HOW TO COOK OCTOPUS?

There are many Ways of cooking octopus, HOWEVER 1 question remains...which one suits you best?

1.

Clean your Octopus with coarse salt in an colander UNtil all the foam disapears

2.

Prepare a pot with Hot water, cellery, bayleaf, carrots and lots of red wine. bring to boil and dunk your tenticales first, UNTIl they start to curl. Then simmer your octopus @ 90 degrees celsius for around 30 Minutes.

3.

Lift your octopus slowly out of the cooking water and let rest until the jellified skin starts to feel firm.

4.

Vacuum pack your octopus and low temperature cook it for the next 12 Hours.

5.

slice very thinly, season to your liking and then warm slowly.
