FESTIVE MULLED WINE FRUITCAKES By Debbie Dickinson
A festive cake that is fantastic on its own or decorated with Christmas sprinkles. Makes about 8 cupcakes or a 5” round cake tin.
Cream together the Butter and Sugar.
What you need: 150g Sultanas 200g Mix of any other Dried Fruit – Raisins, Cherries, Blueberries 3 Tbsp Mulled Wine – alcoholic or non-alcoholic. Zest and Juice of an Orange 115g Butter 115g Brown Sugar 2 Large Eggs 150g Plain Flour ½ tsp Mixed Spice
Gently stir in the soaked Mixed Fruit (together with any juice in the bowl)
What to do:
Add the Eggs, Flour and Mixed Spice.
Spoon into cupcake cases – about 100g in each case (or ¾ full) Bake the cupcakes in the oven for about 30 minutes (or about 1 ½ hours for a large cake) Leave to cool on a wire rack. These are delicious as they are, but to make them look more festive pipe green buttercream - mix 100g Butter with 100g Icing Sugar until pale and creamy, then colour using food paste colouring - and decorate with shop-bought sprinkles.
Preheat your oven to 140°C Fan Enjoy!! Put all the Fruit into a bowl and add the Mulled Wine, Orange Juice and Zest. Mix to combine, cover and leave to soak for a couple of hours (or overnight).
