INTENCIÓN DEL DISEÑO DE EHB
T
odo chef sabe que una comida extraordinaria es el resultado de algo casi imposible de explicar, una experiencia rica en matices que el chef de EHB, Esben Holmboe Bang, conoce mejor que la mayoría. Al desarrollar este proyecto, buscamos enfatizar esta alquimia, la herencia histórica de la medicina botánica de China que fusiona ciencia y naturaleza, así como la habilidad culinaria única de un chef tan distintivo. Al encontrar el equilibrio en el arte de los materiales, EHB es una cuidadosa mezcla que honra lo existente y al mismo tiempo expresa lo contemporáneo. Al ingresar a EHB, las referencias a la naturaleza, la forma orgánica y los elementos botánicos son evidentes al instante. EHB DESIGN INTENT
E
very chef knows remarkable food is a result of the near impossible to explain, a richly nuanced experience that EHB chef Esben Holmboe Bang knows better than most. In developing this project, we sought to emphasize this alchemy, China’s historical heritage of botanic medicine melding science and nature, as well as the unique culinary skill of such a distinct chef. Finding balance in the artistry of materials, EHB is a careful concoction of honoring the existing while expressing the contemporary. Upon entering EHB, the references to nature, organic form, and botanicals are instantly apparent. Drawing from Holmboe Bang’s culinary philosophy, the first floor’s design pays homage to Norway, and the chef’s use of organic, biodynamic, and wild produce. Meanwhile, in Oslo, Norway where Chef Holmboe Bang’s three-Michelin-starred restaurant Maaemo resides, ingredients are sourced from local forests; local flora and fauna are handpicked by dedicated floor and kitchen staff–giving new meaning to ‘farm to table’.
EHB exists inside a historical villa in Shanghai’s French Concession district, a culturally unique neighborhood and environment known for its architectural heritage. The surrounding consulates and grand residences provided a foundation for the restaurant’s initial design, as well as a continual source of inspiration. In the early 20th century, well-known Chinese dignitaries including the Soong family - V.T. Soong, and Soong Mei-Ling (Madame Chiang), called the villa home for some time.
In the Tearoom, the light and neutral palette allows the food and flavor to shine. Chinoiserie style wallcoverings paired with mortise-and-tenon details derived from Chinese tradition pay homage to both the existing architecture and the local vernacular. Classic western paneling and flooring showcase details that mimic the mortise-and-tenon joint found within Asian architecture, complementing the modern furnishings of Scandinavia. These details are usually hidden and constructed of wood, yet here, a usually enigmatic concept is celebrated and made palpable, in its final form a bronze metal. The essence of Norway is most apparent in the main dining and lounge floors, in homage to the cooking philosophy of Holmboe Bang. The ground floor celebrates the project’s Chinese and natural underpinnings, and its second and third floors use native Nordic design forms, materials, and colors, to honor the esteemed Chef’s distinctive dining experience. The third floor with living room is one of the more architecturally rich spaces. The dining experience engages each guest from start to finish, where the Chef invites diners to his ‘living room’ for pre- and post-dinner hospitality. The existing open ceiling with exposed trusses and beams of mortise-and-tenon construction, is quintessential to the overall atmosphere of the space.
An original fireplace sets the stage of the lounge, where the furnishing and architectural finishes are in keeping with the surroundings, whilst maintaining an element of Scandinavian influence. So that the lounge could sustain a feeling of intimacy whilst ensuring programmatic function, the wine tasting room has been placed in a visually and physically central location. This placement creates semi-private nooks for groups of diners, while adding a sense of intrigue. Its glass sides allow for visual continuity and the wine itself becomes a design element. More notably, the paneled entrance has been designed to evoke the monumental and undulating nature of a Nordic Fjord. www.designwire.cn

Entre el usuario y el habitante
E
ntre el arquitecto y el usuario hay solo una línea que los separa, y otra que los cose en un entelado que se borda en tiempo presente continuo. Son, quizá, muchos los tipos de usuarios que habitan el sitio para degradarlo o para apreciarlo. O, visto desde otro ángulo, el sitio mismo los obliga a usarlo de una manera en especial o incluso los expulsa como si fuesen extraños. Como si el lugar tuviese conciencia y es que en realidad es una exteriorización mental de su “usuario” que lo usa o lo mal usa. Cuántos tipos de usuarios conforman la míriada de categorías para un mundo cada vez más dividido de ideologías exuberantes. O, cuántos tipos de lugares conforman el océano inacabado de espacialidades diseñadas por el ser humano para existirlo cuando de usarlo se trata. Porque eso es lo que es un usuario. Alguien que usa algo para algo. La pregunta es ¿Qué pasa cuando deja de usarlo? No solo con el lugar, también con el usuario mismo. Acaso el espacio diseñado para ser vivido merece ser reducido a la acción que implica usarse. Puesto que todo aquello que se usa también se desecha. Y todo aquel que usa es usado también. Cuando manejamos un auto, lo estamos usando, al mismo tiempo el auto nos usa para que lo manejemos y pueda tener sentido la existencia de ambos objetos. El ser humano como objeto de uso y el auto como objeto usable. Lo mismo sucede cuando el espacio se diseña para la vida. Se usa y se desecha y nos usa y nos desecha también.
¿Cuándo sucede cada caso?, cuando la compatibilidad de uso no es una respuesta ni por lo menos una coincidencia. Porque el espacio es una permanente relación con la existencia humana de abuso o de moderación y cualquiera de los dos casos subsisten para resguardar la lógica de una realidad cambiante y azarosa y, por lo tanto, compleja y dicotómica. El uso del espacio se somete al usuario y esto es un intercambio y una extensión, al mismo tiempo, una dualidad eterna. ARQUITECTO-USUARIO podría afirmarse que son dos vocablos inseparables pragmáticamente. Pero, si la vida misma está llena de usuarios con y sin arquitectura. Desde sus orígenes el ser humano fue un gran usuario de cada objeto y o circunstancia que descubrió útil para sus fines de sobrevivencia. Aunque estos fines, las más de las veces, no fueran visionados de manera consciente. Me refiero a la heurística del acto en sí. Al descubrimiento mismo de la usabilidad de “algo” para su trascendencia en el devenir del ser humano pensante, sintiente y haciente. Entonces, ¿la arquitectura?, ¿es acaso un objeto que se construye, edifica o diseña para ser usado, únicamente? O, mejor dicho, es un acompañante inherente a su usuario. O, ¿eso debería de ser? Porque la realidad es que hay espacios que lo expulsan con la frialdad de una noche sin estrellas. Con la misma suerte que, en el origen del homo sapiens pudo haber sido expulsado de una cueva por un oso con un rugido casi letal. En tal caso, habría que preguntarse cuántos “osos letales” hay en el presente en los espacios para la vida que expulsan a sus usuarios.
Al comprenderse el espacio arquitectónico en términos de usabilidad es dejar de percibirlo como un vacío sensible con memoria y recuerdo y en consecuencia establece al usuario como un cuerpo que usa ese espacio para resolver necesidades físicas y corporales, pero no lo percibe en su completitud porque el usuario no es un ser sensitivo. La dimensión humana no es un cuerpo que usa solamente, es un cuerpo, un ente y un ser. Tres dimensiones. El cuerpo que usa los objetos, el ente que los percibe y el Ser que los siente. Y esa trinidad o triada define un concepto mucho más amplio. El “habitante”, un ser que no solo usa; también constituye su domicilio, lo celebra, venera y eleva y donde el espacio arquitectónico da lugar para ello.

Between the user and the habitants
B
etween the architect and the user there is only one line that separates them, and another that sews them into a canvas that is embroidered in the present continuous tense. There are, perhaps, many types of users who inhabit the site to degrade it or to appreciate it. Or, seen from another angle, the site itself forces them to use it in a particular way or even expels them as if they were strangers. As if the place had a conscience and it is actually a mental externalization of its “user” who uses it or misuses it. How many types of users make up the myriad categories for an increasingly divided world of exuberant ideologies. Or, how many types of places make up the unfinished ocean of spatialities designed by human beings to exist when it comes to using it. Because that’s what a user is. Someone who uses something for something. The question is, what happens when you stop using it? Not only with the place, but also with the user himself. Perhaps the space designed to be lived deserves to be reduced to the action that its use implies. Since everything that is used is also thrown away. And everyone who uses is used too. When we drive a car, we are using it, at the same time the car uses us so that we can drive it and the existence of both objects can make sense. The human being as an object of use and the car as a usable object. The same thing happens when space is designed for life. It is used and discarded and it uses us and discards us too.
When does each case happen? When compatibility of use is not an answer or at least a coincidence. Because space is a permanent relationship with human existence of abuse or moderation and either case subsists to protect the logic of a changing and random reality and, therefore, complex and dichotomous. The use of space is submitted to the user and this is an exchange and an extension, at the same time, an eternal duality. ARCHITECT-USER could be said to be two pragmatically inseparable words. But, life itself is full of users with and without architecture. Since its origins, human beings were great users of every object and circumstance that they discovered useful for their survival purposes. Although these goals, most of the time, were not consciously seen. I am referring to the heuristics of the act itself. To the very discovery of the usability of “something” for its transcendence in the future of the thinking, feeling and doing human being. So, architecture? Is it perhaps an object that is constructed, built or designed to be used only? Or, rather, it is an inherent companion to its user. Or, should that be it? Because the reality is that there are spaces that expel it with the coldness of a starless night. With the same luck, in the origin of homo sapiens he could have been expelled from a cave by a bear with an almost lethal roar. In that case, one would have to ask how many “deadly bears” there are currently in living spaces that expel their users.
Understanding architectural space in terms of usability means ceasing to perceive it as a sensitive void with memory and memory and consequently establishes the user as a body that uses that space to resolve physical and bodily needs, but does not perceive it in its completeness because the user is not a sensitive being. The human dimension is not a body that only uses, it is a body, an entity and a being. Three dimensions. The body that uses the objects, the entity that perceives them and the Being that feels them. And that trinity or triad defines a much broader concept. I have enjoyed the high quality of food and service at various restaurants in the city. I was looking for a restaurant with a select menu and daily chef’s specials, and I found it in this place, where local flavors are creatively combined.
Chef Virgilio introduced me to dishes such as spinach and ricotta tortelloni, lamb loin with herbs, swordfish carpaccio, and paella. He also mentioned that the hunting season begins in the region in September. uando pensamos en la naturaleza y la vida silvestre, con frecuencia imaginamos a los grandes animales y plantas: los jaguares, cocodrilos, caobas, ceibas. Sin embargo, la mayor biodiversidad en los ecosistemas del planeta está compuesta por los animales pequeños. Cada hueco, árbol, o trozo de suelo, puede albergar millones de organismos de todo tipo. Los hongos, de formas alucinantes, contribuyen a mantener la vida y controlar a la muerte. Por un lado, ayudan a las plantas a absorber nutrientes esenciales, mientras que por otro, descomponen la materia muerta, creando un ciclo vital que da lugar a nuevos seres. Los insectos son un mundo en sí mismo. Millones y millones de insectos devoran grandes masas de plantas y animales permitiendo que circulen los nutrientes dentro de los ecosistemas. Al mismo tiempo, sirven de alimento para aves, mamíferos, anfibios, reptiles, y un sinfín de organismos. Las abejas y algunas mariposas, por ejemplo, favorecen la polinización de las flores. hen we think of nature and wildlife, we often imagine large animals and plants: jaguars, crocodiles, mahogany trees, and ceibas. However, the greatest biodiversity in the planet’s ecosystems consists of small animals. Every crevice, tree, or patch of soil can harbor millions of organisms of all kinds. Fungi, with their astonishing shapes, contribute to sustaining life and controlling death. On one hand, they assist plants in absorbing essential nutrients, while on the other hand, they decompose dead matter, creating a vital cycle that gives rise to new beings. Insects form a world of their own. Countless insects devour vast quantities of plants and animals, enabling the circulation of nutrients within ecosystems. At the same time, they serve as food for birds, mammals, amphibians, reptiles, and
countless other organisms. Bees and some butterflies, for example, promote flower pollination. Large ant colonies oxygenate and nurture the soil. In the natural world, spiders hunt and are hunted by insects such as wasps. Some wasps paralyze spiders to deposit their eggs inside them. Additionally, microorganisms like mites, protozoa, and bacteria are everywhere, playing a vital role in ecosystem life. Fui invitado por Emilio y Nati para filmar este suceso pues están haciendo un documental para un parque temático Nos dimos cita a las 4 de la tarde para recibir instrucciones y tener todo el equipo listo, nos hicimos a la mar a un lugar no muy lejano y de muy poca profundidad en donde tienen detectadas y estudiadas a varias colonias. Todavía con la luz de la tarde se marcaron con boyas luminosas las colonias de coral, una vez realizado esto regresamos al barco en donde se volvió a checar el equipo
A las 9 de la noche nos asignaron las parejas y se les proporcionaron redes que tenían una especie de embudo y en su extremo más delgado, un frasco muy limpio, me explicaron que seria para recoger los huevecillos y llevarlos al laboratorio. Los estudiosos de la materia nos sugirieron de usar la cantidad menor de luz, pues eso puede hacer que los corales se estresen y no desoven
Los huevecillos recolectados son llevados cuidadosamente al laboratorio en donde también después de cierto tiempo los veremos crecer para ser trasplantados al mar que es a donde pertenecen. Con extremo cuidado se pusieron las redes sobre los corales previamente escogidos y esperamos unos minutos. A las 9.15 como recibiendo una orden superior, los pequeños huevos empiezan a salir de los pólipos de los corales y el mar se lleno de estos huevecillos denominados gametos, que son milimétricos y contiene igualmente óvulos y esperma los cuales se rompen y liberan su contenido en el agua. Los espermas de una colonia se junta con los óvulos de otra colonia de coral de la misma especie y así se logra la fecundación. Todo este proceso dura no mas de 20 minutos, tiempo suficiente para que quede gravado en tu mente y en tu corazón, el milagro de la continuidad de la vida

hree nights after the full moon in August, we humans have the opportunity to witness an incredible natural event. As night falls and at a special time that biologists keep in mind, the elkhorn corals spawn and I have been fortunate enough to witness this beautiful phenomenon of the continuity of life. I was invited by Emilio and Nati to film this event because they are making a documentary for a theme park. l evento Fashion Rock Cancún D’Casa Moda fue un rotundo éxito en el Hotel Breathless Cancún Soul, celebrando el 17 aniversario de Sol y Luna, la empresa del empresario Luis Carlín que se ha destacado de manera brillante en el mundo de la moda. Para esta ocasión especial, se reunió a diseñadores internacionales ya consolidados, como Agatha Ruiz de la Prada, junto con la diseñadora Verónica Guerra de Alberti, quien promovió la cultura maya de una manera original y divertida. Además, se brindó apoyo y motivación a nuevos diseñadores, con la presentación de propuestas originales por parte de los alumnos de Estudio Creativo.
El evento fue íntimo y privado, con un número limitado de invitados. Siguiendo el estilo característico de Carlín, la noche contó con la presencia de destacadas estrellas que amenizaron las pasarelas con sus temas musicales. Entre ellos se encontraba Dragaret, la sensación de los shows en Cancún en ese momento, así como los artistas Lalo Brito, Alan Navarro y la talentosa Jass Reyes de Playa Limbo, quien cerró el gran evento. Fue una noche llena de glamour en un entorno con vistas espectaculares, donde se sirvieron los mejores cócteles y se contó con la presencia de artistas invitados como Mercurio, Caló y Kairo, entre otros. El ambiente fue inigualable y el evento resultó todo un éxito.

ashion Rock Cancún D’Casa Moda was presented with great success at the Breathless Cancún Soul hotel, celebrating the 17th anniversary of Sol y Luna, the venture of businessman Luis Carlín, who has brilliantly established himself in the world of fashion.
