Autumn Quince Compote This is a very appropriate dessert for this Autumn Season J You can find quinces in every fruit shop in the area. Quince is a rather unusual fruit that is closely related to apples and pears. Its scientific name is Cydonia Oblonga and it is the only member of its genus Cydonia.The quince tree is deciduous and rather small, while the valuable ripened fruit is yellowish-gold color and somewhat similar to pears in shape and consistency. The value of the fruit as a food item dates back a long time, but the small tree is often grown for its ornamental quality as well, because of its attractive pale pink blossoms. You can utilize quince in jams, jellies, and puddings, as well as used in a similar way as pears in a side dish or a breakfast food. Different countries use quince in different ways, often using the juice as a flavoring agent. However, the real benefit of quince is eating the skin and the fleshy fruit, since it is packed with beneficial nutrients, including vitamins, minerals, phenol compounds, antioxidants, and dietary fiber. We hope you will enjoy the recipe as much as we did, cooking them of course, but above all eating them!

2 ¼ lbs (1 kilo) fresh quinces 2 ½ cups (¼ kilo) white sugar 4 cinnamon sticks 2 cloves ½ cup (125 ml) mineral water

HOW TO PREPARE: • • • •

To start with, we are going to wash, peel the quinces and cut them in slices. Then we are going to put them in a pot and add the cinnamon sticks, the cloves, the sugar and the water. We are going to boil everything for approximately 30 minutes on medium heat. Check for doneness by inserting a toothpick or a knife to ensure that the quinces are tender, then our great dessert is ready J

I

n El Puerto de Santa Maria, at the Puerto Sherry marina right next to the hill that takes you along the bay, there is a blue and white building with a gazebotype structure alongside of it. They both house the restaurant known as La Mascaipacha. Recently, I had the great fortune of being invited to have lunch there. On a sunny afternoon, while gazing out on the calm waters of the Puerto Sherry marina and while enjoying the view of sailboats returning from a morning jaunt, we met with Juan Carlos Arjona, the owner of the restaurant. After introducing ourselves, the first question that I had to ask was what the word “mascapaicha” meant and why the restaurant was named that way. Juan Carlos said to me that he had named that restaurant in honor of a Peruvian chef which he had employed at another restaurant, in Jerez, with the same name. He explained that “mascapaicha” was a tribal word, in Quechua, which means “to seek time and space” and which describes the only ceremonial symbol of power which an Inca king wore during his reign in power. Since

Juan Carlos believed that his restaurant was worthy of such an honor, and since his chef was from Peru, he thought that the word would be a fitting name for his restaurant- however challenging it may be to pronounce and to spell. There is no doubt, though, that the meal that we had was “fit for a king.” Juan Carlos is a very interesting person. He describes himself as a “mariner.” He loves sailing and owns a large sailboat that was made in the United States. He has a college degree in Nautical Science and has been a Merchant Marine in the past. Juan Carlos is now the owner of a company which makes cosmetic products. His restaurant is a labor of love and it is primarily staffed by his daughter and Chef, Paloma; his son and Master Griller, Juan Pablo; and his son-in-law and Manager, Ismael. Juan Carlos is an intelligent and witty gentleman who was the perfect host for what turned out to be almost a five-hour lunch. The experience was incredible and enjoyable. As often happens in Spain, when one is enjoying the company, the food, the wine, and the ambi-

ance – time seems to fly. It is clear that Juan Carlos is interested in utilizing products of exceptional quality from all over Spain. Accordingly, at his restaurant, you can enjoy a beef steak from the nearby Rio Tinto region, and at the same time enjoy a butifarra sausage from Catalonia. We started out with slices of delicious Spanish cured ham, along with a salad that contained apple, walnuts, raisins, cherry tomatoes, and a yogurt dressing. We also tried fried cheese with a leek and bacon sauce, and come grilled “butifarra” sausages. We paired these “appetizers” with a cold bottle of Tio Pepe Fino Sherry. Not surprisingly, all of these gastronomic delights were only a prelude to what was yet to come. The focal point of this restaurant is its grill and, of course, the meats that are prepared upon it. The grill is fired by wood that is gathered from local vineyards after the yearly pruning of the vines. The choices of meat on the menu include a variety of beef, lamb, and pork, as well as seafood. We shared a lamb kebab and a veal steak, from the Spanish region of Castilla-León, as well as some lamb chops that were both grilled to perfection. One of our friends enjoyed a thick T-bone steak that reminded him of Texas beef. It was Spanish Retinto beef. There is no doubt that this place is a carnivore´s delight! Another friend opted for grilled prawns, and “ortiguillas” (which are fried sea anemones and are just amazing). To pair with these main courses we tried the 2013 Hito from Emilio Moro´s Cepa 21 winery in the Ribera del Duero wine region. It is a young red wine that is wellbalanced and easy on the palate. Everyone enjoyed it. For dessert, we shared some cannoli-type pastry filled with cream and a New York-style cheesecake with blackberry sauce. Both were incredible. To top it all off, what could have been better than a glass of Brandy? We chose Lepanto Brandy which is produced locally, in Jerez, by the González Byass winery. It was a great day, an unforgettable meal, amazing company, and an incredible place. Fortunately, that is why in Spain, an ordinary day, can be both memorable and magical. Last Friday, several of us stopped by to try a few and left very full and satisfied. Some of the things we tried were a toast of goat cheese and beef, tuna tataki, something

called a pyramid which is a combination of cheese, pate and greens, tuna with white garlic and a pate made of anemone that was delicious.
