44° North Distillery American Craft Distiller

Andrew Izeluk and Eric Martin Brand Ambassadors Rigby, Idaho www.44northvodka.com

In 2004, 44° North Vodka began with a simple objective: to achieve a smooth and distinctive taste by distilling directly from 100% Idaho-grown potatoes or Brundage Winter Wheat blended with Rocky Mountain Spring Water. To flavor the vodka, 44° North uses only all natural Mountain Huckleberries and Rainier Cherries. 44º North’s Magic Valley Wheat unflavored vodka is made with grain, which is raised in the heart of Idaho’s Magic Valley growing region. Let the other producers re-distill industrial produced product, artificially flavor neutral grain spirits, over-distill, and chemically treat their vodka. We’ll stick to using real Idaho-grown ingredients without all the smoke and mirrors. Idaho Potatoes and Brundage Winter Wheat along with Rocky Mountain spring water produce a smoother vodka without the bitterness. 44° North Vodka accomplishes this with a five-column, multi-plate, distillation process that elevates the proof of the alcohol being distilled as it strips out virtually all impurities. NEUTRAL? There is no such thing as Neutral. This is why you should never buy vodka made from industrially sourced neutral grain spirits. That’s the big-box-discount-store version of vodka. Many well known vodka brands are made from factory-made neutral grain spirits that are over-distilled, treated, repackaged, artificially flavored, and even colored. Don’t compromise. Drink vodkas that are produced and bottled at their source. And, what can be better than vodka made from Idaho’s earth and sky? Keeping it local is how we keep it real. 44° North Vodka is not only made in Idaho, but also represents the very best of what Idaho agriculture has to offer. Maybe this is why 44º North Vodka is recognized as a genuine, highquality Idaho product by Buy Idaho, The Idaho Potato Commission and Idaho Preferred. We’re honored and committed to do our part to support the Idaho economy.

From start to finish, every step of the production of every drop of 45th Parallel Vodka occurs under our control in our facility in New Richmond, WI. Our more traditional method of production perhaps requires more effort and is more costly than other more in vogue methods, but it is our way of being assured the highest quality of spirits is in our bottles. As a small batch producer, we use taste and smell to determine the level of filtration needed for each individual batch. Our premium vodka has no additives or artificial flavorings. We carefully preserve the positive qualities provided by the grain. Our vodka’s natural flavor and body is maintained through a stringent and meticulous process and by not over filtering.

In 2009, we added distilling to our portfolio, and once again we bring our grow it-make it-drink it aesthetic to our efforts, whether it’s our own antique apples, grapes from the Driftless Area; Wisconsin White Oak barrels; or Sorghum from Elkhart Lake. We aren’t afraid to source it close to home and take the time to show you local flavor.

Kyle Henderson www.angelsenvy.com

One man’s masterpiece, Angel’s Envy is an artisan bourbon inspired by Lincoln Henderson’s lifetime spent perfecting his craft and creating fine spirits. There may just be a spark of divine vision mixed in as well. Recognized by Malt Advocate, The Bourbon Review and Maxim as one of the top spirits released in 2010, Angel’s Envy is positioned as the world’s premier super-premium bourbon brand. Beyond all the press, Angel’s Envy was Lincoln Henderson’s passion — a career culminating in two fingers of the finest bourbon you’ve ever tasted. To call Angel’s Envy “small batch” is an understatement. Our bourbon starts with the native Kentucky climate and soil in which our corn and rye are grown, and a pristine limestone watershed rich in calcium and magnesium. These local ingredients are distilled and aged for four to six years in American white oak barrels. Because we want to create a genuinely unique spirit, we age it for three to six additional months in hand-selected port casks to create an exceptionally smooth and nuanced bourbon. Shake the bottle. If you’re lucky enough, you might see something special. We like to call it “essence.” We don’t filter our bourbon. If you’re looking for a filtered bourbon, the shelves are full of them. Filtration can remove up to 20% of a bourbon’s flavor and color. We prefer to let our bourbon live in its natural state. If that means an occasional particle, we think you’ll understand. But why do we call it Angel’s Envy? As bourbon ages in the barrels, it’s drawn into the charred white oak during summer months and it recedes back into the virgin barrels during winter months. For each year of maturation, 5% of the barrel’s bourbon is lost to evaporation. For generations, this precious lost bourbon has been called the Angel’s Share. After tasting his creation, Lincoln Henderson reckoned that the angels might have wanted a bigger cut. Thus, Angel’s Envy was born. Notes:

It is the world’s first ‘Spirit of Vermouth’ wherein we are giving our customers everything that is in traditional Sweet Italian Vermouth (including the Wormwood for which Vermouth is named via its Latin name Wermut) EXCEPT the wine. The imbiber simply mixes 1 part BALSAM with 3 parts red wine. It works with everything from a fruity Malbec to a luxurious Barbaresco. Once mixed, it can be used just as you would use a fine vermouth such as Carpano Antica Formula in a Manhattan or Negroni. BALSAM without wine is delicious on the rocks after dinner or as an elegant aperitif chilled with Champagne. It’s like an instant Champagne Cocktail. Notes:

The heads, hearts and tails are cut by taste alone. Boyd & Blair utilizes only the hearts and discard the tails, unlike other distilleries that recycle them. This unique process provides an exceptionally smooth taste. The potato yields a slight natural sweetness and viscosity that cannot be matched by other vodkas, the majority of which are made with grain. Since 1870 it has been known by several names, including most notably, the George T. Stagg Distillery and the O.F.C. Distillery. Its namesake bourbon brand, Buffalo Trace Kentucky Straight Bourbon whiskey, was introduced in August 1999. The Buffalo Trace Distillery stands as the oldest distilling site in the United States. Located on what the company claims was once an ancient buffalo crossing on the banks of the Kentucky River in Franklin County, the distillery is named after the American bison that created paths followed by America’s early pioneers. The Sazerac Company, a New Orleans, Louisiana-based producer and importer purchased the distillery in 1992 and is now the parent company of Buffalo Trace Distillery. The Buffalo Trace Distillery is home to the world’s smallest bonded storage warehouse, Warehouse V. This warehouse only stores a single barrel of whiskey at a time.

Aaron Piehler Brand Ambassador &

Liz Tokach Brand Ambassador

www.bulleitbourbon.com

The legend begins in New Orleans, where the Bulleit family emigrated from France in the 1700’s. Around 1830, Augustus Bulleit moved from New Orleans to Louisville, KY., taking with him his talent for brandy making. As a tavern keeper in Louisville, he began producing small batches of bourbon. Relentless in his pursuit of perfection, he experimented with different recipes. When he found one that consistently met his expectations, the inspiration for Bulleit Bourbon was born. In 1860, while transporting barrels of whiskey from Kentucky back to his hometown of New Orleans, Augustus Bulleit died. With him, it appeared, died the making of his legendary bourbon. As decades passed, the Bulleit family never lost its passion for telling the story of Augustus Bulleit, nor the desire to resurrect his signature creation. After more than a century, the family returned at last to bourbon making. In 1987, Tom Bulleit fulfilled a lifelong dream by reviving his family’s ancestral distilling enterprise using the original recipe of his great-great-grandfather.

Central Standard Craft Distillery is a small batch distillery in the Walker’s Point neighborhood of Milwaukee, WI. In a city notorious for its beer production, Central Standard aims to rekindle one of Milwaukee’s earliest crafts, distilling. The Distillery was founded in 2012 and currently has a line-up of 3 clear products; a Rye Vodka, a Wheat Gin, and a unique Oat White Whiskey. Later this summer, Central Standard will release its first Bourbon Whiskey. In 2016, the Distillery will release its first Straight Bourbon and a take on George Washington’s Original Rye. Please enjoy our spirits; proudly hand-crafted with locally sourced grains and world-class fresh water in Milwaukee, WI, USA. VODKA: Our vodka is distilled from 100% Rye grain. Rye is known for its spiciness and fruitiness, synonymous with superior quality and flavor in Poland and Russia. Our meticulous low reflux distillation process brings out truly artisan craft flavor and quality, highlighting the uniqueness of this grain. The result is a smooth and drinkable vodka based on hard work and attention to detail of the highest standard, The Central Standard. GIN: Our Gin is distilled from a white wheat malt base which builds a body of sweetness to the spirit. Furthermore, we add 6 botanicals to the base through the distillation process. These ingredients lend a bright and floral taste with a light touch of juniper. The ingredients are handpicked and the dimensions are delicately determined to create the perfect artisan crafted gin of the highest standard, The Central Standard. WHITE WHISKEY: We have a rare take on this infamous Whiskey style. Our mash is a grain bill consisting primarily of Oat, which provides a unique light and pleasant flavor. While not aged like its bourbon style brethren, this White Whiskey experiences short aging in an unused and uncharred oak barrel. The result is a clear oat whiskey featuring rich flavor with hearty notes of grain, creating a truly individual and artisan spirit of the highest standard, The Central Standard.

Chicago Distilling Company was founded in 2010 by the DiPrizio family turning a family pastime making moonshine and wine in the Northwoods of Wisconsin into what will hopefully be a multi-generational business. Production of their small batch spirits began in the Fall of 2013 in the Logan Square Neighborhood of Chicago where husband and wife, Jay and Noelle as well as Jay’s Brother Vic call home. Focused on sourcing ingredients as local as possible, most of the grain is farmed specifically for their spirits less than 50 miles from CDco in DeKalb County. Whiskey is the primary spirit in production at Chicago Distilling but CDco has a mission to continue to add specialty sprits to their expanding portfolio. From and awarding winning modern Gin to collaborations with a local top chef and mixologist on Amaro and Absinthe, nothing is off limits. Currently in the eighth month distributing locally Chicago Distilling is in over 130 locations. With a strong belief in educating the community and the desire to share their passion for the craft, Chicago Distilling opens the tasting room and production facility to the public for cocktails, tours and classes every week. Barb & Jim Lindemann Distillers & Owners 4259 Mahoney Rd. McFarland, WI 53558 http://ciderwis.com

Hello! We’re Barb and Jim Lindemann. We are both native Wisconsinites and have lived on Mahoney Road, southwest of McFarland, for twenty-three years. We were married 31 May 1969. Our three children: Kathryn is in Thornton, CO, Bernadette is in York, PA, and Peter is in Hopkins, MN. Both of us have invested a significant part of our lives in schools, as instructors and in administration. Grandma had an ancient apple tree that was much better for climbing than edible fruit. Perhaps that’s where the spark was struck. Our orchard isn’t large by any Wisconsin standard, or certainly compared with the thousand acre giants in Washington. We began to plant our orchard during the first summer we were here. Planting has been sporadic since then, with a current total of slightly more than two hundred trees on two acres. Virtually all of our trees are antique cider cultivars. Although some define antique as older than us, a more refined definition refers to cultivars which can be traced back over a hundred years. We grow a lot of apples, but we don’t sell many. We’ll happily prepare a special order here or there, but we focus on our our liquid products: juice, real cider (6% ABV), and brandy, to make them the best around. Our certified organic apple juice goes to several select area stores who believe that local produce builds bonds between those of us who grow and those of us who eat and drink. Besides the orchard, we have a small farm and operate a CSA, specializing in fresh, organic produce and honey. Notes:

Washington Island, Wisconsin is the heart and soul of everything produced by Death’s Door Spirits. This 22 square mile island hosts 700 year-round residents and has a school, a rec center, a medical clinic, a downtown strip with bars and a grocery, churches, a bank and a gas station. What Washington Island also has is miles of beautiful uninterrupted shoreline, protected coves and inlets, and acres upon acres of open land with rolling hills and hardwood stands. Washington Island was once known for its potato farming. Washington Island “spuds” made their way around the world for their quality and flavor. However, in the early 1970’s, vertical integration in the potato industry left Washington Island without contracts to grow its crops. Without customers, island farmers stopped planting and instead switched to other jobs that were either more tourism-based, or moved off the island to find a livelihood elsewhere. Fast forward to 2005, a small group of like-minded people began exploring reinvigorating farming on Washington Island. Armed with enough seed to plant 5 acres and enough know-how to get it done - brothers Tom and Ken Koyen began growing wheat on the island. What started as wheat to use as flour at the Washington Island Hotel has grown into a select specialty grain for use in Capital Brewery’s Island Wheat Ale and all of Death’s Door Spirits products.

Door County Distillery was started because there was a need for artisan spirits to be distilled with the abundant natural resources of Door County. The Carlsville location was chosen because it is the gateway to Northern Door County and a prime location to source fresh botanicals, fruits, and grain. Having honed his skills over the last 9 years, our distiller, Kyle Thomas, hand crafts each batch with precision and unique combinations of ingredients to give Door County Distillery spirits a distinctive twist and quality that is beyond compare in the current market. If you haven’t tried one of these crafts, you haven’t truly enjoyed vodka or gin. Having successfully entered the super-premium category with Gin and Vodka (Gin winning multiple awards including Gold in 2012,) Door County Distillery is using the talents of Kyle Thomas to expand into Whiskey and Brandy in 2013. We are excited to explore new ventures in 2013 and beyond.

Founder & Master Distiller 918 Chicago Ave, Evanston, IL 60202 www.fewspirits.com

Few Spirits is a grain to glass distillery in Evanston IL. Master Distiller Paul Hletko handcrafts bourbon, rye, gin, and whiskey using midwestern grains for a unique craft spirit. Few Spirits (FewSpirits.com) started distilling in June 2011, and began distribution in the Chicago area in August 2011. Since then, Few Spirits can be found at the finest establishments across Chicago, from Longman & Eagle to mk. As a grain to glass distillery, Few does not use any neutral grain spirits, preferring to mash and ferment their spirit in house. By focusing our efforts on producing our alcohol in house, we control the quality of the spirit and it allows us to create our hand crafted spirits in ways that other distilleries simply cannot. Few makes every effort to make sure you can taste where the alcohol comes from - Midwestern grain, from Wisconsin, Illinois, and Indiana. Few brings its American Gin, White Whiskey, and, if you ask nicely, perhaps a quick taste of rye or bourbon which is extremely limited in distribution. Few American Gin is a whiskey drinker’s gin and can even be served neat, as it is inspired by the dutch genever gins. Few White Whiskey has a complexity beyond most unaged whiskies, owing to its 3 grain mashbill, and double distillation to attain a soft, floral whiskey flavor. On the other hand, Few Bourbon and Few Rye are deep, thick, rich whiskey - when you can find them. Notes:

It began when Paul Jones, Jr., the founder of Four Roses Bourbon, became smitten by the beauty of a Southern belle. It is said that he sent a proposal to her, and she replied that if her answer were “Yes,” she would wear a corsage of roses on her gown to the upcoming grand ball. Paul Jones waited for her answer excitedly on that night of the grand ball ... when she arrived in her beautiful gown, she wore a corsage of four red roses. He later named his Bourbon “Four Roses” as a symbol of his devout passion for the lovely belle, a passion he thereafter transferred to making his beloved Four Roses Bourbon. Paul Jr.’s passion for his Bourbon exists today in the hearts of the Master Distiller and all Four Roses employees. Product quality is always the first concern, as you can see from the careful selection of grains, unique to the mashbill, to the careful nurturing and preservation of the multiple yeast strains, which give every Four Roses Bourbon its unique character and rich, fruity flavors. The gentle maturation of each barrel in one-of-a-kind single story rack warehouses is a Four Roses innovation that allows the Bourbon to age gently inside the barrels in uniform fashion while remaining undisturbed throughout the years.

Gary Dukesherer Regional VP of Sales (Diageo) 1950 Cascade Hollow Rd. Normandy, TN GeorgeDickel.com

Nestled on the Highland Rim of the Cumberland Plateau, you will find us about halfway between Nashville and Chattanooga. The ancient limestone shelf of this plateau provides water that runs fresh and clear from the nearby Cascade Springs, and it made the perfect spot to build a distillery. In 1870, George A. Dickel used this same pure water to distill his first bottle of Tennessee Whisky in Cascade Hollow as well as many unique techniques when producing his premium whisky. Today, George Dickel Tennessee Whisky is still handcrafted with the same quality and attention to detail that ensures that each drop of George Dickel is as remarkable now as it was when the first batch was made. George A. Dickel discovered that whisky made during the winter was smoother than whisky made in the summer. So, George Dickel is the only Tennessee whisky to chill the whisky before it goes into the charcoal mellowing vats. This filters out the oils and fatty acids inherent in most whisky products. Then as it is now, Cascade Hollow is a place where time isn’t measured in hours, days, or months, but in years. Where patience is not only a virtue, but an essential ingredient in making the finest Tennessee Whisky. In fact, it is so smooth, George Dickel declared that because his whisky was as smooth as the finest scotch, he would always spell the “whiskey” in George Dickel Tennessee Whisky without an “e”, keeping with the Scotch whisky tradition. Greenbar Craft Distillery represents the world’s largest portfolio of organic, handcrafted spirits, including BAR KEEP organic bitters, CRUSOE organic rums, FRUITLAB organic liqueurs, IXÁ organic tequila, SLOW HAND organic whiskey, TRU organic gin and TRU organic vodkas. But that wasn’t always the case. When husband-and-wife team Melkon Khosrovian and Litty Mathew began making spirits in 2004, they used conventional spirits and local, hand-processed produce. Soon, their unique spirits won many awards. But Melkon and Litty couldn’t take all the credit. They learned their successes also hinged on some silent partners — the farmers who grew their ingredients. Several had moved to organic farming, resulting in more aromatic, flavorful produce...which led to more flavorful, aromatic spirits. Their minds were made. ORGANICS HELD THE KEY TO BETTER TASTING SPIRITS. Today, Greenbar Craft Distillery produces and distributes the world’s biggest portfolio of organic spirits — all made by hand with real ingredients. The environment also benefits because the company uses lightweight bottles, 100% recycled labels and plants a tree for every bottle sold. Cheers!

Every great town needs a great spirit. When Green Bay Distillery opened its doors in 2011, Green Bay did not have a liquor it could call it’s own. After carefully listening to each patron who walked through our restaurant’s doors, we set out to make a delicious vodka that Green Bay would be proud to call their own. that spirit is simply called….Green Bay Vodka. We’re currently in phase two of our distillery operation plan. Phase two of our plan has us partnering up with a Wisconsin distillery to produce our spirit line which currently includes original and Cherry flavored vodka. We also intend to develop whiskey and gin. Our spirits will be available for purchase through our gift shop. With your support and patronage we will eventually be able to move onto phase three of our plan which will have us building out a micro distillery on-site to produce all of our spirits in-house!

Heaven Hill Kentucky Legend Distiller

- Special Guest -

Nick Coglianese Wisconsin State Manager P.O. Box 729 Bardstown, KY 40004 www.heaven-hill.com Heaven Hill was founded shortly after the repeal of Prohibition in 1935 by several investors, including a prominent distiller, Joseph L. Beam, and a member of the Shapira family. As the company developed, the five brothers of the Shapira family bought out the other investors. Joe Beam remained as Master Distiller, along with his youngest son, Harry. Descendants of the Shapira brothers own and run the company to this day. The original name was “Old Heavenhill Springs” distillery. The company was founded as a bourbon distillery, and for most of its existence has concentrated on its flagship bourbon labels, Evan Williams and Elijah Craig. However, in the past two decades the company has expanded its portfolio significantly, acquiring brands or obtaining import rights for gins, malt whiskey, vodkas, and other drinks. Warehouses for aging bourbon at Heaven Hill’s Bardstown headquarters. The black fungus growing near the bottom is Baudoinia compniacensis, a natural result of the maturing process. On November 7, 1996, Heaven Hill’s production plant was almost completely destroyed by fire. Several of the company’s warehouses were destroyed, and over 90,000 gallons of alcohol lost. The company survived the next several years through the provision of production capacity by its fellow local bourbon labels, Brown-Forman and Jim Beam, until its purchase and adaptation of the new Heaven Hill Bernheim distillery in Louisville. While fermenting, mashing, and distilling occurs at the new distillery, aging, bottling, and shipping still occur in Bardstown. The Heaven Hill company strongly emphasizes the history and traditions of bourbon in its public relations, highlighting the company’s location in the historical home of bourbon-making and its status as the only such company still under local ownership. In 2004, a Bourbon Heritage Center was opened on the old distillery grounds, featuring historical exhibits and guided tours of the plant. The company also hosts the annual Kentucky Bourbon Festival, and several of the company’s brands are named after famous local distillers.

Hendricks Family Distillery, LLC is located on the family elk farm outside of Eureka, Wisconsin, 20 mi west of Oshkosh. We are a small distillery which was designed & built, and owned and operated by our family. In 2011, our son Karl asked for a family meeting with his father - Jim, mother - Peggy and brother Zac. Karl has been working in the alcohol business for many years and has a passion for distillation. He thought with the talents between the four of us, we would be able to design, build and operate a distillery completely within our family. We took a vote and Hendricks Family Distillery was born! We were ready for business in spring of 2013. Our building, stills, filters & tanks were custom designed and built by the family. From start to finish, everything is done at our facility. The unique specialized fabrication of the equipment used in our processing results in a vodka that has no equal for purity and taste - it’s Pür Class, fermented from Wisconsin potatoes and naturally gluten free. Our goal is to be the #1 premium vodka in Wisconsin. When people try our vodka, the most common description is “smooth”. A lot of hard work and pride goes into each bottle. We were very honored to be awarded with several medals, including Best of Class and Best of Category in 2014. The family is hoping to explore new ventures in whiskey for 2015 and beyond. Raise your level to Pür Class! Notes:

hum has a striking crimson red color from fair trade hibiscus, a peppery kick from organic ginger, heady aromatics from cardamom and the intoxicating fragrance of kaffir lime. This unparalleled spirit ironically tastes like the boldest “red wine” you could ever imagine. Hum is technically a “liqueur,” however, it cannot be compared to traditional liqueurs with which most consumers are familiar. At a bold 70 proof, hum was created as a base spirit (like Rum, Tequila, Scotch). We consider hum to be in a category of its own as there is nothing else like it on the market in that it is strong enough to stand alone, but also has the versatility to blend with every other base spirit, wine, champagne and beer!

The Henry family has been growing superior corn, wheat and rye on Henry Farms in Dane, Wisconsin, for over 65 years. Now, we are proud to offer our first release of Wisconsin straight bourbon, J. Henry & Sons, made with high quality ingredients, all grown on our family farm. The key to this exceptional bourbon is the heirloom, red corn developed in the 1930s by the University of Wisconsin paired with Joe Henry’s quality production experience. Joe selected this corn for the robust flavor it imbues and the tradition it represents. Every bottle of J. Henry & Sons is made in small batches, slow-aged a minimum of five years, in large barrels in a rustic barn on the Henry farmstead. The uncontrolled temperature in this historic barn allows the wild Wisconsin weather swings to squeeze deliciously complex flavors out of the barrels and into the bourbon. The result is a Wisconsin craft bourbon with aromas of sweet corn, caramel pudding, toffee, creamy vanilla, dark cocoa, cinnamon, coconut shavings and Jamaican allspice. If you craft your cocktails, don’t you deserve a premium crafted bourbon for your creations? Reward yourself and celebrate the fruits of your labor with the fruits of ours, J. Henry & Sons, ask for it at your local liquor store. Tasting room opening soon! Joe and Liz Henry, owners and creators, Jack Henry, son and Molly Gursky, tasting room manager, will be pouring our first release of five years aged, J. Henry & Sons. We will also have some of our brandy and four year old (next year’s Batch Two) bourbon for the VIP event.

Chicago, IL wwwjeppsonsmalort.com

Jeppson’s Malört is Chicago’s local beskbrännvin — a style of bitter, wormwood-based, Swedish schnapps. First developed during medieval times for its supposed medicinal benefits, it’s traditionally associated with the farms of Skåne, in Sweden, where wormwood grows wild. In the early 1900s, it was the most ubiquitous drink in Sweden and accompanied the nearly 1 million Swedes who immigrated to the U.S. during that period. One of those immigrants was a man from Ystad, Skåne named Carl Jeppson. During Prohibition, Mr. Jeppson was into the business of producing legal “medicinal alcohol,” and sold his brand of besk bar-to-bar. After repeal, Malört was a staple of every Swedish bar on Clark St and by that time he had sold his recipe to Bielzoff Products Co., a Chicago distillery. George Brode, Bielzoff owner, helped push Jeppson’s Malört beyond its Swedish origins by introducing it to Chicago’s Polish population, who in turn introduced it to the rest of Chicago. Through the decades, Jeppson’s Malört has been thought of as a rite of passage and even a purported hangover cure. But we think it is more than that — Jeppson’s Malört is a drink that has helped define the Chicago bar experience. So, join us for a shot, or a cocktail! As George Brode used to say- “You may not like the first, but after the second shot, you’ll be ours forever!” Skål!

A small batch bourbon is made for the true connoisseur, every sip a testament to the work and love that has gone into each handcrafted bottle. Formed by the perfect blending of art and science, Knob Creek, Basil Hayden’s, Booker’s and Baker’s are each made from their own special, time-honored recipes - some dating back two centuries - providing distinctive aromas and tastes to tempt the most discriminating palate. As the name suggests, these ultra-premium, small batch bourbons are made in limited quantities. Aged from six to nine years in new, charred American white oak barrels, each is characteristic of pre-Prohibition whiskey, with strong, rich flavors and aromas. A small batch bourbon is a complex balance of taste and flavor. Notes:

Established in 2008, KOVAL produces organic whiskey, liqueurs and specialty spirits in Chicago’s first distillery since the mid-1800s. Founders Robert and Sonat Birnecker, chose to leave their academic careers to bring the distilling traditions of Robert’s Austrian family to America. In making this decision, they vowed to make organic spirits from scratch (avoiding the common industry practice of purchasing and bottling pre-made spirits) and to change the way people understand whiskey by creating a new, signature style - using only the “heart” cut of the distillate - affording a brighter, cleaner take on whiskey. The goal was just to make some good booze. Bartender Brenton Engel was cooking up his own moonshine and it gained such a level of cult popularity that he was inspired to start Letherbee — an independent artisan distillery. The signature concoction would be a distinctive yet versatile gin, made from a recipe developed by Brent and fine tuned based on feedback from colleagues through the Chicago bar scene. With absolutely no influence from outside investors or marketers, the team of bartenders at Letherbee now distills and produces a range of craft botanical spirits including the aforementioned flagship gin, seasonal variants released semi-annually, barrel-aged absinthe, fernet, and bësk – based on a recipe developed by cohort Robert Haynes. Across the board, Letherbee spirits are made for “wellness” — not only to enliven the discerning drinker but to stock the arsenal of the professional bartender.. 40

With a dream and no money we started Local Wine and Spirits the old fashioned way, begged, borrowed and stole till we could get our wings under us and in 2002 we released our first wine, Jigsaw pinot noir. With the help of a few friends we expanded our wine production to the Eastern Washington high desert. From there we went south to the volcanic soils and jagged mountains of Northern California. Then a few years later we began producing craft spirits with Tad Seestedt in the Willamette Valley, Oregon, USA. Our goal was simple: make fantastic wines, representative of place and vintage and make craft spirits in the ethos of 19th century American distilling. We respect the history and the lessons we’ve learned about where and what to grow in order to maximize quality. We choose sites where grape varieties over-perform, consistent with soil and climate and make delicious wines. Representing in our hearts a particular place, a particular time, our wines are made by real people without the aid of computers or robots. Our spirits are meticulously distilled in a gorgeous 300 gallon Cognac copper pot. Pot distilling leaves abundant silky texture in all of our spirits as well as robust aromatics in our gins and whiskeys. Taking a 19th century approach on how spirits were crafted in America gives us a unique position in the craft spirits world: revitalization of the golden era of spirits and cocktails. Local’s spirits represent the heart of American distilling where we’ve rediscovered the old and made it new again. Time honored recipes and techniques never go out of fashion.

The Medley Distilling Company traces its roots back to 1634 when John Medley immigrated to Maryland from England and established Medley’s Neck on the banks of the Potomac River. Included in the items brought over from England was the family still. Over 150 years later, John Medley VI joined the throngs of settlers traveling west, through the Cumberland Gap and settled in Washington County, Kentucky. The family still from England also accompanied him on his journey; leading to the founding of the Medley Distillery in 1812. In 1901, Medley purchased a Distillery known as the Daviess County Distillery. This company survived Prohibition by selling bonded whiskey to the American Medicinal Spirits Company. The distillery went through several ownership changes from 1978 through today. In 1978, the Abraham Schecter family of Chicago purchased Medley, then just ten years later, it was acquired by the Glenmore Distillery. The distillery again changed hands in 1991 when it was acquired by United Distillers and was in turn closed in 1992. It has changed ownership since 1991 but remains closed today. The Medley brands that were produced at the distillery have been sold to various distilling companies, including the Sazerac Company. Notes:

Michter’s Master Distiller, Willie Pratt has over 40 years of experience in the whiskey industry with in-depth knowledge ranging from selection of grain, to distillation, to barreling and maturation. Prior to joining Michter’s, America’s first whiskey company, Willie spent his career at Brown-Forman where he co-chaired a special committee formed to study cooperage – the art of barrel construction – and to identify optimal distillation and aging conditions for among other things, whiskey taste, aroma, color and yields. Willie is responsible for the distillation of Michter’s Whiskeys and their barreling, which is done at a lower proof than the industry standard despite the substantially increased cost. He also insists on storing Michter’s barrels in rare heat-cycled warehouses even though this results in the loss of nearly twice as much whiskey to evaporation as the “Angel’s Share.” Good naturedly referred to as “Dr. No” by our salespeople, Willie is known for refusing to release whiskey for bottling until he feels it is just right, even though the whiskey may already be significantly older than the age stated on the label. Willie Pratt is a proud native of Louisville, Kentucky where he, his wife Patsy, his children, grandchildren, and his great grandchildren live. Among Willie’s outside interests and hobbies are fishing in Florida, riding Harley motorcycles, and until recently when his parked plane was totalled on a runway, flying his Cherokee four-seater. We produce liquors hand crafted slow and pure. Born from the finest grains, harvested just up the hill from the distillery. It’s a spirit born of land and water that draws each of us curiously back to a different era. Made for you, not for for the masses. Mississippi River Distilling Company started in 2010 after two brothers decided to take a chance on a dream. What started as a crazy idea, grew into an opportunity to create something that these parts hadn’t seen since prohibition. A chance to create truly home grown, handmade spirits. If you appreciate the fine quality that only comes from the freshest ingredients. If you believe in honest hard work and the integrity of the family farm. If you know that a commitment to quality takes some extra time. If you’re looking to experience pleasure far beyond taste in the bottom of your glass. You’ve come to the right place. We’re a family owned and operated company. We believe in stewardship of our land and water. We know that the family farm is an important part of our community and our culture here. And we believe in quality above all else. We hope you’ll appreciate the hard work that each hand signed bottle represents. We hope you’ll share some with your friends, then come to LeClaire and say hello so we can show you what makes us so proud about the wonderful place we call home.

Founded in 1996, NHBC has grown from a scrappy two-man start-up to a thriving regional craft brewery and artisan distillery. From 2005-2010, all of our spirits were distilled at our brewpub in Holland, Michigan. In response to our considerable growth, we opened the new production distillery in February of 2011. The new facility will include our “new” 600-gallon prohibition-era pot still, as well as a bonded maturation room of more than 6500 square feet. In addition to a small amount of distributed spirits, those made here will be special small batches that rarely see their way outside of the friendly confines of our pub. New Holland Artisan Spirits is dedicated to discovering artful nuances in the distilling process while delivering unique and interesting spirits in their most tasteful form. We are proud to share our craft with you. Hope you enjoy it as much as we do. Notes:

Like the micro breweries and small wineries that have come before, a small group of artisanal distillers are redefining the spirit world by introducing new and amazing products. As the first artisanal distillery in the Chicago area (and in Illinois,) we are producing unique spirits that provide modern connoisseurs with an unparalleled taste experience. We are a very small operation - just the two of us and one part-time employee, along with our still, Ethel. Our small size allows us to bring a discriminating personal touch and hands-on craftsmanship to everything we make. We challenge the status quo by providing our discerning customers world-class spirits, produced locally. Distilling spirits is far more than a scientific process - it is an art form. Derek, our master distiller, starts with the equivalent of a blank canvas. He then selects from a palette of fruits and exotic botanicals to create one-of-a kind spirits that reflect the unique flavors of the ingredients and express his personal passion and energy. Derek produces our spirits in small, carefully hand-crafted batches. Though each product has its own distinct personality and character, all North Shore spirits are created with the same purpose in mind - to create an elegant and superior spirit that is not only pleasant and enjoyable, but also provides a level of satisfaction that compares to drinking an incredible wine or the finest scotch. In 2002, we began making our vodka in Alameda out of an old World War II aircraft hangar – a real piece of California history. We make Hangar 1 one batch at a time, using rigorous distillation methods. What comes off the still is bottled directly, so there is no place to cut corners. It all begins with the best ingredients. Our Head Distiller works with specialist growers to source fruit at the peak of ripeness. The result is a spirit with authentic flavor, that is smooth yet endlessly complex Stranahan’s Colorado Whiskey: Typically when a distiller bottles his whiskey, several hundred or even several thousand barrels are combined for a staunchly uniform taste. And the way we see it, we want you to be able to trust what’s in the bottle, without sacrificing character. So each week we produce about 5 minutes worth of production made at some of the mass producing distilleries. We select ten to twenty of our choicest barrels, and combine them for a small batch with a reliable, yet distinctive flavor unique to Stranahan’s Colorado Whiskey. Tin Cup: Tin Cup has a high rye mash bill so it’s got great spiced and peppered notes, but it’s balanced with the sweeter notes from bourbon. It’s made using Midwestern grains, new American oak barrels, and cut with Rocky Mountain water. The name is a nod to Colorado’s first whiskey drinker, the miners that came through looking for gold and drinking out of tin cups. 51

Dave Schmier Founder

The U.S. Government Standards require “rye whiskey” to be made from a mash of at least 51% rye grain. For Redemption Rye we use a mash of 95% premium rye grain for a spicy and bold flavor and we use premium rye, which costs more but is well worth it, because when you use good ingredients you get good rye whiskey. The U.S. Government Standards also require that rye whiskey be aged in “new charred oak barrels” which means that new oak barrels are burned on the inside, and it’s from the charred wood and the expansion and contraction of the whiskey in and through the wood of the barrel through the seasons that whiskey gets its amber color and the flavor is smoothed. The standards do not specify a minimum time the rye whiskey needs to stay in the barrel, but once it has been in the barrel for 2 years it earns the designation of “straight” rye whiskey. Redemption Rye is aged for over 2 years. We bottle in small batches which allows us to leave the whiskey in the barrels longer for the most flavor and color. We empty the barrels and filter for particles, cut it down to 92 proof and bottle it immediately so that the most flavor from the barrel makes it into the bottle. We then mark each bottle with the batch and bottle number by hand.

We appreciate the grain-to-glass processes and singleminded whiskey focus. Don’t miss their 2nd Chance Wheat Whiskey and West of Kentucky Bourbon either.” Everything released by Sonoma County Distilling Company is created in-house from grain to glass. Water from Lake Sonoma with the addition of hand-milled grains forms the base of their whiskey. In a self-built, direct-fired mash tun, this is left to ferment for 3 to 4 days then hand separated between the solids and liquids. The solids are donated to a local farm, where they’re used to feed cows, sheep, and lambs. The liquid wash is transferred to a 470 litre copper alembic pot still and distilled twice over an open flame. Each distillation takes between 12 to 14 hours from start to finish and due to the lack of rectifying plates, the resulting distillate is far more flavourful, but lower in proof and yield size.

We always knew we could make pretty great vodka, but the vodka we wanted to make, we couldn’t afford to sell for $20 a bottle. When Grey Goose and Belvedere started selling a ton of vodka at $30 a bottle, we thought, let’s give it a try. This was 2001. We were two tiny companies, hand-making exquisite brandies and liqueurs in California. Connoisseurs think these brandies are absolutely fabulous, for good reasons: in California, we had access to wonderful fruit and grapes, as well as sophisticated winemaking equipment. Best of all we were free to innovate but we also had tiny old-fashioned pot stills and did our work informed by centuries of European distillation methods. We have a lot of experience making really good products out of genuine ingredients. Jorg Rupf, who spent months developing the actual vodkas, is one of the world’s most inventive distillers. But there was another issue - how to exist in the vodka market. A pot still vodka from real fruit costs a lot to make, which meant we wouldn’t be able to run advertisements in magazines or cut deals to get displays in stores. But, we thought, people know a lot more than they used to about alcohol, and they are ready for something real. Notes:

The hangar is a 5000 square foot production facility with an on-site tasting room and store front shop. The fermentation, distilling, aging, blending, bottling, labeling, and packaging is completed entirely on-site, forging a truly hand crafted spirit. By distilling each spirit in small batches as opposed to larger continuous operations, the distillers are able to focus on quality during every step of the process.

Why Rum? As a Pilot, Toby Beall spent quite a bit of time in the Caribbean often sampling the local fare including the rums of each island. He was fascinated by the spirits full flavor and the lifestyle that surrounds it. Up to this point he had only been exposed to the few selections available behind every bar in the US. With a background in home brewing, Toby and his wife Jill spent five years learning everything they could about America’s first distilled spirit, rum. In early 2012, Toby was joined by his brother Jamey and Tailwinds Distilling Company began operation in June of that year. With both Jamey and Toby being commercial pilots, there wasn’t much debate over the name Tailwinds. Within the first year Tailwinds’ Taildragger Rum was already bringing home medals in international competitions. Yes… Real rum made in Illinois! When Prohibition outlawed the manufacture and sale of alcoholic beverages in 1920, many enterprising residents of a small town in Iowa chose to become outlaws - producing a high caliber and much sought-after whiskey known as Templeton Rye. Based on its extremely smooth finish, the American rye whiskey earned the nickname of “The Good Stuff’ and quickly brought a certain degree of fame to the doorsteps of Templeton. Over the course of its storied history, Templeton Rye became Al Capone’s whiskey of choice, quickly finding its way to the center of his bootlegging empire. Hundreds of kegs per month were supplied to Capone’s gang who in turn filled the demand of speakeasies throughout Chicago, New York, and as far west as San Francisco. Although most American whiskeys ceased production after prohibition ended, Templeton Rye continued to be produced illegally in small quantities for loyal patrons. More than eighty-five years later, the infamous small batch rye whiskey finally returned - made available legally for the first time ever in 2006.

Tito’s Handmade Vodka is produced in Austin at Texas’ first and oldest legal distillery. It’s made in small batches in an old fashioned pot still by Tito Beveridge (actual name,) a 46 year old Geologist, and distilled six times. Tito’s Handmade Vodka is designed to be savored by spirit connoisseurs and everyday drinkers alike. It is microdistilled in an old-fashioned pot still, just like fine single malt scotches and high-end French cognacs. This time-honored method of distillation requires more skill and effort than modern column stills, but it’s well worth it. Our handcrafted technique offers more control over the distillation process, resulting in a spectacularly clean product of incomparable excellence. Only the heart of the run, “the nectar” is taken, leaving behind residual higher and lower alcohols. The vodka is cleansed of phenols, esters, congeners and organic acids by filtering it through the finest activated carbon available.

Manuela Zaretti-Carling moved from Italy with her mother who carried her many generation Limoncello recipe to the new world. As luck would have it, the Carlings lived in Ventura California where the bulk of the much sought-after Eureka and Lisbon Lemons are grown (80% of the state’s production). Great Limoncello is made by hand, utilizing only the skins of the lemon, rather than the juice (most distiller’s first mistake) where the oils from the skin are what gives Limoncello it’s unique freshness and exotic flavors. The secret to this glorious liqueur is that only the top layer of the peel is used, discarding the white “pith” that separates the fruit from the skin (Manuela’s mother insists that this is the reason that most Italian Limoncellos are so bitter, because they machine harvest the lemons using all the piths). So in 2007, the Ventura Limoncello Company was born, utilizing Manuela’s mother’s family recipe and the fact that those wonderful Eureka and Lisbon Lemons were a year round crop in Ventura. Manuela and her mother Rossana do all the lemon peeling themselves, and their Limoncello has taken Southern California by storm.

Vikre Distillery is a small craft distillery located in Duluth, Minnesota, adjacent to the aerial lift bridge that raises to allow ships in and out of the world’s farthest-inland seaport. Generations ago, our Norwegian ancestors discovered a familiar beauty in the Northwoods of Minnesota. In its pristine wildness they felt at home. Vikre (veek-ruh), our family name, means “the people of the bay,” once in Norway, now on the narrow Western tip of Lake Superior. We forage the Northwoods of Minnesota for wild botanicals; we use local grains, handcrafted oak barrels, and the clean, cold water of Lake Superior. Distilling the essence of this great watershed into the finest spirits possible is our passion. Doing so authentically and creatively, from scratch, is our vocation. Products We’re Sampling: Boreal Juniper Gin: A spicy interpretation of the traditional London dry. Strong juniper notes backed up by coriander, citrus, and rhubarb grown in our back yard. Boreal Spruce Gin: The Christmas of gins. Infused with springforaged spruce buds and a variety of piney herbs like lavender, rosemary, and sage, in addition to traditional gin botanicals. Boreal Cedar Gin: Our most innovative gin. A tea of Hawk Ridge sumac, infused with black currants, grapefruit peel, ginger and cinnamon, finished with toasted red cedar wood. Øvrevann Aquavit: Aquavit, meaning “water of life,” is the quintessential Scandinavian spirit, flavored with dill or caraway. Ours is infused with caraway, and rounded out with the spices of northern baking.

Glowing with butterscotch and soft oak, Calumet’s harmonious perfection of wood and caramel is admirably balanced with complex flavors of light brown sugar and soft white pepper.

The Ripy brothers built a distillery near Lawrenceburg in 1869 and had consolidated the current facility by 1905 and resumed distilling after Prohibition. The Ripy’s were bought out in 1952 by the Gould Brothers. In turn the distillery was bought by Pernod Ricard in 1980. On April 8, 2009, the Campari Group announced the acquisition of the brand and of the distillery from Pernod Ricard. Distillery executive Thomas McCarthy took some warehouse samples on a wild turkey hunting trip in 1940. The next year his friends asked him for “some of that wild turkey whiskey,” and a brand was born. The 80 proof version was introduced in 1974. Wild Turkey Kentucky Spirit is a single barrel version at 101 proof, the 10 year old named for Master Distiller Jimmy “The Muscle” Russell is 90 proof, and the Rare Breed is a blend of 6, 8, and 12-year-old stocks at 108.4 barrel proof. One reviewer from Whisky Magazine, proclaimed that Wild Turkey 101 is, “A Clint Eastwood of whiskeys.” It also earned an “Editor’s Choice” award from the same publication. The Wild Turkey brand has also been extended to a 101 proof rye whiskey, made from a mash of roughly 65% rye, 23% corn and 12% barley, and to a honey liqueur.

When husband-and-wife team Melkon Khosrovian and Litty Mathew began making spirits in 2004, they used local, hand-processed produce. Today, Greenbar Collective produces Art in the Age ROOT, SNAP, RHUBARB, and SAGE — all made by hand with real ingredients Notes:

The idea of brandy production is not new to Wollersheim Winery. In fact, in the 1800s, both wine and brandy were made at the property that today is Wollersheim Winery. It was used to fortify the wine which allowed it to travel to customers as far away as Maine. Our founder, Bob Wollersheim, and winemaker Philippe had talked about making a brandy for the past 20 years. However, after Prohibition was repealed in 1933, Wisconsin law only allowed wineries to make wine, but they couldn’t distill spirits. But, in July 2009, changes made to Wisconsin legislation allowed commercial production of brandy at Wisconsin wineries, and Bob and Philippe’s brandy aspiration could finally become a reality. Philippe fired up our copper pot still in December 2010 and began begin boiling 2,500 gallons of estate-grown and fermented wine to end up with six barrels of Wollersheim’s first batch of COQUARD brandy. Coquard is an All-Wisconsin brandy. Made from Wisconsin white grape wine, distilled in our copper pot still and aged 2 years in Wisconsin oak barrels giving it an amber color. Our brandy has a delicate and floral aroma from the grapes. Perfect for sipping. It was first released in April 2013.

Yahara Bay produces 20 different spirits, all hand-crafted in small batches using the best local fruits, grains, and herbs from their region. Each small batch is distilled in a 90 gallon copper pot still, customized with a vapor infuser, allowing their spirits to impart subtle, yet distinct flavors to certain spirits without the addition of artificial flavorings. From whiskeys to bourbon, to rums and vodka, and even down to their liqueurs, Yahara Bay feels the spirit of distilling is a piece of art as much as it is a science. They take pride in their craft and invite you to taste the “Spirit of Madison” for yourself-Worldclass taste with Local Roots. Cheers!
