Let Honey-B Ham Set Your Table

The cooler weather is finally here! That means the holidays will soon be upon us, and we will be gathering with friends and family, making new memories to cherish in the years to come. A Word From Your Publisher — The month of October has slipped away, and November is here along with the holiday season (whether or not we welcome it), along with some colder, humid weather. I really prefer colder weather over the heat, but I hate the Louisiana humidity that comes along with it! I’d much rather the dry Colorado cold over the humid Cajun cold. But I’m not here to complain, because I really can’t stand the heat! So, I accept the cold and all the gumbo that will accompany it. I’m also welcoming the holidays and the family gatherings. I love to feed people and I enjoy cooking, so there is nothing more natural than a table full of holiday food at my home and family gathered around it. Last year, I found that getting a pre-cooked ham and turkey from Honey-B Ham & Deli was a welcome break from waking up early to cook, and it allowed me more time to actually bake more sweets and such with the extra oven space! So this year, I’ll be on my way to Honey-B Ham. With one less thing to worry about, I’m planning a full course of sides and many sweets to follow that act, not to mention the wine!

Do I feel bad about not cooking the turkey? The answer is no. I’ll enjoy not having to wake up early to get the turkey in the oven and waiting anxiously to be sure that it is fully cooked. It takes out all the guesswork for me and I can enjoy my extra sleep and more time with my family. The next thing on my mind is when to set up my Christmas tree this year. I’m not always on time and for the first year ever, I felt like setting it up the day after Halloween! That was surely a surprise, because I’ve never been one to set up the tree before Thanksgiving. Could it be the colder weather, or the increasingly earlier Christmas displays in the stores? I’m not sure, but I will be putting up the tree on Thanksgiving Day. Hopefully, my family will help and we will create even more memories as we discuss our plans for Christmas, New Year’s Eve, the New Year to come, and last but not least: Mardi Gras! ~ Dawn Daley

Your Local News McNeese Engineering Ambassadors Selected Ten students from the College of Engineering and Computer Science at McNeese State University have been selected as Ambassadors, a new student organization established to assist the college with its recruiting efforts. Among the responsibilities for the team of juniors and seniors are conducting tours, participating in local and regional science fairs, helping with Engineering Week activities and supporting teachers of the CITGO Innovation Academy at E.K. Key Ele-

mentary School in Sulphur and other science, technology, engineering and math related events. The students are Kylie Flesch, Kristen Lemaire, Sarah Lyons, Alexis Durio, Kianna Bias, Everett Miller, Hans Alex Funk,Patrick Green, Wendy Tyrgrett and Brandon Fontenot. McNeeese is Host Site for Hult Prize Competition McNeese State University has been selected as a university host site for the 2018 Hult Prize competition, billed as the world’s largest university competition that offers student teams an opportunity to win $1 million. The Hult Prize, in partnership with the United Nations, provides start-up funding to the winning team

of students that develops an innovative startup enterprise to solve a specific global problem. This year’s theme is “Developing a Business Idea That Can Create Meaningful Jobs for 10,000 People in the Next 10 Years.” McNeese students will compete in teams to pitch their ideas to five judges on Saturday, Nov. 17, from 9 a.m. to 4 p.m. at Baker Auditorium in Farrar Hall. The winner of this inter-campus event will automatically advance to compete in one of the 15 regional finals happening around the world next March. One winning team from each host city will then move onto the final round of competition to be hosted in September 2019, where the winning team will be awarded the $1 million prize.

CITGO Continues Tradition Awarding Scholarships to Employees’ Children The CITGO Lake Charles Refinery continues a 31year tradition by awarding scholarships to deserving high school graduates who are children of CITGO employees. This year, four 2018 high school graduates were selected through an application process based on CITGO scholastic criteria. Months of research, including focus groups with potential Bigs, as well as current Bigs, Littles, donors, staff, and leadership showed that the brand was not effectively connecting with younger, prospective mentors or conveying the urgent mission of BBBS. The organization is intentionally pivoting from messages of the importance of mentoring, to messages of the urgent need for the adults in the community to step up to defend the potential of every child. The brand repositioning and new look are just the beginning. In the coming year, BBBS of Southwest Louisiana will transition to a new, modern, nationwide technology system, participate in new training, and use the new positioning to refocus efforts on recruiting local volunteers.

The lighted boat parade will begin at 8:15 p.m. along the Lakefront Promenade. Each boat will be judged on originality, creativity, decorations, presentation, and enthusiasm. Prizes will be awarded in first through third places for boats in length of 35 feet and under, and 36 feet and over. Other categories include best crew and best of show. Afterwards, the sky will explode into a kaleidoscope of color with the fireworks extravaganza. The seawall will be wired for sound as the simulcast music will broadcast from KBYS 88.3 FM.

Port Wonder - $20+ Million Lakefront Project Proposal Announced Lake Charles Mayor Nic Hunter, along with other state and local officials announced plans for a proposed $20+ million lakefront project, Port Wonder. Port Wonder is a proposed educational and entertainment venue to be located on the north shore of Lake Charles, in between the Cypress Alligator Pond and the former Harrah’s parking garage on city-owned property. The proposed venture will include site improvements, renovation of the parking garage and the construction of an iconic structure that will house the Children’s Museum of Lake Charles and potentially the Louisiana Department of Wildlife and Fisheries’ Science Center and Educational Complex (SCEC). The SCEC component of the project is contingent upon the Louisiana Trustee Implementation Group’s (TIG) final approval of the location and design changes proposed for the center. “This is a momentous announcement and a historic day for Lake Charles and Southwest Louisiana,” said Mayor Hunter. “This announcement today puts us one step closer to delivering on a commitment to lakefront development. I cannot stress enough how this proposed project would not be possible without the contributions and consideration of multiple public and private partners. To be able to deliver this game-changing development is something everyone should be proud of and we look forward to entering the final stages of the approval process.” “To date, some funding partners have taken official action on allocating money to this project and other partners will consider official action regarding contributions to this project over the coming weeks and months,” added Mayor Hunter. “No new tax proposition is needed to fund this project.” Pending final approval, the collaboration of these two entities will consolidate two unique projects under one roof for an educational, entertaining and thrilling visitor experience at a prominent location that will benefit not only local residents, but also tourists seeking attractions in the area. “This is an exciting opportunity for Lake Charles to provide a public science center and educational complex to not only enhance the use of its outdoor spaces but to also encourage a better understanding of fisheries and restoration programs,” said Gov. John Bel Edwards. “I commend Mayor Hunter and everyone involved for their work in bringing this concept forward. We understand that this process is ongoing and greatly appreciate the TIG’s consideration of the proposal. ”

TIP$ FROM TIP The Season Begins Ho, Ho, Ho! So it begins: the most favorite season for most of us. Whether you are deeply religious or extremely secular, the Christmas season is most anticipated time of the year. Beginning with Halloween, transformed from the originally pagan feast of Samhain celebrating the end of harvest and the coming of winter, the expectations start to build. Nothing means family and friends like the whole season. Whether your focus is on the birth of baby Jesus or a mythical jolly old elf, it means warmth in the hearth and hearts of masses of folks. It brings forth the better nature of the human animal, the desire to share, to congregate with likeminded friends and enjoy the bounty that has been provided from our year’s labors, no matter how great or small. Christmas transcends nationality, religion, region and climate. The exchange of gifts, the mingling of family and the inclusion of close friends does not require religiosity, it only requires the desire to share the good things that life has brought us. Often, strangers are included in our mix of warmth and good cheer. When someone wishes you a “Merry Christmas,” it matters not your faith or background. That person is wishing you the very heartfelt desire for you to feel warmth and love; it is not necessarily meant to be any kind of a statement of religious affirmation. You take from the phrase what you will, but it is sent truly from the heart. The attempt to have the phrase “Happy Holidays” used in place of “Merry Christmas,” is okay, but I’ll bet that deep inside, you’re thinking the latter. Be Careful Out There The holiday season also means an intensity of shopping activity, as we select just the right gift for everyone on the list. It is also the time of year that the “evildoers” heighten their skills. Our law enforcement agencies, particularly the Sheriff’s department and the Marshal’s office, provide extra security in shopping centers; however, they cannot be everywhere you are. They do their best to protect you and me. The bad guys have 24-7 to plan their actions, and sometimes, you and I have less than seconds to defend or protect ourselves. That is why it is critical for you to take a bit of extra caution. I have written of this in the past and it is as critical now as it has ever been. You have to stay awake--wide-awake--when out there. The hunter/gatherer is laying in wait for your wrong move. When you park your car, make sure it is in a highly visible location. Parking around back in the dark is an open invitation to a thug. Not only is there is nothing wrong with having a buddy with you as another pair of watchful eyes, it is highly desirable. When exiting a building, stop and survey the surrounds. Are there suspicious people loitering around? Is someone following you? If so, don’t be afraid to ask for store help in reaching your car. If you don’t take the time to make yourself aware of your situation, you will be spending more unpleasant time with the results of your inattentiveness. Either put your packages in your trunk or keep them hidden from prying eyes, should you be making additional stops before returning home. And speaking of home, with the popularity of home delivery exploding, certain bottom dwellers have additional opportunities to take stuff from you. Security cameras cannot prevent thievery, but it may intimidate them some and will provide some information to possibly identify the criminal. Security cameras are becoming more affordable all the time and are a wise investment.

Along with our regular glossy Mardi Gras issue of the 2019 Royal Courts, which comes out the night of the Gala (March 4), we will also publish a glossy, digest-sized Twelfth Night issue that will come out January 6! Excited? We are! In case you don’t recall how this works, let’s recap the following: Each full-color page costs $300. Most krewes choose two pages, which cost $600. Krewes can get page sponsors by selling four ¼ page ads at $150 (one krewe page free), two ½ page ads at $300 (one krewe page free) or one full page ad at $600 (one krewe page free) or any combination of ads and cash to equal number of pages desired. Deadline for 2019 Fortunately, this year brings us a longer season. All copy and photos must be in by February 15 AT THE VERY LATEST. NO EXCEPTIONS! All payments must be in by February 1. Well we made it to November now the crazy schedule starts, rushing here, rushing there, craziness everywhere. Cajun Red Head Chef to the rescue with this simple but elegant entree that can be prepared in 30 minutes. Oh, and by the way your kids will love it. We often have some of our youngest daughters’ friends over around meal time. They are a treat especially when they start taking pictures and putting them on that Snappy Chat app! Cheers for now. Pan Fried Chicken with White Cream Sauce 4 boneless skinless chicken breasts 2 tablespoons unsalted butter 2 green onions (chopped) 1 cup dry white wine ½ cup light cream ½ cup low sodium chicken broth 1 Tbs Cajun Red Head Wild Game Seasoning 1 Tbs Cajun Red Head Season All (or equivalent) 1 Cup flour Fresh ground pepper to taste Directions Cover each chicken breast with plastic wrap and lightly flatten with a rolling pin or meat tenderizer mallet. Cut in each breast in half. Season well with Cajun Red Head Wild Game Seasoning. Dust in flour and set aside. Melt butter in a large skillet on medium heat. Cook chicken for 4 mins each side, until golden and almost cooked through. Remove to a platter and keep warm. Reduce heat to low and add onion. Cook for 5 mins, stirring, until soft. Increase heat to medium and add wine. Simmer for 2 minutes. Stir in chicken broth and cream, bring to a slow boil. Once you bring it to a boil cook for 10 minutes on medium heat, until the sauce is reduced slightly. Add 1 tablespoon of Cajun Red Head Season All to the sauce and reduce heat to low and cook 5 more minutes. Rena Belle’s Yellow Squash Casserole A Story about the Glue That Binds Us Together & Stands The Test of Time By Dawn Daley

It’s the holiday season and at this time of year, many of us can remember the best food we’ve ever had while dining at another person’s house. Rena Bell’s yellow squash casserole was one of the best. Whether it was just the company, or the most magnificent family-prepared meal, I will always recall how great everything tasted. Rena Belle Henning Monceaux (aka Maw Maw Belle) is from Welsh and made it her life’s goal to create a family tradition of preparing lunch each and every Sunday. She’d invite family and friends over after church, keeping family togetherness alive and well. Rain or shine, in sickness and in health, she’d do this faithfully right up until the final months of her last year in 2016. According to her grandchildren, this went on for over 51 years. I realized that the family’s closeness was kept alive through the technology age by this kind, little old lady who stood only about 5 feet tall and whom everyone genuinely loved. She held the knowledge of how to bring and keep a family close together through bonding over a wellprepared Sunday lunch. I also knew she had many family recipes that she created from memory that needed to be shared. I gathered with other family members and friends as we came together to say the blessing, and then enjoyed her delicious meal. The day I visited, I believe she was 94 years old. I remember sitting down with her and asking if I could do a story on her family tradition and get some of her recipes. She agreed, but we never had the chance to get the interview done before she passed away. I happened across these images by chance and I wanted to share her uniqueness that was known to not only Rena Bell’s family, but the town of Welsh as well. She was in Ronnie Collins’s official music video, ‘Town of Fewer People’ that was about Welsh. In fact, she can be seen walking into the church in that video. I’m sure that when she left, she went home and lovingly prepared her usual traditional meal to feed not only her family and friends, but a memory that will last in their hearts, bringing them closer together for generations to come. I know that even though I was among a lot of people I didn’t know that day, I was greatly touched by her efforts and I that I belonged there at that moment in time. Maybe her Sunday lunches will live through one of her family members, who will keep the tradition alive. I’ve also thought of starting some tradition like this for my own family. This is what we need in today’s society and what we need to hang on to, as it is the glue that binds us together and keeps us in each other’s lives – this breaking of bread together. May we all be so blessed to have a Maw Maw Belle in our lives. She will be remembered and loved by all who knew her. I will never forget that Sunday lunch, and thankful that I was blessed enough to have been invited to dine at her table. To quote my mother, Dorothy Hughes (who has also dined at her table), "I want to be more like her when I grow up!" Rena Belle’s Yellow Squash Casserole 2 cups yellow squash, sliced to preferred size 3/4

of melted butter

2 eggs, beaten 1 teaspoon salt 1 cup chopped onion 1 cup grated cheder cheese 1 cup cracker crumbs 1 can cream of mushroom soup Sprinkle on top 1/2 teaspoon paprika 1/2 teaspoon parsley Combine all ingredients, pour into a greased casserole dish. Sprinkle paprika & parsley on top. Bake in oven preheated to 350 degrees for 40 minutes. Let sit for about 10 minutes before serving warm.
