MEASURE THE WAYS CROSSBREEDING PAYS

Now more than ever, producers are trying to maximize outputs and herd performance all while reducing costs. Taking advantage of tools that allow for reduced costs and increased productivity and profitability is essential to producers in today’s industry. One tool that has been utilized in the beef industry for several years, and one that has evident value in beef production, is crossbreeding. Crossbreeding provides increased performance with minimal, if any additional costs to the producer.

Through the practice of crossbreeding, heterosis (or hybrid vigor) and breed complementarity are achieved within the herd. Heterosis can be defined as the superiority in performance of the crossbred animal compared to the average of its straight-bred parents. When valuing heterosis, you essentially gain a dual advantage: individual heterosis and maternal heterosis.

Individual heterosis results in an increase in calf survival to weaning, along with increased growth. Through crossbreeding, calves have been seen to have a 3.9 percent increase in weaning weight and a 2.6 percent increase in average daily gain, all of which translates to increased profits.

Similar to the definition of heterosis above, maternal heterosis is the advantage of a crossbred mother over the average of other purebred mothers. It refers to the combined improvement in traits from the dam that causes an increase in the performance of her and her progeny. Improved fertility, increased calf survivability, greater cow longevity, and more pounds of calf produced are examples of maternal heterosis.

As seen in table five, a crossbred cow has been shown to have a 16.2 percent increase in longevity and has proven to stay in the herd longer than a straight-bred cow. This table also refelects an increase in the number of calves through the cow’s lifetime as well as additional pounds of cumulative weaning weight and more profit for the producer.

The crossbred female is really where crossbreeding pays off. Traits that are most influenced by heterosis are those

weaknesses of each breed type and applying those that complement each other. Breed complementarity is one of the best ways to describe the benefits of Balancer® cattle. Balancer animals are 25 to 75 percent Gelbvieh with the balance of Angus or Red Angus. They combine the Gelbvieh growth, muscle, leanness, fertility, longevity, and low yield grading ability with the carcass qualities of Angus to make an animal that meets today’s modern industry demands.

Balancer hybrids offer a simple and powerful way to maintain hybrid vigor and the proper combination of British and Continental genetics in your cow herd in a straightforward and easy crossbreeding system.

Gelbvieh are also an ideal fit for a crossbreeding program because of their superior maternal characteristics such as longevity and fertility. Gelbvieh females are known for reaching puberty at an earlier age and remaining in the herd longer. With these attributes combined with the performance gained through maternal heterosis, Gelbvieh-influenced cattle make the ideal female for any herd. Today’s cow herd is not your father’s cow herd. I am amazed every time I see the chart below that shows cattle numbers and beef production. It shows basically parallel lines of cattle numbers and beef production up until the late 1970s. Then they start to separate, with cattle numbers going down and beef production increasing. Cattle feeding technologies like steam flaking corn, implants and beta agonists are part of the reason, but also, reproductive efficiency, calving ease, rapid growth and crossbreeding systems are huge contributors. The use of technology and genetics simply allows more to be produced with the same inputs.

FATHER’S COW HERD

Cattle are better today. Steer carcass weights have increased from 680 pounds to over 900 pounds over the last five decades. In the last Gelbvieh Scale and Rail contest fed at Kinsley Feeders, Gelbvieh and Balancer® steers came in at 730 pounds and went out at 1,506 pounds! They gained over four pounds per day and converted at six pounds of feed per pound of gain and they graded 80 percent USDA Choice.

Those of us that have Gelbvieh and Balancer cows know that maternal ability is their real strength! Contrary to popular belief that only carcass quality is the biggest driver of profitability; production, longevity and weight have more value when assuming acceptable quality. US Meat Animal Research

Center (USMARC) data shows that Gelbvieh sired females have reduced cow size to the other six major beef breeds. They also wean more pounds of calf per cow exposed and have a higher percent of females staying in the herd at six years old. In addition to objective traits, they are easy to handle and are excellent mothers. At today’s historic cost of inputs and calf prices, the value of extra pounds and getting one more calf is invaluable.

As the nation rebuilds its cow herd from 60-year low numbers, Gelbvieh and Balancer females have contributed to the progress over the last several decades and are perfect to build the nations cow herd that keeps advancing into the future.

The American Gelbvieh Association (AGA) is dedicated to recording and promoting Gelbvieh, Balancer® and Gelbvieh-influenced cattle, while providing members and their customers programs and services to advance the breed. The AGA consists of approximately 1,100 members with a registry database that contains over one million animals including approximately 40,000 currently active Gelbvieh, Balancer® and Gelbvieh-influenced cows.

THE STRENGTHS OF GELBVIEH

The Gelbvieh breed is well known throughout the industry for its maternal strengths and superior growth. With attributes such as more pounds of calf weaned, added fertility, greater cow herd longevity and heavier carcass weights, just to name a few, Gelbvieh and Balancer offer genetics that work for the commercial cattle business.

With the high costs associated with the development or purchase of replacement females, sustained production in a herd is essential. Gelbvieh females are proven to stay in the herd longer.

U.S. Meat Animal Research Center data shows Gelbvieh females have the most moderate mature cow size of the seven major beef breeds. This reduced mature cow size allows for puberty to be reached at an earlier age, which leads to calving earlier in the season and producing a heavier calf at a younger age.

Gelbvieh and Balancer cattle excel in traits such as growth, stayability and productivity. Using Gelbvieh and Balancer genetics in a crossbreeding program can help increase the profitability of an operation. Producers see additional pounds and added profit through more efficiency and greater longevity of cows as well as heavier, faster-gaining feeder cattle.

WHAT IS A BALANCER ® ?

Balancer cattle are registered hybrid seedstock that have documented pedigrees and expected progeny differences. The AGA was the first beef cattle breed to recognize and include a hybrid animal as registered stock.

Balancer animals are 25% to 75% Gelbvieh with the balance of Angus or Red Angus. Balancer cattle combine the Gelbvieh growth, muscle, leanness, fertility, longevity and low yield grading ability with the carcass qualities of Angus.

Balancer cattle offer a simple and powerful way to maintain hybrid vigor and a profitable blend of British and Continental genetics without a complicated crossbreeding system. These cattle fit well into all aspects of the beef industry, including commercial cow-calf operations and on the rail.

HOW DO GELBVIEH AND BALANCER® CROSSBRED FEMALES PERFORM BETTER?

It’s all in the heterosis, or hybrid vigor, described as the increase in performance of the crossbred animal compared to the average of the straight-bred parents. Heterosis impacts traits with low heritability, e.g., reproduction. Producers with crossbred cows can see a higher percentage of their cowherd breed back on the first cycle due to maternal heterosis.

INDIVIDUAL HETEROSIS

Individual heterosis is the improvement in performance by the individual crossbred animal above the average of its parents. Increased calf livability, weaning weight, yearling weight and carcass traits, are examples of individual heterosis in crossbred calves.

MATERNAL HETEROSIS

Maternal heterosis leads to the combined improvement in traits from the dam that cause increases in the performance of her and her progeny. Examples of maternal heterosis in a beef cow include younger age at puberty, increased calving rate, increased survival of her calf to weaning, longevity and pounds of calf produced in her lifetime.

FOCUS ON PROGRAMS FOR COMMERCIAL PRODUCERS FEEDER FINDER

Feeder Finder is a free email service offered by AGA to promote and assist in marketing load lots of Gelbvieh and Balancer-influenced feeder cattle. Producers who have cattle to sell are encouraged to fill out the online form or contact AGA staff to submit information about their cattle.

BALANCER® EDGE

Balancer® Edge is a source and age verification program for feeder cattle sired by Gelbvieh and Balancer bulls. Offered by the AGA in partnership with IMI Global, this program gives producers the opportunity to participate in a breed-identified feeder calf marketing program with the option to customize. Balancer®

Edge customers can choose additional value-added programs, which open the doors to additional markets and the opportunity to generate even more value for their feeder calves.

CARCASS DATA COLLECTION PROJECT

The Carcass Data Collection Project is designed for AGA members and their customers. This project is a breed improvement directive, providing vital genetic information to recharge the carcass database and enhance the predictability of current selection tools. AGA will pay genotyping costs of participating calves; genomic analysis will be completed by Neogen GeneSeek. Recognizing the increased expectations of commercial cattlemen, the AGA is dedicated to delivering the industry with genetics that are smart, reliable and profitable, from the ranch to the rail.

RAISING CASH COWS

This year’s cattle prices can give you a lot more to be excited about, especially compared to this time last year. Just last summer, drier conditions, and high feed prices caused an influx of cows to be sold. This year, most of us have been blessed with better moisture and record beef prices.

With bad drought conditions last year, many producers had to make the decision to cut their bottom end of cattle. The huge push of cows caused a huge drop in price. This July, the U.S. beef herd is the smallest it has been since the 1960s. With fewer cull cows available for ground beef, the demand has caused packers to pay more. This is great for producers culling their open or older cull cows, but for producers trying to purchase cows, it comes at a large cost.

Not only is the cow inventory low, but the replacement heifer inventory is also down, and not showing signs of rebuilding soon. Some heifers will most likely be utilized in a feeder calf pinch considering that heifers make up almost 40 percent of the feeder calf inventory. It doesn’t matter if you raise registered cattle, commercial, or both, the cost of replacement cattle will be a larger expense than we have recently seen.

So when it comes time to make keep/ cull decisions, there are a lot more dollars at the table. Higher price for cull cows offers a great time to market cows that are old, poor-footed, bad-uddered, bad-numbered, or big cows eating you out of your house. It can also be a good time to look at cows that haven’t performed as expected. Cutting back

on cows to an extent can offer you more space for females that can maximize your goals as an operation.

On the flip side, when keeping back replacement females, it is important to make sure that you are looking hard to keep the right females. Keeping back sound, functional females with good numbers, feet, and teat structure is ideal. If trends stay like they are now, heifers that can work in commercial operations will come at a premium this year. You can’t keep them all, so finding good females that can work as breeding stock for commercial producers is a market that registered producers should capitalize on.

For commercial producers raising their own replacement females, it is a great time for them to utilize DNA testing to find the best females to keep back. Finding the top quality females and selling the rest as feeders seems like a great strategy to capitalize on these high feeder prices.

Looking toward the unpredictable future, the USDA expects feeder prices to increase with the shortage of beef inventory. Corn prices look to be relatively cheap while pasture conditions look to improve. The USDA has the feeder price forecast to increase to $250/ cwt into 2024. Now I enjoy feeding cattle and learning more about them on the rail, but when you have the bird in hand, sometimes you just have to take it. I think it will be interesting to follow the markets into the future and the trends that they will follow.

Just like many juniors, the decisions that I make in my small herd can make a huge difference. The key is to find what works in your conditions, your set-up, and your taste while being able to profit in the end. I encourage all juniors to learn more about the industry, markets, packers, commercial producers, and how other commodities have impacts on the beef industry and prices. I have enjoyed being able to learn about those things over the years which has really helped me understand the big picture. Reading articles, shadowing people, touring operations, and asking questions is the best way to grow knowledge as an individual. Hopefully, over the next year, you will be able to make decisions that will help turn your cows into cash cows.

With fall being right around the corner, this is usually the time when many cattlemen start thinking about taking pairs off pasture for the year and weaning their calves. Maybe you already have! This is an important season where you can evaluate the goals you have for your herd and make some selection decisions. Whether you are weaning your calves to background, selling your calves at the sale barn, or keeping them back as seedstock, taking the time to collect records at weaning is important for your operation.

Taking weaning weights on calves can tell us a lot about their growth and performance. The Beef Improvement Federation (BIF) recommends taking weaning weights when a contemporary group of calves averages 205 days of age. This ranges from 160–250 days of age. Weights should be taken on each animal individually on a scale and not estimated. To be able to objectively compare a calf crop, weaning weights are adjusted to a standard 205-day weight. We know that the age of the calf plays a big part in weaning weights which is where using an adjustment becomes important. AGA’s adjusted 205-day weight calculations also include factors such as age of dam adjustment and heterosis effect.

For seedstock producers, reporting weaning weights on your registered calves can help improve accuracy on EPDs. In turn, this helps both you and your customers make the best decisions for your herd. When reporting weaning information, keep in mind

contemporary grouping to ensure calves are evaluated most accurately. Not only does collecting weaning weights help you evaluate your calves, but it might be just as important in helping you evaluate your cows. There are several factors to consider in making any selection decision for your herd such as the age of the cow, environmental conditions, nutrition, genetics, health, etc. However, the weaning weights of her calves can tell you about her productivity and milking ability. After weighing your calves, there are a few questions you can ask yourself about your cows. Is she producing too little milk and weaning off a lighter calf or is she producing too much milk and requiring more nutritional needs? Is she consistent from year to year or are those weights starting to trend downward? This can help you cull your lowerproducing cows and keep back replacement heifers from proven cows to improve your overall herd productivity.

Other information to collect on your cows at weaning is their mature weight, body condition score, and foot and leg score. BIF guidelines recommend taking mature weight at weaning. The best time to take this measurement is within 30 days of

weaning. This is a good indicator of maternal efficiency and can also be submitted to the registry, along with the body condition score, at the time of entering your calves’ weaning weights. Collecting and submitting phenotypic data is crucial for improving genetic selection tools and their accuracy. During this season of weaning, you can take advantage of collecting several data points. Establishing a history of records to look back on helps you evaluate the goals you have for improving your whole herd.

The American Gelbvieh Foundation (AGF) has been sponsoring the AGF Steer Challenge and Scale & Rail Contest since 2015. This avenue provides American Gelbvieh Association (AGA) members and commercial cow/calf producers the opportunity to learn firsthand about the feedlot performance and carcass merit of the genetics being raised in their respective programs. Ultimately, producers could use the data they receive to identify current strengths and/or weaknesses and then consider changes for genetic selection to make improvements.

For the last two years, the steers have been fed at Kinsley Feeders managed by Derek Martin located near Kinsley, Kansas. The cattle have been marketed on the USPB grid and delivered to National Beef in Dodge City, Kansas. Derek and his crew do an excellent job with cattle health and performance being very good for both of the past two years.

Participating producers deliver their cattle to Kinsley Feeders in midDecember and retain ownership through the feeding period (financing for cattle and feed is available if desired). Cattle should be weaned for a minimum of 45 days and have received two complete rounds of vaccinations.

Participants can send three or more cattle and are really encouraged to send sire groups including three or more steers from any one sire. Kinsley Feeders makes prompt payment to each of the participants following harvest and each producer also receives individual performance information and carcass data on each of their animals at that time. Winners of various categories will be announced at the AGA National Convention this coming December in Omaha, Nebraska. The complete data set for all animals will be available on Gelbvieh.org following the convention.

63 spring born steers were delivered to the yard by six participants during the week of December 12-16, 2022, for the 2023 contest. Each participant’s cattle are weighed as a group on arrival. Each participant’s cattle are tagged with a lot number for that owner. On December 20, the cattle were processed and that also includes recording EIDs and cross referencing those with ranch tags and lot numbers. Tissue samples were collected for DNA testing and sire verification. All the cattle were commingled and fed in one pen. The 63 head had an average incoming weight of 775 pounds per head. The cattle were relatively uniform with a high percentage of individual weights from 700–900 pounds. 62 steers were shipped from the yard on June 20,

2023, with an average live pay weight of 1,506 pounds. Average feed conversion was 6.06:1.0 on a dry matter basis for the pen. The cattle were sold on a grid when there was approximately a $23/cwt USDA Choice – Select spread.

Attached is a chart with the pen averages as well as the extreme highs and lows to show how much variation can exist in a group of cattle. Even though this group came from multiple sources, I think it does represent what exists in the industry. It could very easily represent the genetic variation coming from a single operation.

A $679 per head difference in profitability and a $377 difference in grid premiums per head from top to bottom underscore the importance of progeny testing in the feedlot. Assuming all the cattle are healthy, high profit cattle generally are close to the average or better for average daily gain (ADG) and hot carcass weight (HCW). High profit cattle also grade USDA Choice or higher. In this market a USDA Select grading steer with a 1,000-pound HCW was at a $230 per head discount to his USDA Choice grading pen mate if their performance was equal. From further review of the data (not provided here), I conclude that an individual animal with only slightly less than average performance, and lower than

average HCW that grades USDA Select generates $300-$450 less revenue than a higher performing pen mate with greater carcass merit.

As a seedstock producer maintaining ownership of some cattle through this feeding program and progeny testing you would obtain valuable data about sire groups in your program. Ideally, you would be able to identify bulls who sire progeny that both gain and grade. In addition, you might identify sires whose

progeny don’t do well in either or both areas.

Think about the economic impact of a sire with high genetic merit that produces calves who both gain and grade. Bull A sires 20 calves a year that generate $350 per head greater profit potential than progeny from Bull B with lower genetic merit. The bull sires three calf crops. That is $21,000 more profit potential from the steer calves sired by Bull A. This doesn’t include the additional value of any USDA Prime

grading carcasses. There would be added long-term benefits and genetic progress in your herd by keeping replacements out of Bull A. I understand that markets change and profit margins increase/ decrease, but the market signals have been quite clear that weight and quality grade are both important. If you’re not feeding your cattle don’t be lulled to sleep because some cattle feeder is buying these calves and he’s very likely keeping track of which groups are making money.

OVER THE FENCE WITH DALLAS BURTON

Darwin and Carol Burton, along with son Dallas, and his wife Lacey, co-own and operate DWB Farms, a totally integrated, start-to-finish commercial operation in Hitchcock, South Dakota.

The Burtons weren’t always just in the beef cattle business. Dallas’ great grandparents started the farm in the 1930s, raising a little bit of everything. His grandparents, Clayton and Merry Burton, purchased the farm from Merry’s parents in the 1960s, and they started milking cows in the 1970s. Darwin and Carol were married in 1979 and became a large part of the dairy operation. Unfortunately, their 120 head milking barn burned down in the fall of 1979. Dallas was always amazed by the perseverance of his family through that devastating time.

“They took their cows to one of our neighbors and got a new dairy barn up by February of 1980,” Dallas says. “To keep going, I always thought that was such dedication.”

By 2013, the Burtons decided it was time to get out of the dairy business. That’s when DWB Farms, LLC was formed, and the family decided to expand from the 150 Angus cows they had at the time.

DALLAS, TELL US ABOUT YOUR OPERATION.

We run about 450 commercial pairs and keep about 100 replacement heifers each year. We feed out the remaining heifers as well as all our steers, and sell them straight to a packer. We’ve been backgrounding our calves from the start, but we just started finishing out our calves in 2018. We have 2,500 acres of pasture/hay ground and raise corn, soybeans and forages, on about 1,500 acres of crop ground. We don’t buy many outside cows, it’s a closed herd for the most part. We AI one time, and then

turn the cleanup bulls out for 45 days. Our replacement heifers start calving in the middle of February and our older cows start calving on March 25th.

WHAT MADE YOU START USING GELBVIEH AND BALANCER® GENETICS, AND WHAT BENEFITS HAVE YOU SEEN?

When we sold the dairy cows, we used the proceeds from that to buy some bred heifers from a nearby ranch we continue to work with today. We had been strictly Black Angus, and we just weren’t quite getting the results we wanted to at weaning and after backgrounding. We thought we might be able to get a little bit more out of our cattle, and that was the year I went down to Hojer’s sale with the Gelbvieh and Balancer bulls. The first time I saw those cattle, they had the exact look I wanted, and I knew I wanted to breed that into our herd. Everything that came along with it has just been an added bonus in terms of the carcass, maternal and disposition strengths of those Gelbvieh-influenced cattle.

We really have found a great balance between the Angus and Gelbvieh breeds. The Gelbvieh has brought in a heavier boned, better structured, more filled out animal. A benefit of the crossbreeding has been the efficiency; we’ve seen our cattle consistently run 3-3.5, sometimes 4-4.5 pounds of daily gain. Also, the eye appeal of the Gelbvieh/Angus cross is what buyers want to see, in my opinion.

When we first started using these genetics, we eased into it and mainly bought Balancer bulls, but we’ve recently started buying Gelbvieh bulls as well. Good bulls pay, and when we find a bull with excellent carcass and strong maternal traits, we’re able to capitalize on both of those genetics between our

replacements and our fat cattle. It costs money to buy good bulls, so you hope that the bull lasts more than a year or two. We’ve seen that the Gelbvieh and Balancer bulls do last, they hold their own for a long time.

When we calve out our heifers, every single one of them will go into a 12x12 pen with their calf, and I’ve got to be able to walk up to that calf with the mother right there, pick up the calf and put it into a wheelbarrow to take it to a heated barn. So, we must have extremely well dispositioned cattle, and that’s another place the Gelbvieh genetics stand out.

HOW DO YOU MARKET YOUR CATTLE?

At first, we were just selling at sale barns, but we thought we might be able to do a little bit better than what we were getting for fat cattle. I had a connection who got me in touch with Tyson, and I started visiting with a buyer who was very interested – the one thing we struggled with was the amount of cattle we had. We only finish out 500-600 head of cattle, and in today’s world most packers aren’t interested in that amount. That’s where the grid stepped in for us; being able to sell our cattle on the grid made it more about quality rather than just quantity. Since we began selling on the grid, we’ve really looked at the genetics on our bulls to try to push carcass quality. We are on our third Tyson buyer, and we have a great relationship with him. If we were just taking our cattle to the sale barn, we would be losing out on the $60-$80 premiums that we now receive for our cattle. To have a marketing relationship like we do is substantial in our operation.

HOW HAVE YOUR GELBVIEH AND BALANCER INFLUENCED CALVES PERFORMED ON THE RAIL?

The last four loads we sent in 2022 went 96-97% USDA Prime or Choice with very few Yield Grade 4s and virtually no Yield Grade 5s. I was always told that you could feed Gelbvieh cattle a little bit longer without getting your Yield Grade 4s and 5s, but still grading USDA Choice and Prime, and we’ve seen that with our data.

WHAT TOOLS ARE YOU UTILIZING TO MAKE SELECTION DECISIONS IN CHOOSING WHICH REPLACEMENT HEIFERS TO KEEP AS WELL AS BULLS TO USE?

With today’s technology, you’re able to make more educated purchases and keep the traits you want in your herd. In terms of EPDs, calving ease maternal, intramuscular fat and ribeye area, are things I look at a lot. As far as replacement heifer selection, I’m really trying to get better about feet. It wasn’t something I looked at quite

as much but I am starting to more. I also try to go back on records and keep the most fertile ones in the herd, which are usually going to be the heavier ones since they were born earlier. It’s a fine line you walk on, to keep moderate cows that won’t take a tremendous amount of feed over winter, but still have some size. There’s nothing better than seeing a cow wean off a calf that’s not a whole lot smaller than she is.

WHAT ARE SOME OF YOUR GOALS FOR YOUR FAMILY AND OPERATION MOVING FORWARD?

A short-term goal I have is to incorporate EID tagging that coincides with the packer, where I can really look at the carcass data for each individual animal and trace it back to where that specific animal came from.

Long term, we would love to bring my daughter, Eastlyn (12) and son, Dayson (8) back to the farm. Eastlyn is already moving in that direction, as she got to select one of our replacement heifers to start her own herd. We AI bred that heifer, and she will be able to retain any daughters and earn money from the steers. To be at a place where our operation can support both their families in the future, that’s what we all want.

THE RESULTS ARE IN: 2022 NATIONAL BEEF QUALITY AUDIT

“The U.S. cattle industry cannot expect improvements in prices for its products or by-products when ‘quality’ doesn’t warrant such increases,” as stated in the 1991 National Beef Quality Audit. The 2022 National Beef Quality Survey Results were presented during the Beef Improvement Federation Symposium in Calgary, Alberta, Canada, on Wednesday, July 5, by Dr. Jeff Savell, Texas A & M University, and Michaela Clowser, M.S., National Cattlemen’s Beef Association.

The National Beef Quality Audit focuses on the physical attributes of beef and beef by-products such as marbling, external fat, carcass weight and carcass blemishes. These concerns have evolved to also include food safety, sustainability, animal well-being and the disconnect between beef producers and consumers. The audit is designed to address the lost opportunities of beef production resulting in inefficiency cost of $458 per head.

The data from the 2022 National Beef Quality Audit was collected under extraordinary circumstances

due to supply chain disruptions and cattle backlog from the impact of the COVID-19 pandemic. Additionally, weather impacts such as ongoing drought across the country influenced the results to reflect the state of the industry at the time.

The audit is divided into two phases: interviewing buyers of beef and conducting in-plant data collection. The objective of the first phase of interviews is to interview employees making cattle or beef purchasing decision across four market sectors and secondarily related Government and Trade Organizations (GTO). The four participating sectors were packers, retailers, food service and further processors.

“We always like to start out by asking what type of cattle these companies purchase. Predominately beef cattle are purchased then dairy,” explained Clowser. “This year, companies reported that they were purchasing beef x dairy cross cattle. This is the first audit that this has been reported.”

The audit revealed that black-hided cattle increased to 62% from 58% in

2016 and 45% in 2000. The Holstein hide color decreased to 12.3%; confirming the industry trend of beef sires being used on dairy cattle.

Study participants were asked what the term “cattle genetics” means to their company with answers concluding that genetics directly dictates the quality of the end-product. Most participants in each sector of the industry recognized that quality genetics improve the beef herd thus producing a higher-quality product for the consumer.

“When looking back at the 2016 audit, these companies associated genetics with breed and breed characteristics, so we’ve come a long way in a short amount of time about these companies seeing the importance of cattle genetics,” said Clowser.

In-plant research is designed to capture data on quality and yield grade attributes and carcass defects to compare with previous audits to assess industry progress in improving quality. This research also provides a benchmark for future industry educational and research efforts.

Heat stress and other environmental factors resulted in an increase of bruising, dark cutters and heart issues as well as decreased mobility. Almost 92% of cattle received a desired mobility score of 1, with the animal walking easily and normally with no apparent lameness. This was a decrease from 96% in 2016 and can be attributed to larger cattle and longer time spent during transport.

The 2022 NBQA displayed the highest frequency of 52.3% carcass bruising since the audits began. This increased bruising frequency should be addressed through facility and trailer design as well as cattle handler training. Nearly 93% of transportation service providers interviewed were familiar with the Beef Quality Assurance Transportation (BQAT) program and 91% are BQAT certified.

“One of the greatest things we’ve seen here are the changes in USDA Prime and Choice overtime,” explained Savell. “In 2022, 76% graded Prime and Choice and was 7.5% Prime and 68.3% Choice.”

There was a 3.7% increase in carcasses grading USDA Prime between the 2016 and 2022 audits. This impressive improvement requires good genetics and management, but it starts with genetics. While the industry continues to improve the quality of the beef being produced, the quality has come with increased hot carcass weights and fat thickness, resulting in an increase of Yield Grade 4 and 5 carcasses.

Improved genetics can aid in maintaining the Yield Grade 3 or better of carcasses, while maintaining the marbling necessary to achieve desired quality grades. Producers are encouraged to utilize advancements in genetic selection technologies to breed for carcasses with increased eating satisfaction, uniformity and the desired end-product specifications.

There has been a large increase in the number of beef producers using technology for recordkeeping and data collection thus creating improvement in traceability efforts. However, there still remains concern among the beef supply chain that a significant animal

disease could negatively impact the industry as current traceability efforts do not provide a robust enough system to combat the potential animal disease threat.

It is vital to utilize BQA programs and principles to improve cattle wellbeing, increase consumer confidence, encourage greater beef demand and increase industry harmonization as the same message is carried from the producer to the consumer and each segment in between. If you aren’t already BQA certified, take the first step and complete the certification to enhance the message of the U.S. beef industry.

The 2022 NBQA results can be utilized by those in all segments of beef production to improve current management practices and implement new innovative techniques to enhance consistency and quality of cattle and beef products through each sector of the beef supply chain.

“Sire selection is one of the most important decisions that a commercial herd makes year in and year out – it’s a risky decision. Every commercial herd should be using genomics for sire selection,” explained Dr. Troy Rowan, University of Tennessee-Knoxville, in his presentation titled “Why Should Commercial Cattlemen be Interested in Genomics” during the 2023 Beef Improvement Federation Symposium on Tuesday, July 4, in Calgary, Alberta, Canada.

The bull purchase is one of the riskiest decisions that a commercial cattle operation makes. The young sires that cattlemen are purchasing don’t have the benefit of hundreds of progeny thus, lack the benefit of added EPD accuracy. Producers are simply using a statistical guess of the animal’s genetic merit. This is a risky decision, as producers are making an investment on the future genetic potential of the animal. Bull selection plays an outsized role in genetic progress. In a one bull herd, the last three bull purchases account for an average of 87.5% of the genetics in the current calf crop.

“A good decision has a multigenerational impact; it leaves a big footprint. A bad decision can generate problems for multiple generations as the bull buying decision has a really big impact of the genetic makeup of the

herd,” said Rowan. “When producers try to partition how much genetic gain has occurred from the bull contribution versus female contributions in the commercial cow-calf industry, overwhelmingly these bulls pull over their weight. Any tool that we can use to make this decision more straightforward, more accurate, and optimal in the long run, we need to use it.”

The more often producers make the correct, accurate genetic selection, the faster they are able to make genetic progress because time is not wasted on incorrect decisions. Animal breeding is based on measured phenotypes that are made up of genetic and environmental variation. Genotypes are the heritable genetic variation of the animal. Environmental variations are shared by contemporary groups and are based on management and weather that attributes to the animal’s phenotype.

Once the environmental variation is removed from a phenotype, the process to figure out which genetics an animal inherited from its parents can begin. The genetic makeup of an animal is created with half of the sire’s genetics, half of the dam’s genetics, and includes mendelian sampling which is the random shuffle of genes from each parent. Mendelian sampling can account for over 50% of genetic variation in complex traits.

“This is exactly how we can go and look at a set of flushmate brothers and do a genomic test on them and suddenly all their EPDs are substantially different. This is due to mendelian sampling as they each got a different random shuffle of genes from the sire and dam,” explained Rowan.

Genomics increases the confidence in mendelian sampling and the prediction of the animal’s genetic merit. Genomic tests are designed to increase EPD reliability in unproven animals. For example, genomically testing a bull gives the producer data equivalent to 28 progeny thus giving an entire calf crop’s worth of calving ease data to enhance the accuracy of the bull’s EPDs.

“The cost of genomic testing is as low as it’s ever been and it’s getting lower. This is something I think as seedstock producers we can’t not do. This is big time risk mitigation for our commercial producers. This allows commercial producers to buy with a lot more confidence that a bull’s genetics are what their EPDs say they are,” said Rowan.

The biggest way genomics touch a commercial operation is through bull selection as it reduces the risk when purchasing young, unproven sires. Producers are making a big investment and they want to be confident that they’re buying the genetics they think

they are. Genomics get the seedstock producer closer to increased EPD accuracy.

Genomics work as they accelerate genetic gain across populations and reduces the generation interval. This was really pronounced in the dairy industry as genomics allowed the average age of a sire to enter AI studs and be used widespread at two and a half years of age instead or at seven and a half or eight years of age. This not only increases selection decision accuracy, it also shortens the generation interval in a seedstock context.

“The footprint a bull has on a herd is substantial. He’s going to sire 30 plus calves a year. A dam is going to have one calf hopefully for six years so she can become profitable for the producer. The intensity of selection that happens in the seedstock industry is much stronger than what we can generate in identifying replacement females.

Genomics move the needle as seedstock animals drive the genetic trends in the commercial cattle sector and genomic tests do generate added genetic merit. Producers must use the information gained from genetic tests to make their selection decisions. Producers must test more heifers than they plan to keep as testing only heifers they know will be kept is just expensive confirmation bias. The rule of thumb is to test twice as many heifers as they intend to keep. There must be selection pressure on genomics with more accurate metrics for making selection decisions.

Genomics allow commercial producers to manage the expectations for their herd. Genomics help estimate genetic merit, increase EPD accuracy in unproven animals, and accelerate population genetic gain. However, genomics do not predict phenotypes for individual animals or account for non-heritable components of

traits. Genomics are not phenotypic predictions, they’re genetic predictions of what a producer can expect the animal’s offspring to accomplish in the future.

It is important to remember that regardless of whether a GE-EPD improves or gets worse, it is always better than an un-enhanced EPD. The increase in accuracy is what gets a producer closer to the true genetic merit of an animal. The bottom line for commercial producers is genomic testing reduces risk when purchasing unproven bulls.

BEEF ON DAIRY OPPORTUNITIES

In 2022, the beef on dairy sector of the beef market grew to more than 10%. In 2023, the sector is anticipated to capture 13% of market share in beef sales. The solution to the age-old dairy bull marketing dilemma is here to stay.

Dr. Bob Weaber, Kansas State University professor and American Gelbvieh Association (AGA) genetics consultant, addressed attendees at the 2022 AGA National Convention with a message of where the beef on dairy market is headed and the motivations for further developing beef on dairy feeder segments.

Weaber says that to begin to assess the sector, we must first ask, “Why is beef on dairy such a big disruptor to the beef market?”

The answer, he shares, is the dairy industry’s use of genomics, embryo transfer and sexed semen to build high quality replacement females using advanced reproductive technology. And this improvement within the dairy cow herd also presents what Weber calls “big opportunities” for other dairy cows in the herd mated to beef bulls. Beef bulls present a number of positive attributes in a beef on dairy mating, including the ability to settle older and-or more difficult to successfully AI dairy cows, cows that, due to their genetic potential within a herd, will not be propagated into the next cycle of cow replacements, and, most impactful, is the value of a beef on dairy feeder calf versus the value of a dairy sired feeder calf.

“(Dairy) calves used to be a byproduct of the dairy production system, but that is changing rapidly,” Weber says. “We are seeing these beef on dairy calves viewed as a particularly valuable revenue stream for dairy operations.”

A GROWING SECTOR

Citing a 2022 survey in which dairies with 1700+ head of cows in the milking

stream, more than 81% of respondents were using beef semen with 78% reporting extra profitability as their main motivation. The value-add of the beef on dairy calves was calculated to be 69% over and above previous sales of calves sired by dairy bulls.

“What we’re seeing from the dairy industry is that they are not producing an excess number of females as they have in the past because of the use of sex sorted semen. They are making genetic gains in the replacement females, but the biggest genetic improvements in the dairy industry are being made in terminal calves. Around 58% of dairies started using beef bulls in the past three years—there’s a lot of room for growth in this sector,” Weaber shares and adds, “Today, somewhere in the neighborhood of 9.3 million cows make up the U.S. dairy herd, that sees around an 80% calving rate—plus or minus 7.5 million calves a year. At the current adoption rate of just over 50% of cows committed to conventional dairy calf production, what we are left with is the potential of around 3.7 million calves, or 50% of the dairy herd funneling into the beef value chain.”

The adoption of beef on dairy has seen rapid growth and continues to climb. In 2018, Weaber reports that only 1% of dairy calves were sired by beef bulls. Today, the sector is seeing a 70/30 split with 70% of non-replacements mated to beef sires.

SIRE SELECTION ADDS VALUE

“It’s not uncommon to hear folks talk about two-tenths better conversion on average daily gain,” Weaber says. “Reduced days on feed and dramatically improved carcass value added by selecting the right sire decreases the number of calves that incur dairy discount which can be somewhere between $4 and $10 cwt on a carcass— $50 to $100 on an 8- or 900-pound carcass adds up and putting the right beef bull on a dairy cow dramatically changes ribeye shape and carcass cutout.

EGenetic Solutions) Youth Leadership Conference, or The Summit as it’s referred to by many. An event that happens every other summer to offset other summer events our emerging leaders participate in. We anxiously anticipated what would be the hottest, yet most attended event on record.

The Summit is an opportunity for young cattlemen and cattlewomen to find solace and reprieve from their day-today responsibilities by gathering with fellow young leaders sharing a passion for cattle, leadership and networking. The American Gelbvieh Junior Association (AGJA) historically planned this event with their counterparts at the American Junior Shorthorn Association (Shelby Diehm) as well as the American Junior Simmental Association (Mia Bayer). As we sat together in 2021 following the Summit’s conclusion in Amarillo, Texas, we discussed what we could do to open the door to more young beef producers and enthusiasts.

“IGS exists to provide simple and effective genetic tools to serve the beef business using cutting-edge science and collaboration. The IGS fosters industry partnership with diverse perspectives and organizations while honoring the autonomy of the individuals and groups

participation numbers but also shed light on who IGS is and what it means to be part of such an organization. We were excited to share a week filled with leadership, growth, professional development, and personal growth, with two new additions to the official roster of the IGS Youth Leadership Conference planning breeders, the American Limousin Junior Association as well as the American Chianina Junior Association. While the planning committee for this conference consists of the junior coordinators from the five aforementioned beef breeds it is important to note that attendance is open to all young men and women with a vested interest in the beef industry regardless of breed affiliation, or lack thereof.

More than 70 delegates with six advisors arrived on Thursday, July 20, in Phoenix, Arizona, to blue skies, the sun shining, and a balmy thermometer reading of 117 degrees Fahrenheit. We were asked more times than I care to count, “Why Phoenix in July?”, “Of all places to go at the end of July, what made you choose the desert?”. There are five primary goals my fellow junior coordinators focus on
