How to be an optimist...
O
ptimism is such an underrated skill; it has so many benefits, including increased wellbeing and better sleep and everyone can adapt their lives to experience it. It’s so simple to incorporate into your everyday life. A good place to start is, to create some positive mantras for yourself, one’s in which you can think back to when times are tough, and which will lead you back onto a positive mental path. Focus on your successes, and remember the hurdles you’ve over come to achieve them! Having gratitude for your successes will only spur you on to do better. Have a focus, whether it’s a positive role model, a goal or just to trying something new, it’ll encourage you to think of the most positive outcomes, of which you are aiming to reach for. Stay positive, everyone is faced with challenges throughout their lives, however it’s not necessarily the challenged which throw us off course, but the way we interpret and reaction to them. You can’t always change events or circumstances; however you can

change how you perceive and respond to them. In any situation think of the positives and also what you can learn and gain from your experience, rather than what you have lost. This is always the first step to bouncing back when it comes to disappointment. And when it comes to tragedy take comfort in the good times, for they’ll never change.

by Sophie Fitzjohn. Try to avoid predicting the future, nothing is certain; therefore it’s important to try not to predict the future based on what has happened before. When things don’t go to plan in life, optimists tend to see it as an isolated event; whilst pessimists often look out for reoccurring patterns of bad luck, and think “if it’s happened once, it’ll happen again”. However in life this just isn’t the case. Surround yourself with positive vibes! Spending time with negative people means it’s only a matter of time before it starts to rub off on you. Being around like minded positive people is important to ensure you optimism for life is present and in full swing! This also applies to other influences in your life, such as movies, music and books. Surround yourself with positive influences and see the effect it has on your state of mind. Mindfulness and mediation are great outlets to explore when it comes to seeing the positives in everyday life and remaining grounded. Do something for yourself and keep a Gratitude Diary. When something bad happens and puts us in a foul mood, it rarely escapes our attention. However how often do

we actually appreciate when things are going smoothly? Reflecting in a gratitude journal changes your focus and thinking, and enables you to be grateful for all the things that do go to plan. Challenge negative thoughts; negative thoughts are often based on our own fears, doubts and low-self- esteem. Therefore to over come this, you need to challenge these thoughts and put them into perspective. Ask yourself what’s the evidence that these thoughts are true? And the evidence that they are not? All negative predictions are usually just that, predictions. Always focus on the solution, rather than the problem. To be an optimist, look for the solutions. Pessimists tend to focus on the problem; and that’s not helpful for anyone, as it doesn’t change the situation. Don’t waste time reflecting on what could have been, let go and get proactive planning your next step! Fake it till you make it! Optimism isn’t something that comes naturally to everyone, and it can take time to change your mindset. So in the meantime, attempt to put the action before the feeling and interpret a more positive outlook. Studies have shown that it is possible to trick yourself into a more positive mindset by going through the motions. Smiling, laughing more and speaking in a positive tone are all ways that can help you onto the road of optimism and happiness!

How to be an actor "I’ve never done a film before, so I’d love to do one..."
N
othing has changed in my life,’ says the 25-year-old actor who moved back to stay with her mum and dad in Altrincham, Greater Manchester, at the start of the recent lockdown. ‘I’m still at home arguing with my brother about the washing-up and doing jigsaw puzzles with my dad. It’s very surreal, because I know something’s going on but I can’t really see it.’ Born in Trafford, she went to Cheadle Hulme School in Stockport but also joined her mum’s trade as a child actor, playing Siobhan in Waterloo Road at the age of 14. She has appeared in Prisoners’ Wives and The Musketeers as well as Snatch, an American series based on the Guy Ritchie movie of the same name, alongside Harry Potter star Rupert Grint. But Phoebe had a lot of rejections and had run out of confidence by the time she was called to audition for Bridgerton in Los Angeles. ‘Being an actor is 99 per cent being told “no”. Sometimes it does wear you down. ‘I remember doing a school play when I was 17, playing Antigone. There was a moment on the stage when I knew this was it for me, for the rest of my life, no going back.’
Bridgerton is based on the novels of Julia Quinn, narrated by Julie Andrews as Lady Whistledown, the all-seeing author of a society scandal-sheet, and the executive producer is Shonda Rhimes (Grey’s Anatomy, Scandal). The female gaze is what we get at every level, says Phoebe. ‘The women have real agency in the show, which is something I really loved about it.’ Bridgerton has purposefully brought historical drama into the modern age by casting a large number of black characters. It has been described as the ultimate post-Me Too series, and the production values reflected that when it came to the sex scenes: ‘You treat it like a stunt – you have an intimacy coordinator,’ says Phoebe. This is someone who oversees the moves, as it were. ‘She brings this bag full of equipment, like yoga balls and mats and padding, all these things you imagine they use for stunts. It’s just all amazing camera angles and you feel so safe. It’s all about making it look real but not actually doing it – like someone getting punched in a screen fight when you’re not actually punching them. I’ve done sex scenes before where that wasn’t the case and they are entirely different to shoot.’

oused in a former Lyon’s Coffee House on the edge of Smithfield meat market, Pascal Aussignac’s fabulous restaurant is a temple to Gascon gastronomy, the robust cooking of southwest France (cassoulet, duck, foie gras etc) which not many restaurants in London can offer. Aussignac’s thoughtful reinvention makes for a modern and mindblowing menu that now boasts a Michelin star, and, offering no fewer than 10 variations of foie gras, it’s become a mecca for it. Having been instrumental in the industry’s sharing revolution, dishes come tapas-sized so that everyone gets to try a bit of everything (five or six dishes per person make up a full meal), though you can still keep it all for yourself with an à la carte menu. The elegant room and good French wine list make it a popular spot for business lunches, but in the evenings true gastronauts take over. If you don’t want the full blowout, there’s Cellar Gascon, a wine-tasting

A good example of an overrated food is kale. That may bring grasps, because it seems to be everywhere these days. You know the hype has climaxed when even McDonald’s is testing it out in Canada and Southern California. So why do we say kale is overhyped? What the hell is a Milk Stout?
T
oday’s craft beer drinkers are used to seeing obscure ingredients on their beer labels. There’s POG, Syrah grape must, habanero, you name it. It’s enough to make you wonder where the line is between beer and beer-like product. But brewers have been putting non-traditional ingredients into beer for more than a century. Case in point: milk stout. What is Milk Stout? Milk stouts are dark, thick ales with very low carbonation. In general, they have notes of sweetened coffee, espresso, and chocolate. Milk stouts aren’t cloyingly sweet like candy, but have a subtle sweetness reminiscent of whole milk (as the name suggests). Do Milk Stouts Have Milk in Them? Don’t go and replace your morning glass of milk with a milk stout. The beer has the sweetness of milk without all the good stuff. But that wasn’t always believed to be the case. When milk stouts were first mass produced in England in the early 1900s, they were marketed as healthy and “a tonic for invalids and nursing mothers.” At the time, aged, or “stale,” beers were losing popularity, and fresh, or “mild,” beers were on the up and up. What is young always turns old and stale, however, and the fresh, sweet taste of mild beers dies unless a fountain of youth elixir comes in as a savior. Enter lactose, the sugar found in milk.
