Yogurt Yuzu Muffin COMPOSITION 12 Muffins 75 g 900 g Yogurt Cake batter 250 g Yuzu Crème Dawn Decorgel Neutral Dawn Exceptional® Compound Yuzu

BASIC RECIPE 1. Yogurt Cake Batter 1000 g Dawn Cake Mix Yogurt 350 g Eggs 300 g Oil 250 g Water 1900 g Total 2. Yuzu Creme 350 g Dawn Exceptional® Creme Custard Mix Vanilla 1000 g Water 80 g Dawn Exceptional® Compound Yuzu 1430 g Total 3. Glaze Dawn Decorgel

WORKING METHOD 1. Yogurt Cake Batter • Mix all ingredients for 3-4 minutes with a flat beater on medium speed. • Fill into a greased muffin baking tray. • Bake at: Deck oven: 180ºC / Fan oven: 160 ºC. • Baking Time: +/- 25-30 minutes. 2. Yuzu Creme • Mix all ingredients with a whisk until you reech a smooth creme.

ASSEMBLY • •

Fill muffins with Yuzu Creme after cooling down and cool down in fridge. Mix Decorgel Neutral with Yuzu Compound and spread on top.

Yogurt Blueberry Slice Cake COMPOSITION 1 x 60x40 Tray 2850 g Yogurt Cake batter 1300 g Dawn Exceptional® Delifruit Blueberry 150 g Sliced Almonds or/and granulated sugar

BASIC RECIPE 1. Yogurt Cake Batter 1500 g Dawn Cake Mix Yogurt 525 g Eggs 450 g Oil 375 g Water 2850 g Total

Can be used with any Dawn Delifruit Fruitfilling

WORKING METHOD 1. Yogurt Cake Batter • Mix all ingredients for 1 minute on slow speed and 3 minutes with a flat beater on medium speed. • Fill the batter into a paper lined baking tray and spread out. • Pipe the Delifruit Blueberry diagonal on top. • Sprinkle the unroasted almonds or/and granulated sugar on top. • Bake at: Deck oven: 180ºC / Fan oven: 160 ºC. • Baking Time: +/- 35-40 minutes.

BASIC RECIPE 1. Yogurt Cake Batter 1000 g Dawn Cake Mix Yogurt 350 g Eggs 300 g Oil 250 g Yogurt 1900 g Total 190 g Frozen Raspberry (max. 10%) 2090 g Total

WORKING METHOD

ASSEMBLY

1. Yogurt-Raspberry Cake Batter • Mix all ingredients for 1 minute slow and 3-4 minutes on medium speed with a flat beater. • Fold in frozen raspberries carefully. • Fill into a Bundt Cake form.

Tip: Mix the frozen fruits with Quelli to avoid juicing

WORKING METHOD 1. Yogurt Cake Batter • Mix all ingredients for 3-4 minutes with a flat beater on medium speed. • Fill into a desired size Loaf Cake form. • Dip with a scraper dipped in oil a center line. • Bake at: Deck oven: 170º-175ºC / Fan oven: 150 ºC. • Baking Time: +/- 40-50 minutes depending on size.

Warm up the Glossy Icing White to 40°C add 4-6% of Compound Lemon and glaze the Yogurt Lemon Cake.

Tip: For a thinner glaze add some extra sugar syrup

1. Creme Cake batter • Mix all ingredients for 1 minute slow and 3-4 minutes on medium speed with a flat beater. • Fill the mini cake molds half full. • Bake at: Deck oven: 170º / Fan oven: 150 ºC. • Baking Time: +/- 15-20 minutes depending on size.

Temper the chocolate or warm up the Fatglaze Drops to 40°C and glaze the mini bundt cakes.
