don’t know about you, but I’ve always wanted that “No one puts Baby in a corner.” moment. But you’d be surprised at how long the little touches that make a wedding cake special, like sugar craft decorations, can take to put together. A delicate sugarcraft rose can take over an hour to make to match the bottom of Fiona’s reception dress. “The cake looked like feathers, just like my wedding gown. I saw it at a wedding show and knew I had to have it,” recalls Fiona, who got married on 13th July at Dunfermline Abbey then Balbirnie House Hotel in Fife. Emily McGregor says that cakes decorated in a way that mean something to the couple are increasingly popular. “Cakes in the shape of children or beloved pets are fun to make!”

The days of just traditional fruit cake seem to be long gone and couples are experimenting with new and exciting flavours for their sponge and fillings. Lisa Dornan and David Sheerin went all out on their five tier creation from Liggy’s Cakes in Edinburgh. “We’re foodies so we decided to have slightly more unusual flavours in our cake,” says Lisa, who married her groom David on 13th July this year at Glenbervie House Hotel in Falkirk. “We had four flavours in total: traditional fruit, chocolate with morello cherry jam, lemon with rose water jelly and vanilla with coconut cream. Many of our guests were keen to try more than one flavour!” And it would appear that couples are being much more adventurous with flavours and, even if they

thought they were going to play it safe, after a tasting they usually opt for something a little more interesting. “We’ve even made a chocolate chilli cake with the remit not to go lightly with the chilli! It did taste amazing though – anything is possible,” says Mandi of Rainbow Sugarcraft. If you’d like to go for out-of-the-ordinary flavours then you could even make sure you have a plainer cake block for cutting, like Lorraine and Steven Muldoon did at their July wedding at The Chartroom, Kip Marina. They had a topsy turvy three tier creation with flavours like chocolate mint and chocolate peanut butter. “Our cake maker advised us to get a

cutting block of vanilla sponge, just incase people didn’t want to try new flavours. At the end of the night there was hardly any cake left at all – our guests loved it!”
