Which tripod? Slow shutter - Stabilize - Shoot

S

tability is key when slower shutter speeds are at play. From still life, sport, catwalk to interior shoots, capturing images while minimising camera shake, it’s a must to use a faithful stabiliser. Your choice of tripod for reliability and durability means you want sharpness and clarity. Shutter release cable to totally minimize movement. Modern strong and light materials like alumininium and carbon fibre means it doesn’t have to be a weight lifting exercise. However if you’re using weightier cameras it makes sense to use a counter balance that suits. Here’s a selection of just three from Fresheye to look at. Afterall three is the magic number.

Sky Garden

The highest ‘floating’ roof gardens in Europe - Sky Garden boasts three storeys of landscaped gardens lush with South African and Medterranean plants, observation decks, an open-air terrace, two restaurants, a bar and an uninterrupted panorama of the city’s skyline.

It has been nicknamed ‘The Walkie-Talkie’ because of its distinctive shape. Construction was completed in spring 2014, and the top-floor ‘sky garden’ was opened in January 2015. The 34-storey building is 160 m (525 ft) tall, making it the fifth-tallest building in the City of London and the 13th tallest in London. Designed by architect Rafael Viñoly and costing over £200 million, 20 Fenchurch Street features a highly distinctive top-heavy form which appears to burst upward and outward. A large viewing deck, bar and restaurants are included on the top three floors; these are, with restrictions, open to the public. This all-day drinking and dining space is situated amongst the most impressive sky gardens and offers the best views of London. In the day, soak up the view with tea, coffee, light snacks and sandwiches; in the evening, the extensive cocktail list, sharing boards and music are the stars of the show. Two restaurants Level 36 is Darwin, an all-day brasserie inspired by the very best of British. Laid-back but luxe, the space is inspired by nature and understated décor allows the food – and incredible view – to do the talking. Level 35 is Fenchurch, - the menu is best described as British contemporary and includes a wide choice of meat and fish dishes as well as excellent vegetarian options that are beautifully presented.

Hoi Polloi Eating up East

H

oi polloi (Ancient Greek: οἱ πολλοί, hoi polloi, “the many”) is an expression from Greek that means the many or, in the strictest sense, the majority - inessence ‘the people’. At Hoi Polloi the cooking is clean, simple and light, the menu, printed as a tabloid newspaper, does rather mannered, healthy takes on voguish comfort food. Menu. It covers breakfast, lunch, snacks, cocktails and dinner. Dishes are British, very seasonal and juxtapose flavours in modern but not outlandish ways that will leave you craving more – and wondering why other kitchens can’t manage so deftly. A fresh, vibrant starter of braised celeriac is topped with a tangle of remoulade-like shreds of celery and (rarely seen) cobnut pieces. Pork cheeks, slow-braised to intense meaty tenderness, are suitably autumnal with their chunks of spiced apple and on-trend pickled carrots (every chef with a beard is fermenting these days).

Potato dumplings (aka gnocchi) are served with tender baby globe artichokes and wild mushrooms. The size of this – and other savoury dishes – was modest, but prices are fair. Old-fashioned lemon posset is given a contemporary twist with a red berry puree. Steak tartare comes with a generous scattering of toasted crumbs, while a portion of crab salad is garnished with radishes. A fillet of plaice with brown crab, beans and gently perfumed fennel is perfectly cooked. A skirt steak is accompanied with onion fritter and chips. A portion of cauliflower cheese scattered with almond slices. Classic round lettuce with cobnuts lightly dressed with a surprisingly piquant ‘salad cream’ is a side salad worth getting excited about. Eight British and Irish cheeses are available in 30g portions, generous at £3 a pop. Slices of pineapple and pink grapefruit provide a refreshing finish.
