afternoon, so the heat was not as daunting. We made it past some special traffic lanes set up to accommodate the massive amount of traffic driving out of Chipiona. Luckily, when we arrived, the town appeared to be in its usual state of eternal calm. We drove towards the lighthouse looking for a place to park and, to our surprise, we found one. Of course, it helped that many of the vacationing Spaniards had already started their homeward journey and the town was less congested, as is normal during the summer months. We were able to take a stroll down the “boardwalk” by the Playa de Regla beach from which you can see, in the distance, the impressive Nuestra Señora de Regla (Our Lady of Regla) church. It was about 8 p.m. and we came upon a curious and almost surreal sight: a Thai restaurant sitting atop an Irish pub. We were hungry so our decision was quick and easy. We passed on the Guiness Stout and elected to enter into the Thai restaurant. As we sat in the glass-enclosed dining area, on the second floor, we could view what remained of that day´s beach enthusiasts and were closely monitoring the sun as it neared its setting point. It occurred to me that since the sun always sets in the West, this would always be the perfect place from which to view the spectacular Spanish sunsets. The sun set in the West, as expected. But,

it had been a long time since I had seen a sunset that was so inspiring. Perhaps it was the exceptional and expansive view that we had of the entire beach and the Atlantic Ocean sprawled before us, but there is no doubt that the sunset was a memorable one. Afterwards, in spite of the ensuing darkness, we were able to still enjoy the ocean view since the Regla beach is well-lit at night. We ordered Thai spring rolls, Futamaki sushi, and Pad Thai, which we paired with a Manzanilla wine from Sanlucar. It was all enjoyable,well-prepared, and delicious. I passed on dessert, but I was “told” that the Passion Fruit Crème Brulee was “out of this world.” The service was courteous and attentive, the ambiance was comfortable and quiet, and the food was amazing. Afterwards, the stroll towards the Regla church, that is also well-lit at night, was as inspiring as was the sunset. The evening breeze was refreshing, and the gentle sound of the ocean waves was calming. In the end it was a perfect evening. I was told that the Thai restaurant may close at the end of September since it is only open for the summer tourist season. However, it is part of, and connected by a passageway to, a nearby hotel. It opened in May of this year and has met with undeniable success. Curiously, though, for the people of Chipiona the summer did not end until earlier this week during the feast day celebration Our Lady of Regla. The feast “day” was actually celebrated throughout a period of four days and culminated in a spectacular fireworks display which many people enjoyed viewing from the Regla beach.
