Sleigh bells are ringing and Christmas Day is almost here. Don’t panic – there’s still time to prepare before the big day

SEVEN DAYS TO GO

Check who’s coming and head online to buy last minute stocking fillers and an extra box of biscuits for any unexpected guests on Christmas Day. Don’t forget: it’s nearly the cutoff date to order from major online retailers one week before Christmas. Perfect to prep: Soup for your starter course that can be frozen and defrosted on Christmas Eve.

FIVE DAYS TO GO

Get your shopping list ready for the big pre-Christmas Day food shop and don’t forget the bubbly. Start to organise the house for any guests that will be staying over the festive period, too. Perfect to prep: Stuffing – make a meat-free version for everyone around the dinner table to enjoy.

THREE DAYS TO GO

Wrap the last-minute presents you ordered at the beginning of the week and prepare yourself for the most daunting part of Christmas – the food shop. Head to the supermarket as early as possible to avoid pandemonium in the frozen turkey aisle. Don’t forget, if you’re picking up preordered food the supermarket will have sent you a time slot to pick up your order – don’t be late! Perfect to prep: Cranberry sauce and gravy. Freeze both in sealable sandwich bags to save room in the freezer for any extra treats or leftovers sure to appear.

TWO DAYS TO GO

Deep clean the house and start to get the table set for Christmas Day – place all glasses upside down to keep them clean and glitter-free. Delegate the Christmas Day tasks and choose your sous chef for optimum organisation when it’s time to cook. This is an excellent way to get the kids involved in helping out. Perfect to prep: Dessert. If it’s cheesecake or a traditional Christmas pudding find a fridgefriendly recipe that will keep for a few days.

24 HOURS TO GO

Do a sweep of the kitchen and check if you need any last-minute items like extra plates, a good carving knife or snacks for a post-dinner movie. Christmas Eve is the ideal opportunity to prepare as much fresh food as possible. Psst: when the kids are in bed, it’s time to sit down with a glass of fizz before the madness ensues, Perfect to prep: Vegetables and pigs in blankets. Set the kids the task of wrapping the pigs in their blankets while you peel and chop all your veg for the next morning.

ON THE DAY

Stay on track and don’t panic – this is your day to enjoy, too. Round the family up for a quick clean up after dinner to avoid a messy house on Boxing Day. Perfect to prep: Turkey for leftover sandwiches that the entire family can nibble on when they get peckish.

FESTIVE FEASTS Shake your belly like it’s a bowl full of jelly with these tantalisingly delicious recipes, even Santa won’t want to miss out

Gingerbread cupcakes Make gingerbread with a twist this Christmas with these irresistible gingerbread cupcakes MAKES: 12 SPONGE 125g unsalted butter 100g golden caster sugar 60g dark muscovado sugar 250g golden syrup 30g stem ginger, grated 250g self-raising flour 3 tsp ground ginger ½ tsp allspice Pinch of salt 2 medium eggs 175ml whole milk

GINGERBREAD 65g unsalted butter 50g dark muscovado sugar 1 tbsp golden syrup 1 tbsp black treacle 170g plain flour 3 tsp ground ginger BUTTERCREAM 250g unsalted butter 500g icing sugar DECORATIVE ICING 150g icing sugar 1-2 tbsp lemon juice

1. Switch oven on to 180°C fan/160°C. 2. For the sponge, in a pan, gently heat butter, sugars, golden syrup and stem ginger until melted. Mix flour, spices and salt in a bowl. Add butter mixture and stir to combine. Add eggs and milk. 3. Mix to combine. Divide between 12 cupcake cases. Bake for 20 minutes until a skewer comes out clean. Set aside to cool. 4. To make the gingerbread, line a baking sheet with parchment paper. In a pan, gently heat butter, sugar, golden syrup and treacle. Mix flour and ginger in a bowl. Add butter mixture and stir until it forms a soft dough. Roll out on a floured surface to a quarter inch thick. Cut out 12

mini gingerbread men. Bake for 8-10 minutes until firm. Set aside to cool. 5. Now it’s time for the buttercream. Beat the butter until soft and pale. Add icing sugar. Beat for a few minutes until combined and smooth. Place in a piping bag with a star nozzle and pipe swirls of icing on top of each cupcake. 6. Make icing for decorating gingerbread men. Mix the icing sugar with lemon juice until smooth. Place in a piping bag and cut a small hole in the end. Pipe buttons and faces on the gingerbread men. Place one on top of each iced cupcake. GOING GREEN

Christmas is a fantastic time for presents, wrapping, cards and indulgent meals and drinks. But, all this adds up to a lot of extra waste – how is Christmas affecting the planet?

THE FESTIVE FACTS An estimated 10 million turkeys were consumed last year – that’s over 3,000 tonnes of packaging Every year, we throw away almost eight million slices of turkey and 11.3 million roast potatoes, making up almost 270,000 tonnes of Christmas food waste

lastic: it’s been a hot topic for 2019. And in the festive months there’s sure to be a greater influx of additional plastic use from the supermarket to the packaging of gifts. It all adds up and, unfortunately, our planet is paying the price. Christmas 2019 is the year we can all get prepared for a less wasteful Christmas.

RECYCLING

Gifts are the highlight of the festive season, but there are ways to give gifts without creating additional packaging. We’re talking gift vouchers, days out, gin tasting or theatre tickets: there is a waste free gift to suit everyone in the family. Not to mention, it’ll save space under the tree. If you do buy a gift with packaging then aim to be mindful about how to dispose of the additional waste. We all know to recycle cardboard in the green bin, but, did you know: cardboard which is dirty or covered with food or paint can’t be put in the green bin. The voucher idea sounds even more pleasing now, right?

UPCYCLE

We’ve all got decorations from years gone by, and, we bet, they’re still in pretty good shape. Tinsel is great – and it’s what Christmas is all about – but as it can’t be recycled aim to limit how much you use, and keep it for a couple of years. Going natural is also an option: fir cones, ivy, holly is all incredibly festive and can be easily composted (as long as the glitter is kept to a minimum). If you’ve got a real Christmas tree then – if recycled properly – this can go back into your community. Yes! Real Christmas trees are shredded into chippings which are used in parks or woodland areas, your local authority will arrange a drop off point to ensure your tree continues its journey ethically. It’s the most wonderful time of the year, and being more mindful will ensure every year is as eco-friendly as possible. A VOLUNTEERING HAND Giving time, donations or your services to others over the festive season is just as important as giving to those around you. During the winter months, take a look at the different ways you can give back to people in need

rom donating clothes you no longer use to donating your time, there are numerous ways you can give back over the festive season and into the New Year. If you don’t have the time or resources to dedicate to an organisation there are a range of ways you can help others from having tea with an elderly neighbour to sending out Christmas cards.

GIVING

If you are short on time over the festive season there are other ways to share some festive spirit. Small donations can go a long way to helping others. The 12 Days of Giving campaign by Simon Community Scotland (www. simonscotland.org) lets you buy items like sleeping bags and Thermos flasks to help those affected by homelessness through an Amazon wish-list. The list has items to suit every budget and lets you know what is in high

demand. The donated items will help to combat conditions like hypothermia for people facing homelessness this Christmas. Donations don’t have to be financial – you can donate items like toiletries or clothes to organisations including Glasgow Women’s Aid (www. glasgowwomensaid.org.uk) for women

There are numerous ways you can give back over the festive season and into the New Year

and children who have fled abuse and will not be home over Christmas. If you receive gift sets or toiletries you won’t use over Christmas this could be the perfect way to re-gift them while doing good. Women and children who have fled their homes often have no time to prepare or pack essential items, leaving them without basic toiletries as well as spare clothes and toys. Call Glasgow Women’s Aid on 0141 553 2022 to find out what items are currently needed most. If you are ready to clear out your wardrobe before the New Year arrives, donate your unwanted clothes to a worthy cause. Smart Works (www. smartworks.org.uk) is a dressing and coaching service for unemployed women with confirmed job interviews which accepts clothing donations. You can donate interview appropriate high-quality clothes and accessories

Almost 30 per cent of adults in Scotland have volunteered formally before, but there are constantly new volunteering opportunities appearing throughout the country. Volunteering is a great way to pair giving back with your own interests and hobbies. From making meals for older neighbours to being a social media volunteer for a charity, there is a type of volunteering position to suit everyone. Volunteer Scotland (www. volunteerscotland.net) signposts volunteering opportunities on their website. These can be filtered by your location, the area you would like to volunteer in and your availability. You could also volunteer directly through an organisation which has a local branch near you. The Trussell Trust (www.trusselltrust.org) aims to end hunger and poverty in the UK and has multiple areas open to volunteers. The Trust supports more than 1,200 food bank centres in the UK, all of which need volunteers to continue

GIVING BLOOD

If you are friendly, reliable and have a few extra hours available each week a befriending role could be perfect for you. Befriending offers supportive relationships through volunteers for people who would otherwise be socially isolated. Age UK (www.ageuk.org.uk) offers two different befriending services to combat loneliness in later life. The Call in Time service matches an older person and a volunteer who have similar interests, they will then call each other on a regular basis for a chat. The second service is face-toface befriending where a volunteer befriender regularly visits an older person in their home for a quick cuppa and a chat, sometimes accompanying them to an activity. The Befriending Networks’ (www. befriending.co.uk) directory shows organisations that run befriending programmes in the region where you live. This can be filtered down to what

Regardless if you are a regular blood donor or you have never donated before, the festive period is the perfect time to give blood. Blood stocks usually dip from mid-December to early January making it even more essential to donate over Christmas. Just one pint of blood can save or improve the lives of up to three people. It is easy to sign up to give blood online, Scot Blood (www.scotblood. co.uk) has an online system where you can make an appointment at your local centre and even check the current blood stock levels. Go the extra mile this Christmas by encouraging friends and family to donate or by organising a blood drive with your colleagues. Regional donor centres can even set up corporate appointments for large companies. Everyone knows that Christmas can put extra strain on your budget, but there are simple ways to make tiny cut backs, for a very merry, but affordable holiday

hristmas is the time of giving. But, pressure to spend can lead to stress and even financial strain. “No one wants their family to miss out,” explains Nick Hill, money expert at the Money and Pensions Service. “When you consider the celebrations, pressure from friends and family to go out; higher energy bills; and the school holidays, there’s a lot of pressure to spend around the Christmas period.” Though typically the most expensive time of the year, Christmas doesn’t have to break the bank.

SAVINGS

“We’re coming into winter and it’s nice to do a bit of a clear out,” Nick continues. “People are looking for presents to give, so why not sell the things that you don’t want anymore, such as Christmas gifts that have sat in the cupboard since last year – maybe you can sell those items and add to your money.” From selling unwanted goods online, to setting aside money each month in preparation for December, there are

ways to ensure you don’t spend more than you need to over winter. “Start by working out what you need,” says Nick. “Go through every item in your budget and ask yourself whether you need it or want it. If it falls into a want, then it’s potentially something you can cut back on, or achieve the same outcome in a lower-cost way. You can do Christmas a lot cheaper than you think.” Most importantly, start having conversations with your friends and family about money. Not only does this help reduce the stigma of spending less at Christmas time, it also sets boundaries and lets them know how much you can afford to spend. You never know: people might be relieved if you suggest cutting back this year.

CHILDREN

One of the most expensive aspects of Christmas is buying presents for children – after all, nobody wants their child to miss out on the latest gadget. However, do Christmas shopping with a twist this year and engage the younger members of your household with money

and involve them in the budgeting process – in the long run, this can be a gift in itself. “Don’t be afraid of discussing money with children,” Nick advises. “A good idea is to tell them how much money you have to spend and ask what they want it spent on. You can reuse things from last Christmas, such as old cards to make new cards or labels for presents: you end up creating entertainment for the whole family, while saving money. It’s about finding these win-win opportunities.” Celebrating Christmas and staying on budget can be just as magical as going all out for the festivities. Either way, there is help and guidance on hand if you do find yourself slipping over budget, this Christmas: don’t burry your head in the sand.
