The last couple of weekends, I’ve woken up to sunshine and it’s given me a weird injection of energytogetstuffdone.There’s nothing like sunlight to show up the dirt, so I’ve been running around dusting shutters and lampshades with insideout sports socks on my hands, and clearing away the cobwebs with a broomwrappedinan old pillowcase, spritzed with spray cleaner (tricks I learnt working in hotelhousekeeping, years ago!). Inspired by the ‘make-do-andmend’ attitude of our real homeowners in this issue, I’ve also stopped moaning on about my on-its-last-legs kitchen and got busy resticking and Plasti-koting the loose and chipped gloss vinyl, fixing the loose handles and rehanging the wonky doors. ABOUT ME I’m Rachelle Garnham, head of marketing for the fashion and shopping app, Mallzee, and I live here with my husband Ben, a maths teacher, and our Lhasa Apso Poppy. MY HOME A three-bedroom, twofloor tenement flat in a Georgian townhouse in Edinburgh, which we bought in 2013. WHEN I MOVED IN The building had been converted into flats, but the decor was cheaply done and looked dull and uninspiring. AND NOW A calm, co-ordinated colour scheme in soft grey, blush and gold looks chic and upmarket. STYLE TIP Take time to work out your style and don’t settle for items that don’t fit it. You can alter them – paint them or add some new handles – to end up with something unique without spending a fortune.

WEDDING LOOK’ Rachelle and Ben gave a gloomy flat a rosy new look by taking inspiration from the glam grey, gold and blush colour scheme they chose for their wedding

B

en and I met when we were students and, after years of living in rented flats, we bought this three-bedroom flat together in 2013,’ says Rachelle. ‘It has an attic, which is unusual for Scottish tenements, and we liked the dual character of the building, with its high-ceilinged, spacious living areas downstairs and then the cosier, sloping roof in the bedrooms and bathroom upstairs. Although the flat had already been renovated, the decor was bland and dated, with magnolia walls and oatmeal carpets that looked tatty and tired.

Colours we love

We rushed in and decorated a lot of the rooms straight away, going for a mainly grey colour scheme throughout to give it a cohesive look. But when we started planning our wedding in 2016, we decided on a gold and blush theme and then found that inevitably some of the wedding props found their way back into our home after the big day, so the decor changed to grey, gold and blush, which we love, although it did mean that we then ended up altering everything else!

Taking our time

Attention to detail is important to us both. We believe that if you’re going to do something, you do it properly, and you don’t take shortcuts. We rushed things when we first bought the flat, as we felt we had to do the bedrooms and the sitting room straight away, then we slowed down and took our time over the kitchen and bathroom, and once

they were done we realised that the rooms we’d completed earlier were not quite right, so we re-did them.

The overall look is quite simple and stripped back, with lots of natural materials, but then a top layer of luxury with the added accents of blush and glamorous gold. We both find the uniformity of the decor soothing and quite practical, as everything goes together and you can move things around quite freely. We’ve learned that less is more and we try to stick to quality pieces that will last. We also tend to

Friends do laugh at us as they find our commitment to our colour scheme hilarious, but they do love our home and we love having visitors, so it’s a win-win. Ben says I have a gift for display, as there are little vignettes on every surface, such as shelves, noticeboards and mantelpieces. Even the books have been chosen for their jackets. Although where once I used to buy knick-knacks impulsively, now I’m far more considered and only buy for a specific purpose, preferring to wait for just the right thing.

Café inspiration

For inspiration, I use Pinterest and then create mood boards and scrapbooks. I find I usually have an overall idea of

Screw two curtain rod holders into the wall. The distance between the holders should be same as the width of a roll of brown paper. Cut a length of wooden dowelling slightly wider than the roll of paper, and then feed it through the centre of the roll. Place the dowelling on the curtain rod holders. Pull the paper down and use a couple of bulldog clips to weight the bottom of it down.

DIY ARTWORK

Start by picking out a favourite phrase, inspiring quote or even a short poem for your piece. Using a computer, experiment with typing in some wording, trying fonts and font sizes to create different effects and playing around with layouts and colours.

Print out your work on inexpensive printer paper until you’re happy with the alignment and sizing, then swap to a slightly thicker cartridge paper or lightweight coloured card that will give a better-quality finish. Frame your artwork in a simple clip frame, mounted or unmounted depending on its size. To create a luxe look, try spray-painting the frames gold, as Rachelle has, before positioning your artwork in them.

W

hen we found this house, my husband Rob and I were living in a rented, onebedroom ground floor flat in a Warner house in east London,’ says Victoria. ‘I spent hours searching for the right property on listings websites, keen to jump on the property ladder and secure a home for our future family. Then I saw this house – it ticked all the right boxes and was the perfect doer-upper in our price range. The property belonged to a family who had lived there for 60 years – the daughter of the family showed us around. She insisted on no agent viewings, as it was important to her to sell the house to the right people. Although the interior had been pretty well looked after, the kitchen was dark, carpeted and had zero storage and the bathroom was dated and not family friendly. We loved the original features of the house and have tried to restore them back to their former glory.

Making our mark

EASY LIVING ‘In this room I’ve mixed sentimental knick-knacks that we’ve collected over the years with modern high-street pieces like the geo rug from La Redoute’

We moved into the house in November 2015 and began working on it right away. With no major structural changes to make, it seemed as if the work would be quite straightforward. However, four months in, I found out I was pregnant, which suddenly gave us a deadline to get the house finished by my due date. We spent just over a year DIY-ing every single weekend, bank holiday and spare moment and lived in the house for the entire time it took to renovate it. We stripped every wall back to the bare plaster and started afresh, lining and painting them, and we pulled up the

We revealed three original fireplaces upstairs that had been boarded up, along with original panelled doors and banisters. We also did the tiling in the kitchen and bathroom. As we did a huge amount of work ourselves, we kept the costs down, but hit several low points. Halfway through the project, the house was a complete dust trap, nothing was finished and we couldn’t afford to hire builders or decorators – it was up to us to just suck it up and plough on with the job.

Getting crafty

With a background in photography, I’ve developed quite a good eye for most things visual and I was keen to share our DIY projects on Instagram. Since joining a year ago (@thecraftyfox.uk), it’s proved a massive inspiration and has certainly shaped my design tastes. There are so many accounts depicting the

COLOUR CODE ‘As the dining room is the darkest room in the house, I was determined to add as much colour as possible, so I painted our mix ’n’ match chairs in bright shades’

Protect the area not being painted by masking it off. Then prep the area that will be painted by lightly sanding all over. Wipe off any dust. Choose your paint – chalk paint will give a super-matt finish, eggshell or satinwood are durable options with a low sheen, and gloss will give a hard-wearing, high shine effect. Paint two to three coats to provide an even finish.

To add the wallpaper backing, remove any handles or shelves (depending on where you’re applying the paper). Cut the wallpaper to size, apply an adhesive such as wallpaper paste or PVA glue to the area, position the wallpaper, and carefully smooth out any air bubbles. Neaten any untidy edges with a Stanley knife. Once the sideboard is completely dry, re-fit the handles or shelves.

I love vintage pieces and colourful interiors with lots of pattern and texture that give a nod to the past. The majority of our furniture is second hand that we’ve inherited, found on the street or bought on eBay. Our two best finds are the living room fireplace we picked up for £65 and an ex-display roll-top bath for £250, both from eBay. It’s amazing what you can find out there for a fraction of the price of the high-street retailers. The previous owner left us a mirror above the main bedroom fireplace and

Source a plug-in pendant light (try the selections at vendimialighting.co.uk), ensuring the flex is long enough to reach your plug socket from where you plan to mount the bracket.

Attach the bracket to the wall, using screws and wall anchors. Safely remove the plug from your light fitting and feed the flex through the holes, starting with the first hole on the top of the bracket, over and through the end and out of the hole in the angled section of the bracket. Safely re-attach the plug to the flex, and add your bulb and shade of choice to the fitting.

We reworked the bathroom layout to make space for the roll-top bath, moving the washbasin to the opposite side of the room. We bought all the fixtures and fittings on eBay and the bathroom mirror was left by the previous owner. We also revealed the boarded-up fireplace and painted it black using Rust-Oleum metal paint, and we painted the walls in a beautiful shade – Valspar’s Serenade.

I GET CREATIVE’

Alex and Sam Reid put their DIY skills to the test, transforming a dilapidated house with upcycled furniture and French vintage finds

O

ur previous house was a two-up-two-down that we did up ourselves with absolutely no prior experience,' says Alex. 'Although the location was beautiful, in a tiny Buckinghamshire village, it was remote, and I learnt that the convenience of being near shops and towns is really important to me. Six months after Sam and I got married, we were ready for our next property challenge. One day into our search, we found this house and even though it hadn’t been updated in over a decade, we were excited by its potential. Then I found out I was pregnant, and all of a sudden we had a deadline to work towards, as we wanted the majority of the work finished by the time the baby arrived. While I was on maternity leave, I began an interiors blog (@reid. renovation.house) so that I could chart our renovation progress and inspire others with ideas for their own homes. However, I wouldn't recommend living on a renovation site when you have a strong urge to start nesting!

Making changes

We added an extension for a new kitchen and open-plan snug, then converted the existing kitchen into a utility room and turned the old pantry into a downstairs loo. We lived upstairs for nine months, using our spare bedroom as a temporary living room while we demolished two internal walls downstairs to create a spacious open-plan living-dining space. Upstairs, we knocked through the adjoining bathroom and separate WC in favour of having one big bathroom with space for a walk-in shower. Luckily, Sam is a skilled carpenter and he

LIGHTEN UP ‘The kitchen is in the extended part of the house where we put in skylights to enhance the light’

managed 95 per cent of the work himself in his spare time. For the new kitchen, we used the Wickes design service, and sourced quartz marble worktops from a local stone specialist, as it was the cheapest option. Although pricey, quartz lasts forever and cleans up really well. Sam built worktops in the utility room from scaffold boards and fitted the cabinets single-handedly. As the original pulley rails were still in place on the ceiling above what would have been the original kitchen window, Sam made his own pulley maid using dowel rods and brackets. I still feel so lucky and grateful every time I walk into our kitchen.

Measure the length of the shelf you want and saw the scaffolding plank to size. Sand the length of wood to your preferred level of smoothness. The rougher the finish, the more rustic it will look! To stain the wood, use woodstain sparingly with a brush. Try Colours Oak Satin Woodstain, (£24, 2.5L B&Q). Budget-friendly black metal brackets for your shelving can be hard to come by, so Alex buys hers in silver and spray-paints them black. Always check the brackets will support the weight of the wood plus anything you decide to put on the shelves. Before attaching the brackets to the wall, take care to ensure there are no electrical wires where you are about to drill. Secure the brackets in place, use a spirit level to check they are level, then fix the shelves to the brackets.

THEY CAN BE REALLY USEFUL IN TELLING YOU HOW TO DO ALL KINDS OF DIY PROJECTS’ expensive designer piece, Sam made our own version for a fraction of the price using lengths of treated timber that we stained antique oak. To help guide us through construction, we watched YouTube tutorials. The dining chairs came from my parents' home and we’re hoping to find a bench to match them. Sam also crafted a whisky bar by fixing some vintage crates to the wall – perfect for storing our favourite tipples, as well as glasses and bar accessories. He also built

the window seat in the living room, as well as shelves made from reclaimed scaffolding boards. The coffee table began life as a desk in my childhood bedroom, but we cut the legs down to make it coffee-table height. I also upholstered the window seat pad in fabric I bought from eBay. Camilla loves to sit here and play with her toys, which are stored in the rattan chest. Upstairs in the bathroom, we were inspired by an idea we saw on Pinterest

We used an offcut of wood and stained it to create the bath shelf and we bought all the fixtures and fittings from eBay to keep costs down.

International style

I was born in Lyon in France and I lived there until I was 17. I have inherited my parents’ passion for antiques and we have acquired some lovely pieces. There are so many things I love about France: the warm climate, skiing, the incredible flea markets, the cuisine and, of course, the wine! It has definitely influenced and shaped the way I live, and particularly how I approach my home’s decor. I have an eye for a bargain and love sourcing vintage pieces and then coming up with design ideas that,

Work out a measurement for your yarn pieces by hanging one long length of wool over a piece of wooden dowel – the middle of the hanging will be the longest point so cut this piece to the length you’d like this to be. Using this piece as a guide, cut the rest of the yarn to the same length. Take a bunch of the wool pieces, bringing the ends to meet to create a loop at the top. Place the loop at the back of the dowel, bringing it over the top to thread the ends through. Repeat along the dowel, then using scissors, cut a gradient from each end to the middle.

My mum taught me how to sew, which is so handy for budget renovations, too: I'm constantly refreshing our look by making new things like cushions, table runners and wall hangings for next to nothing. I like to collect things and enjoy mixing antiques with contemporary paint colours and rustic wood. I love teaming modern accessories with old books, antique furniture and vintage-style prints.

Our music corner in the hall was the last job we completed before Camilla was born. We had always liked the idea of having an ‘On Air’ light there, with all our vinyl records stacked on homemade scaffolding board shelves. We bought the record player more than a year ago and it’s lovely to be able to listen to vinyl records. We found some of the records in charity shops and also bought some new. It's one of my favourite features in the house, and always makes me smile.’

W

e bought our home for the sea views and its potential, but it needed extensive renovations as it hadn’t been touched since the Seventies,’ says Abigail. We were excited to transform it into our forever family home, though the existing kitchen was beyond salvaging with an unsafe boiler and limited worktop space.

First things first

Before we moved in, our builders tackled all the big jobs, including removing the asbestos floor tiles, rewiring, replacing the boiler and all the plumbing. We maximised the space by knocking down the wall of an old adjacent bathroom, removing a chimney breast and relocating the boiler. We kept the sink in the same position but moved the cooker which gave us more worktop space either side.

Sourcing the rest

SAVVY SHOPPER ‘We shopped around at local stores and online to get a designer mid-century modern look on a budget’

I love mid-century modern design and wanted our new kitchen to have retro elements. I had to be creative to get the look I wanted within our tight budget. On the high street I could only find units that were either high-gloss or Shaker style, which wasn’t the look I was after. Finally, we found a local company who supplied wood-effect slab door units. I spent ages choosing the right grain that would create a warm, retro-inspired vibe – Natural Pacific Walnut felt the most realistic. I found some unfinished oak handles online to enhance the retro feel. We created open shelves using wall cabinets with a half-height top hung door, which was an affordable way of copying the bespoke mid-century modern kitchens I’d seen on Pinterest. The open shelves mean all the crockery we use

Update handles to sleek brass pull bars or more relaxed retro wooden cup handles like Abigail’s. Revamp original or replica retro dining chairs or stools by upholstering seat pads in a mid-century colour palette of ochre, green or teal. Source original ceramics from charity shops, boot fairs and eBay or look for modern pieces with a throwback feel, relief patterns, geometric prints or that feature naive illustrations inspired by Fifties and Sixties designs. BOOK STORE ‘The cupboard top makes a great shelf for our cookbooks’

every day is within easy reach. And it makes a great way to display my growing collection of ceramics, too.

Wall treatments

A feature splashback was high on my wish list, but we couldn’t justify the expensive handmade retro tiles I’d spotted online. I found these ones at Tons of Tiles, which had a vintage flavour, but being grey they don’t overpower the room, and I mixed in white hexagon mosaic tiles on the other walls. The biggest challenge we had was finding a paint colour to go with the kitchen. At first I went for navy blue as I thought it would make the units really pop, but it was too dark so swapped it for a soft sage green, which makes the whole

room warm, even on a gloomy day. We chose a gorgeous black tap from Ikea. I love it because it matches the range cooker. My husband likes it because it reminds him of TIE Fighters from Star Wars!

Finishing touches

Taking pride of place is our vintage dining table, which we picked up from the Danish Homestore for £60 10 years ago. The G Plan chairs were a charity shop find that I reupholstered in Ikea fabric. I love having vintage pieces in my home. In fact, I was so inspired I started an Instagram account @cedarlily to chart my home’s mix of charity shop finds and pieces that I’ve inherited or been given by my family. They have such character and evoke so many memories.

REMOVING A CHIMNEY

Claw back extra space by getting shot of an unused chimney breast engineer’s report, that the remaining walls are stable without the bracing support of the chimney breast,’ adds Neil Tomlinson, founder of Neil Tomlinson Architects.

How’s it done?

Not if you leave the chimney as is at roof level, so the exterior of the house doesn’t change. But if you live in a listed property, you will need listed building consent. ‘You may need a Party Wall Agreement if it is on a party wall as the flues are often shared. Be aware that your neighbours don’t have to agree,’ says Steve.

If you’re only taking out a ground floor fireplace, you’ll need to insert a steel lintel to carry the weight of the chimney stack above. ‘Some builders use steel gallows brackets, but not all Local Authorities permit them,’ says Steve McSorley, director of civil and structural engineering at Thomasons. A wood lintel can also be used, but nothing really beats steel.

Can I remove the whole of the chimney?

Yes – doing this creates extra space in the bedrooms and loft, too. But, it does mean that every room affected will need to be redecorated, and there will be holes in the floors and ceilings. ‘You need to prove, preferably via a structural

What else do I need to consider?

‘If the chimney is only partly removed, then the blocked-up shaft must be properly ventilated to prevent damp problems occurring in the chimney stack,’ says Neil. If the existing brickwork is really old, you also need to tread very carefully – ancient lime mortar can easily crumble and what started as a small job, can quickly descend into chaos.

MY CHALLENGE The original bathroom was an eyesore and the layout was dysfunctional, making it feel cluttered. The loo was separate and I was dying to knock through, create some space and light and decorate in a modern classic style. Newbie renovators Ffion and Ollie made mistakes along the way when creating a classicstyle bathroom that they now love

T

he bathroom looked like a throwback to the Seventies and had a peculiar layout that didn’t flow or make sense,’ says Ffion. ‘A mirrored cabinet had been hung too high above the washbasin and there was zero storage, so the room looked cluttered. The separate loo was located next door. We decided to tackle the bathroom while we had builders in to install an extension and loft conversion. It was a very stressful time, as we’d never undertaken such a large job before, and we project-managed it ourselves. We were under constant pressure from the builders to make decisions, which didn’t give us time to focus on what we wanted to achieve with the new bathroom.

Initially we’d planned to put the bath under the window, but then decided that moving it to the left-hand wall would create a better feeling of space. We enlarged and centred the existing window and knocked through into the separate toilet. New plumbing and pipework was laid and to make room for the new shower, a chimney breast was removed. When we took the floorboards up we installed underfloor heating. The whole process was a series of very steep learning curves and we definitely made some errors. Start by attaching horizontal battens to the wall. Aim for three, one at floor level, one level with the top of the tongue-andgroove panel and a third in the middle of the other two battens. Make sure the battens are level, then mark the positions on the wall. Mark drill points, then drill the holes, plug and screw in place. Starting left, fix the first plank in place by nailing a panel pin through the batten. Use a spirit level to check the plank is vertical before fixing to the other battens. Continue with planks across the width. Finish with capping at the top and skirting at the bottom.

wall-hung loo and sink, but then realised the style wouldn’t work with the roll-top bath we planned to buy. This was a costly mistake.

Doing the sums

As the project evolved, it was clear we were drawn to a more classic style, but I do like to mix and match so I included some modern furnishings too to give the room character. The bathroom took three weeks and the builder’s fee came in at around £3,500. Although we didn’t actually set a budget, we did some work ourselves to keep costs down. We both painted and Ollie plastered the walls and installed the tongue-and-groove panelling, which worked out more cost-effective than tiles. Although it was a painful process – I put this down due to our inexperience plus the fact we were busy juggling work and the renovation – we can now fully appreciate the huge changes we made and are proud of how beautiful it looks . We have learnt many hard lessons, but the results speak for themselves.’

ENCAUSTIC FLOOR TILES Are encaustic tiles as dreamy to live with as they are to look at? Here’s the lowdown…

What are they?

Traditionally encaustic tiles were made from inlaid pieces of coloured clay, pressed together to form patterns and then fired. Nowadays, they tend to be made from cement, in a similar inlay method using coloured pigments and then hardened using a hydraulic press and left to cure naturally.

Why are they a good choice?

Since the colour is inlaid not just painted on, the design stays intact even when the tiles get worn down. Perfect in high-traffic areas like hallways, most people think they improve with age and the wear and tear adds charm, so there’s no need to stress if they get a bit battered. They

ESSENTIAL DETAILS COSTS They range from £80-£130sq m, but expect to pay more for intricate patterns or designer brands.

CLEANING Only use non-acidic, bleach-free cleaning products, while a pH-neutral soap diluted in warm water is ideal for mopping.

STAINS Spills should be wiped up quickly. Most stains can be removed using specialist products, but do a patch test first.

Can you put them on walls and floors?

Yes, but like all tiles it’s important the surface is level, clean, dry and free of grease and dust. If you’re tiling on suspended timber floors – like an upstairs bathroom – it’s worth laying a subfloor of 18mm plywood to prevent flexing, which can cause tiles to crack. Use levelling compound on any uneven solid floors. Any damp issues should also be addressed before you lay them.

ENCAUSTICSTYLE TILES

Are they easy to install?

The method is very similar to ceramic and porcelain tiles – wet adhesive, then grout between the tiles. The crucial difference is that most encaustic tiles are unglazed and only sealed after installation, once they have had a chance to dry out. This means you have to be really careful not to mark or stain the tiles during installation and it can take up to seven days before the tiles can be sealed.

Any other issues?

As they are hand made, no two tiles are exactly the same, which can sometimes make installation a little trickier than when working with mass-produced tiles, but it’s nothing a skilled tiler can’t handle. The sealing process requires at least two coats, and should be done before you grout to prevent staining the tiles.

FOR THE PASTRY 250g plain flour 2tsp mixed spice 175g unsalted butter, diced 75g icing sugar 2 egg yolks A little beaten egg or milk FOR THE FILLING 600g rhubarb, chopped into 2cm pieces 2tsp cornflour 40g root ginger, peeled and chopped 150g caster sugar 3tbsp flaked almonds

Put the flour and mixed spice in a bowl and rub in the butter. Stir in the icing sugar, yolks and 1½tbsp water. Knead, cover and chill for 30min. Preheat the oven to 200°C/Fan 180°C/Gas 6. Roll out the pastry and use two-thirds to line a 23cm square loose-based tin. Line with greaseproof paper and baking beans and bake for 15min. Remove the paper and beans

and cook for a further 5min. Reduce the oven to 180°C/Fan 160°C/Gas 4. Combine the rhubarb, cornflour, ginger and caster sugar, and put into the pastry case. Brush the edges with beaten egg. Cut the remaining pastry into strips and top the pie in a weave pattern. Brush with more egg and sprinkle with flaked almonds. Bake for 40min or until pale golden.

Add cascading plants around the edges

H

anging baskets are a stunning way to display a variety of plants. They make a real statement in the garden and will add plenty of colour and interest. You can plant summer hanging baskets from April, but make sure to protect your plants from frost. If this isn’t possible, wait until late May or early June. Just follow these simple steps… YOU WILL NEED Lined hanging basket (the bigger the better) Terracotta pot or bucket Scissors Multipurpose compost A selection of plants PREPARE YOUR BASKET Place your basket in a terracotta pot or on a bucket to stabilise it while you work. Snip a few holes in the liner, which can be plastic, moss, coir or jute, to let water drain out. This also allows you to plant trailing plants around the sides through the liner. START WITH COMPOST Using a trowel or flower pot, half-fill the basket with multipurpose compost. GET PLANTING Put the largest, most dramatic plant in the centre of the basket, such as a fuchsia or geranium, to create structure and impact. ADD TRAILING PLANTS Place three or four trailing plants evenly around the sides. Angle them slightly, but ensure that the roots are still covered by the compost. FILL IN THE SPACES Flowering plants such as verbenas and small petunias make good fillers. Try planting ivy near the chain and weave it around to give the effect that the ivy is supporting the basket. Fill with more compost and firm gently. HANG IT UP Position your basket in a sunny spot sheltered from wind and water well. Feed and water regularly.

Using a balloon whisk, beat together the butter, flour, baking powder, sugar, milk, eggs and 1tsp salt. Cover and chill in the fridge for 30min. Brush a non-stick frying pan with a little oil and, when hot, add a dollop of pancake mixture. When you see bubbles appear on the surface, turn the pancake over and cook until

golden brown. Remove from the pan, separate each pancake with a square of greaseproof paper and cover the stack with foil to keep warm. Repeat until you have used up all the mixture. Grill the bacon until crispy. Stack the pancakes and bacon on a plate with cheese scattered in between. Drizzle with maple syrup to serve.

Preheat the oven to 160°C/Fan 140°C/Gas 3. Gently heat the coconut oil, maple syrup and vanilla in a pan until melted, and stir. Take 2 baking trays and line with parchment. Sprinkle half of the oats, sunflower, sesame and flax seeds, pecans and almonds over each tray. Drizzle with the maple syrup mixture. Bake for 15min. Stir and cook for a further 5-10min. Stir in the coconut, cranberries and blueberries. When cool, serve with yogurt and mango.

TAKES 30MIN MAKES 12 100g self-raising white flour 100g self-raising brown flour ½tsp bicarbonate of soda ½tsp baking powder 90g oats, plus 1tbsp for sprinkling 60g golden caster sugar 180g fresh blueberries 2 eggs 284ml carton soured cream 6tbsp runny honey 6tbsp sunflower oil

Preheat the oven to 180°C/Fan 160°C/ Gas 4. Sift both flours into a bowl, tipping in the bran left in the sieve. Add the bicarb, baking powder, oats and sugar, and mix. Sprinkle in the blueberries. Beat the eggs in a large jug, then add the soured cream, honey and sunflower oil. Beat together using a fork. Tip the egg mixture into the dry ingredients and gently fold together, stirring until just combined. Avoid overmixing it, a few lumps are fine. Line a muffin tin with 12 paper cases and fill with spoonfuls of the mixture. Sprinkle with oats and bake for 20min until well risen and pale golden.

FRENCH TOAST TAKES 20MIN SERVES 2 2 eggs 1tbsp coconut milk 2tsp ground cinnamon 2 slices of gluten-free bread 1tsp coconut oil 245ml yogurt 2tbsp pure maple syrup (or rice syrup or coconut nectar) Fresh fruit, to serve

Crack the eggs into a bowl and beat with a whisk. Add the coconut milk and cinnamon. Whisk again to mix. Cut the slices of bread in half, place into the egg mixture and let them soak until saturated, about 2min. Heat the coconut oil in a frying pan over a medium heat. When the oil is hot, add the slices of egg-soaked bread to the pan. Pour the remaining egg mixture over the bread. Cook until golden, then flip and cook until the other side is golden and the egg is cooked through. Transfer to a plate. While the French toast is cooking, whisk the yogurt and maple syrup together in a small bowl. Serve the French toast with dollops of yogurt and pile fresh fruit on top.

Season well with salt and black pepper, then roast for 30min until soft and charred. Meanwhile, heat the remaining olive oil in a 20cm ovenproof deep frying pan. Add the spring onions, garlic and chilli, and sauté gently for 5min until soft. Add the sweet potato, herbs, peas and half the feta to the pan. Pour over the eggs, then scatter with the remaining feta. Transfer to the oven for 20min until golden and cooked through.

Put a saucepan of water on to boil. Add the eggs, return to the boil and cook for 7min. Halve the avocados, remove the peel and stone. Put the flesh in a bowl and season generously. Squeeze over the lime juice and mash with a fork. Toast the bread until golden. Peel and halve the eggs. Spread the mashed avocado on the slices of toast and top each slice with a halved egg.

Put the milk and the bay leaf in a large pan and bring to a simmer. Add the fish and poach gently for 5-10min until just cooked. Remove the fish from the pan with a slotted spoon and cool slightly before flaking. Heat the oil and butter in a large frying pan. Gently fry the leeks and onion for 10min until soft. Stir in the curry powder and turmeric, then cook for a further 2min.

Add the rice, stirring well to coat with the oil. Stir in the hot stock and bring to a boil. Reduce the heat and simmer for 10-12min, until almost cooked. Stir in the frozen peas, cook for 1min, then mix in the parsley, lemon juice, the fish and eggs. Season generously with black pepper. Divide the kedgeree between warm bowls and garnish with the lemon wedges.

TAKES 30MIN SERVES 4 30g butter 2tbsp oil 500g mixed mushrooms 2 garlic cloves, crushed 4 eggs 400g spinach 4 English muffins fresh nutmeg, grated Bunch of chives FOR THE HOLLANDAISE 2 egg yolks 2tsp lemon juice 2tsp white wine vinegar 120g unsalted butter, melted and cooled

To make the hollandaise, put the egg yolks in a processor for 1min. In a small pan, heat the lemon juice and vinegar, then pour onto the egg yolks, in a slow stream. Add the melted butter in the same way. Transfer to a bowl sat in warm water so it stays warm and doesn’t split. In a pan, heat the butter and oil and fry the mushrooms until golden. Add the garlic for the final 2min. Cover in foil to keep warm. Poach the eggs for 3min, then put in a bowl of iced water (keep the pan of hot water). Microwave the spinach for 1min, then drain. Toast the muffins and put the eggs back into the hot water to reheat. Top the muffins with spinach, mushrooms, egg and nutmeg. Pour over the sauce, garnish with chives.

Let it cool slightly, then squeeze out all the water. Put the pancakes on a baking tray, divide the spinach between 4 of them and top each with a slice of ham and grated cheese. Warm in the oven for 5min, or until the cheese has melted. Heat the oil in a pan and cook the shallots for 1min. Stir in the cream and mustards, season generously and gently warm. Lay a pancake on top of each cheese pancake and serve with the sauce on the side.
