Making pepperoni is a craft, so every product is carefully monitored to ensure the right amount of time in the smoker. Each type of pepperoni has a unique program of smoking and drying. It is during this time that the flavours and texture develop. Maturation takes time After the cold-smoking, the pepperoni is transferred to our climate room, where it hangs for two to three weeks at a temperature around 16°C and humidity around 74-78%. The products are inspected everyday to check for the right consistency before they are finally sliced, cubed or packed as sticks.
