t’s time to shake off the winter months and greet spring with its brighter evenings and milder days. With this new season comes our April issue which is full of colourful and inspirational features. Sales of Margey originals set for Belfast & Ballymena this spring
Portrush based artist Adrian Margey will be launching his 2019 exhibition series with two major exhibitions and sales of work this spring. The first will run at Malone Lodge Hotel on Eglantine Avenue in South Belfast from Friday 8th – Sunday 10th March. The second will run at Galgorm Resort & Spa Ballymena from Easter Saturday 20th – Tuesday 23rd April. Renowned for the diversity of his output, these exhibitions will showcase a wide variety of Margey’s contemporary and more traditional work. From large-scale canvases to smaller works, visitors will enjoy a vast range of the artist’s cityscapes, landscapes, traditional music scenes and
depictions of iconic landmarks. Belfast, Donegal, the North Coast, Glens of Antrim and the Mournes have provided the main inspiration for these new collections. The artist cites the Fauves, the Irish Impressionists and the indigenous artists of South America as his main influences. Home of the Year is back with a fifth series
Popular series Home of the Year is back for a fifth series. Championing creativity, individuality and clever design, Home of the Year features homeowners around Ireland who have done something special to the place they call home. Over 8 weeks, 21 homes will compete for the Home of the Year title in 2019, with three very different properties featured each week. From restoration, new builds, renovations and re-design Home of the Year features people who have created their dream home. The series showcases homes from all across Ireland including a converted church building, a restored 1800s manor and a restored Georgian farmhouse, inspiring architectural new builds, restored cottages and period homes with creative interiors. Making the tough decisions on which homes go through to the final are our three expert judges; design legend Hugh Wallace, renowned interior designer Deirdre Whelan and award winning architect Peter Crowley. How to ligHt a batHroom the bathroom is now a room in the house where people are spending a lot more time and is therefore a place to create a relaxing and spa-like atmosphere. lighting, an aspect of the bathroom that has previously often been overlooked, is now more important than ever. Firstly, the vanity area will alway require excellent task lighting, which can be a fixture above the mirror or sconces on either side. another solution is strip lighting under a wall mounted cabinet, which makes it appear to
float in space. also ample overhead light is key either in the form of a pendant or several leDs, however ensure they give off diffused light that isn’t overly directional which can be unflattering. a popular trend is to hang a pendant over the bath – clear bulbs with filaments are a favourite, but they cast a shadow on everything – go for opaque or frosted instead. lastly and most importantly is flexibility to adjust the lighting which is why you should add dimmers and even zone your lighting on a multi switch.

What’s On... Leonardo da Vinci: A Life in Drawing. Ulster Museum, Belfast from 1st February until 6th May 2019 In 2019, visitors to the Ulster Museum will be able to view some of Leonardo da Vinci’s greatest drawings. The exhibition provides an unparalleled insight into the workings of the artist’s mind and is part of a nationwide event organised by Royal Collection Trust to mark 500 years since the Renaissance master’s death. The Ulster Museum’s exhibition will include two of Leonardo’s most famous works – The Head of St Anne, made around 1510 in preparation for his famous masterpiece The Virgin and Child with St Anne, which hangs in the Louvre, and an anatomical drawing from 1489, The Skull Sectioned. The exhibition will include examples of all the drawing materials employed by the artist, including pen and ink, red and black chalks, watercolour and metalpoint. Admission free.

ailing from the bustling fishing town of Kilkeel in County Down, Jacqueline spent her childhood summers climbing the Mourne Mountains and paddling in the sea at Cranfield beach. These memories have no doubt heavily influenced her desire to paint. ‘From the moment I was able to hold a pencil, I was drawing everything I saw around me,’ says Jacqueline. ‘Which inevitably lead me to complete a degree in Fine Art and Education in 2000.’ ‘After the birth of my two sons in recent years, I realised that anything was possible if you put your heart and soul into it! I took the leap of faith from the security of my busy career as Head of Art in a large secondary school to pursue my ultimate dream to paint full time,’ she continues. Jacqueline immersed herself in motherhood and continued to focus on her own art – between naps and nappies! ‘My artwork has been described as vibrant, emotive and atmospheric, and I draw inspiration from the stunning landscapes and coast of our beautiful country. I am passionate about light and colour and this is portrayed in each and every painting!’ Throughout her life, Jacqueline’s love for art and interiors has been evident in so much of her work. She studied interior design alongside art and loves to twin her knowledge of both to advise clients on the best piece of her art to complement and enhance their home. ‘I often meet clients who love art but need a bit of advice and guidance on how it will fit their décor and colour schemes. I will happily tailor a painting to suit a particular style or interior so that the two work in perfect harmony together!’ she explains. ‘I am actually currently working on a very personal project renovating an old house and using my passion for art and interiors to create the perfect forever home for my family. imm cologne 2019 roundup The first interiors show of the year presented the trends that will be shaping the furniture and interiors sector over the next year.

he imm cologne offers a unique variety of interior design ideas and solutions for every room, every style and every requirement – from the basics all the way to designer items and luxury furnishings. imm cologne/LivingKitchen drew to a close on 20th January 2019 with a total of 150,000 visitors making their way to Cologne to be inspired by the interior design worlds and kitchen showcases on display. Here we take a look at what trends you can expect to see within the interiors market.
Furniture trends Sideboards are extremely popular right now and are being flanked by cool armchairs and light-footed sofas. Retro is a stylistic element rather than a style in its own right. It’s not just that modernist, mid-century and pop culture classics have cult status; their forms are popping up all over the place again, albeit in new interpretations, with a new finish or in a new guise. Whether bright and brash, industrial-style or shown off against a dark, elegant, art deco background, solo furniture pieces are making their way into our living rooms. Alternatively a neat, systematic look tends to be more common within the kitchen or bedroom.

Which colours are trending? The trend towards a light palette of greys accompanied by natural or pastel shades continues to endure, although it seems to be inspired by nature and ethno motifs rather than the Scandinavian style. But there are two other important directions that deserve a mention: the multicoloured look and a dark, elegant approach. The avant garde is combining variants of the primary colours to create an effect like a Mondrian painting, whereas the lifestyle faction prefers a brasher, bolder look and is combining various shades of orange, not just with dark green but with yellow, turquoise, petrol or even mint. Warm, darkish colours are very much on trend; they harmonise with reddish wood, while dark shades of blue and green can be combined with gold and brass to create an art deco feeling. Which materials are on trend? Wood is just as popular as ever, but that’s hardly surprising. Besides being sustainable, it’s also versatile and creates a snug feel. Metal is also extremely popular, mostly in warm, upmarket colours and finishes like gold and brass. It’s not just being used for sofa or table legs either. You’ll find it cropping up as a decorative element for lighting, tables and wall-mounted elements. Glass is in the process of establishing itself as the third force and basketwork and wicker are popular too, with natural stone popping up here and there to add an exclusive touch. Leather is being used for its soft, luxurious qualities, and when it comes to home textiles we’re seeing a lot of purist covering fabrics and the comeback of a classic: velvet. Off the Wall How you adorn the walls of your home will, to a large extent, define the décor, so it’s an important decision that will shape your home’s look and atmosphere. When we think about finishing the walls, we tend to think paint or wallpaper, but these are not our only options. In fact, there’s a wealth of creative ways to finish walls and leave them looking fabulous.

Wallpaper and paint
The simplest and most common solution for finishing your walls is plaster followed by paint or wallaper. If you decide to paint your room, before buying your paint check the colour or colours in the room you’re decorating, not in store. Colours can look very different between a paper swatch in a paint shop and an entire wall in your home. If in doubt, choose a couple of shades lighter but the best way to decide on a colour is buy three tester pots in similar shades and paint at least 60cm² onto lining paper. When dry (colours often dry a little darker) tack them up, trying them on different walls to check the effect. Another tip is always buy paints and wallpapers from the same batch. It’s better to overestimate, and return unused tins or rolls, than to mix different batches.

Exposed brick
Exposed brick is a good option for wall covering, especially for the odd feature wall, that can give an instant farmhouse look. There are literally hundreds of bricks you could use. On completion, use a suitable sealant so the brick dust doesn’t rub off on people’s clothing and be prepared to vacuum the surface every few months with a soft brush head as brick and stone finishes seem to be dust magnets. If real brick isn’t an option but you’d like a brick effect then you can buy wallpaper or a mural that looks like a brick.
Timber panelling
Wood is a beautiful, insulating, warm and versatile material and wood panelling is a popular choice of interior wall covering. The beauty of timber is its natural look and the way it can be coloured to suit your décor. There are different ways to clad your wall in wood: • Shiplap panelling is usually laid horizontally and acquired its name as its panels overlap, fitting together tightly to form a weatherproof seal originally used on home exteriors. Shiplap is mostly seen in cottage-inspired homes in need of the texture and the warmth of a natural material. • Tongue and groove offers the same clean, classic look as shiplap however instead of overlapping, it connects where the tongue of one board fits into the groove of another. It is very effective when fitted horizontally or vertically to your wall. You can change the appearance of wood by colouring it, but maintain the feeling of warmth and harmony that it generates in the home. • You could also consider using reclaimed wood. Whether you utilise actual reclaimed wood or simply use new wood and make it look old, a wall of reclaimed wood paneling can add loads of texture to a space. The stain colour or finish you select will have a lot of sway on the final look. And there’s something to be said about the one-of-a-kind character that comes from real nail holes, worm holes, knots, saw marks, surface patina, and even chipping paint. • Board and batten is a popular way to clad your walls in wood. There’s the real deal, featuring real wood panels on top of which the board and batten framework is formed with solid wood battens (strips) and boards (planks). And then there’s the imitation-style board and batten, which is created atop plyboard or even drywall rather than real wood panels. They can run the whole height of a wall or stop half or even three quarters of the way up a wall. This look is popular in bathrooms and dining rooms.
Tiling
The choice of tiles, be they porcelain or ceramic, is truly dazzling. Tiles are more commonly used on floors and in bathrooms. However, they can very effectively be used on other wall spaces in the home. When choosing, be careful to ask whether a particular tile is suitable for use on walls. When planning your proposed tiling, be bold. Take a chance to show your creativity. Take a tile or two to the location and see how they look in situ before committing yourself. Remember, light colours make a room look larger.

Living Room Living rooms demand something smart underfoot and the options for flooring in this room are wide. Carpets are still the most popular choice but natural floor coverings made from plant fibres have become increasingly popular. Wood floors are equally appealing especially if the living room is part of an open plan kitchen/living room. Keeping the floor clean and how often you’ll need to do it also needs to be factored in. Carpet for a living room should be hard wearing. An 80 per cent wool, 20 per cent manmade fibre version will stand up to the everyday foot traffic and stay looking good. Natural flooring suitable for a living room includes hard-wearing sisal, which can add subtle detail through interesting weaves such as bouclé and herringbone. Rustic seagrass and robust coir are a good choice for heavy traffic but can be sore under foot. Bedroom Selecting the right carpet is important, especially when it’s for the bedroom. David Cormack, Marketing Director, Cormar Carpets gives us some pointers to consider when choosing new carpet for the bedroom: Carpet quality is judged on a number of factors. Pile weight is a major consideration, measured by ounces per square yard. Basically, the more pile you put into the carpet the more wear you will get out of it. trolling into the damp, neglected property that had been languishing on the market for eight years, the seasoned renovator immediately succumbed, declaring that the soulless, dilapidated house simply had to be restored to its former glory. In 2015, when Jacqui and her husband, Peter decided to relocate from London to their native Northern Ireland, with their sons Charlie, 11, and Ben, nine, her quest to track down a coastal abode proved fruitless until, in a serendipitous moment, she uncovered the ideal project.

‘This lifelike painting of a horse was the starting point for the rich palette of earthy tones with highlights of gold in our sitting room,’ says Jacqui. Ironically, a surveyor friend’s revelation that the derelict rectory exemplified all the structural problems he’d ever encountered, only served to make this imperturbable couple even more determined to tackle the monumental challenge. Mindful of preserving and enhancing its plethora of period features, Jacqui’s vision for the crumbling rectory centred on rejigging the layout to create a relaxed, fit-for-purpose family home. Determined to use every room regularly, the banking lawyer wanted to replace a quirky lean-to structure at the rear of the house with a light-filled family room, and reconfigure the rest of the downstairs layout to create a larger kitchen plus a study for working from home.

‘For cohesion, I have pulled accents of pink and green through to our bedroom,’ says Jacqui.
‘One of my main objectives was maximising the breathtaking sea views by ensuring that the sitting room, dining room and master suite were positioned at the front of the house,’ says Jacqui. ‘We didn’t need eight bedrooms so, by employing some lateral thinking, we reorganised the first and second storeys to create six bedrooms, a dressing room and three bathrooms.’ With school teacher Peter courageously donning the mantle of project manager, and expert builders and craftsmen hired, once planning permission was obtained, the year-long project swiftly took shape. Working on the theory that by stripping the house back to brick, there would be no surprises, the rectory virtually became a shell. With its roof and more than 50 rotten windows removed, only the central staircase and landings remained intact. Throughout the refurbished home, it’s evident that the couple has been conscious of honouring its rich heritage, painstakingly sourcing authentic building materials, such as Bangor blue slates, and fixtures and fittings from reclamation yards, plus specialist suppliers. Jacqui has skilfully curated the interior, selecting antique fireplaces to set the tone in the main reception rooms, as well as an eclectic mix of elegant furnishings.

Schemes have been inspired by the colourful hues in the couple’s cherished artworks. Soft furnishings in sumptuous, tactile fabrics and bold designs add texture and depth to each space. A muted backdrop chosen for the walls allows beautifully restored features, such as the cornicing, ceiling centre pieces and architraves, to be celebrated. ‘The chance to breathe new life into the rectory was undeniably a huge leap of faith,’ Jacqui confides. ‘However, it’s been such an incredible journey and one that we have relished, every step of the way.’

Worth the Wait Naoise and Brian finally got to build the house of their dreams in Dunshaughlin, County Meath and, as you will see, it was definitely worth the wait!

I
n 2009, training consultant Naoise moved with husband Brian and their two small children Fiach and Siún into a new home in Naoise’s native Dunshaughlin just for the year or so it would take them to build their own home. The best laid plans of mice and men… the family lived in the four bedroom semi in Dunshaughlin for eight years before moving into their very own new-build last October. ‘It took us a long time to get the house on site and although it was tough going sometimes, we learned a lot, and ended up building friendships as well as a house; the architect and builder both became friends for life after it all!’ says Naoise. Although the couple had initiated the process of gaining planning permission to build on a plot on Naoise’s home place in 2009, the location of the site on the main street in the town created complications in the planning being granted. When permission was granted, the recession had overtaken events and the couple decided they would have to hold off until things improved. ‘The house didn’t go on site until 2017, but I had spent the intervening eight years thinking and dreaming,’ says Naoise. ‘I created mood boards; my favourites were based on peacocks and flamingos, inspired by the texture and sheen of the feathers which change colour as they move.’

The couple also spent a lot of time going to homes and building exhibitions for research, and it was at the Ideal Homes Exhibition in October 2015 that they met architect Brian Mulvey of Mad About Design. ‘Brian has a great personality and is a very good communicator, we just connected with him immediately,’ says Naoise. ‘We agreed 100 percent with his mantra that form follows function, we didn’t just want to build a house, we wanted a house tailored to our needs and our family life, which functioned well without wasted space. Brian has the knack of listening to the client and really is passionate about design, so we made the decision there and then that he would be our architect.’ Brian and Naoise had a wish list which they presented to their architect when he came out to the site, and he spent the day going through it and discussing it with them. ‘Zoned blocks with a monopitch roof, a 13 x 13 foot peacock room, a 13 x 13 foot den, an L-shaped kitchen big enough for a party with a pantry,’ recounts Naoise. ‘And I knew where I wanted every window to be and what I wanted to see out of it; having grown up here I knew and loved every view. My husband Brian then said to the architect Brian, ‘Well, that’s what we want, now you get to add the magic,’ and Brian Mulvey went off to do just that.’ The architect returned with three options and the couple just loved them all. ‘They were so exciting’, says Naoise. ‘One was a design of two intersecting crescents, but the quantity surveyor nearly had a heart attack about that one, so we had to regretfully let it go, it would be too expensive to build.’ The couple went for a radical cantilevered design to present for planning permission, but it was turned down. ‘We weren’t giving up on this one though, so we reworked and reworked the design with the architect and the quantity surveyor, simplifying and rationalising the spaces and the build’, says Naoise. ‘This turned out to be a key time, when we all honed down the design to its essence and the best possible way of working it. From this we got a house where every design element was carefully considered and it brought the cost down too.’

The family area to the rear of the house is designed for privacy and opens into the garden, which is not overlooked; Naoise herself selected the size and positioning of each window as she was brought up here, the site being part of her parent’s garden, and knew and loved every view. Skylights bring in a wash of daylight to the interiors, and the architects ‘magic’ is evident in the detail; recessed strip lighting on the bulkhead over the kitchen, recessed shadow lines under the windows and underfloor heating all combine to create an uncluttered, contemporary interior finish. ‘All the attention to detail and endless decision making was time extremely well spent, but hard work,’ comments Naoise. ‘I did eventually crack when, well into the build, the builder came to me to say that a decision had to be made on whether the drainpipes were square or round, would I please specify which to use? I took

a photo of the two samples and sent them to my husband Brian with a plea for him to decide.’ But Naoise’s endless research and mood boards were the driving force behind the look of the finished house. In the ‘Peacock Room’, the colour of peacock feathers were her inspiration. She has used the wall colour, ‘Charge’ from Colortrend, teamed with a mustard easy chair from DFS. Fabric for the curtains was made by Mix’n’Match Interiors. Each piece in this space has been carefully curated to create a jewel-bright striking room. Naoise knew exactly what she wanted in the kitchen; a storage wall to the rear, a separate pantry room, and an L-shaped worktop area facing into the family space and sketched the idea for the bespoke kitchen. During the build, her husband was commuting to the UK to work, coming home at weekends, but Naoise kept him up to date with emails, texts and photos on a daily basis. Naoise herself was on site every day in her portacabin office, providing decision-making and guidance to the builders, as well as soup on cold days and ice cream on hot. ‘The builder, Denis Kealy, of Keamc Building Contractors came highly recommended as he had built my brother’s house,’ says Naoise. ‘He turned out to be an excellent builder with an eye for perfection; he worried about things like tile lines lining up on the inside and outside of the house – his attention to detail was phenomenal. I was coping with my own business, three children and the build, with Brian only home at weekends and I couldn’t have done it without a really good architect and builder.’

‘I think that we have the best possible house for us now,’ says Naoise. ‘It functions as it should, and that’s a really big deal for me. I wanted to have different living zones, with varying levels of privacy and I have them. The den for teens is just inside the front door, teens turn left, business people turn right to my office, friends and family straight ahead, on to the family space, kitchen/ dining/living leading out into the outside living area which is private and not overlooked. Tucked to one side is my own private space, the Peacock Room! Everything we wanted is there, but Brian Mulvey added the magic I think only an architect can – the design concept and all the little grace notes, curved walls, the feature stair, underfloor heating and recessed lighting, and those extraordinary shadow gaps under the window cills, they combine to make up a well designed home.’ 80

American Dream This month we showcase a fabulous home in Florida restored with flair by County Down couple, Amy and James. Just as they brought some local influences to Florida, so we hope you will be inspired by this American dream.
A
my and James are the third owners of this six bedroom American classic home in Florida, built in 1998 and draws its architectural influence from pre 1940s design. ‘When we bought the house back in October 2013, it looked very tired and dated,’ recalls Amy, ‘So we decided to do a complete renovation on it’. At the outset Amy and James wanted to incorporate their own style. ‘Coming originally from County Down, Northern Ireland we have a very different style to Americans so we wanted to incorporate our own ideas to make it feel more like home.’

On approach to this magnificent property you are struck by the impressive veranda. ‘We replaced the wraparound porch wood with new composite decking as wood doesn’t last very long in such a hot and humid climate and the composite decking is maintenance free’, comments Amy. ‘We also redesigned the whole outside area around the back, building a brand new pool adding a fluorescent border tile which glows in the night and fitting anti slip pavers. We designed steps leading up to the house and plant containers so I could put in some boxwood hedges. As every plant needs so much irrigation here, planning for the gardens was key.’

In the entrance hall glass sliding doors were added into the rooms either side to give more privacy as one room is used as an office and the other is a study where the boys do their school work. ‘The living room is the heart of the house. The previous owners had an open archway window looking straight into the kitchen which I closed up to give me a focal point for my faux fireplace. On the opposite wall I had a bespoke bookcase built into the already recessed wall,’ continues Amy. ‘I’m a huge Harry Potter fan which is where I took my inspiration for the room and all my wall portraits. I’m a collector so I have a place now where I can display all my memorabilia. This is where we as a family go to sit and relax, read a book or play board games like scrabble and chess.’

‘We created a new theatre room putting in acoustic wall panels and theatre seats that vibrate in sync with the onscreen film. It’s a smart home so Alexa can turn on and off the theatre for us. This is probably my favourite room where I can escape to, to watch the latest box set season of Game of Thrones or The Crown,’ says Amy. ‘Also during hurricane season this would be our go to room as it is completely sound proof and has no windows.’ Quite substantial changes were made in the kitchen too. Amy decided to keep the main kitchen carcasses and layout but added a new run of cabinetry on the previously arched

window wall. The granite was replaced with black marble and the kitchen cabinetry was resprayed in a Presidential White paint. ‘Some of the cabinetry was very ornate before and I wanted to put a chandelier overhead so I needed it to look simplistic but elegant,’ says Amy. ‘The island was a completely new piece as previously it had no seating area. I made it larger to add five stools and my new Gaggenau induction hob as it’s my preferred way of cooking as well as the gas as it already had a gas line and a Teppanyaki hob. I absolutely love my microwave drawer which is on the island and drawers either side for all my pots and pans.’

‘We had to do some remodeling work upstairs to create a second master bedroom. The Americans often have their master bedroom downstairs as was the case in this house but we decided to turn this room into a playroom for the boys,’ says Amy. ‘We have three boys and they each had a bedroom but the one we were left with had very little built-in cupboard space so we put up a wall and opened up a new doorway connecting what was the upstairs tv room to our room to give us the extra space we needed. We also moved a water tank into a hallway cupboard which meant we could extend our bathroom and put in a large shower and a beautiful Victoria and Albert free standing bath.’ As the house is washed in sunlight for most of the year, Amy chose a mainly neutral palette throughout the interior, except in the boys rooms – they chose blues and greys for their colour schemes – and grey and black were selected for the theatre room.

‘We replaced the entire flooring right through with tiles, carpets and hardwood flooring. We also modernised the upstairs bannisters with floor to ceiling glass panels which gives an unobtrusive view out of the large windows in the living room. It is especially lovely if you are up early enough in the morning to watch the colourful and spectacular hot air balloons floating by,’ adds Amy. ‘When we first came to view the property it was the sun room just off the kitchen that we fell in love with,’ says Amy. ‘The views overlook the children’s park and it’s so lovely listening to the kids playing outside. Several years on, we are delighted with all the changes we made and love spending time in our American home.’

JUdges CoMMent: This design has taken the client on a journey he was not expecting. The designer has taken an uninspiring, mono-pitched roof 1960s house at a late stage in the design and has created a kitchen of unique character at an excellent price. It’s interesting in its simplicity with a straight run of units with shelves over an island and a tall dresser on the high side of the room. The plain traditional elements sit well in this quirky modern space with a slightly hipster edge making it a great chillout kitchen.

The process of shortlisting and presentation in front of such an esteemed and accredited judging panel really speaks volumes of what this award represents. A Contemporary Edge Geraldine, Michael, and their two children Tara and Natasha needed a stylish and contemporary design for their newly renovated Newry home. Parkes Interiors have created a stunning and sleek design that ticks all the boxes.

‘
ur previous kitchen was a traditional chestnut wooden style,’ recalls Geraldine. ‘We decided to renovate our home in a more contemporary style, so we needed to update our kitchen too.’ With this in mind, Geraldine began to search for the kitchen company that was going to transform their space. ‘We visited quite a few kitchen companies and decided that Brian Parkes from Parkes Interiors was someone we felt that we could collaborate with.’ The couple told Brian their design brief. ‘We were very precise about our requirements and the kitchen plans needed to be reworked several times before we reached the finished design. We knew we wanted an open-plan inclusive kitchen with a very large island incorporating a seating area.’ Various structural changes were made to accommodate the new design. ‘We removed two windows from behind the sink area and a wall was removed from the adjoining sunroom to provide a view to the garden. We didn’t want free standing units and hence our builders had to provide stud walling to accommodate the units we chose.’ As Geraldine mentioned, this property is a classic home that was being refurbished with an extension at the rear of the home. The kitchen is in the existing part of the home and the rest of the openplan space is the extension. As well as the removal of the windows, the original doorway was located where the refrigeration unit is now so it was moved to allow two straight walls for the kitchen design. ‘Brian was very accommodating on reworking his ideas to meet our expectations,’ she adds. ‘The shadow gapping around the fridge-

freezer, wine cooler and sink area were his idea and although the building work required to attain them was expensive, the concept has proven very effective.’ Geraldine explains the hidden features in the final design. ‘We decided to have two drawer dishwashers installed with two large capacity pull-out bins beside them and this has worked very well. There is also a large pull-out larder unit and hidden drawers.’ Lighting was designed and undertaken by Parkes Interiors with shadow gap lighting being used throughout this kitchen; around the lowered bulk head ceiling, the Siemens aCool refrigeration, underneath the island, and the recessed area by the sink, reducing the need for harsh overhead lighting and adding to the ambience. The large Siemens aCool refrigeration featuring a full height wine cooler is a statement piece and was something that the couple had wanted in their new kitchen. With regards to other appliances, and due to the space being used for living within this open-plan area, an external motor has been installed on the extractor to reduce the noise level when the extractor is in use. Integrated Fisher & Paykel dish drawers have also been installed in the island. Unique elements and design features of the kitchen come in the form of the back wall (sink wall). This is a layered design whereby the stud work was built to house the oven and a double pantry. This section has been recessed into the wall to create a flush design. The stud work is only visible as a ‘goalpost’ surrounding the sink area and the overhead stud work has been faced off using panels that match the door fronts
giving this whole wall a completely seamless look. The grey smoked mirrored glass provides a beautiful reflection of the landscaped gardens and the rest of this stunning room. The clients were keen to have a contemporary space, so this was the perfect arena for a designer to become really creative. However, this is a family home and the kitchen needed to be functional as well, therefore features such as the double pantry work really well by creating an abundance of storage for this busy family home. The design element in recessing the units and lighting are noteable, along with the functional use of space. ‘I think the smoked glass splashback is one of my favourite features,’
adds Geraldine. ‘It looks particularly well at night when it reflects the light from the living dining area and gets a lot of compliments. Neither Brian nor ourselves had seen this apart from in a magazine cutting, so we were very pleased with the actual result. The Siemens fridge freezer cooler unit is also fantastic and worth the money.’ Geraldine concludes, ‘We’re very pleased with the overall look and design of the kitchen. It has met all our expectations from a family and entertaining perspective. Fortunately, there is nothing that I would change. Parkes Interiors were very professional. They were very responsive to any queries arising during the build and post installation.’

ExpErt advicE Tony Wilson, Head of Kitchen Channel UK Granite sinks have been around for decades and are still a source of choice with consumers. However it is likely that this material will get more popular in the future especially with the growing trends around colour merging with design. We predict that the black and dark grey finishes will be most popular as they tend to coordinate more with current worktop trends. Satin finishes are also on the rise. Historically undermount sinks have been popular with the solid surface market, and remain a popular choice today, following the trend for black granite popular in the early 2000s. The drainer grooves are cut into the worktop, which not only saves worktop space, but is an additional aesthetic feature. Sharp lines and square bowls are becoming more and more popular, as is the introduction of colours which add a touch of individuality to the home. Although there are matching coloured sink and tap ranges on the market, this is not always the consumer’s preferred choice. More often, customers are drawn to colour and finishes that complement one another, rather than the same colour throughout. In the next five years, we expect to see new and more colours in the kitchen tap and sink categories. Colours like graphite, titanium, grey, maybe even the likes of indigo and royal blue could feature with slim stylish designs, where less becomes more in the overall kitchen design.

Everyone wants a taste of Estela; the food is bold, bright, layered and playful! This long awaited cookbook shows how to think like Ignacio Mattos, and how he sees ingredients with fresh eyes. Here we have a few recipes for you to try from the book. Quail with Mashed Squash and Brown Butter on Toast
charred, remove the bread and quickly rub each slice with a garlic clove; ideally the garlic should sizzle a bit when you do so.
This is a friendly dish. You’ll end up with more squash than you need, so I encourage you to double up on the toast.
7 Mince the remaining 2 garlic cloves and finely chop the rosemary. Combine with the fish sauce in a small bowl.
Serves 4
8 Preheat the broiler to high, with the rack as close to the flame as you can get it.
IngredIenTS 4 quail (about 4 ounces/115g each), patted dry
9 Lacquer each bird with some of the fish sauce mixture, then place the quail under the broiler for about 5 minutes, lacquering once or twice more as they cook. For even cooking, you may have to move the pan or rotate it once or twice, depending on your broiler. Once the skin is golden and crispy, flip the quail and cook on the other side for a minute or so, until cooked through. When done, the juices should run clear and a cake tester inserted into the flesh near the neck/shoulder should come out warm, but not hot. Chubbier birds may need an extra minute or so under the broiler.
For the Mashed Squash 1 small butternut squash, halved lengthwise and seeds and membranes scooped out 1 tablespoon extra virgin olive oil Kosher salt 2 tablespoons unsalted butter Extra virgin olive oil Cracked black pepper 4 thin slices miche, cut into 3¾ by 1½ inch squares 3 garlic cloves Leaves from a few sprigs of rosemary 60ml fish sauce 240ml Chicken Jus Practical note: You will need to dry the quail at least one day before preparing the recipe. With scissors or a sharp knife, cut down one side of each quail’s spine to butterfly it, then open it out and press to flatten the bird. Check the insides to make sure everything has been cleared out – you’ll likely want to pull out some of the blood vessels you see. Place the quail, skin side up, on a baking sheet or platter and let them dry out, uncovered, in the fridge overnight to ensure crispy skin. MeThod 1 The next day, preheat the oven to 350°F (180°C). 2 Make the squash: Rub the butternut squash flesh with the olive oil and season generously with salt. Put it, cut side down, on a parchment-lined baking sheet and bake for 1 hour, or until the squash is cooked through and soft. Remove from the oven and let cool slightly. 3 Meanwhile, melt the butter in a small saucepan over medium heat and cook until it turns a nutty golden brown and smells toasty and fragrant. Take it off the heat and pour it into a small

As it cools, the dark bits will settle to the bottom. Transfer the browned butter to another cup, leaving the browned milk solids behind. 4 Scoop the flesh of the squash into a bowl. Stir in the browned butter, mixing well. Taste for seasoning – if the squash is bland, add a bit of salt. Transfer 1 cup (or more if you’d like) of the mash to a small saucepan and set aside. Cover and refrigerate the remaining for another time. 5 Rub each quail all over with a teaspoon or two of olive oil, then season on both sides with salt and cracked black pepper. Let sit, skin side up, on a wire rack set over a baking sheet for 20 minutes or so to come to room temperature. 6 Meanwhile, heat a large carbon-steel or cast-iron skillet over medium-high heat, then add a bit of olive oil – no more than a teaspoon or two. Add the bread slices and let them char, pressing down on them gently with a metal spatula or the clean bottom of a pan. Flip once you have a good bit of black on each slice and char on the second side. When both sides are

Turn off the heat and add the vin jaune, vinegar, green garlic juice, and a pinch of salt. Taste – it should be rich and deep and punchy. Adjust the seasoning to taste. 113

Swordfish with Fava Bean Tabbouleh
Don’t let the ingredient list scare you. The recipe is pretty easy and the tabbouleh can be done ahead of time. Serves 4 IngredIenTS For the Tabbouleh 80g bulgur 2 teaspoons kosher salt, plus a pinch 175g blanched and peeled fava beans (from about 2 pounds/900g in the pod), roughly chopped unless very small 60g diced lemon flesh, preferably from a Meyer lemon (it’s easiest to first slice the lemon into rounds, remove peel and seeds, and then chop)
50g pine nuts 60g finely diced onion 60ml extra virgin olive oil 1 tablespoon chardonnay vinegar 8 rasps of grapefruit zest 60ml fresh grapefruit juice 7g roughly chopped mint 7g roughly chopped lovage 7g roughly chopped parsley 2 thick swordfish steaks (about 1 pound/450g total), cut crosswise in half and trimmed to remove skin, gristle, and dark parts 2 teaspoons Szechuan peppercorns 2 teaspoons coriander seeds 2 teaspoons kosher salt 2 tablespoons garlic oil 2 tablespoons extra-virgin olive oil 2 teaspoons fish sauce
1 tablespoon plus 1 teaspoon sherry vinegar 60ml egg yolk emulsion Practical note: You can make the tabbouleh up to a day ahead, but don’t add the herbs until right before serving. MeThod Make the tabbouleh: 1 Combine the bulgur, 320ml water, and a big pinch of salt in a saucepan and bring to a boil, then reduce to a simmer, cover, and cook for 12 to 15 minutes, until the bulgur is tender. Remove from the heat, drain any excess water, fluff with a fork, and let cool. 2 Transfer the bulgur to a bowl and add the favas, lemon, pine nuts, onion, and the remaining 2 teaspoons salt, tossing to mix. Dress with the olive oil, chardonnay vinegar, grapefruit zest and grapefruit juice and toss again. Add the herbs, tossing gently to mix. 3 Remove the fish from the refrigerator and bring to room temperature. 4 Coarsely grind the peppercorns and then the coriander seeds in a spice grinder or with a mortar and pestle. Mix them together. 5 Rub the swordfish evenly with the salt. Brush the fish with the garlic oil, then coat with the spice mixture on one side, patting it on so it adheres well. 6 Heat a large skillet over medium-high heat. Once it’s good and hot, add the olive oil, move it around the pan, then add the swordfish, spiced side down, leaving space between the pieces. Cook for 1½ minutes, then pour half the fish sauce over the fish to help it release from the pan (you want to retain as much of the spice crust as possible). Flip the pieces carefully and cook for another minute, or until the sides of the fish are almost fully opaque, with very little pink showing. (If your swordfish is quite thin, you will want to cook it for less time.) Quickly brush the fish with the remaining fish sauce and half the sherry vinegar and transfer it to a platter, flipping the pieces as you do so, then brush with the remaining sherry vinegar. Let cool slightly. 7 Slice each piece horizontally into 2 planks. There should still be a bit of pink inside. Spread a tablespoon of the egg yolk emulsion onto each of four serving plates. Top each with a pair of fish slices, spiced side down, and then enough tabbouleh to cover, about ¾ cup (105 g). Serve. garlIC oIl A handy tool for building flavour in a range of recipes, especially for lacquering proteins as they cook. Prepare it in the moment, and make sure your garlic is fresh. Makes ¼ cup; easily scaled up or down IngredIenTS 4 garlic cloves Kosher salt 60 ml extra-virgin olive oil MeThod Using a mortar and pestle, mash the garlic with a small pinch of salt until it turns into thin wisps. Stir in the oil. Use right away.

a Perfect no-roll Crab roll
This might be the best crab roll I’ve ever tasted, and it doesn’t even come in a bun. At the restaurant, we serve this with a slice of miche on the side, but I wouldn’t blame you if you put it in a potato roll or set it over toast. If you don’t know crab tomalley – the crab’s fatty innards – this is a great introduction to an ingredient with a pleasantly grainy richness. But I won’t lie: It will be a challenge to find tomalley unless you have a relationship with your fishmonger, have time to search through your local Chinatown (where they sometimes display the crabs with their innards), or learn how to disassemble a live crab. Serves 4 IngredIenTS 2½ tablespoons (35g) unsalted butter 3 ounces (85g) cooked Jonah crabmeat 2 tablespoons crab tomalley Rasps of lemon zest 60ml pickling liquid from pickled ramps 60ml chardonnay vinegar 6 or 7 strips dulse seaweed 60ml Kombu butter stock, warmed Gray salt
MeThod 1 Melt the butter in a small saucepan over medium heat and cook until it turns a nutty golden brown and smells toasty and fragrant. Take it off the heat and pour it into a small cup. As it cools, the dark bits will settle to the bottom. Transfer the brown butter to another cup, leaving the browned milk solids behind (they should be a dark auburn colour). 2 Gently fold together the crabmeat and tomalley in a small bowl, being careful not to break them up too much. Add a few rasps of lemon zest and the brown butter and fold to incorporate. 3 Pour the pickling liquid and vinegar into a small shallow bowl. Add the dulse and let soften for about 30 seconds. Pick out the dulse and squeeze and shake out any excess liquid, then incorporate the dulse into the crab mixture. Discard the excess pickling liquid and vinegar. 4 To serve, put a ring mold in the centre of a shallow bowl and spoon in half the crab mixture. Remove the ring mold and repeat in a second bowl with the remaining crab. Pour 2 tablespoons of the kombu stock around each portion. Finish with a touch of gray salt.
PICkled raMPS When ramp season comes around, people go crazy. For me, there’s no better way to enjoy them, though, than pickled. Try them on pizza or a roast pork sandwich. Makes about 1 quart IngredIenTS 3 pounds (1.4kg) ramps, washed and hairy roots removed, leaves remain attached 360ml white vinegar 240ml water 100g sugar ½ teaspoon kosher salt MeThod 1 Put the ramps in a large heatproof container. 2 Combine the vinegar, water, sugar, and salt in a medium saucepan and bring to a gentle boil, stirring to dissolve the sugar. Pour over the ramps and let cool, then refrigerate. The ramps can be refrigerated for up to 3 months.

Use an immersion blender to blend the ganache until very smooth. 4 Stir in the sesame seeds. Cover with plastic wrap, pressing it against the surface of the chocolate to prevent a film from forming, and refrigerate until chilled and set. The ganache can be refrigerated for up to 5 days.

Chocolate Cake with Whipped Cream
Broiling slices of this luscious chocolate cake before serving creates a crust similar to a crème brûlée and adds a wanted burnt-flavour note. The black sesame ganache delivers savory notes, and the whipped cream refreshes. Serves 6 IngredIenTS 175g sesame ganache 6 squares chocolate cake Gray salt 240ml heavy cream, whipped to soft peaks Cocoa powder, for dusting MeThod 1 About an hour before serving, remove the ganache from the refrigerator to come to room temperature. 2 When you’re ready to serve, preheat the broiler to high, with a rack as close to the flame as possible. 3 Arrange the pieces of cake on a baking sheet and broil for a few minutes, until they get a good char on their tops. (Depending on the strength of your flame, you may want to set the baking sheet on top of an upturned baking sheet in order to get your cake closer to the fire.) Remove from the heat. 4 Place a scoop (about 1½ tablespoons) of the ganache in each of six small bowls and top with a sprinkle of gray salt. Place a piece of cake on top of the ganache in each bowl and cover with a few generous spoonfuls of whipped cream. Dust with cocoa powder and serve.

160ml water ½ pound (2 sticks; 225g) plus 2 tablespoons unsalted butter, cut into chunks 6 large eggs MeThod 1 Put the chocolate in a large heatproof bowl. 2 Combine the sugar, water, and butter in a large saucepan and bring to a boil, stirring to dissolve the sugar. Pour the mixture over the chocolate and stir to melt the chocolate, then let cool. 3 Preheat the oven to 325°F (165°C). Line a 9-by-13-inch baking pan with parchment paper. 4 Whip the eggs in a large bowl until fluffy. Fold into the chocolate mixture until thoroughly combined. Pour the batter into the lined baking pan. Put the pan in a larger baking pan and put the pans in the oven, then carefully pour enough warm water into the larger pan to come halfway up the sides of the cake pan. Quickly cover the whole assembly with foil, crimping the edges against the edges of the large pan, and bake for 90 minutes, or until you can touch the top of the cake without any batter sticking to your finger. Carefully remove from the oven and let the cake cool in the water bath. 5 When ready to serve, cut the cake into 12 squares. You will need 6 squares for the dessert; the remaining cake can be kept in an airtight container in the refrigerator for up to 5 days. SeSaMe ganaChe

Things to see and do Altea has an old town charm, with ancient cobbled streets lined with palm trees, but on the other side there has been a construction boom predominantly in the hills surrounding the town, giving Altea two faces – both to be enjoyed! In the 1950s, musicians and artists gravitated to Altea, and today you will find many galleries and numerous workshops along the narrow streets of the old quarter. You will not be short of breathtaking views, being situated on the Costa Blanca, this seaside town is overlooked by mountains and endless seascapes. There are plenty of beaches and coves to explore along the coast line. A visit to Altea’s old town is a must! Here you will find streets bursting with ancient Spanish charm, with the blue and white domed church sitting proudly overlooking the beach and the town. In 2013 the Bastion and Renaissance area was recognised as a Cultural Heritage Site. The original structure has been preserved, with gates that grant access to its fortress. There are also lots of other 18th and 19th century buildings that have been preserved, so if you have an interest in witnessing some ancient Spanish architecture, you are in for a treat. The old town is also a shoppers paradise, with lots of little boutiques to meander. You will find plenty of bars and restaurants in the area to enjoy, with quaint and quirky finds around every turn. You can enjoy a guided tour around this area of town, running every Thursday evening. The route taken has some steep hills and will travel along cobbled streets, so it is described as medium difficulty. It is advised to book in advance, as space is limited. While Altea is no longer a little fishing village, it has remained more traditional, and smaller, than some of the other Spanish resorts you will find on the Costa Blanca – which is part of its charm. The beaches tend to be that bit quieter here, and with 6 kilometres of coast you will have plenty of coastline to choose from. The beaches in Altea aren’t as sandy as you might typically want, and it is something to be aware of before you go there, especially if you have children that have their heart set on sandcastles. The beaches are pebbly, but can still be enjoyed as you would any other. If you plan on swimming or paddling in the sea, you can purchase water shoes for full comfort underfoot, without the risk of losing a flip flop!
Cap Negret beaCh.
The Cap Negret beach north of Altea, along with the small cove of Cala del Soio, is renowned for its special black pebbles and is worth a visit for something a bit different. Something fun for the kids to do, is a day trip to Terra Mitica Theme Park, which is a 20 minute drive away toward Benidorm. This theme park represents all the Mediterranean countries, with thrilling rides and shows, sure to excite any adrenaline junky! Altea has lots of museums for you to enjoy too. The Museum Navarro Ramon hosts a permanent painting exhibition of the works of Juan Navarro Ramon, a local painter born in 1903, located in the House of Culture. There are two additional rooms used to host temporary exhibitions, so be sure to check whats on show here. Learn all about the history and links that Altea has with the sea, at the Museo del Mar. This museum has three themes; history, fish and fauna. It also has three aquariums, showing an example of local wildlife.

Places to eat and drink Oustau Restaurant is located near the church overlooking the town. Choose from indoor or outdoor seating and enjoy fantastic food from their varied menu, offering Mediterranean, French and European dishes. The menu offers a selection of the best French and Spanish dishes, carefully chosen for their popularity amongst locals. The menu here changes according to the season, taking you on a culinary journey where tradition and modern blend in harmony.
Places to stay Hotel Tossal d’Altea is a traditional hotel, located within walking distance of the old town. This family run hotel is situated on a 300 year old olive mills, in a restored historical building once serving as a farmhouse. The rooms are beautiful and full of charm, but for a truly special experience we recommend the Attic with a private terrace and balcony and views of the mountains. Hotel La Serena is a four star, adult only hotel, where tranquility and peace are key. Things to see and do Ballymena is home to Slemish Mountain, known as the first home to Ireland’s patron Saint, Patrick, where he was said to have been tied up in slavery as a herder of livestock. But that is not the only interesting thing about this small mountain; Slemish is actually the remains of the plug of an extinct volcano! It is open year round to the public, where you can hike to the top and be rewarded by the outstanding views of Irish countryside all around, and on a clear day you can even see the Scottish coastline. On St Patrick’s Day, people from far and wide will flock here to make the ascent as a pilgrimage. The walk from the bottom to the top and back can take around one hour, and many people enjoy a picnic at one of the picnic tables on their return. A visit to the nearby Galgorm Castle and Estate is also a must. It is soaked in history, being one of the finest examples of Jacobean architecture in Ireland. A restoration and redevelopment of the castle began in 1980, after it fell in to disrepair. Today it is a stunning location for local history, and the gardens are beautiful to explore on a spring day. There is

There are clues to solve that help you on your way to finding the next point of interest! A fun day out for all the family. Dooey’s Cairn is an ancient cremation chamber site, known to be the only one of its kind on the whole of Ireland. It was built and used by people in the Neolithic period and is accompanied by eighteen other court graves nearby. The basic layout of Dooey’s comprises a forecourt area, which is a semicircle of eleven upright basalt slabs. From this forecourt, two portal stones mark the entrance of a small chamber – it was in this chamber that polished stone axes, flint arrowheads and pottery remnants were found in 1935. This site is shrouded in mystery, and while there is evidence of ancient cremation happening within one of the chambers, there are questions surrounding why it was the only one in Ireland and where the idea ever came from. Glenariff Forest Park offers some of the most beautiful walking trails in Ireland. Take the three kilometre waterfall walk to be wowed by the natural beauty that surrounds you. On the walk, you will find three waterfalls which provide a rich backdrop for photographers, and are truly spectacular to see. There are shorter walks, such as the Viewpoint Trail, which offer views down the Glen to the sea in the distance; it also takes you past the café and back to the car park via the ornamental gardens. Ballymena town centre is a bustling spot packed full of independent retailers and the usual high street chain stores, making it a popular spot for keen shoppers too.

You will find Southern inspired dishes featured across the menus, with an eclectic mix of classics throughout. As well as this, you can find the intimate setting of the bar here; the perfect spot for a few casual drinks after a day’s exploring, and on nicer days you can enjoy the roof terrace with views of the countryside. Pretty In Pink I started to write my monthly garden article while listening to The Psychedelic Furs song, Pretty in Pink, and it got me thinking of all the pretty pink flowers which bloom in the garden.
T
here’s almost every shade of pink to be found, whether it’s the deep cerise hue of Echinacea or the pale pastel tint of Digitalis, almost every taste can be satisfied by a pink bloom or two or three! According to BournCreative blogger, Jennifer Bourn, she writes that the delicate colour pink signifies sweetness, playfulness, romance, femininity and tenderness, associated with sweet, little girls and cotton candy. I could not have picked better words to describe exactly how pink flowers in the garden make me feel. Bourn also writes that the phrase ‘in the pink’ means healthy, which is exactly how any planting scheme, sprinkled with pink flowers is a recipe for a healthy garden.

DEIrDrE’s FAvourITE PrETTy IN PINk FlowErs Cosmos bipinnatus (Fig.1) Mexican Aster This tall annual plant can grow to about 2.5m high with finely divided leaves and large flowers raining from pale to deep pink with bright yellow centres. They are extremely easy to grow from seed and will flower from late summer into autumn. They are a great filler annual for any border, thriving in full sun conditions. Hylotelephium (Sedum) ’Matrona’ (Fig.2) Stonecrop Matrona Growing to about 60cm, these beautiful succulent perennials have clusters of tiny star-shaped flowers from summer to autumn. The blooms range from deep pink edges to the palest pin centres. They love full sun and will survive in exposed sites. Echinacea purpurea Bressingham Hybrids (Fig.3) Purple Coneflower Echinacea grows to about 80cm high and their deep, pink blooms appear from mid summer to late autumn. They are deciduous and will tolerate most soil conditions although they do like good drainage. They are best grown in a full sun and they are great for attracting bees and butterflies. Diascia fetcaniensis (Fig.4) Twinspur Diascia is a semi-evergreen perennial which has a low mat of foliage with coral-pink, bell-shaped flowers appearing in summer. They are a great ground cover, growing to about 30cm high in full sun conditions.
Eupatorium maculatum Atropurpureum group (Fig.5) Joe Pye-weed This is a tough herbaceous perennial which grows to about 2m tall. The tops of its stems bear flat clusters of deep rose pink flowers in mid to late summer. It will survive in poor soils and will tolerate partial shade. Persicaria bistorta ‘Superba’ (Fig.6) Red Bistort This form of Persicaria is a semi-evergreen perennial (there are some varieties which are annuals). It is vigorous and can grow to about 60cm in height with small bell shaped pale pink flowers on spikes. Digitalis Foxlight Rose Ivory (Fig.7) Foxglove Rose Ivory This Foxglove is an absolutely stunning biennial and will grow to about 60cm tall with bright pink and cream petals. Its great for attracting bees and butterflies and will tolerate partial shade and well drained soil conditions. Rosa Gertrude Jekyll (Fig.8) Gertrude Jekyll Rose No pink garden is complete without a pretty in pink rose. Gertrude Jekyll is a small shrub rose, growing to about 1.2m high. Everglades Hotel This month we were lucky enough to enjoy a short break at the Everglades Hotel, only five minutes drive from the city of Derry~Londonderry, and overlooking the River Foyle and with views across to the Donegal hills.

s we entered the hotel we were warmly greeted by staff who made us feel very welcome. Check in was quick and we were given a wealth of information of things we could do during our stay. The hotel has 64 deluxe rooms but we were lucky enough to stay in the Woodrow Wilson Suite, which was extremely comfortable and having the luxury of so much space just added to the enjoyment of our stay. The bed was huge and exceptionally comfortable as were the two sofas in the lounge area of our room. If we had chosen room service we had a lovely dining table to sit at but we decided to go to The Grill for dinner. After unpacking and enjoying our welcome cookies, we headed down to The Grill for dinner, where again we were warmly welcomed by staff. The choices on the menu made it hard to pick our meals as everything sounded so delicious. Finally we decided on crispy squid and a classic caesar salad to start and we were not disappointed. For our mains we had breaded homemade fish cakes – I would highly recommend these – and Hannan’s Glenarm daube of beef. Again our meals were absolutely delicious. We finished off with a Glastry Farm ice cream slider and seasonal fruit sponge. On the way back to our room we passed through the Library Bar for a drink and sat by the lovely open fire. There was a relaxed and friendly atmosphere and we could have quite happily stayed there for the rest of the evening. After a good nights sleep we headed down for breakfast. I have to admit that one of my favourite things is having breakfast in a hotel, especially a Hasting Hotel. From the porridge to the cooked breakfast you will not be disappointed. It is nice to see so much local produce being used and it is lovely to be able to find out about the people who provide the products. After breakfast we took the short drive into the city to start an adventure filled day. From walking the city walls, crossing the Peace Bridge, looking for the ‘Derry Girl’s mural or just shopping, there are so many things to do. We had a great time exploring and will definitely be heading back sometime soon. hastingshotels.com
