Corned Beef in Guinness

Pizza Roll-Ups

Serves 6 (or 3 hungry bikers)

Makes about 12

1 bottle Guinness beer (or other stout beer - or you can use beef stock)

1 can pizza crust (you can use fresh or frozen dough) 1 cup of a mix of diced toppings (pepperoni, sausage, bacon, ham, bell peppers, onions, mushrooms, etc.)

1 cup beef stock

1 cup shredded mozzarella cheese

2 tbsp brown sugar

1 cup pizza sauce ¼ cup parmesan cheese

3 1/2 pound uncooked brisket for corned beef, rinsed well and patted dry

Heat oven to 375°F. Coat a baking sheet with cooking spray.

Spread or unroll dough into a flat work space into about a 10 x 12 inch rectangle

1 head garlic, halved

1 tbsp pickling spice

1 head cabbage, sliced

Using a spatula or back of a spoon, spread a VERY light layer (approx 3-4 tbsp) of pizza sauce over the entire surface leaving about 1 inch on the top uncoated

4-5 carrots, cut into 3/4-inch chunks 1 lb of red potatoes, cut into 3/4-inch chunks

Evenly sprinkle your toppings and cheese over the sauce, then starting at the bottom end, gently begin rolling the crust up towards the top

Preheat oven to 300. In a large oven safe pot (I use a cast iron dutch oven), stir together the beer, stock, brown sugar, pickling spice, onion and the garlic.

Wrap in cellophane and refrigerate for 30 minutes Remove from cellophane and using a sharp knife, cut into 1 inch slices (using a moistened knife will help) and place on baking sheet the sprinkle with parmesan cheese

Place in the brisket and bring to a simmer but don’t elt it boil – it makes a mess

Bake 20 to 25 minutes or until golden brown, serve hot with the remaining pizza sauce

Once it begins simmering, cover the pot and place in oven to roast for 2-3 hours, flipping meat once during halfway point. Add in the vegetables and allow to continue cooking covered for another 2-3 hours or until the meat is fork tender

Serve in a bowl with plenty of broth or sliced on a platter with a nice piece of crusty bread ***This can be made in a crock pot too, just add a couple hours cooking time to the meat
