Add a dash of sparkle to the Christmas countdown

It’s less than two weeks until Christmas day and it’s time to plan. Write your shopping list for the week and one for the Christmas meal shop, set your food budget and delegate tasks to everyone in the house. Remember it’s team work!

Work has been hectic in the lead up to some well-deserved time off and you’ve forgotten to reserve a fresh turkey. Don’t panic – all is not lost. Head to your closest supermarket and pick up a frozen turkey before they sell out. Nobody will know the difference!

Once you’ve finished work for the day grab your hat and gloves ready to deliver the Christmas cards. Stop in for a chat with the older lady down the street who might not see many people over the festive period, it’s the season of giving.

Days just before Christmas can be crazy and cooking dinner for the family is the last thing on your mind. Batch cook a few different dishes that you can freeze and defrost when you need them.

Head to the shops for last minute gifts before the weekend to avoid pandemonium. Don’t forget the gift tags and a little something for yourself.

It’s now a matter of hours until the in-laws arrive to inspect the house and settle in for the festivities. Spend the day cleaning, prepping the spare room and looking out the old blow up mattress.

Grab the list you made last week and do the Christmas food shop. Try and make it to the supermarket early to avoid the crowds. Top tip: don’t forget batteries for the kids’ new toys on Christmas day.

When Christmas Eve comes around fit in as much food prep as possible so that you can spend some time relaxing the next day. Do a sweep of the fridge and buy any last-minute items you have forgotten. And don’t panic.

Christmas is in ten days and it’s time to get in the festive spirit so dust off the Michael Bublé album and grab a cuppa. Set aside an hour to check you have enough plates, bowls and glasses for your guests. Sneak in a mince pie or three when nobody is looking.

It’s one week until chaos commences. Check in with your guests to find out when they will be arriving for the big day and whether any furry friends are making a surprise appearance because the kennels are fully booked.

It’s time to defrost the turkey (a mammoth task). The average large turkey will take a few days to defrost in the fridge but always allow up to 12 hours per kilogram. To avoid giving the whole family food poisoning call the British Turkey helpline on 0800 783 9994. Yes, there is a turkey helpline, it’s serious business.

After weeks of build-up Christmas Day is finally here. Once presents are unwrapped and everyone is full, grab the last bottle of bubbly and settle down for classic festive telly as you put your feet up.

It’s going to get berry delectable in your Christmas kitchen this year as the Hairy Bikers provide a mouthwatering recipe for plum pavlova, which is sure to please everyone at the dinner table

The Hairy Bikers’

Plum pavlova SERVES 8 5 egg whites 1 tsp ground cinnamon 250g caster sugar 1 tsp white wine vinegar Cherries 100g dried cherries 100ml kirsch Spiced plums 200ml red wine juice of 1 orange 75g light brown sugar 1 cinnamon stick a few cardamom pods, lightly crushed a few allspice berries, lightly crushed 1 strip of thinly pared orange zest 8 ripe plums, stoned and quartered

To assemble 300ml double or whipping cream 1 tbsp icing sugar ½ tsp cinnamon (optional) 1. First make the meringue. Preheat the oven to 150°C/Fan 130°C/Gas 2. Draw a circle of about 23cm in diameter on a sheet of baking paper and place this on a baking tray. 2. Beat the egg whites with a hand-held electric whisk, until soft peaks form when the whisk is removed from the bowl. 3. Mix the cinnamon with the sugar, then slowly add this to the egg whites. Add a tablespoon at a time to start with and then slightly more, beating in between each addition, until the meringue is stiff and glossy. Sprinkle over the vinegar and fold it in. 4. Use a few blobs of the meringue to secure the baking paper to the baking tray, then pile the rest into the marked circle. Make a slight indentation in the middle and allow the meringue to form peaks around the side. 5. Bake the meringue in the oven for about an hour and 15 minutes, to an hour and a half. It should be crisp round the sides but with some give in the middle. Turn off the oven and leave the meringue in there to cool completely. 6. To prepare the cherries, put them in a small saucepan with the kirsch. Bring to the boil, then turn the heat down

and simmer until the cherries are soft and plump and most of the kirsch has been absorbed. 7. To make the spiced plums, put the wine, orange juice, sugar, spices and orange zest in a saucepan and stir over a low heat until the sugar has dissolved. Bring to the boil and simmer for a few minutes until the mixture is syrupy. Add the plums and poach them in the liquid for a few minutes, or until soft but still holding their shape. 8. Remove the plums from the liquid, peeling off the skins as you go – they

should just fall off. Strain the cooking liquid. 9. To assemble, whip the cream and add the icing sugar and the cinnamon, if using, then stir in a couple of tablespoons of the plum liquid and the cherries. Spoon the cream over the meringue base, top with the plums and drizzle over any remaining liquid. The Hairy Bikers’ British Classics by Si King and Dave Myers (Seven Dials, £22)

Poached pears with hot chocolate sauce Add a touch of glamour to your desserts this Christmas with melt in your mouth cardamom and cinnamon infused pears with a rich hot chocolate sauce. PREP TIME: 20 MINUTES SERVES: 6 6 firm dessert pears (ie. Blush) 350g caster sugar 1 vanilla pod (halved) 3 cardamom pods 1 cinnamon stick 170ml double cream 200g Mackie’s Dark Chocolate Mackie’s 1 Litre Traditional Real Dairy Ice Cream

1.Peel the pears, leaving the stalk in place, and cut out the core. Slice off the bottom of each pear to make a flat base. 2. Put the sugar into a large pan with the vanilla pod, cardamom pods and cinnamon stick. Pour over 750ml water, then simmer until the sugar dissolves and turns syrupy. Place the pears into the syrup and poach gently for 20 minutes, or until the pears are tender. Carefully remove the pears from the poaching liquid, reserving two tbsp of the sugar syrup. 3. To make the chocolate sauce, heat together the double cream and chocolate in a small pan over a low heat, stirring until the chocolate has melted. Stir in the reserved sugar syrup until the sauce is glossy. 4. Drizzle the sauce over the pears and serve with a generous scoop of ice cream!

CHRISTMAS We all love our festive traditions. Christmas – originally a Christian celebration – is now celebrated by many around the world, regardless of their religion. We discover how eight countries enjoy the holiday season as we prepare for ours

ICELAND

Christmas – known as Jól – is typically celebrated on Christmas Eve in Iceland. The Jólasveinar (Icelandic Yule Lads) begin to appear 13 days before Christmas, with a different Lad leaving a small present for children each night. Decoration of the Christmas tree takes place on 23 December, and many shops stay open until midnight for last minute shoppers to buy their presents. Officially starting at 6pm on Christmas Eve, Christmas begins with a meal with close family. After dinner, gifts are exchanged, and it is traditional to give books as a present, with the day ending by snuggling up and reading; 25 December is for relaxing, eating leftovers and spending time with loved ones.

JAPAN

A relatively new celebration in Japan, Christmas is not considered a religious holiday. It is seen as a time to spread happiness and joy, with Christmas Eve being considered a romantic holiday for couples, similar to Valentine’s Day in the UK. Traditionally, fried chicken is eaten on Christmas Day, with many getting their meal from KFC. People also eat sponge cake decorated with strawberries and cream as part of the festive feast. Though it is becoming more customary to celebrate Christmas in Japan, many businesses treat it as a normal working day.

LATVIA

Rumoured to be home to the first ever Christmas tree, Latvia has its fair share of traditions, too. The first documented use of an evergreen tree was in the Riga town square in 1510, despite many believing the tradition originated in Germany. Ziemassvētku vecītis (Christmas Old Man) leaves presents under the tree for children during the evening of Christmas Eve or on Christmas Day, and children often recite a poem or sing a song before they can open gifts. Christmas dinner consists of cooked peas with pork sauce, pies, cabbage, sausage and gingerbread.

KAZAKHSTAN

As a predominantly Muslim country, Christmas is not widely celebrated in Kazakhstan, and 25 December is treated as a normal working day by many. However, New Year is the biggest celebration in the Kazakhstani calendar, and many celebrate it in a similar way to our Christmas celebrations: New Year trees are decorated, Ayaz Ata (Father Frost) delivers New Year presents to children, and may be depicted in a blue or silver suit instead of red. He is accompanied by Kar Kiz (Snow Maiden), his granddaughter, who helps him deliver presents to good children. People eat plov (beef, rice and carrots cooked in oil and cumin), salads, fruit, nuts and baursak (similar to doughnuts) for their New Year feast.

PERU

Christmas in Kenya is a family affair. People travel to be with family on Christmas Eve, decorating their houses with balloons, ribbons, paper decorations, flowers and leaves, with some using a Cyprus tree as a Christmas tree. In cities, despite the warm weather, some shops may decorate with fake snow. Many attend Midnight Mass on Christmas Eve, where carols, songs, poems and dances are performed. After church, families return home and the party starts – sometimes lasting until morning. People eat nyama choma, Swahili for ‘grilled meat’, usually barbecued goat, sheep or beef, with rice and chapati on the side. Sometimes, people make their own beer in preparation for the feast, and different tribes have their own traditional dishes.

AUSTRALIA

Australian Christmases are probably the polar opposite of our Scottish Christmas. At the start of the summer holidays you will find people celebrating Christmas Day, and December is often the hottest part of the Australian year. Instead of snuggling up in front of the fire with a hot chocolate, Australians can be found on the beach, and many eat seafood, salad or cold meat on Christmas Day, but some eat roast turkey, too. Houses are decorated with bunches of “Christmas bush” trees and every city has its own Carols by Candlelight event, where celebrity performers will sing carols on Christmas Eve for the whole city. On Boxing Day, it’s traditional to head out to the beach for a family barbecue, or watch the Boxing Day Test cricket match, instead of hitting the sales.

As a largely Catholic country, Christmas is a major celebration in Peru. “Different regions, such as the coast, the mountains and the jungle have different traditions,” explains Rosa Elena Gamarra, of Peru. “In the coast, at the start of December, we decorate the Christmas tree with lights and ornaments. The traditional Catholic homes display advent wreaths.” La Noche Buena (Good Night) is celebrated on 24 December, and is the main day of celebrations. Many houses display the nativity scene, with one lucky family member being chosen to lay the Niño Manuelito (baby Jesus) into the manger. The Christmas meal includes turkey, tamales, salads, apple sauce and panettone bread. “After dinner we exchange gifts,” adds Elena. “At midnight, adults will toast with champagne – children with hot chocolate – and families go outside to watch firework displays.”

SCOTLAND

Even Scotland has a history of traditions that some may not have known about. Believe it or not, Christmas was effectively banned in Scotland for almost 400 years, and Christmas Day wasn’t a public holiday in Scotland until 1958; Boxing Day wasn’t introduced until 1974. Up until recently, the biggest festive celebration in Scotland was Hogmanay, or New Year’s Eve. People would ‘first foot’, visiting homes of friends and family, bringing lumps of coal to fuel the fire and bring good wishes for a cosy home and a good year ahead. Nowadays, Christmas traditions include leaving mince pies out for Santa (carrots for the reindeer too, of course), leaving stockings for Santa to fill with presents, and a turkey dinner with Christmas crackers. However you’re celebrating this year, we wish you a Merry Christmas!

Generosity is an integral part of the festive period, but giving back doesn’t just have to be saved for the Christmas period. There are many opportunities to volunteer and help others in need over Christmas and long into the New Year, we discover how you can help to give back to your local community

t’s colder, darker and, probably, a bit wet outside. Inside the yule log is baking in the oven, the grandparents are digging into the sherry and everyone’s having a grand old time. Christmas is truly the most wonderful time of the year, but the sad fact is that many people are not so fortunate. Taking time out of your festive routine to help others in a different situation doesn’t have to put your merriment on hold. In fact, it will help you feel even better as you watch the happiness of the people you help – Christmas is a time of giving. And there are many ways you can give back during the winter nights.

Volunteering definitely provides individuals with a feel-good factor, and we all need that throughout the year

FOOD BANKS “Christmas is definitely a time when people think of others; it’s a time with so much focus on family, friends and celebration, and many people’s thoughts turn to those less fortunate than themselves,” explains Tara Bentley, volunteering development coordinator for Volunteer Glasgow. “Also, a drop in temperature often leads people to think of the homeless, and how they can help.” Spending time at a food bank in the run up to Christmas, or even on Christmas Day, is a fantastic way to help the homeless community get a hearty, warm meal away from the cold. We can all fall on hard times, but food banks have provisions for families that may not be financially stable or soup runs can help homeless people to get a nutritious meal. too, away from the television and turkey drama. Tara enthuses that staying within your local community is the perfect way to find new opportunities to help others right on your doorstep, it will help to get you out of the house, too. From visiting the old folks home to spend time with the elderly, some of whom may not see anyone during Christmas, or lending a helping hand at the local church, your local community is waiting on more volunteers. “Everyone can contribute to making our country a better place to live; through volunteering we have the power to improve the world around us as well as improving our own health and wellbeing,” adds Tara. “Various studies throughout the world show that volunteering makes us healthier, happier and more employable.” IN THE NEW YEAR Volunteering at Christmas is a fantastic way to give back to people in need, but it’s not only reserved for the festive period, you can give back throughout the year. As we celebrate the New Year coming in, why not add some simple resolutions that you can stick to into the New Year that will help others. Tara adds: “Volunteering is not just for Christmas. It is fantastic that the festive period inspires people to think about volunteering… Charities need volunteers throughout the year in order to provide vital services. Volunteering definitely provides individuals with a feel-good factor, and we all need that throughout the year, particularly in the gloom of January. What better way to start the New Year than by doing something that you will enjoy, gain great benefits from, and will help others?” ONLINE DONATIONS There are a plethora of charities helping people throughout the year, and donations can help them to continue the dedicated hard work they do. Yes, it is nice to donate during Christmas but donating throughout the year can help charities with their valuable work on a monthly basis – and you can do it without seeing a difference in your bank account. Online monthly donations are an integral part to ensuring causes you are dedicated to continue to achieve their goals, thrive, all whilst helping others. Be it environmental conservation, research into cancer prevention and cures, to mental health support and animal protection, there is a team of dedicated workers out there helping those in need. To ensure their causes 14

are supported – that’s where you come in. Offering £5, £10, £15 or more, you could help support a cause close to your heart without even realising it with small, monthly donations. Lending a helping hand has never been easier. ORGAN DONATION This one isn’t for everyone, granted, but it can help families long after you’re not here. Currently people in Scotland and the rest of the UK have to opt-in to be an organ donor: meaning you will have to sign up to register as a donor and disclose the organs you’re happy to donate after you pass. Talking about death isn’t very festive, but we’re actually talking about giving the gift of life to one of the thousands of people waiting for a vital organ transplant. At the moment, 2.2 million people in Scotland are on the register – that’s almost half the population. If you’ve not signed up yet then it only takes five minutes. FUNDRAISING Go wild in the New Year and raise money to help others in an interesting, entertaining, out of your comfort zone way. From skydiving, abseiling down the Forth Rail Bridge to getting your walking gear on for the Kilt Walk – there is a fundraising activity for everyone, and every cause. Getting involved with different fundraising events is simple, check the event page of your chosen charity to see what they have planned for the incoming year and how you too can get involved. here’s no denying that the festive season can be expensive, no matter how good you are at budgeting. From work nights out, catching up with friends, booking travel home and buying presents for loved ones, those precious pennies will disappear fast. As people across the UK spend more on Christmas than ever before, there is a higher chance of paying off Christmas 2018 way into next year. anta is taking time out of his busy schedule to pop in and visit the wonderful Cardwell Garden Centre this Christmas. Make sure the kids prepare their Christmas wish list before having a festive feast with Santa, getting to see where all the magic happens in his grotto before exploring the rides and funfair events at Cardwell Garden Centre’s festive haven. The Polar Express will also be making a stop to pick up excited families to go on their very own Polar Express Treasure Hunt. It will be a day of fun, frolics and festivity to get you prepared for the big day ahead.

TERMS AND CONDITIONS Entries must be received by Monday 10 December. Prize is for two children to win breakfast with Santa on the date of their choice (children can be accompanied by adults at no charge), a visit for each child to see Santa in his grotto (and a gift) and five free rides each on Cardwell Garden Centre funfair attractions. There is no cash alternative, is non-refundable and non-exchangeable. The winner will be chosen at random. The publisher’s decision is final.
