FCTC Trains the Next Generation in the Culinary Arts

alk into the kitchen at First Coast Technical College School of Culinary Arts on any given morning and the students are busy doing morning prep work. The scent of onions, datil peppers and garlic fill the air as they baste, cut, chop and boil depending on the menu for that day. Once the prep is complete the food is ready to serve to guests at Walter’s Reef, the school’s on-campus restaurant, which by the way, is open to the public. Creating meals for diners at Walter’s Reef gives students the chance to really become chefs with hands on learning under the direction of experienced senior chefs who are their teachers. This is one component of the dynamic program run by Program Supervisor, Chef Scott Bennett. Students not only prepare the food, they also serve it. Hospitality Instructor Denise Jones says this teaches students about the importance of communication between the front of the house where the guests eat and back of the house where the meals are made. The students recently won second place in a statewide competition in Orlando, reflecting the high quality of the program and its instructors. Students in the program are from many different backgrounds. Adonica Steiger was working in an office position, and decided to enroll in the program after attending an open house. “My initial goal was to open a food truck but I have changed my mind. I am still looking for my niche in the kitchen; my goal is to discover what I am really good at and can enjoy improving upon every day. I graduate in January 2015 and hope that I will have a better idea for what area in the culinary field I would like to pursue. I have an interest in fine dining so I am eager to learn more on plate presentation prior to graduation.” Adonica appreciates the way the senior chefs encourage creativity in their students. Another student, William Eric Hutcherson was a licensed crane operator for fifteen years until a back injury forced him to change careers. Since he always loved cooking he decided to attend an FCTC culinary open house. He says, “FCTC has a very informative program and easy enrollment. I really enjoy the one on one with the chef’s and the fact that we actually are involved in production made my decision to enroll a easy one. I plan on pursuing my dreams of becoming a chef by seeking employment in the Assisted Living field and enrolling in the apprentice program offered at FCTC”.

A few students have actually enrolled after entering retirement because they love cooking and wanted to learn more now that they had the time and freedom. One such student is Chef Bob Henle, who attended FCTC in 2001, after a long career with the Air Force. Henle is now the Head Chef at one of the area’s best restaurants, The Reef in Vilano Beach.

Chef Bob Henle The Reef The Reef is famous in the St. Augustine area. If you have ever had the pleasure of eating there it is no surprise why it shines. As one of the only ocean-front restaurants in St. Augustine, it sits less than one hundred feet from high tide with views and sea breezes from every table, and has some of the best food around, created by Executive Chef Bob Henle. I was lucky enough to sit down with Chef Henle recently to learn about the food he creates at the Reef. Our conversation began with food, Saffron Mussels to be exact, a dish he developed a while back which has evolved over time. It features a datil-pepper, Spanish inspired saffron, cream sauce with layers of delicious flavors; drizzled over a bed of meaty mussels with enough crostini to dip in the leftover sauce. Wow! I wondered how he comes up with these amazing ideas for food and why they taste so good? Bob Henle has not always been a chef. Before he was a chef he was a mechanic in the Air Force and lived in the southern part of Spain near Rota for fifteen years. After retirement he decided to shift gears and become a chef. His interest in cooking began when he was a kid. His parents went on a special diet that was extremely bland and Bob says he had to learn how to cook or he wouldn’t want to eat. He found he liked it but at the time had not thought of it as a career. All those years living in Spain was an inspiration to him, and he continued to try different recipes and was able to learn about food as he traveled throughout Europe. After leaving the Air Force, Bob’s formal education in the culinary arts began at First Coast Technical College. While at FCTC he thrived, participating in demonstrations, and winning a prestigious national contest that landed him a trip to Barcelona, Spain and attendance at a culinary school there. Bob says the experience was amazing and allowed him to hone his skills. His style as a Chef is influenced by the time he spent in Spain and his travels. He also keeps it simple, using fresh local

spices, fish and vegetables. He loves to create new dishes for the Reef. He begins by putting a few things together from ideas he gets reading magazines or watching cooking shows, and makes his own combinations. He says he usually changes the menu every six months, which keeps it interesting. Some items in the works on the new appetizer menu; an Italian inspired Chicken Liver Pate, and fried manchego cheese. Mmm..... Sounds delicious. The Reef is owned by the Usinas, one of St. Augustine’s historic families and has been a restaurant since 1989. It was formerly called Comptons but opened as Mulvey’s Reef in 1999 and was later changed to The Reef. Chef Henle created a menu primarily of fish and seafood balanced with beef, poultry pasta and creative specials, always fresh and sourced locally whenever possible. The menu at the Reef is about to change again and will include a slew of appetizers or small bites. Whether it’s the for the specialty dishes created by Chef Henle, the award-winning Sunday Brunch, or simply to enjoy the view on the ocean deck, or from inside, The Reef is the incredible! Chef Matt Ingaro of Black & Blue Grill Where did you go to school? I am a graduate of Pennsylvania Culinary Institutes (PCI) Le Cordon Bleu Program (2006) How did you first become interested in cooking and how did it lead you here? My interest in cooking started when I was very young watching The Food Network, shows like Yan Can Cook, and The Essence of Emeril. My Grandmother was also an inspiration to cook. Going to her house on Sundays for dinner, eating the best food, thinking she was the most amazing cook. I’m still trying to duplicate her recipes. My first cooking job was in my home town of Jamestown NY (about 2hrs south of Buffalo) at a little pizza place that only did delivery. From there I went to a casual dining restaurant as a dish washer and worked my way up to a prep chef within 6 months. That ignited my love for food as a teenager. From that point on, I knew I wanted to be in the restaurant industry and own my own place. That’s when I scoped out PCI. What are your hopes and dreams for Black & Blue? My hopes and dreams for Black and Blue…….hmmm…. well, basically I’m living my dream of owning a restaurant. My dream for the restaurant is that it is successful, that we become a name in the community, and that someday I can pass it to my two daughters, Maddie (5), Mollie (5 months), just like my father will pass it on to me.

Why is Black & Blue Grill unique? What sets us apart from other restaurants is that we do mostly scratch cooking. Going back to the way restaurants did things a long time ago. We don’t use pre-made dressings, marinades, soups, sauces, it all gets made in-house. When it comes to our meats, we source it Florida-Local. It comes from the Seminole Indian Tribe. (This florida grass fed beef which is the highest grade produced in Florida) We also cut those by hand in house. What is your cooking style? Kinda old-school with a modern twist. I love taking old time dishes and putting a modern twist on them. I love the challenge of something that has been around for years and re-inventing it. My specialty – I don’t like thinking I have a “specialty”. To me, when someone calls it a “specialty” that makes it almost seem like it is the one and only thing that you do extremely well. I strive for perfection on anything that I’m cooking. But, if I had to pick a cooking style or ethnicity I like the best, it’s a toss-up between Italian and Asian. Coming from a mostly Italian family, it’s what I grew up with. The Asian, I’ve always loved loved loved, Asian food.

Romance & Holiday Spirit at St. Augustine’s Inns by Angie Bell

St. Augustine in the fall is a very romantic place. The weather has cooled, summer holidays are over and the Christmas rush hasn’t quite begun. It’s the perfect time for a little get away - to relax, to reunite, to plan, to dream. A Bed & Breakfast is just the thing, the perfect staycation. Each Historic Bed and Breakfast Inn in St. Augustine is unique in its guest room décor, amenities offered and architectural style. Each inn has a unique history and your innkeeper will be glad to share all of the wonderful tales of the building with you. Our inns range from Victorian to Contemporary and everything in between. You can find exactly what you are looking for. There are a few differences between the hotel/motel and a bed and breakfast inn that you should be aware of. There is no front desk staff at a bed and breakfast inn. Most innkeepers are easily reached by phone or email from 10am to 9pm and they will let you know how to contact them if you need them outside of that time. Always check with your innkeeper prior to your stay if you have special needs. They are more than happy to help you if they can. The Cedar House Inn is one of four B&Bs in a row on Cedar Street, just one block away from King Street. Built in 1893, Cedar House has seven guest rooms, all with private baths. Cyndi Humphrey has been the owner for over five years of this lovely inn which is rated number one in the city and number four in the country by Trip Advisor. Cyndi lives in the owner’s residence in the back and is hands on all the time, even with the cooking. In fact, one of the special activities she hosts on occasion is a cooking class. She has recently released a cookbook, “Breakfast Reimagined - Ideas From the Kitchen of Cedar House Inn”. It’s a keepsake cookbook featuring 20 of the inn’s most popular

breakfasts, created at the request of her guests. The proceeds from the cookbook sales are dedicated to the First Coast Technical College’s “Fresh Starts in Culinary Arts” program, in cooperation with the St Francis House, a temporary home for St. Augustine’s homeless population. It is a four week program that provides the residents with relevant training and certifications that will make them immediately employable in the local food service industry. Cedar House hosts an average of 100 weddings a year. The inn takes care of all the arrangements, from local florists and photographers to the food. “It’s a privilege to have them walk in the door,” Cyndi says. Many couples return for anniversaries and “babymoons”. Even Flagler students whose parents have stayed there may sometimes be found popping in for some Cedar House cookies. When asked if her inn is haunted, Cyndi Humphrey replies, “Only with the spirit of love.” Also on Cedar Street is Penny Farthing Inn, built in 1897 and full of Victorian charm. In addition to breakfast, this nine room inn provides an evening social hour and evening deserts. The many porches and balconies are an extension of the hospitality found here. The Peace and Plenty Inn has been described as “wonderfully quiet.” Known for its peaceful garden it is the perfect place to get away for some relaxation. This B&B is full of history, going back to its builder, Conrad Drecher, who also built the first Bridge of Lions. At Journey’s End, rated number two in the city, begins with a lovely outdoor area. Inside visitors find quite an eclectic display of furnishings, with each room having its own personality. The Case for Pet Insurance In October we saw several pets with severe, life-threatening diseases. Two dogs, a seven year old boxer and a seven year old cock-a-poo, were diagnosed with Lymphoma. They are both very lucky dogs. They have owners who care very much for them and can spend thousands of dollars to save them by going to oncologists. Yes, there are cancer doctors for pets. Lymphoma is cancer of the lymph cells. There are two different forms, B-cell and T-cell Lymphoma. B-cell is more likely to be treated successfully than T-cell. My reason for telling you about these two dogs is to ask you a very simple question. Can you provide thousands of dollars out of your pocket to save your pet? If your answer is no, you need pet insurance. This is a very simple question and answer. Please realize that I know that there are three answers to the question I asked. One is “Yes, I can.” Your pet is very lucky if you answered this way. You are self-insuring your pets. If you have two pets, can you do it twice? It can happen. I worked at the local emergency clinic and had two Jack Russell Terriers from the same family bitten by a venomous snake within seconds of each other. Both dogs needed multiple vials of antivenin, hospitalization, IV fluids, antibiotics, anti-inflammatory drugs and frequent examinations during the first 24 hours. Each vial of Antivenin costs hundreds of dollars. It is very common to need 2 to 6 vials per pet to save them. The answer that some pet owners of very limited means will give is “No, and I am not getting pet insurance.” Every veterinarian has heard a client say they were taking their very sick pet home to end its suffering themselves with a firearm. It is a harsh answer. The answer most commonly received is “I did not realize it could cost so much for a pet to receive care by specialists.” Specialists know how to ring it up. They have put in extra years of training. They have large, well-trained teams who are trying to save every pet brought to them. Specialists and their team members see many pets die of the diseases they come to be treated for. They experience feelings of their own when they lose a patient and are expected to help clients deal with pain and death. ADHD

JACOB’s STORY

Jacob was diagnosed with ADHD when he was 5 years old. He was always very, very smart but had so much trouble staying focused when it came to doing school work. I was not very keen on the idea of giving him prescription drugs for this, so we just worked harder to keep up. Years went by this way and it continually got harder and harder on us both. Also, during this time his pediatrician was telling me to put him on medication for the ADHD, and after two years of struggling with him and talking to his doctor, I gave in and tried a common ADHD medication. Within two days, he was a different child. He was very, very emotional. Something as small as his shoes being untied could send him into a crying fit. After one week, I was back in the Doctor’s office and telling them that I had already stopped the meds. The doctor said that we would possibly have to try several before finding the right one for Jacob. We tried another and finally settled on one. It seemed to work really well for him, and immediately his grades started improving. What wasn’t improving was his health! Matter of fact, quite the opposite was starting to happen. He stopped eating. He stopped growing!!! After weeks, possibly months of him complaining that his heart hurt, we were walking into a children’s Hospital looking for answers. They attached him to an EKG machine and within the hour, they were telling me that the medication had given him a heart murmur and palpations. Their answer to this was to keep him on the medication, and to ADD a medication to increase his appetite. The most absurd advice was to take home a portable EKG unit and to monitor him weekly. After letting them finish going over their “treatment plan”, I stood and grabbed hold of my son’s hand and we left. We left the EKG unit and we left the DRUGS!
