Double Chocolate Mint Chip Cookies

A holiday tradition in my family for as long as I can remember, these cookies are perfect for dipping in milk. You can substitute different chip flavors if you want, but I think these are by far the best.
Ingredients
• 1 cup butter, softened
• 1½ cup sugar
• 2 eggs
• 2 tsp. vanilla extract
• 2 cups flour
• 2/3 cup cocoa powder
• 3/4 tsp. baking soda
• 1/2 tsp. salt
• 2 cups mint chocolate chips
Directions
1. Preheat oven to 350°.
2. In a large bowl, cream butter, sugar, eggs and vanilla until light and fluffy.
3. In a separate bowl, whisk together flour, cocoa, baking soda and salt. Add to wet ingredients and mix until not quite combined, with a few streaks of flour remaining.
4. Stir in chocolate chips.
5. Place approximately 2 Tbsp. of dough per cookie on an ungreased cookie sheet. Bake 8 to 10 minutes. Let cool slightly, then transfer to a wire rack to cool completely.
