We are seeing that adventure is back on the menu as consumers explore and embrace international flavours and unexpected blends. Yuzu is a small citrus fruit with a uneven, slightly wrinkly yellow skin mostly grown in Japan.
It has a tart, sour flavour and a strong scent. The taste of Yuzu can be described as a blend of a lemon and a grapefruit but it is more complex with distinct herbal and floral notes along with its acidity.
The Yuzu trend is one we have seen in the last couple of years in fine dining and is a great flavour choice if you are looking for a twist to the all time favourite lemon flavour. Dawn is bringing the Yuzu flavour into the bakery world in the easy to use format of a flavouring paste (COMPOUND).
