We are fortunate to have so many incredible talents here for the weekend. Whether you’re joining us for the Summer Wine Down Celebrity Chefs’ Dinner; BBQ, Bourbon & Beer Tasting; or the Symphony of Flavors Grand Tasting, we have a sampling of the best Dallas has to offer. We are also pleased to be able to offer a seminar in wine with the famed glassmaker Riedel, a whiskey seminar and a chocolate seminar. And just like the range of great food at the festival, the DSO will present a sampling of incredible music this concert season. From grand classical works conducted by Music Director Fabio Luisi to movies-in-concert, from jazz to the festive tradition of holiday concerts, the DSO will present something for everyone. Welcome to the Morton H. Meyerson Symphony Center and the Dallas Symphony Orchestra’s annual Wine & Food Festival. The musical and culinary arts have so much in common. The blending of flavors is similar to the blending of harmonies. In my time with the DSO, I have had so many great dining experiences here in Dallas, and it seemed natural to bring those two worlds together here at the Meyerson.

A graduate of the Culinary Institute of America in Hyde Park, NY, Joel spent much of his early career in New York. Returning to Texas, he played an integral part in some of Austin’s most respected kitchens, including Uchiko and Foreign & Domestic. His curiosity of the state’s food culture brought him to Dallas. Joel has made contributions to the opening of the now closed Filament and stood as Chef de Cuisine at FT33 for two years. As the once Executive Chef of Izkina, Joel focused on all the experiences he has had in his career to showcase what a small establishment can really do.

Joel started a large campaign as of 2019 to aid in the growth of the Dallas area by adding to Izkina a rooftop garden, apiary, and full commitment to a completely no waste kitchen. Now the current Farm Manager of Profound Microfarms, Joel has implemented more to the farm with growth and efficiency. Joel also runs farm dinners during the cooler months of the year, bringing some of the best of the Dallas culinary scene to the farm to showcase the bounty the farm offers and what our chefs in DFW can do with what’s offered.
Tiffany’s authentic approach to Southern cooking landed her on the 2022 James Beard Award finalist list in two categories – Best Chef: Texas and Best New Restaurant for Roots Southern Table. A fierce advocate for sustainable and nutritious food policies, as well as gender and racial equity, Tiffany serves as a member of Les Dames d’Escoffier, and is a spokesperson for the James Beard Foundation’s sustainability efforts.
Andy knew he would eventually open a pâtisserie. His Mother, Dora, pushed him to make his dream a reality. She told him “if you’re going to do it later, might as well do it now while you’re young and full of Heenergy.”isstriving to make his dream – Le Rêve Gelato & Pâtisserie – the sweetest “rêve” or “dream” that anyone will have when they visit.
Andy is a 23-year-old Dallas area native, who took his passion for French pastry and European desserts and turned it into an entrepreneurial venture bringing modern, upscale desserts to Dallas. From a young age, Andy was drawn to the kitchen. Coming from a family where food was at the forefront of family dynamics, Andy was drawn towards desserts.

Freshman year in high school, Andy had a burning desire to attempt the French Macaron. After failing horribly at his first attempt, he continued to persevere until succeeding. Friends started asking for Macarons for birthdays and events. One day, annoyed, Andy’s Mother told him to quit making Macarons or start selling them. Andy took this seriously and Andy’s Macarons was born. This venture led to experiences at events like weddings and pop-ups at Farmer’s Markets.
Beaumont, Texas native Tiffany Derry is the founder of Tiffany Derry Concepts and co-founder of T2D Concepts, the Texas-based purpose-driven hospitality group behind Roots Chicken Shak, Roots Southern Table, and ‘Shef Tiffany spice and apparel line. Denied from her first cooking job at the age of 15 because of her race and gender, Tiffany has risen her way through the culinary ranks to run her own restaurant concepts, appeared on national television, and cooked for President Obama at the White House.
Tiffany makes regular appearances as a judge and contestant on television shows including Chopped, Chopped Kids, Top Chef, The Great American Recipe, Beat Bobby Flay, Tournament of Champions, The Great American Soul Food Cook-off, Bar Rescue, Top Chef Junior, Top Chef Amateurs, and more. Born in Houston and raised in Dallas, Chef Dreyer’s pursuit of a culinary career started after he spent some time working with high-end catering firms and restaurants in California at the age of 20. His passion and talent for cooking were quickly identified by the chefs he worked for, who encouraged him to explore it further. Shortly after, Chef Dreyer enrolled at the California School of Culinary Arts in Pasadena. Chef Dreyer led several fine dining kitchens and ultimately returned to his Texas roots in 2005 as Chef de Cuisine of The Grand Hyatt DFW. In August of 2007, Dreyer was recruited to return to The Ritz-Carlton and alongside Dean Fearing, opened his namesake restaurant Fearing’s. For the next 11 years, Fearing’s restaurant received many accolades and Dreyer Co-Authored the Texas Food Bible cookbook and was named Best Rising Star Chef by CultureMap Dallas. In 2018, Dreyer took on a new role as Executive Chef of Promised Land, Oprah Winfrey’s Estate. A year later, Dreyer returned to Dallas and opened Hall Arts Hotel. In November 2020, Dreyer was recruited by What If Syndicate group as Executive Chef to open Monarch Restaurant, the 49th floor gem in downtown Dallas’ National Building.
Led by Jay Finnigan and Diane Corcoran from Traverse City Whiskey Company, this is a two-part seminar that will start with bourbon education and tasting, followed by an “at home” mixology course. This seminar is a creative way to introduce your palate to what makes a good bourbon, where bourbon gets its flavor and how to make your favorite classic cocktails at home! & 6PM
