Another year, another harvest.
2018 was ripe with wine production. Of course, there were a few obstacles along the way as well that proved to be a damper in the Canadian wine industry. In this issue of Crush magazine, the Canadian winery and management publication, we explore how the 2018 wildfires in B.C. could potentially affect this year’s harvest; will smoke taint transform the quality and taste of 2019 wines? And what about global warming? Wineries across the world have started to notice that they have gotten an increase in growing days, allowing the grapes to fully ripen earlier. We also take a look at some unconventional wines, such as orange wine and what makes it unique, as well as a winery in Ontario which make traditional wines in an untraditional way. Of course, let’s not forget the feature on Winnipeg’s only winery, which considering the climate of the prairies, is an interesting business venture to get into. Matthew Dumayne, chief winemaker at Okanagan Crush Pad in Summerland, B.C., says that he’s seen the quality of wine improving as people are doing more site selection and research into site selection. They did experience a fire near their vineyard last summer, but he says that for the amount of fruit they process, it was a small block. They started picking the fruit towards the last week of August and were heavily focused on their sparkling for their Haywire brand. He says overall, the growing season was a pretty dry summer with the wildfires and it wasn’t too hot.

They try to make them with as little outside interventions as possible. They take a traditional approach, which comes from old-world Europe, and try not to add anything more than grapes and a

“Because we made this at a very early stage, in 2010, it sort of flagged us for being weird, different, unique, and it’s had us not meeting VQA standards on a regular basis,” says Morissette, who adds that their Rieslings were one of the first wines that people noticed they made slightly differently, and of which they’ve gained a reputation for. “The wines are, of course, not flawed, but just different. Those wines are being appreciated in other places, like Germany for example.” Being different is part of the charm of Pearl Morissette; they do things differently and don’t try to emulate what has been made elsewhere in the world. In 2008, we became Canada’s first certified organic and biodynamic winery. Our pursuit of excellence and innovation made way for our first vintage of orange wine in 2014 when we released our first Estate Vidal ‘Orange’ wine.
What is Orange wine? Orange wine, known in Ontario as Skin Fermented White, is unique not only for its colour and taste, but for the process in which it is made. Just as in red winemaking, white grapes see extended maceration and skin contact during fermentation. This gives the wine its orange colour and greater structure. Growing a new industry in Manitoba Shrugging Doctor Beverage Company produces wine in an unexpected place By Taryn Rittberg
W
hen it comes to wine in Canada, the first location that comes to mind is
most likely not Winnipeg, Man. But, two born-and-raised Winnipeg entrepreneurs are hoping to change that. Shrugging Doctor Beverage Company is a Winnipeg-based winemaking company co-founded in 2016 by Willows Christopher and Zach Isaacs. It is focused on providing the most unique and versatile alcohol experience in the province made from locally grown produce. “It was a perfect storm of conditions,” says Christopher, when thinking about how it all began. “Looking back at the first iterations of the business plan, I cringe, I can’t believe I thought that would have ever worked. And when you’re 18 and you walk into a bank and say ‘I’ve never had a job before, I’ve never run a business, I have no credit history, I have no assets, and I want to start a business making wine’, it’s a little hard to get funding.” The duo started with only $50 of their own money, which they spent on homebrewing equipment. They ended up going to Futurpreneur, a non-profit, government-funded organization which funds small businesses and young entrepreneurs, and they were able to help them refine their business plan. particularly difficult hurdles to jump, but Christopher and Isaacs have spent the last three years determining just how to use these difficulties to their advantage. “I worked a lot on the recipes at first. Using local fruit wherever possible; we use raspberries, strawberries, rhubarb, and then Manitoba grapes,” says Isaacs. “The grapes have been specially engineered to be cold hearty, then we grow them in the Pembina Valley between the U.S. border and Winkler. The grapes we grow have a very unique taste, and you don’t get too many wines made from these grapes just because they don’t exist out there.” This year, Shrugging Doctor produced eight different types of wines, two types of mead, an apple cider, and a sangria. As the company grows, they plan to keep adding to their repertoire. In any new enterprise there are sure to be some pitfalls, but Christopher and Isaacs have found ways to make sure even their missteps don’t go to waste, recounting using a not quite right wine to make their first sangria. Shrugging Doctor hopes to be able to influence the wine industry in

Autonomic lasers offer growers a great new tool against bird damage B ird damage is a real issue for many growers. You invest time, money, and energy throughout the year trying to grow the perfect crop, only to see
all that work go for naught when birds flock in at the
eleventh hour to rob you of your riches. This is not an old story. It has been dealt with for many generations with all sorts of techniques: scarecrows, shotguns, cannons, balloons, netting, reflective tape, and even screeching sound machines of birds in distress. These all work to some extent, and often the best result is to implement a combination of methods as the season develops. Bird Control Group has developed an innovative commercial-grade laser that is proving to be quite effective. Operating out of their North American office in Portland, Oregon, Bird Control Group offers a commercial robotic laser called the Autonomic. Why do the lasers work so well? The bird’s eyes work differently than human eyes. They see the full beam of light, just like we do if the laser was operating in fog or shining through smoke. So, for the bird, it’s perceived as a physical threat coming towards them as it moves through the field. It doesn’t mean you won’t see bird activity in the area, or that you might not still want to consider other measures to complement the lasers. They’re not a silver bullet offering complete control. But they do work very well with many growers sharing results of up to 90 per cent reduction in bird numbers. Similar to netting in a way, without the extra expense and labour.
