Meet The Household Cavalry
LT COL Ed. Mayward MBE (CO), The Mayor and David Almond Mayor’s Officer continued
The Household Cavalry Foundation is truly grateful to be Mayor Sayonara Luxton’s Charity for 2016/17. With its links to Windsor dating back to The Restoration of The Monarchy under Charles II in 1660, The Household Cavalry (HCav) is also proud of its 356 years in the local community. HCav recruits nationwide, and our ceremonial duties’ training is at Combermere Barracks which is also the home of our armoured regiment. Many of our veterans settle in the Windsor, Ascot and Maidenhead area.
So the majority of The Household Cavalry Foundation’s focus - soldiers, casualties, veterans, families, heritage and horses - is local. HCav also appreciates initiatives such as the mandatory provision of homes for veterans in any future local property developments, and the offer of places for our children at Holyport College. HCav is formed by the Army’s two senior regiments: The Life Guards (our sovereign’s bodyguard since Charles II), and The Blues & Royals.
HCav is proud of its unique fighting record. Primarily we are combat soldiers. Soldiers from HCav’s four antecedent regiments (The 1st and 2nd Life Guards, The Royal Horse Guards (The Blues) and the 1st Royal Dragoons) have fought in every major campaign since 1660; in the 21st century in Afghanistan, Iraq and the Balkans. HCav’s Battle Honours since 1661 can be seen on their Standards (flags) hanging in Windsor’s Garrison Church. HCav’s world-famous Ceremonial Duties include State Visits in Windsor. next page

A very ambitious lady, Beccy Green, talks to us about horses, Ascot Racecourse and flying.
Beccy Green at work
I
was very lucky to grow up around ponies and spent most of my childhood competing in the pony club progressing to eventing, so horses have always been an integral part of my life. After graduating from Southampton University I wanted to follow my passion in the equine world, so I applied to work at Fontwell Park Racecourse in West Sussex. I worked my way up from front desk to Commercial Manager, responsible for corporate hospitality and
sponsorship. I ideally wanted to stay in the South so the natural progression would be to work at the world’s most famous racecourse. A job came up at Ascot Racecourse – the role wasn’t exactly what I was looking for but meant a foot in the door. Initially I was responsible for the Owners and Trainers, which was superb fun, but when an opportunity became available in the commercial team, I leapt at the chance and now hold the position of Business Development Manager. I have always loved the thoroughbred horse and I am very passionate about racehorses having a life after racing – the industry now has a strong commitment to helping them find a second career. I have recently just acquired my third ex-racehorse Fruity O’Rooney. Fruity was a very successful racehorse winning £150,000 in total prize money and even won at Ascot back in November 2015. I have only had him since April, but he has turned his hooves to his new career in eventing brilliantly finishing the season with a 8th at a British Eventing 80 class! turn over darlingmagazine.co.uk | winter 2016/17

I come from a family of aviators, my father was a commercial pilot and now my brother & sisterin-law both fly commercially. I have always wanted to learn to fly but it was difficult to find the time with a career and my horse commitments, but recently I realised if I don’t do it now, I never will. I will never forget my first solo flight; it was totally surreal to be sat on the runway on my own. Going up is actually the straightforward part, but then it dawned on me that I had to land the plane without my instructor there to get me out of trouble!
I went through all sorts of mixed emotions from sheer terror to total exhilaration. Thankfully I managed to land without giving local residents an earth tremor – looking back it was probably one of the best landings I have ever made! On the day of my pilot exam I was nervous beyond belief, but the flying conditions could not have been more perfect! After a two hour flight made up of navigation exercises, diversions, emergency procedures and general handling, I heard those words ‘well done, you have passed!’ The relief was unbelievable, it has been my biggest challenge to date and I am now looking forward to going on a few adventures, although I will be choosing my co-pilots carefully… I am not sure I have chosen my hobbies very wisely as they both require so much commitment, not forgetting the expense! But the effort and investment has without doubt been worth it. DM

amily life in the Meadows household revolves around polo. Phil and Suzie, and daughters Saskia and Genevieve, run the Berkshirebased Cool Hooves polo set up as well as the prestigious Guards Polo Academy at Guards Polo Club in Windsor Great Park.
Phil and Suzie started playing as a hobby, but it was not too long before Phil said “we are going to run a polo club”. A year later Phil’s dream became a reality and today the family is immersed in the “polo bubble”.
Suzie explains more: “All four of us work and live polo. We all love horses and everybody has worked from the ground “Anyone can learn to up – mucking out stables, play polo,” says Suzie. Yes, the pressure can for Phil to go from poo pooing the idea to him be horrendous, but we are our own bosses and saying ‘we need to move because I need to buy turn over some horses because I want to play polo’! we love what we do.”

but you do have to be a certain type of family to make it work. You need a sense of humour and be fairly laid back and having the same passion about what you are doing is inspiring.” Genevieve, who played in the recent Ladies’ Charity Day at Guards Polo Club, agrees: “If I didn’t have the passion for polo I wouldn’t be able to work as well as I do with Mum and Dad. MY BEST FRIEND! For the health of our beloved pets
can’t believe a whole decade has gone by since I first opened the doors to Sunninghill Veterinary Centre in October 2006. It’s been a very enjoyable ten years filled with lovely pets and their owners, many of whom become friends. Of course there are sad times and people often say to me that they couldn’t do my job, but truthfully the happy, fulfilling days outweigh the sad. Growing up on a farm surrounded by animals made me realise very young that I wanted to be a vet. I was always ‘saving’ some unsuspecting creature as a child. Now here I am many years later and I’m so pleased I chose this profession. Most days are different and I never know quite what to expect. The morning might be
filled with puppy & kitten vaccinations and helping new pet owners with their questions about house-training, diets and microchipping. Then suddenly the call comes in that Teddy has been in a road traffic accident or that Percy has eaten his owners contraceptive tablets - yes, all three months worth! I’m lucky to work with wonderful colleagues who share my enthusiasm in caring for the health of beloved pets. We also like to help small charities like Rescue Remedies and Hope for Hedgehogs. Join us at The Victorian Fayre for a great day out whilst supporting local charities. DM

Rebecca’s creative world
I
started out in life as an art student, moving to London when I was 19 years old. I studied Theatre Design at Wimbledon School of Art and continued to spend a number of years as a prop buyer and set decorator. Whilst I truly loved my job, the challenges I faced each day, such as trying to live and work in this area whilst having a family and maintaining a good quality of life, began to outweigh the benefits. It was at this point that I turned my attention to one thing I had always loved, flowers. I decided that I could be as equally creative and imaginative in this field as I was in my current job. I began with a flower stall at Virginia Water Station and keeping a work- life balance proved difficult. But gradually people could see what I was trying to achieve and began inviting us to their restaurants, bars and hotels to make beautiful flower arrangements on site. The first time I was asked to do someone’s wedding flowers, I thought that the way to approach it was like it was a set - to create and design a beautifully atmospheric world. This innovative approach proved to be a very good way of thinking and elevated us out of the ‘regular florist’ arena and into a league of our own.
Change is quite often a good thing Since then the business has become hugely successful, and we have since created hundreds of wedding arrangements for many beautiful brides, including our close friend Martine, Darling Editor! As well as weddings, we also cater to many other events like private houses and Christmas installations. We do a very special range of Christmas themed oversized gate wreaths, which open on electric gates and then neatly close again. We also run a flower school, which opened its doors a couple of years ago and it has proved very successful. One of our most popular workshops is our Christmas wreath making class. DM

M
y Uncle let us have the shop at a much reduced rent and with £900 in our pocket, we took the plunge to open our own flooring business, Savill Flooring. I was working for Waitrose in Customer Service at the time, while Andy, my husband, took on the responsibility of running and setting up the new business. I took Wednesdays off work to support him so he could go out on inspections. After a year, we decided I could leave Waitrose and join the business full time. I knew nothing about flooring, measurements or working in a completely male-dominated industry, however, I did understand about customer service, drive and determination, which thankfully got me through! Fifteen years on and with our children, who are now 18 and 15, working part-time with us, we really have the family business we hoped to achieve. Of course there are days, where we have to compromise on each other’s point of view,

We have been lucky to have the opportunity to work for the British Royal family, as well as other Royal families from around the world. We cover floors in residential homes, offices, shops and many commercial premises. We work with local charities, providing new, reduced rate flooring to those who are without, which is really lovely to be able to give something back to the local area of Englefield Green, who accepted us with open arms. Can’t trust your bladder? Chiropractors often hear lady patients say “I didn’t tell you when I first consulted you for my lower back pain, that my bladder control was weak. However, since I’ve been receiving chiropractic treatment my bladder control is significantly improved. Do you think there is any connection?” Anatomically, nerves from the lower thoracic vertebrae and sacrum supply the sphincter muscle at the bottom of the bladder. The sphincter responds to pressure within the bladder to prompt emptying. If the electrical signalling to the sphincter is inefficient the bladder may be only 25% full but signal it is 90% full and trigger urgency. When chiropractic treatments are performed to dysfunctional vertebrae in those spinal regions nerve function can be enhanced, pain can be reduced and muscular control can be improved. Do I think there could be a connection? The ladies’ neurology has already discovered YES.

CELEBRATING 25 YEARS ... in property and charity
Nicky Morris
T
wenty-five years ago when we first opened Buckinghams I had four young children. Twenty-five years later those children have grown up and I have five grand-children! Three live locally and two are based in Edinburgh. Where have the years gone? I was born and raised in Virginia Water, schooled in Sunningdale and Chertsey and have never really moved too far away. My last move brought me back to Virginia Water via Hampshire, Woking, Chobham and Englefield Green, and it is a special place for me and for my family. To be able to run a successful business in this wonderful village is a real privilege. Two years ago my youngest son, Will, joined our team and works with us in the rentals department at Buckinghams which is a great joy for me. At Buckinghams, we are very proud of the personal service we offer all our clients; landlords and vendors, tenants and buyers. Our loyal and long-serving staff are exceptional in their values and key to our success. My hobbies include golf and I am delighted that this has allowed me to be able to raise some considerable funds for DEBRA and for the Children with Special Needs Foundation charities.
Nicky Morris and family
DEBRA is a local charity that helps people suffering from Epidermolysis Bullosa, a group of genetic skin conditions which cause the skin to blister and tear at the slightest touch. This year I have been honoured to captain the DEBRA Golf Society and through this have introduced a number of people to this very special charity. Our combined efforts are raising an enormous amount of money to assist with helping families affected by EB as well as funding research into finding a way to eradicate this terrible disease. My partner, Peter, has helped me in this challenge as has our adorable blue roan Cocker Spaniel, Seve. Seve has even joined us on some of the DEBRA golf days! DM

Lasting Powers of Attorney (LPAs)
A
t Bonnetts we see more and more of our clients and their family members living longer due to advances in medical science. While this is a great positive for individuals and their families, we also see more people who lose their capacity to manage their affairs. For this issue of Darling Magazine we have prepared a note about LPAs. 1. What are they? There are two types of LPA; Property & Financial Affairs and Health & Welfare. The Property & Financial Affairs LPA allows your attorneys to access accounts, withdraw money, pay bills and deal with pensions and investments. They can also buy and sell your property. Health and Welfare LPAs allow attorneys to make decisions about care, about life sustaining treatment and ensure that you are properly looked after. 2. Who can you appoint? You can appoint your spouse, children or other family members or friends that you trust, you can even appoint a solicitor. It is possible to appoint one or more replacement attorney to act in the event that your attorney is unable to act.
34 winter 2016/17 | darlingmagazine.co.uk
3. When to make an LPA? You can only make an LPA if you have mental capacity. If you no longer have capacity a lengthy and more expensive application to the Court of Protection is required. 4. My property and finances are jointly held, do I need an LPA? Banks often do not allow a joint account holder to continue operating the account unless they have an LPA for the person who has lost mental capacity. This will mean that neither of you will be able to access the funds in the account. 5. Registration LPAs need to be registered before they can be used, a process which takes between 8 and 12 weeks. We advise clients to register their LPAs immediately. Please contact Graeme Black and our team of specialists in our Sunninghill office for more information – we are happy to meet you in your own home. DM

A
common misconception of the conveyancing process is that it’s all about getting to that magical moment of ‘exchange of contracts’. This is the point at which both the buyer and seller are contractually bound to buy and sell to each other. Whilst that is hugely important (and exciting!), what is perhaps just as important is ensuring that what you are buying has good ‘title’ and/or that a future sale of the property does not cause issues. This is where your solicitor is going to play a pivotal role and trust us, you will be pleased that he/she took a little more time now to iron out that potential problem with that right of way or that Planning issue! The process of buying and selling property has seen many a change since 1929 when Bonnetts Solicitors was first established but there are a few pointers that can ensure a smoother transaction.
For example, if you are selling a property: • Those dusty deeds that may be hiding in the attic could really prove to be quite useful to your solicitor! So, keep hold of them and get them to your solicitor as soon as you can. • If the property is leasehold, try to collate as much information as possible about how the estate is managed, Ground Rent, Service Charges, buildings insurance etc. If you are buying a property: • Try to ensure your finances are in place as soon as possible at the outset. If there is a gift being made to you by a third party, let your solicitor know as this will be particularly relevant to a mortgage lender. • Get a survey! That property may look great on the face of it but the old adage ‘Buyer Beware’ still remains true in conveyancing terms. Having been established on the high street for as long as we have, Bonnetts can offer an experienced and efficient service and would be only too happy to help. If you would like more information (or indeed some more useful pointers) please feel free to contact our Residential Property Department on 01344 62388. DM

Deliciously Different Did you know that Lewis the butchers has a catering side? Lisa Hedges
How did you get involved with The Lewis Kitchen? I have been friends with Nigel Lewis for many years. I worked for British Airways for 28 years as cabin crew. As my daughter grew up I had more spare time and wanted to branch out into new things. At the time, Nigel was setting up The Lewis Kitchen, the events side of Lewis the Butcher of Sunningdale, and it felt like a natural transition for me to get involved. I knew how driven and professional Nigel is and he had confidence in me to deliver to the same high standard. It’s a real privilege to be able to work with people I genuinely admire and like. What type of events do you do? We do all kinds of events; from private dinner parties to lavish weddings and corporate functions. Nothing is too big or small. Not forgetting of course that we are well known in the local area for our barbecues and hog roasts. We also enjoy supporting events in the local community such as the Sunningdale Carnival, the Sunningdale Christmas lights and the Sunninghill Victorian Fayre.
What makes you different? We believe that a special event deserves special care and attention. We use a team of established chefs who have been highly trained to prepare and deliver our food. We are very choosy about our staff. We think it is important that they are not only professional but personable and able to communicate with guests. Our produce is of the highest quality. Our fruit and vegetables come from Covent Garden Market, we have fresh fish from Newlyn in Cornwall, and of course our locally sourced meat from Lewis of Sunningdale. We want our clients to be happy then we are happy and like Mary Poppins we clean up and leave your premises spick and span! Our Golden Girl
inspiring woman
Fresh from winning three gold medals at this year’s Paralympic Games in Rio, Equestrian superstar Sophie Christiansen OBE chats to Darling about her incredible journey to becoming a British Paralympic icon.
W
hen you first meet 28 year old Sophie you are struck by her strong, bubbly infectious personality. For someone who is one of our most decorated Paralympians, with no less than eight gold metals , four gold post-boxes in her honour, she is refreshingly down-to-earth. Born with cerebral palsy, she has had to overcome many health issues. At the age of six Sophie’s physiotherapist recommended horse-riding at the local Riding school for the Disabled (RDA). Ten years later, and a testament to her tenacity, aged just 16, she became the youngest rider to compete at the Paralympics when she represented Great Britain in Athens. Having attended Charters School in Sunningdale, Sophie went on to obtain a first class master’s degree in mathematics at Royal Holloway. She now combines a career on the global sporting stage along side working two days a week at Goldman Sachs.
One of Sophie’s greatest achievements is the trust she set up with support from Ascot businessmen Alan Carr MBE and Ronnie Wilkie. Aptly named “Team Sophie” this provides funding for up and coming athletes who struggle to meet the financial costs of the sport. While chatting with Sophie it becomes clear she is passionate about helping others and has made amazing connections with people. Before Rio, she received a message from a ten year old girl with cerebral palsy who wanted to watch her train. Her father who accompanied her was unbelievably the film and TV composer Nick
Hooper, whose credits include Harry Potter, and My Family and Other Animals. Working together with Nick they composed a piece of music for her to use in Rio. It was named ‘Spirit of Athene’, after her horse, a beautiful composition that perfectly complimented her gold-medal winning performance. This story is very special for Sophie. She has put it on her Facebook page so we can all watch her performance accompanied by this outstanding music. It gave me goose bumps as I listened and watched. Darling is ‘Team Sophie’ all the way. I Want Everything! Pavilion interiors recommended by Martine Curzon
T
hree years ago, my husband David and I were searching for our dream home in Surrey after the stresses and strains of living in London. We centered our search on the Virginia Water area and eventually found exactly what we were looking for. As soon as we got the keys we set to work making the house a home. It was then that I discovered Pavilion Interiors at Wyevale Garden Centre on the A30 between Bagshot and Sunningdale. It is not always immediately obvious what makes a place so appealing. But at Pavilion Interiors you see what makes it so special the moment you walk through the door. The showroom is beautifully set out as 19 themed rooms, each carefully dressed and presented to ensure every item is perfectly displayed. I remember the worried look on David’s face when I exclaimed “I want everything!”. We had to steady ourselves and keep things realistic but I knew we were not going to leave empty handed! A short time later, and after talking to the wonderful sales staff who were relaxed, informative, and ever so
helpful, we began to fill our house with gorgeous furniture. We started with a few pieces of beautiful Elm wood furniture with legs painted in a soft, warm grey and whilst admiring other pieces in the showroom I decided the sumptuous large corner sofa on which I was sitting was simply too comfortable not to buy! The bedroom furniture followed, including what is now my favorite white chest of drawers. Our house was becoming our home. I’ve become a regular at Pavilion Interiors, and why not? They change their stock and displays regularly and every time I visit there is something new and exciting to see. The other day I was driving through Sunningdale and I saw the Pavilion Interiors van. It was the same delivery men who delivered our furniture. When they saw me they waved, (it put a smile on my face, as they are such a friendly bunch) and at that point I realised that I no longer live in London. This is my home and they’ve helped me make it my home sweet home. DM pavilioninteriors.com t. 01344 875168 e. pavinteriors@aol.com darlingmagazine.co.uk | winter 2016/17

Martha Collison, our local superstar won “Bake Off “ 2014 shares a recipe with Darling
Martha Collison
These buns are a festive twist on a Chelsea bun. I think the mincemeat filling makes a welcome change from a classic mince pie and, shaped like a Christmas tree, this is a great Christmas centrepiece perfect for sharing.
MAKES 11 ROLLS
1. Make My Favourite Enriched Dough recipe and, once risen, roll it into a large rectangle about 45cm long.
1 x 410g jar mincemeat
2. Spread the mincemeat over the dough in an even layer, then cover with the caster sugar. Sprinkle the marzipan over the mincemeat, followed by the orange zest.
75g marzipan, chopped into small pieces
1 x My Favourite Enriched Dough recipe (page 138)
50g caster sugar
3. Starting with the 45cm side, roll the dough towards you into a long sausage shape. Slice off the ends of the sausage so you can see the spiral, which will make all the buns look the same. You can still bake the offcuts, if you like! Cut into 11 equal-sized rolls and put onto a lined baking sheet in a tree formation – 1, 2, 3, 4, 1. Cover with oiled cling film and leave to rise for 45 minutes to 1 hour, until almost doubled in size.
Zest and juice of 1 unwaxed orange 1 egg, beaten 50g smooth marmalade 50g icing sugar Glacé cherries (optional)
4. Preheat the oven to 200°C/180°C fan/gas 6. Brush the buns with the beaten egg then bake for 20 minutes, or until the top is golden brown and the buns have risen. 5. Heat the marmalade in a small saucepan until liquid, then brush over the buns to create a sticky glaze. 6. Mix the icing sugar with the orange juice so it forms a thick paste. Put into an piping bag and pipe lines across the bread, following the natural line between each row of buns to create a tinsel effect. You could even add glacé cherry baubles, if you like. Serve warm for the freshest flavour.

short story
By Michael Joyce
W
hen I went to live in France a few years ago I had enough French to communicate, but had no idea of French customs. I bought a country cottage and found myself immersed in a peasant farming community. (In France the word peasant is not derogative). One day soon after moving in I heard a noise outside my front door. On opening and to my surprise, I found Jo Jo a neighbour and his wife picking the walnuts from my tree just in front of my house. “Bonjour Monsieur” he said, “My name is Jo Jo, short for Joseph, do you like walnuts?” I said I did. “Did you know that walnuts go well with a good bottle of St. Estephe, you don’t happen to have a good bottle of St Estephe?”, he enquired. Taken by surprise at being asked if I had the wine to go with my walnuts that he was picking, I proceeded cautiously. Within minutes he made it clear that he had been picking the nuts from my tree for fifteen years and he was not going to stop because I had bought the house. Before leaving he gave me a bucket of my walnuts and said he would be back the next day with the wine.
46 winter 2016/17 | darlingmagazine.co.uk
As promised, the next day he arrived, this time without his wife and we sat down in the kitchen to open the bottle. “I have had this bottle for 30 years” he said”. The bottle was very dirty but I just managed to see the words ‘Cru Bourgeois.’ “But Jo Jo, you can’t keep a Cru Bourgeois for 30 years”. He looked crestfallen. He started to pour the wine which looked more like coffee. “No good?” he said”, “No good”, I replied. “Ah well” he went on, let’s give it to Hillaire he drinks anything. I always wondered if this was a ploy to get to drink my wine. Over a much younger bottle I heard Jo Jo’s life story in about 15 minutes, including his lack of religion and his recent abstinence from sex. So this was my immersion into the very open manner of the French peasant. I soon learned that to lock the front door was considered rude. If you were out, neighbours would enter and if you had an open bottle of wine they would help themselves. Always marking on the bottle how much they had drunk and frequently leaving a bunch of carrots on the table, and once even a dead rabbit. So, if you are thinking of moving to France in your retirement remember it’s not just the language you have to learn! P.S.: Later that year Jo Jo came back with a bottle of “eau de vie”, homemade liquor made from my walnuts, he did the same with my apples keeping me well stocked up with cider.
