The secret to her long-term survival in such a highly competitive business is simple— she does not compete. Uli’s is a genuine boutique, a place filled with things you will find nowhere else; things that are edgy but not trendy; classical but not dated; well-made, quality clothing, both formal and informal, without sticker shock prices.
What really makes this place unique is that Uli is on a mission to dress people in such a way that they look and feel better than they would have believed possible. “Women’s bodies are not all standard shapes and sizes,” she points out, “and I myself have always been really hard to dress. Embracing New Frontiers of Dentistry
By Anya SebastianThe practice of dentistry has remained largely unchanged over the years – until now. “It’s been more or less taken for granted that dentists deal with symptoms, rather than the cause of a problem,” says Dr. Devin Giron, the owner of Vida Dental Studio, “but we prefer to focus on the cause. Recent technological advances mean we can now do things we could never have dreamed of doing before.”
A new, cutting-edge addition to the impressive array of modern appliances already in use in the practice is a radically different kind of laser. This ground-breaking invention is able to identify and destroy bacteria and pathogens that can cause a multitude of systemic issues, from heart attacks to Alzheimer’s.
“Every disease process in the human body is linked to inflammation,” explains Dr. Galen Detrik, Dr Giron’s partner in the practice, “and bacteria causes inflammation. Most people don’t realize that the mouth is full of bacteria, and gum disease is the most common infection in the United States—more widespread than cancer, heart disease and diabetes.” Since the mouth is the gateway to the rest of the body, bacteria ends up in the gut, and from there it can multiply, and travel literally anywhere.
The new breed of laser involves a minimally invasive procedure that can remove bacteria in gums and teeth without causing any harm to healthy cells. It can even promote healing and regeneration of damaged and receding tissues and bone, something that has never before been possible. And all without cutting, stitching, drilling, or angst. A full mouth treatment requires two sessions, approximately 1½ hours each, spaced about ten days apart. The area is numbed, so the procedure is painless. The laser also comes with a variety of different attachments, which make it possible to deal with many other issues as well, from migraines and psoriasis to neuropathy, hematomas, and skin tags.
Before they can take delivery of this new kind of laser, dentists are required to complete a rigorous 8-day training course, held at the Institute for Advanced Laser Dentistry in California. Both Dr. Giron and Dr. Detrik are certified practitioners, and Vida’s hygienists have also gone through special training in order to do follow-up care. “This is a really exciting development, with enormous potential,” says Dr. Detrik, “especially as it can help everyone, no matter how advanced their condition may be.”

This not only cuts down on dental visits, but also bypasses the need to wear a temporary for about a month. “It’s a lifesaver for visitors, too, if they happen to break a tooth while away from home,” points out Dr. Giron.

Our showroom offers such an abundance of fabrics, patterns, colors and materials, that people coming here for the first time often don’t know where to start. It really helps if they can show us pictures of the project they have in mind. If we can see the space and what they’re working on, as well as get an idea of what they like—traditional, contemporary, minimalist…that obviously makes it easier to go in the right direction.
Customers are welcome to take samples to try out at home, before making a final decision. When they find the perfect fabric, their eyes light up and you can hear it in their voice. That’s the starting point and we can build from there.
There are a number of things that need to be taken into account when choosing the right material. How and where is it to be used? Will it be indoors or outdoors? Does it need to be kid-friendly and easy to clean? To avoid making a mistake, it’s important to know that the fabric you love is also the right one for what you have in mind.
When it comes to windows, people have a tendency to think they should all look the same from the outside, but each room should be treated according to its individual use. Wooden blinds, or shutters, may be best for an office, whereas a media room might benefit from having heavy velvet drapes to absorb sound and give it a cozy feel. If it’s a room that gets a lot of sun and is also great for watching sunsets, you may want solar shades to cut down on glare and protect from sun damage, without compromising the view.

WHATEVER THE WEATHER… SANTA FE AWNING

Those of us who live here know only too well that we live in a climate that is unique to New Mexico. We get about 300 days of sunshine a year, regularly accompanied by winds that can reach speeds of 30mph to 50mph. These conditions can, and do, seriously impact the materials used to make awnings and screens. As a well-established, family-owned business—Santa Fe Awning was started by my father in 1994 and celebrates its 30th anniversary this year—it was our familiarity with the local weather that first inspired us to create products capable of withstanding the regular onslaught of both sun and wind.
At the same time, it was important to remember the stunning sunsets that we are justifiably famous for. A traditional awning will not block the intense, setting sun once it sinks below the valance, so we needed screens that would block the sun, but not the view, using materials that would not fade, burn up, or be carried away by the wind.
Our wind and solar patio screens fulfill all those requirements, and, since most New Mexico homes are built with west facing views to take advantage of those amazing sunsets, they are now one of our most popular products, Screens also act as a heat shield, reducing temperatures by as much as 15 degrees, and making it much more comfortable to eat or entertain outdoors.
Interior screens have other uses as well; they can create dark rooms for sleeping, protect furniture and artworks from fading
and sun damage, and can keep interiors cooler in the summer, reducing the amount of time needed to run air conditioning.
All our products are custom-made to order and there are many different options to choose from, which is why every project— residential or commercial—starts out with a consultation. Fabrics come with a 10 to 15-year warranty and most components are American-made, with the longest lifespan possible. HOW IMPORTANT IS SLEEP? HOW MUCH DO I NEED?
Sleeping time periods will vary according to the individual, usually between 6 to 8 hours depending on age and health. This third of your day spent sleeping will influence the following two thirds of your next day.
If you are tossing and turning at night, it’s your body telling your brain “I’m not comfortable!” This restlessness can cut into your ability to enter and remain in a deep sleep. Here is where your body and mind have the ability to recuperate, repair and renew itself which is so critical for health and wellbeing.
Some people find that while on vacation they are sleeping much better than at home. While the relaxation of time away may play a factor, consider this, if it’s been over a decade since your last new bed, then it may be time to start shopping for a new one. Things to consider when starting the shopping journey and testing new beds is to come prepared to spend time in the store. Comfortable clothes and slip-on shoes are a must.
The key with testing beds is to actually listen to your body. It needs the proper balance between support and comfort. You also need to test the bed in your usual sleeping position, i.e. back, side, stomach. Nothing can really replace the actual testing of a mattress that you are considering sleeping on every night
for years. Once the field is narrowed down to a few chosen mattresses, really spend time on them.
People rely on reviews and opinions of others, but I feel when it comes to selecting a bed, you should rely more heavily on your own personal experience; height, weight, age, health issues, sleeping positions and comfort preferences all play a role in what feels and supports you best. A CONVERSATION WITH GRAMMY AWARD WINNER Chris Botti
By Henry ValdezIn 1984, Frank Sinatra played a two-week set at the Universal Amphitheater in Los Angeles to promote his new album “L.A. Is My Lady.” Supporting the iconic entertainer was Chris Botti, a twenty-one-yearold trumpet player who dropped out of college to dedicate his life to being a studio and touring musician. Chris was simply trying to get paid to play his trumpet at the time. Little did he know, he’d spend a lifetime learning from the best musicians in the business, ultimately being one himself.
“I remember Sinatra being able to walk out and make the entire audience feel like they were in the front row,” says Chris. “The old-school band leaders, like Sinatra, value great musicianship and demand the best [from their band]. That old-school thing I got from him is kind of gone, but my band and I try to keep it going.”
Chris plays the trumpet with a distinctive smooth, and emotive style, drawing comparisons to jazz legends such as Miles Davis and Chet Baker. His devotion to his craft sharpened with a life on the road playing worldwide to audiences of all sizes. In an era of massive pop stadium tours and backing tracks, it can feel like the true musicians of the past—the ones who take pride in practice, touring and performing have vanished with history.
“I was only 28 when I first started playing with Paul Simon. I was able to see a true musician do their best work. Subsequently, I worked with Sting for 25 years and saw him do his thing. Learning the way those musicians were able to tug on the emotions of the audience in a different way than jazz musicians has helped make our band super unique.”
Chris’s life has changed tremendously since that first gig with Sinatra. He’s now a Grammy-award-winning musician who has collaborated with renowned global superstars, including Sting, Paul Simon, Barbara Streisand, Lady Gaga, Tony Bennett, Aretha Franklin, Bette Midler, Joni Mitchell, among others. He’s topped the jazz charts with numerous Gold and Platinum records. But at his core, Chris is a true musician and showman who reflects the likes of the greats.
Witnessing Chris and his band’s performance is a rare treat, offering a glimpse of a unique blend of musical talent that is becoming increasingly scarce.

A MEMOIR THAT TELLS IT ALL
Her favorite numbers are four and 24; her favorite color, dusty rose; her favorite ice cream, Brazilian coffee; her favorite flower, roses; among her favorite gifts, a motor home. This memoir is 970 pages, and it took her over 10 years to write. Barbra Streisand, now 81, doesn’t do things halfway. She was a diligent student growing up in Brooklyn, then made it onto Broadway with Funny Girl, but it was in Los Angeles that she became an iconic actress, director, producer, writer, and singer.
She had her manager write creative control into her contracts whenever he could. There are the actors she loved working with (Robert Redford, Nick Nolte) and those she did not (Walter Matthau, Mandy Patinkin). The character-driven scenes she fought to keep in The Way We Were, and how she pursued Pat Conroy to collaborate with her on The Prince of Tides, the two of them eventually getting so chummy that he taught her the Carolina shag, with her recalling, “Boy, he could really fling that tush around!” Acting with Kris Kristofferson on A Star is Born was a high point: “Kris was not formally trained as an actor, but he’s smart and sensitive, and he could say his lines as if he had just thought them up…and sometimes he had. He was free enough to improvise, and that made him a wonderful partner for me.” Working with that film’s director Frank Pierson was problematic, prompting her to tell him, “I know we’ve had our disagreements, and I’m not your favorite person. But please, for the sake of the film, try to find something about me that you like. Otherwise it’s going to hurt the movie.”
Streisand’s book editor asked her to leave some blood on the page, and she complied (see: Jon Peters, Mike Wallace). Throughout this unput-downable chronicle, she’s chatty, outspoken, ironic, insightful, and determined. What more could you want? When she gets involved with husband James Brolin, there’s even a trip to the Southwest—the two of them together in a pickup truck, visiting some of his favorite Native American sites.

Nidia Galindo of SassellaThe lemon drop cocktail was created by Norman Jay Hobday at his bar, Henry Africa’s, sometime during the 1970’s. Norman originally served the drink in a cocktail glass. The drink got its name from lemon drop candies that have a similar sweet and sour flavor.
The Limoncello Drop is my favorite Spring cocktail. Our version lends an Italian twist to this classic drink using Vulcanica Italian vodka and limoncello liquors giving it a very balanced and unique flavor.
Limoncelloto is lemon liqueur, produced mainly in South Italy. Limoncello is made from lemon peels and usually has a slightly cloudy appearance due to the presence in small drops essential oil, suspended in the drink. According to one of the legends, in 1900 Maria Antonia Farache, who had a beautiful garden with lemon and orange trees on the island of Capri, invented this drink.

Celebrating the Chef Who Did it His Way

His accolades include multiple AAA Four Diamond Awards: DiRoNa (Distinguished Restaurants of North America) Awards; recognition by Food & Wine magazine as one of the ‘top ten chefs in America’; and a James Beard nomination for ‘Best Chef in the Southwest’.
Oddly enough, he did not set out to become a chef. Joseph’s parents were artists and that was the path he initially intended to follow. But food was also a passion, and they loved to entertain, so food and art were major influences, growing up. That led to a toss-up between art school and culinary school, and food finally won.
As it turned out it was the combination of those two things that inspired him to become a chef. “As soon as I started working in restaurants I was hooked,” he recalls. “Not only did everything come naturally to me, but I felt inspired by the potential of food as a means of creative expression. All the elements were there for making culinary art—the colors, textures, eye appeal, esthetics...in addition to the palette of flavors, and I knew I had found my calling.”
Dishes have to look good, as well as taste good—flavor, texture and color are all equally important. But the distinguishing factor in Joseph’s culinary creations is how these elements are combined. Take his Vegetable
Enchilada, a mouthwatering combination of local mushrooms, corn, red chile, acorn squash, cotija cheese crumble, spinach purée and green rice. Even the most dedicated carnivore would find that hard to resist, and it was once featured on the front cover of the Centennial Cookbook put out by the New Mexico Department of Tourism.
“I have to think of dishes with the broadest appeal,” Joseph explains. “It’s like writing a song with the potential of becoming a hit.” Many of his original creations have succeeded in gaining that kind of popularity, and like the Vegetable Enchilada, are now signature dishes. Another one is his interpretation of Pad Thai, incorporating the basic elements of this classic dish—salty, sweet, sour, and potentially spicy— and re-inventing them in his own unique way. Joseph’s Duck Confit Pad Thai consists of rice noodles, with sweet hoisin sauce, sour tamarind paste, salty peanuts, purple cabbage, and duck skin chicharrones to add both color and an irresistible crunch.
“People often come to the restaurant for one particular dish,” says Joseph, “but the menu overall is constantly changing.” Ingredients, locally sourced when possible, reflect the seasons, the weather, the general mood of the day, and even the mood of the chef himself.
One thing featured consistently on the menu is duck in all different forms, from the Duck Pad Thai to his famous Duck Fat Fries and even Duck Fat Ice Cream. “Duck fat is so much more flavorful than butter,” he explains. “It’s bold, but not too dominant.” The fries, the first to appear on a restaurant menu, were introduced in 1997, and quickly became one of Joseph’s signature favorites.
His creativity and the passion for his art remain as vibrant as when he started out, and his collection of the most successful original recipes keeps on growing. Word on the street is that maybe one day we can look forward to seeing them reproduced in a Joseph Wrede cookbook and get to experience for ourselves the fun of doing things his way.

Dr. Field Goods Not Your Average Butcher Shop
Anya Sebastian • Photos by Douglas MerriamOnce upon a time high streets were lined with specialty food shops, often family owned, devoted to selling products about which they had expert knowledge. There were bakers, fishmongers, greengrocers, butchers...dealing directly with fisheries, farms, or ranches, and all of them flourished until corporations and big box stores came along.
Chef Josh Gerwin wanted to revive that tradition when he opened a butcher shop in Santa Fe, alongside his restaurant, Dr. Field Goods, several years ago. Both restaurant and butcher shop finally outgrew their reputation as the city’s best kept secret, and recently moved to a more spacious, mainstream location inside the DeVargas mall.
Josh has always been dedicated to farm-to-table practices, and his website lists the local family farms and ranches that are his main providers. “We know who grows our produce, who raises the livestock and where our ingredients come from,” he says, “because it tastes better and it’s better for our environment and the economy.”
Everything is pasture raised, hormone-free and, as much as possible, organic, and if the shop doesn’t have something, special orders can often be delivered before the end of the day. That includes fish, which makes up a small section of the shop’s offerings and usually reflects what is on the restaurant menu.
Many products are made in-house, including a selection of sausages and a range of charcuterie, from corned beef to mortadella and pastrami. All are freshly made, not frozen, and prices are very competitive, because, as Josh explains, “We aim to provide high quality products for an affordable price.”
An innovative addition to the butcher shop itself is a cozy cocktail lounge, with a full bar. Open every day from 3:00 to 9:00pm it has comfortable seating and is a perfect place to meet friends for a drink before dinner, or to relax over a cheese plate, or a selection of charcuterie.
But wait...there’s more! There is also a private dining room, capable of seating up to 72 people, that can be booked for private parties or special events. So whether you want to shop, eat, drink, or party, check out the newest, coolest venue in town, Dr. Field Goods in Devargas mall.

An Exhilarating Adventure into a Magical Kingdom
The Kingdom of Bhutan is a small, land-locked country in the foothills of the Himalayas that remained completely isolated from the outside world for centuries. It has only been open to foreigners since 1974, and most people are still unaware of the many attractions of this fascinating country.
Although it is only about half the size of the state of Indiana, Bhutan has a pristine environment with exceptional biodiversity, ranging from lush green valleys fed by bountiful rivers, to sprawling forests, and one of the most rugged mountain ranges in the world, with hundreds of unnamed, unmapped, and unclimbed peaks. It also has a unique history and culture, with impressive monuments, overpowering fortresses, venerated monasteries, and age-old spiritual practices.
The largest city in Bhutan is Thimphu, the capital. On a hillside in the outskirts stands a giant golden Buddha, 169 ft. high, with 125,000 smaller Buddhas hidden inside it – a truly amazing
sight. On the northern edge of the city is Bhutan’s largest and most impressive building, the Tashichho Dzong. Originally built as a Buddhist monastery and fortress in 1216, it was remodeled and extended in 1641 to serve as offices for the king, including a glorious throne room. The huge, majestic building is also the seat of government, in addition to being the headquarters of the Bhutan clergy. It also hosts the Thimpu Tshechu, the most celebrated 3-day Buddhist festival held each year in the fall.
The city is rich in tradition, with an abundance of folk heritage customs, textiles, and handcrafted masks. The traditional arts are kept alive by the city’s painting school, that instructs students in the art of painting Thangkas, (sacred Buddhist religious scrolls) and The Traditional Medicine Institute still prepares medicines in accordance with ancient practices.
An important spiritual place for tourists and locals alike is Punakha, a 600 year-old, six-storied structure that houses Bhutan’s most sacred relics. Also known as The Palace of Great Happiness, it is
the biggest and second oldest Dzong (temple) in the country. Built in the place where the Mo Chhu (female) and Pho Chhu (male) rivers meet, you have to cross a bridge to get to it, and traveling over the Do Chula Pass along the way you get to experience a 360-degree, beautiful panoramic view of the Himalayas.
Adventure Runs in the Family
The most famous Buddhist monastery in Bhutan is the Taktsang monastery, perched on the side of a vertical cliff at approximately 9,800 ft. Also known as The Tiger’s Nest, it is a famous pilgrimage site for locals and tourists alike and a perfect journey for hikers. It takes about an hour to get up to a tea house with close views of the monastery, but the hike leading to the glorious Taktsang monastery itself is more challenging.
Not far from the center of Bhutan is Gangtey, one of the most beautiful destinations in the country. Extremely diverse, this sacred and protected valley area is home to some of the most exotic and rare wildlife species on the planet. It is also the chosen home of the rare and graceful black necked cranes that migrate from the Tibetan plateau, arriving in late October and going back to Tibet in the spring.
Added to these delights is the fact that Bhutan is the only country to measure Gross National Happiness, which it values more highly than Gross National Product. So if you are looking for a magical adventure, a mystical and memorable departure from reality, Bhutan has it all, in abundance.
