Developing Lake Charles and The Jambalaya News will be one and the same, keeping you up to date on what’s happening in your neck of the woods as the Lake Area continues to grow. Developing Business News SHUCKS! is Coming! If you’ve ever been to Abbeville and had the opportunity to dine at SHUCKS!, then you’ll be ecstatic to hear that they will be opening their second location in Lake Charles. SHUCKS! Is closing on a property between Nelson and Lake Street on the Contraband Bayou just after Christmas. I’m excited since I only live a few minutes away! I hear they are going to serve the same Cajun cuisine as their Abbeville location and they are building from the ground up, with a totally new and innovative scene for live music and entertainment. It’s going to be one of the most happening places around.

We prepare each stuffed shrimp, each bowl of crawfish etouffee, each plate of fried or grilled oysters with love and pride.” I can’t wait to become part of the SHUCKS! family! I just might have to make a trip to Abbeville before they open here. I’ve been enticed by them from the time Marilyn Brunt wrote that article for The Jambalaya News in her column, “Traveling the Back Roads” in the July 2017.! Recent & Upcoming Developments in the LC Downtown Area Downtown Lake Charles is growing at a fast rate. We all know about the progress of the apartments coming early next year and what it means for our downtown area. But, did you know that the old Luna Live is now Zephyr’s? I hear they have 41 draft tap beer

choices with a little bit of everything. Of course, you’ll find some of your local favorites there. They will also have wine and mixed drinks, and food offerings include New York-style pizza and wings. Some exciting music has been lined up as well, starting with a local lineup, of course! Sounds like Fridays may be a good day for anyone looking for boiled crawfish and Cajun music.

You’ll soon also find another exciting extension to the downtown food and nightlife scene by way of the Panorama Music House, located in the old Sloppy’s Downtown at 331 Broad Street (formerly the original Rikenjaks location some years back). The owners of the current Rikenjaks on Ryan Street also own Panorama, which should give you a good indication that it’s going to be a happening place on the downtown scene. Look forward to them to opening around February of 2019 with some great music, along with a menu that includes what Jay Ecker refers to as “Pub Grub.” There will also be a private party area. When it comes to entertainment with drinks and food, expect the Panorama Music House to have it all!

A unique eatery will be opening early next year on Nelson Rd. Poke Geaux opened in Lafayette this past February and the owners encountered such success that not only did they open another location in Lafayette, they’re coming to Lake Charles as well. And what is poke? Basically, a poke bowl is a Hawaiian dish of chunks of raw, marinated fish — usually tuna or salmon — tossed over rice and topped with various vegetables, sauces and more. There are lots of delicious variations on the poke bowl. Stay tuned for more information on their opening date! A Nothing Bundt Cakes franchise is also coming to Nelson Rd. in the first quarter of 2019. They specialize in fresh, readily available (you guessed it) Bundt cakes in various sizes and flavors, and from the reaction to the posts on Developing Lake Charles, folks here can’t wait for it to open. The owners have owned a franchise in Beaumont since 2015, and are excited about coming to the Lake Area.

Finally, Daley’s Boxing Studio (formerly Daley’s Boxing Gym) has relocated from 1736 Common Street to the downtown area at 526 Ryan Street. Scott Daley opened for business a few months ago and is planning on a grand opening sometime in January 2019. They are currently open for business as they work on the upstairs level of the building. When all of the renovations are complete, they plan on holding amateur and professional boxing events there. Look for Daley’s to bring professional and

A Word From Your Publisher — Wow, what a year! We are going into the New Year with a really big bang! We are now The Jambalaya News and Developing Lake Charles rolled into one big, happy family! I’m happy to bring you this merge of print and media style news and I feel confident I will be bringing more to the table for all involved, whether you are a reader or an advertiser. I want to be part of something big in my hometown and I feel this is it. Hope you enjoy our new format as we transition to Developing Lake Charles from The Jambalaya News. As we head into 2019, my goals and priorities are mounting up as I add a new business venture to my list. Setting goals are a big part of my New Year’s resolutions. This year, I’m thinking big! I want to develop a better plan for my family and work life to blend together as I move into my new business merge with the paper. I’ll probably add losing weight to my list, and of course, fitness is just as important as losing that extra weight and staying healthy. I’m not a smoker, but I know that quitting tends to be a big resolution for those that do. If I were a

smoker, I’d make the change to vaping and go from there, and I am seeing a lot of people doing this. As we head into the final week of the year and celebrate the final hours of 2018, I look forward to new challenges and expect to make changes to better my life this year, and every year. We’re entering Mardi Gras and crawfish season and they are both equally enticing to me! With Mardi Gras approaching, I will gear up to our annual Mardi Gras issue and look forward to the festivities that will come with the 2019 season. This year, I will be attending my first Mardi Gras ball and I’m surely looking forward to it! Southwest Louisiana Mardi Gras has been named the second largest in the state and we have the largest Mardi Gras magazine around. I’m looking forward to my second year of this publication and am enjoying every minute of it! I hope every one of you have a blessed holiday season and look forward to new life adventures in 2019! May all your adventures be wonderful!

Your Local News Caldwell Names Deputy Chiefs Newly-confirmed Chief of Police Shawn Caldwell has named two officers to serve as deputy chiefs under his administration: Detective Sergeant Franklin Fondel and Detective Sergeant Michael Nicosia. Fondel is a 20-year veteran of the Lake Charles Police Department and Nicosia is a 17-year veteran of the department. Deputy chiefs are appointed by the police chief with approval by the mayor. A 25year veteran of the department and a deputy chief since 2013, Caldwell was confirmed as the new police chief by the Lake Charles City Council late last month. His appointment to a six-year term as well as the appointments of the two deputy chiefs for three-year terms will be effective on January 16 upon current Chief Don Dixon’s January 15 retirement.

Children’s Miracle Network at CHRISTUS Ochsner Donates to DeWanna’s Community Closet CHRISTUS Ochsner Health Southwestern Louisiana Foundation and Children’s Miracle Network presented a donation in the amount of $8,000 to DeWanna’s Community Closet to assist in providing basic essentials to Calcasieu Parish students in need. DeWanna’s Community Closet provides much needed resources like school uniforms, belts, jackets, underclothes, socks, shoes, backpacks and school supplies free of charge to all Parish

educators to make available to students in need. Children’s Miracle Network funds raised through CHRISTUS Ochsner Health Southwestern Louisiana Foundation provide advanced pediatric surgical and treatment equipment and school-based wellness and education programs benefitting children in Southwest Louisiana. Recent CMN efforts identified a need for basic hygiene and clothing supplies among children in the area, and CMN is donating to DeWanna’s Community Closet as part of their ongoing efforts to address this need. President and CEO Clark Yelverton announced the construction and anticipated completion date of the fourth CSE branch, as well as a $1 million bonus dividend and interest return, to go back to CSE members. CPSB Receives Certificate for Excellence in Financial Reporting The Certificate of Achievement for Excellence in Financial Reporting has been awarded to the Calcasieu Parish School Board by the Government Finance Officers Association of the United States and Canada

for its comprehensive annual financial report. The Certificate is the highest form of recognition in the area of governmental accounting and financial reporting, and its attainment represents a significant accomplishment by a government and its management. The CAFR has been judged by an impartial panel to meet the high standards of the program, which includes demonstrating a constructive "spirit of full disclosure" to clearly communicate its financial story and motivate potential users and user groups to read the CAFR. Your Local News The Southwest Louisiana Chapter of the American Petroleum Institute recently donated $75,000 to the McNeese State University Foundation to establish the American Petroleum Institute Endowed Scholarship for students.

John Bel Edwards and McNeese State University honored CITGO Lake Charles for its $300,000 contribution to the McNeese First Choice Campaign. With recent decreases in funding, McNeese engineered an innovative plan to self-generate revenue with a goal to meet the needs of growing academic programs in support of the economic boom in SWLA. It is the hope of McNeese that this partnership will continue to expand economic development and enhance the quality of life in Southwest Louisiana. CITGO will contribute $100,000 per year over a three-year period for a total donation of $300,000 to the McNeese First Choice Campaign. The company’s contribution will be physically recognized with a CITGO plaque in a special academic location within the university.

Nine graphic art students from SOWELA Technical Community College recently competed at the Houston American Advertising Federation Student Conference, with three students winning awards. The top three teams included SOWELA students Jasmine Vital earning first place, Aspen Keel earning second place and David Sonnier receiving third. At the competition, students were separated from their college groups and placed into teams of 10-12 students from more than 20 universities across Arkansas, Louisiana, Oklahoma and Texas. The students were then given the same corporate sponsor and 10 hours to submit a creative solution, along with marketing, media plans and a live presentation. Additional participating students were Austin Rains, Vivian Barrilleaux, Emily Whittington, Bethany Parker, Ayasha Gillespie, and Chance DeCuir. The students were accompanied by SOWELA graphic art instructors Darrell Buck and Erik Jessen.

Mayor’s Arts Awards Winners 2018 The Arts Council of SWLA and the City of Lake Charles recognized contributions from the area’s creative workforce during the annual Mayor’s Arts Awards. Mayor Nic Hunter presented awards to area leaders from the arts community in seven categories. Matt Young, Director of Cultural Affairs for the City of Lake Charles and Erica McCreedy, public relations specialist at First Federal Bank of Louisiana, were recognized with the Keystone Award, which is given to an individual who acts as the hinge for productions and events in the area. The Citizen of the Arts award was presented to Colleen Benoit, a driving force behind the growth and development of the ballet world in the Lake Area. The combined forces of the Sesquicentennial Exhibit and the SWLA Genealogical & Historical Library earned them recognition with this year’s Citizen of the Humanities award. The Patron of the Year award was

given to The Lake Charles/ SWLA Convention & Visitors Bureau, whose mission is to provide leadership in initiating and coordinating the worldwide marketing of Calcasieu Parish as a highly desirable leisure and convention destination. Mayor Hunter awarded the Arts Educator of the Year to Maplewood Middle School Band Director, Mickey Smith, Jr. The newly developed, but rapidly growing organization, Keys for Kids, took home the award for Arts Organization of the Year. The Keys for Kids program has refurbished disused pianos to be distributed to local schools. Mayor Hunter honored Eddie Mormon as Artist of the Year for the final award of the evening.

It will be held Sat., Jan. 5, 8 a.m. – 1 p.m. at the Lake Charles Civic Center South Parking Lot. Twelfth Night Jan. 6 Mardi Gras makes its flamboyant entrance with the Twelfth Night Parade Extravaganza inside the Lake Charles Civic Center Coliseum. TIP$ FROM TIP Metabolism Blues You may be surprised to find out that the only part of the human body that improves with age is the digestive system; fact is, your metabolism slows down as you grow older, so you get more nutrition out of the food you consume. If you look at this process from an evolutionary standpoint, in the days when we were cave dwelling hunter/gatherers, the older we became, our ability to hunt and gather became increasingly difficult. Gather less food, your health is bound to decline over time. Nature, in its wisdom, arranged for this metabolic change to work for the favor of our ancient ancestors. What was a boon to our far past predecessors has become an albatross to many of us in our present day lifestyle. It is now common for us to have a Walmart, a convenience store, a supermarket, or a McDonalds and who knows what other food emporium virtually on every corner near us. It is far too easy to hunt and gather in our present world. This process also makes weight loss more difficult as the pages of the calendar go blindly on their merry way. Package Thefts Continue Shortsighted is what comes to mind as I read the news and social media sites reporting on the thieves that are plaguing our neighborhoods. There are cameras almost everywhere; although they are tucked away, the cameras are quite visible to the naked eye if you know to look for them. I would assume that those in the business of stealing would avail themselves of this kind of knowledge, but they apparently do not. There are videos posted almost daily of an evildoer practicing their trade that clearly identifies the culprit, and shows vehicle, clothing style and markings. It is beyond me how they blatantly continue their trade, knowing that they will be identified and caught. One would think they would try some other kind of “work.” Guess I’m naïve; it’s been going on since the beginning of time without much change. Unfair Surcharge While dining in a restaurant on a recent trip, I encountered a surcharge for using a credit card. Again, maybe I’m naïve, but not in this instance. This is no more than an attempt by the restaurant to charge a 4 percent increase without appearing to up their prices. Credit cards do cost merchants to accept them; like rent, utilities, phone, advertising, etc., it is a cost of doing business. But think how you would react to a $1 charge for using the place setting, $.50 for washing pots and pans and so on. I’m sure the vast majority of diners use charge cards, even at fast food outlets. The charge card fee is a normal part of doing business. Any restaurant patron thinking the credit card company is doing something new or irregular is mistaken. A restaurateur trying to pass off that charge is going for a price increase, trying to appear like it’s the card company forcing it. A little research shows that 10 states and Canada have outlawed the practice. We are a little behind here in Louisiana, but I hope we catch up. I am very pro-business, particularly small business, but I support open, honest and up-front business policies. Deception is not a good way to perform business. Prices increase enough by themselves, trying to blame one on the other guy makes one ponder on what else is not above board.

The Jambalaya’s Annual Mardi Gras Issue 2019 It’s time to plan for The Jambalaya’s annual Mardi Gras issue! We are very happy to announce that we will have two Mardi Gras issues in 2019. Along with our regular glossy Mardi Gras issue of the 2019 Royal Courts, which comes out the night of the Gala (March 4), we will also publish a glossy, digest-sized Twelfth Night issue that will come out January 6! Excited? We are! In case you don’t recall how this works, let’s recap the following: Each full-color page costs $300. Most krewes choose two pages, which cost $600. Krewes can get page sponsors by selling four ¼ page ads at $150 (one krewe page free), two ½ page ads at $300 (one krewe page free) or one full page ad at $600 (one krewe page free) or any combination of ads and cash to equal number of pages desired. Deadline for 2019 Fortunately, this year brings us a longer season. All copy and photos must be in by February 15 AT THE VERY LATEST. NO EXCEPTIONS! All payments must be in by February 1. Delta Dawn’s Crawfish Chowder and Bisque I don’t know about y’all, but for me crawfish season is to short. Most years I get withdrawals when it ends! But I’ve become wise to the end of the season and invented new ways to feel like it is in full swing still. First off, I always boil more crawfish than my family can eat, peel the extra and put them in the freeze, (we all need good home-grown crawfish in the freezer for the off season). This crawfish chowder recipe tastes so good I feel as if I’m eating at a fancy restaurant. It gives me the feeling of everything I love about a crawfish boil combined into one heartwarming dish! Only difference is I get full faster and don’t have to peel and dip. Did I mention it is pretty much just as satisficing? Another beautiful thing about this recipe is that it works for the crawfish chowder and can also work for a crawfish bisque! I prefer it chowder style myself. How ever you prefer it you’ve got to try this amazing recipe this winter, it is total comfort food! Crawfish Chowder or Bisque 2 lbs. cleaned crawfish tail meat 1 stick of butter unsalted 2 medium onions, diced 1 medium to large green bell pepper, diced 2 cups diced new red potatoes 1 large bunch of green onions sliced from root to tip (reserve the top half for garnish when serving) 2 cups of water 2 tablespoons flour 2 cup heavy whipping cream 2 cup half and half 2 bay leaves ½ cup sour cream ½ cup Blue Plate Mayonnaise 10 OZ frozen corn sweet corn 2 garlic cloves minced 2 to 3 teaspoons of Tony Chachere’s More Spice Creole Seasoning, depending on your taste

In a small bowl whisk the flower into the water and add it to the pot along with the heavy whipping cream, half and half, Blue Plate mayonnaise, sour cream, sweet corn, garlic, bay leaves, Tony Chachere’s More spice, black pepper, and salt. Stir it until blended and continue cooking over a medium heat for about 15 minutes, stirring occasionally to keep it from sticking to the bottom. Add your crawfish and turn it down to a low heat and let it simmer for about 15 minutes, stirring occasionally. Serve it hot and garnish with the green onion tops you reserved. Bon Appetit! Bisque

1 bunch of green onions, chopped bottom to top and separate (the darker green tops for later)

If you’d like to make this dish into a bisque, simply put the amount you want to turn into bisque in a blender and pulse it to your desired consistency. I like to reserve some crawfish tails to garnish when serving along with the green onion tops, and sometimes even a frozen whole crawfish depending on if you are serving company and want it to appear extra fancy! Either way this dish is a winner and I say it is one for the recipe roster for sure!

In a 7-quart Dutch oven over a medium heat add the butter and let it melt before adding the onions, green bell pepper, new potatoes, and bottom portion of the green onions. Stir occasionally to be sure it doesn’t stick to

Cooking spray, for pan Flour, for surface 1 (8-oz.) wheel of brie 1/2 c. whole berry cranberry sauce 1 tbs Cajun Red Head Season All 1/4 c. chopped pecans 6 sprigs of rosemary, cut into 1" pieces. Directions: Preheat oven to 375° and grease a mini muffin tin with cooking spray. On a lightly floured surface, roll out crescent dough, and pinch together seams. Cut into 24 squares. Place squares into muffin tin slots. Sprinkle (yes sprinkle) a pinch of Cajun Red Head Season All over each square. Cut brie into small pieces and place inside the crescent dough. Top with a spoonful of cranberry sauce, some chopped pecans, and one little sprig of rosemary. Bake until the crescent pastry is golden, about 15 minutes.
