L’Azienda “Un’antica Fattoria dal cuore giovane e sensibile per l’ambiente” La Fattoria Lavacchio, situata a 450 metri di altitudine, sulla sommità del colle di Montefiesole, nel territorio del Chianti Rufina, è un’azienda dalle nobili e storiche origini, ma con un’anima giovane e piena di entusiasmo che rispecchia lo spirito degli attuali proprietari, la famiglia Lottero, che con grande passione e professionalità la conduce direttamente. All’ interno della Fattoria, l’attività agricola, realizzata nel rispetto dei dettami dell’agricoltura biologica, si sposa armoniosamente con altre attività; prime fra tutte quella agrituristica pensata con l’obiettivo di valorizzare le produzioni aziendali e far conoscere ai propri ospiti la sua affascinante realtà. Nel parco della casa padronale si trova un secolare cedro del Libano di oltre 250 anni diventato il simbolo della Fattoria.

The Estate “An ancient farm with a young heart and sensitive to the environment” Fattoria Lavacchio, located at 450 meters of altitude, on the top of Montefiesole hill, in the Chianti Rufina area, is an Estate with noble and historical origins, yet with a young and full of enthusiasm soul that reflects the spirit of the actual owners, the Lottero family, whom lead it directly with great passion and professionalism. On the property, agriculture is realized in the respect of organic regulations and is harmoniously combined to other activities, such as the agriturism, in order to emphasis the estate’s productions and allow the guests to be aware of its fascinating reality. In the gardens of the main villa there is a secular Lebanese cedar tree of over 250 years old, now become the symbol of the farm.

I Vigneti “La qualità è il nostro obiettivo primario” Collocati ad oltre 400 metri di altitudine e con un estensione di circa 21 ettari, sono considerati l’elemento determinante per l’ottenimento di vini di alta qualità.

Per raggiungere questo scopo i terreni vengono trattati organicamente, rispettando gli equilibri naturali delle viti, sottoposte a potatura, vendemmia verde e raccolta manuale, per selezionare scrupolosamente i grappoli e ottimizzare la qualità. Le varietà delle uve presenti in azienda sono numerose, sia a bacca rossa (Sangiovese, Ciliegiolo, Canaiolo, Merlot e Syrah), che bianca (Malvasia, Trebbiano, Chardonnay, Sauvignon, Viognier e Traminer) e rispecchiano la vivace personalità dell’azienda.

The Vineyards “Quality is our prime aim” Situated at more than 400 meters above sea level and extended on about 21 hectares of land, they are considered as the main element to obtain high quality wines.

To reach this purpose, the vineyards are organically grown, respecting the natural balance of the vines and in order to maintain limited yield and ensure an accurate selection of the grapes, these are submitted to green pruning and harvest as well as hand picking. The range of grapes is varied and reflects the lively personality of the owners, including varieties such as Sangiovese, Ciliegiolo, Canaiolo, Merlot and Syrah among the reds and Malvasia, Trebbiano, Chardonnay, Sauvignon, Viognier and Traminer for the whites.

La Cantina “Il rispetto delle antiche tradizioni abbinato alle tecniche più moderne” Tutte le operazioni di cantina sono eseguite con l’obiettivo di realizzare un prodotto di elevato livello qualitativo, che esprima con personalità le caratteristiche del proprio territorio.

A tal proposito, viene ricercato in tutte le fasi un ottimale equilibrio fra tecnologie moderne e metodi tradizionali; la cantina è stata ristrutturata con i macchinari e le attrezzature più all’avanguardia.

The Cellar “The respect of antique traditions combined with the most modern techniques” All the cultural and cellar operations are realized in the aim to produce high quality wines which reflect the terroir with style and personality. For this reason a balance between traditional methods and modern technologies is researched in each phase of production.

The cellar has been renovated with the most advanced equipment and machinery.

Gli Uliveti “Dai nostri uliveti nasce un olio unico” Gli uliveti delimitano filari di vigne e campi di grano, in un disegno non affatto casuale: l’alternare diverse colture è, infatti, un metodo naturale per interrompere la diffusione di eventuali parassiti.

Gli ulivi sono coltivati organicamente e concimati con leguminose da sovescio.

Ancora oggi la “brucatura” viene fatta a mano in modo da assicurare un frutto perfettamente sano ed in fase di maturazione ottimale.

L’olio è ottenuto da oliveti situati su un terreno di medio impasto di 44 ettari per circa 8000 piante di varietà autoctone quali Frantoio, Leccino, Moraiolo e Pendolino.

The Olive Groves “From our olive groves we extract a unique olive oil” The olive trees delimit vineyards and wheat fields as to interrupt naturally the diffusion of eventual parasites.

The lands are cultivated organically and are naturally fed by the ploughed pulses planted between the tree rows.

Even today the harvest is done by hand in order to ensure a perfectly healthy fruit and of ideal ripeness.

Our extra virgin olive oil is issued from a 44 hectare land with about 8000 trees of local varieties such as Frantoio, Leccino, Moraiolo and Pendolino.

I Prodotti “Rispecchiano la natura, le caratteristiche del territorio e dell’annata” La raccolta dei frutti viene effettuata a mano, secondo la più antica tradizione contadina, per una ricercata selezione della materia prima. La limitata produzione imposta alle colture biologiche garantisce, inoltre, la migliore qualità anno dopo anno. I prodotti vengono proposti solo nelle annate in cui si raggiungono le elevate caratteristiche ricercate. L’attuale selezione di vini deriva da un’approfondita sperimentazione in vigna ed in cantina, che ha permesso di valorizzare al meglio le peculiarità del Sangiovese e di scoprire fra i molti vitigni impiantati, quelli che meglio si adattano alle caratteristiche microclimatiche del territorio.

The Products “They respect nature, terroir and vintage” The grapes and olives are harvested manually, as in the past, to ensure an accurate selection of the fruit.

The limitations in productivity as applied in organic agriculture, guaranty the best quality year after year.

Yet, only the vintages that reach the high and authentic characteristics we research are bottled.

Our wine selection is issued from a deep study in the vineyard and in the cellar that has enabled us to better emphasize the peculiarities of the Sangiovese and to discover among the several tested grape varieties the ones that are most adapted to the terroir’s microclimatic characteristics.

Bianco del Mulino IGT Toscana Bianco Prodotto con uve Trebbiano (60%) e Traminer Aromatico (40%), vinificate a bassa temperatura (12-16° C) ed affinate in acciaio per circa 6 mesi. Di Colore giallo paglierino tenue. Al naso è intenso ed elegante, persistente, con note di albicocca, pompelmo rosa e pesca.

In bocca spicca la buona freschezza e mineralità, con un finale molto piacevole.

Produced with grapes of Trebbiano (60%) and Aromatic Traminer (40%), fermented at low temperatures (12-16° C) and refined in stainless steel vats for about 6 months.

Pale hay-yellow. At the nose it is intense and elegant, with notes of apricot, white peach and grapefruit. The taste is fresh and tasty, with a very pleasant finish.

Albeggio IGT Tosscana Rosè Prodotto da uve Syrah sottoposte a pressatura soffice dopo poche ore di macerazione a contatto con le bucce. Fermentazione a bassa temperatura (12-16° c.) ed affinamento in acciaio per circa 4 mesi.

Di colore rosato cerasuolo e cristallino. Al naso sentori di ciliegia si uniscono alla fragola per poi fare spazio a lievi note floreali.

In bocca si mostra morbido all’ingresso, con una freschezza vivace data dall’acidità.

Buono il finale, pulito e sapido.

Produced from Syrah grapes, softly pressed after a few hours of maceration in contact with the skins. Pink and crystal colour.

On the nose, the cherry flavours are united to strawberry with light floral notes.

Velvety on the start with a lively freshness due to its acidity.

Quite persistent finish, clear and sapid.

Pachar IGT Toscana Bianco Selezione di uve Chardonnay (70%), Viognier (20%) e Sauvignon blanc (10%).

La maggior parte del mosto fermenta a bassa temperatura, in acciaio, dove poi rimane ad affinarsi per circa 12 mesi.

Circa il 30% del liquido fermenta e matura in barrique di rovere francese, per lo stesso periodo.

Colore paglierino tenue con riflessi dorati, elegante ed intenso al naso con note floreali e spezziate, di vaniglia e noci.

Al gusto risulta asciutto, setoso ed avvolgente con un finale piacevole e persistente.

Selection of Chardonnay (70%), Viognier (20%) and Sauvignon blanc (10%) grapes.

Most of the liquid ferments at low temperature, in stainless, where it remains, to refine, for 12 months.

About 30% of the wine ferments and matures in French oak 50 gal. barrels for the same period.

Pale straw colour with golden tones, complex, intense fragrance of flowers, vanilla and nuts, a silky, dry taste and a lingering finish.

Cedro Chianti Rufina DOCG Prodotto con uve Sangiovese (90%), Ciliegiolo (5%) e Canaiolo (5%).

Fermenta in acciaio a temperatura controllata, per circa 10 giorni e si affina in botti di rovere da 30 hl per 12-14 mesi.

Di colore rosso rubino intenso, presenta profumi di frutti di bosco e spezie con note minerali.

Al palato è asciutto, armonico, con tannini compatti e buona persistenza.

Produced with Sangiovese (90%), Ciliegiolo (5%) and Canaiolo (5%) grapes, it ferments in stainless steel, at controlled temperature, for about 10 days and ages in 30 hl oak barrels for 12-14 months.

Intense ruby red hue, with aromas of wild red berries, spices and mineral notes.

Dry, harmonic taste with dense tannins and good persistence.

Cedro Riserva Chianti Rufina DOCG Ottenuto da uve Sangiovese (90%) e Merlot (10%), fermentate e macerate in acciaio, a temperatura controllata, per circa 25 giorni.

La maturazione ha luogo prevalentemente in barrique per circa 15 mesi e per una piccola parte del vino, in botti di rovere da 30 hl, per lo stesso periodo.

Rosso rubino profondo, netto ed avvolgente al naso con note fruttate e spezie.

Morbido e vellutato al palato con sentori di amarena e vaniglia, finale elegante e molto persistente.

Fontegalli IGT Toscana Rosso Prodotto con uve Merlot (60%), Sangiovese (20%) e Cabernet sauvignon (20%). La fermentazione e la macerazione hanno luogo in tini di acciaio per oltre 20 giorni, a temperatura controllata.

Matura in barrique di rovere francese per un periodo di circa 18 mesi seguito da un affinamento in bottiglia di 12 mesi.

Colore violaceo impenetrabile, spiccate note di piccoli frutti rossi, cacao e liquirizia.

Gusto ricco e complesso abbinato a piacevolissima freschezza e ottima persistenza nel finale.

Produced with Sangiovese (90%) and Merlot (10%).

Fermentation and maceration take place for about 25 in stainless steel, at controlled temperature.

Most of the wine ages in French oak 50 gal barrels for about 15 months and a small part ages in 30 hl oak barrels for the same period.

Deep ruby red, rich in the nose with red berries and spicy notes.

Soft and silky at the palate with hints of black cherry and vanilla, elegant and very persistent finish.

Produced with Merlot (60%), Sangiovese (20%) and Cabernet sauvignon (20%) grapes.

Fermentation and maceration take place in stainless steel vats, for over 20 days, at controlled temperature. It matures in French oak 50 gal barrels, for about 18 months, followed by 12 months of bottle refining.

A deep plum hue, fragrance of small red berries, cacao and liquorish. Rich and complex taste with very pleasant freshness and persistent finish.

Oro del Cedro IGT Toscana Vendemmia Tardiva Uve Traminer aromatico, accuratamente selezionate e vendemmiate in fase di pre appassimento.

Dopo la pressatura soffice, la fermentazione avviene in vasche di acciaio a bassa temperatura.

La maggior parte del vino si affina in acciaio per alcune settimane ed una piccola parte matura in piccoli carati di rovere per lo stesso periodo. Colore giallo brillante con riflessi dorati, aromi intensi di miele e frutta candita, gusto dolce e vellutato con nuances di frutta secca, miele e vaniglia. Finale persistente.

Selected and late harvested Aromatic Traminer grapes.

Soft pressing and fermentation in stainless steel at low temperature. Most of the wine refines in stainless steel for several weeks and a small part matures in small barrels for the same period.

Brilliant yellow to gold colour, intense aroma of honey and candied fruit. The taste is sweet, warm and velvety with nuances of dried fruit, honey and vanilla.

Persistent finish.

Vin Santo del Chianti Rufina DOC Prodotto con uve Malvasia e Trebbiano sottoposte ad appassimento per circa 4 mesi. Pressatura ed inserimento del liquido nei caratelli di rovere da 50 litri dove rimane per quattro anni durante i quali il mosto fermenta, il vino matura e si concentra, acquisendo complessità ed eleganza. Di colore giallo ambra molto pronunciato, intenso, fine e piacevole al naso, con note di frutta candita, seguite da miele, vaniglia, fichi secchi e sentori di noci e caffé. Il finale è di lunga persistenza e piacevolissimo.

Produced with Malvasia and Trebbiano grapes, let to wither for almost 4 months.

After this period the grapes are pressed and the liquid is placed in the 50 liter small barrels called “caratelli”, where it remains to ferment and age for 4 years, gaining elegance and complexity.

Very pronounced amber colour, intense, fine and pleasant on the nose with notes of sultana raisins, and candied fruit, followed by honey, vanilla, dry figs and hints of walnut and coffee. The finish is very long and extremely pleasant.

Grappa di Chianti Rufina Ottenuta dalla distillazione delle vinacce ricavate dalla produzione del nostro Chianti Rufina, provenienti dai vigneti della Fattoria coltivati secondo i dettami dell’agricoltura biologica.

Il processo di distillazione discontinuo, in caldaiette a vapore, ne preserva l’eleganza, abbinando all’intensità aromatica una piacevolissima morbidezza gustativa.

Obtained from the distillation of the marc of Sangiovese employed in the Chianti Rufina and issued from the organic vineyards of the farm.

The intermittent steam distillation process, in small alembics, preserves its elegance combining its aromatic intensity to a pleasant softness in the mouth.

Olio Extra Vergine di Oliva Dalle olive coltivate nei nostri oliveti produciamo due tipologie di olio, entrambe di alto livello qualitativo ma con caratteristiche un pò diverse e frutto di un blend secondo la tradizione, della varietà tipiche della zona: Frantoio, Leccino, Pendolino e Moraiolo. Le olive vengono raccolte manualmente e sottoposte a frangitura entro poche ore. L’olio Extra Vergine Toscano IGP corrisponde alla nostra migliore selezione, proveniente da olive raccolte in fase precoce di maturazione e spremute attraverso frangitura a freddo ed evitando la fase di gramolazione. Ne deriva un olio dalle rese estremamente basse e dalle caratteristiche aromatiche molto spiccate e pulite con note di erbe fresche di campo, cuore di carciofo e melanzana.

Buona struttura ed equilibrio gustativo con note piccanti intense, senza essere aggressivo. L’Olio Extra Vergine Fattoria Lavacchio viene prodotto dalle olive raccolte a novembre. Ne deriva un olio dalle caratteristiche organolettiche un pò meno pronuciate, ma sempre molto nette ed eleganti, in cui le noti dolci possono risultare più presenti rispetto a quelle piccanti.

Extra Virgin olive oil From our olives we produce two types of olive oil, both of high quality level but with slihtly different carachteristics and a blend, in accordance with tradition, of the typical local varietals: Frantoio; Leccino, Pendolino and Moraiolo.

All the olives are hand picked and crushed within a few hours.

Toscano IGP Extra Virgin olive oil corresponds to our best selection, coming from olives harvested in early stages and cold crushed avoiding the phase of kneading.

The yield of oil coming from this process is very limited, but the quality is very high, with really evident and clean fragrances of fresh herbs, artichoke and eggplant.The taste is fruity with very good structure and intense spicy notes, without being aggressive.

Fattoria Lavacchio Extra Virgin olive oil is produced from our olives harvested in november. This oil has softer organolptic characteristics, but still net and elegant, where the sweet notes can result more evident than the spicy ones.

From our extra virgin olive oil we produce also high quality natural cosmetics using, apart from our oil, only natural ingredients mixed toghether in the respect of cosmetic laws, of environment and not tested on animals.

All the products are rigourously refined by hand, following the handcraft traditions and include soaps, body oil, face cream, body milk and candles.

L’Agriturismo “Tra gli uliveti e vigneti della Fattoria” L’agriturismo si compone di quattro case coloniche completamente ristrutturate nel rispetto dell’ambiente e della più autentica tradizione toscana: ampi spazi, candide pareti e sofisticati dettagli in un paesaggio suggestivo ed incantevole, assicurano ai propri ospiti un soggiorno semplicemente indimenticabile.

E’ possibile soggiornare in camere e lussuose suites, in appartamenti o in una villetta indipendente con piscina privata. Per scoprire interamente la cultura e la tradizione toscana, vengono organizzate settimanalmente diverse attività legate all’agricoltura, alla gastronomia e sportive, per conservare la linea e sentirsi un po’ meno colpevoli di aver ceduto alle irresistibili tentazioni gastronomiche.

The Agriturism “Immersed in the olive groves and vineyards of the Estate” Four medieval farmhouses have been completely restored respecting the surroundings and Tuscan traditions: spacious rooms, soft tones and sophisticated details in an enchanting and suggestive landscape, to ensure the most unforgettable stay for our guests.

It is possible to lodge in rooms or suites with all comforts, in independent and fully equipped apartments or in an independent villa with private pool.

To entirely discover the Tuscan traditions and culture, agricultural and gastronomic activities are weekly organised as well as sports to keep fit and feel less guilty to have succumbed to the irresistible gastronomic temptations.

Il Ristorante “Nulla sta nell’anima che prima non sia passato attraverso i sensi” Il ristorante Mulino a Vento, luogo conosciuto ed apprezzato sin dagli anni quaranta, prende il nome dal Mulino a Vento del borgo, recentemente restaurato, dove ancora oggi, la fattoria macina il grano biologico per ottenere la farina impiegata nella produzione di pasta, focacce e dolci. Immerso nel verde, in perfetta armonia con l’ambiente, il ristorante offre un’ampia e fresca terrazza che si affaccia sulle colline che circondano Firenze. In cucina vengono utilizzate materie prime, sempre fresche e genuine, strettamente legate al territorio ed al ciclo delle stagioni. Alla rigorosa interpretazione della cucina toscana vengono abbinate alcune “perle” della tradizione culinaria italiana.

The Restaurant “Nothing gets in the soul without passing through the senses first” The restaurant “Mulino a Vento” (Wind Mill), well known since the “forties” for its traditional Tuscan cuisine, takes its name from the recently restored nearby Wind Mill. Even today, in the mill, the farm’s organic wheat is grounded to obtain the flour that is used to prepare fresh pasta, bread and cakes.

Immersed in the green landscape and in perfect harmony with the surroundings, the restaurant offers a large and open-air terrace with panoramic views over the valley and hills of Florence. We use only fresh and authentic ingredients in accordance with the seasons, to produce rigorously typical Tuscan dishes and selected “pearls” of the culinary Italian gastronomy.
