LETTER PUBLISHER

Every issue, I usually discuss what this beautiful city and state have to offer for the upcoming season. There are plenty of wonderful events and great activities to take part in. But this time, I would like to talk about how important the holidays are for family, friends, and being thankful for what each of us has. Never has there been a time in our lives when healing, forgiving, and putting aside our differences have been more important.

I have been fortunate enough to publish Fine Lifestyles Magazine for the past 10 years. During that time, I have met many people from whom I have learned a great deal, developed some close, lasting friendships, and helped business owners grow their businesses.

Over the years, I have lost employees and clients who have succumbed to their illnesses. Each week and year go by without us knowing if it will be our last, so we need to savor each day and every moment. As we go through the holiday season, visiting with our family and friends, let’s enjoy and cherish each of them.

I want to thank the sponsors featured in this issue. On the cover is Santa Fe Party Rentals. As the holidays approach, they have everything you need to create a beautiful holiday event!

Thank you to all the great chefs who contributed to our International Holiday Spin feature: Chef Pontiggia, Chef Olea, Chef Wrede, Chef Angel, Chef Jose Rodriguez, his brother Chef Eduardo Rodriguez, Chef Ziggy, and Chef Alex Gayton! Also, a special thank you to Barker Realty for their always informative Market Real Estate update, and to All World Travel for their wonderful review of Granada, Spain. Thank you, Lisa Barker, for her great interior design editorials.

A special thanks to those who have been with me from the very beginning and have become the best friends anyone could ask for: James & Edna (James Kallas Jewelers), Barbara Lenihan and staff (Pandora’s), Lupe and Rebecca (Linson’s Design Source), Sara Maul (Santa Fe Awning), Edmund and Melissa Catanach (Midtown Bistro), Suzanna & Lawrence Becerra (Sassella & Sazon), Freddie Amini (Cowboys & Indians), and Lisa Barker (The Collective).

And finally, I want to wish everyone a safe and happy holiday season and a prosperous 2025!

VIDA DENTAL STUDIO

Making Waves in the World of Cosmetic Dentistry

Cosmetic dentistry, for better or worse, is often associated with superficiality. But Dr. Galen Detrik, co-owner of VIDA Dental Studio, offers a different perspective. “It’s about peace of mind. It may sound strange, but people seek out this kind of dentistry so they can stop thinking about their teeth. When your smile is healthy and vibrant, you hardly give it a second thought. Conversely, when it’s not something you’re proud of, you grow increasingly aware of your smile and how it’s perceived. I think about teeth all day long, so you don’t have to!”

Any DDS or DMD can claim the title of cosmetic dentist, and presumably do great work. However, it turns out that there’s far more to it than may appear. “The average dentist will go an entire career without ever completing a cosmetic case,” explains Dr. Detrik. “How minimally we prepare your teeth, the lifelike materials we choose, even our technologies and protocols that ensure your new smile looks imperceptible from the real thing… this is a mastery that demands immense study, training and dedication.”

Dr. Devin Giron, founder of VIDA agrees. “Patients come to our office almost every day, asking if it’s possible to give them a better smile without it looking Hollywood-white, or fake like a bunch of piano keys,” he says, “and the answer is, absolutely! It’s all about staying on the cutting-edge of both art and science in modern dentistry.”

PORCELAIN VENEER

“We do more cosmetic procedures a year than anyone else in the state,” adds Dr. Giron, “each one intentionally designed. It starts with a relationship, getting to know what the patient likes and wants to improve. From that consult, we take digital impressions and engineer a custom blueprint, the dental equivalent of an architect designing a custom home.”

Something else that sets VIDA apart is their focus on health and function, together with form and beauty. “We want more than just pretty teeth,” explains Dr. Detrik. “Pretty can fail if the foundation isn’t solid. We want your investment to last, so we look at the big picture; what caused the problems we’re seeing? What do your teeth tell us about your overall health? Do you grind, clench or have airway issues? We connect the dots so you can eat, drink, laugh and smile with confidence, for decades to come.”

Their holistic approach has attracted a great deal of national attention, as well. Dr. Detrik has been published multiple times in peer-reviewed journals for his techniques, including the cover of The Journal of Cosmetic Dentistry, the most prestigious dental journal in the US. He also lectures extensively on the subject, from the stage of the American Academy of Cosmetic Dentistry, to the famed Center for Esthetic Excellence in Chicago.

“I had a bunch of crowns and old work that didn’t match and had begun to have severe pain. The problem was my bite, all that old dentistry done at different times, in different offices. We ended up doing an overhaul, changing my bite, recreating what I’d lost to wear and tear, and the best part... not only do I look younger, my pain never came back. Thanks Dr. D.”

Dr.

Social media has also fired up a large audience for what these pioneers are capable of, with patients from around the country flying in to see VIDA for cosmetic work. Even more impressive, a steady stream of dentists from around the globe consistently journey to Santa Fe to learn and train!

“Health is the new wealth,” points out Dr. Detrik. “Nothing will make you look younger, or feel healthier, than cosmetic dentistry done at the highest level. Teeth are the jewelry you never take off.”

Vida Dental Studio 2 Calle Medico, Suite 3 505.587.1965 vidadentalsf.com

“I had worn down my teeth and had severe pain in my jaw and my ear. I asked Dr. Detrik, if we have to rebuild what was lost, can you still make it look like ME?” We moved forward, and that is exactly what he delivered! I now have a beautiful, healthy smile and am completely pain free! I am so happy!”

EXPLORING THE BENEFITS OF CANNABIS

with Brian Monk, Lead Budtender at Kure Dispensary

As more and more people start to investigate alternative sources of healthcare, interest in the medical benefits of cannabis is steadily on the rise. Pain, stress, anxiety, and difficulty sleeping are among the most common reasons people seek help, so knowing how and why these natural products work, is important.

With so many options to choose from: tinctures, flowers, cartridges, pre-rolls, topicals, edibles... finding the correct dose of the most effective cannabis products may take a little time, especially as everyone is different and there is no ‘one size fits all’ solution. That’s why we, at Kure, take the time to get to know people, to understand each individual’s life circumstances, so that we can come up with the best way to help with their particular needs.

This is obviously not the time to delve into the ins-andouts of each available form of cannabis, but it IS possible to explain how THC from cannabis and CBD from hemp interact with the human body, producing the effects that they do.

First of all, it’s important to understand that all cannabinoids mimic substances that the body itself

produces, like the pain-relieving chemicals that connect with receptors throughout the body. THC connects with those same receptors, primarily ones in the brain, causing the perception of pain to diminish.

CBD works in the same way, connecting with similar receptors, but ones found mostly in muscle tissue. This helps to reduce inflammation and targets the source of the pain itself. That’s why the best results can often be obtained by combining THC with CBD, and taking the time to discover the correct proportions of each, in order to achieve the desired result.

Fastest acting effects are seen when products are smoked or inhaled, because they immediately enter the bloodstream, whereas edibles, like gummies or chocolates, have to pass through the digestive system and therefore take longer to react. But since everyone is different, with varying levels of enzymes in the liver that affect how much is absorbed, timing can vary significantly. That’s why it’s important to start with low doses and go slow. It’s also worth noting that a slower come-on can last longer than a fast-acting one – several hours instead of just one or two - which is why people turn to smoking or vaping for fast relief, and ingested products for lasting relief. Topicals can also be included for localized pain.

The legal maximum strength for recreational THC products is 100 mgs per package; 10 mgs per dose. Anything in excess of that can only be purchased by medical card holders. These limits do not apply to CBD products.

The medical cannabis world is evolving rapidly and research is still ongoing, with new discoveries turning up all the time. So if you have a health problem you would like to discuss, you are more than welcome to stop by one of our stores in Eldorado or

downtown Santa Fe, to request a free consultation. You have nothing to lose, after all, and you may find yourself on a natural path to better health.

ACUPUNCTURE

The Ancient Art of Wellness is Now Mainstream

Katherine McCune had no idea that the sickness she was suffering from as a 16-year-old would turn out to be life-changing in more ways than one. Her debilitating symptoms which doctors, after much head-scratching, had finally attributed to chronic fatigue syndrome, persisted in spite of the remedies she was prescribed. This went on for several months, severely impacting her ability to function, until one of her teachers gave her the name of someone who could possibly help.

“She told me this person was a Doctor of Oriental Medicine,” says Katherine, “and although I knew nothing about acupuncture at the time and had no idea what to expect, I said OK because I was ready to try anything.”

Three appointments later, the symptoms were 95 per cent gone. “She didn’t even ask me for a diagnosis,” Katherine recalls, “just looked at my tongue, checked my pulses and got to work. It completely turned my life around.”

That experience inspired her to follow the same path. Natural medicine and holistic health became her number one interests and she went off to study at one of the top schools in southern California, Yo San University of Traditional Chinese Medicine, in Los Angeles. “I wanted to be able to help people to change and heal, to do for others what acupuncture had done for me,” she explains, “and after being in practice for about ten years, I still feel the same way now.”

Katherine is amazing, it's as simple as that. I have been seeing her for close to a year and she has helped my body heal from major shoulder and back pain. If you're looking for a knowledgeable and kind acupuncture therapist, look no further!

Stellar, skilled, compassionate care. I visited Katherine at short notice with an acutely painful back-- I had trouble moving. She was thoughtful and effective, combining acupuncture with cupping and ointment. It was a night-and-day difference; within half an hour of treatment the pain had almost entirely gone and I was moving as normal. Thanks, Katherine, for your help!

Absolutely incredible. I have had knee and foot problems from injuries for almost 40 years. After going through meds, steroids, etc. all with little and temporary effect, Katherine has changed my life and eliminated pain I’ve lived with for decades! If I could give her six stars, I would!

In spite of having been used for thousands of years in the East to prevent and treat many kinds of disorders, acupuncture has only recently become popular in the West. That shift came about partly because of its effectiveness in relieving pain, something that had been conclusively proven by scientific studies. Katherine then spent years seeking out additional training in pain relief, which is now one of her areas of special expertise.

“It struck me that almost everyone has some kind of pain and traditional protocols don’t always work,” she explains, “so in 2016 I started studying with revered Chinese master, Dr. Richard Tan, who specialized in pain management and had devised his own way of dealing with it. Those studies are still ongoing, because Chinese medicine is constantly evolving and I am constantly learning as a result.”

Acupuncture makes one think of needles, but the practice includes a number of other modalities as well. One is cupping - glass cups warmed to create suction - commonly used to increase circulation and rid the body of impurities. “Plastic cups, with a suction pump, may be more familiar,” says Katherine, ‘but I generally prefer to use organic materials, unless I’m working on a small area of the body, like someone’s knee.”

Herbs are often included as well (Katherine is also a nationally accredited Chinese herbalist) and many familiar issues are suitable candidates for acupuncture. Viral infections, pneumonia, osteoarthritis, upper respiratory infections, migraines, even eye infections and quitting smoking are just some of them.

“I start out with a ‘whole body assessment’ before deciding on a treatment plan,” points out Katherine. “There is no standard formula because everyone is different, and things like lifestyle, exercise, habits, home and work environments... all these things have to be taken into account. Healing is a process of training the body to learn new ways of being, because the goal is to get to the root of the problem, instead of just treating the symptoms.”

LIVE YOUNG LONGER with the amazing health benefits of PILATES SANTA FE!

Once the workout of dancers and movie stars, Pilates is now the go-to fitness regimen for anyone who prioritizes core strength, balance, and joint flexibility. Its proven health benefits are particularly attractive to people over the age of 50, because Pilates conditions the entire body, not just certain muscle groups. The fact that most of the exercises are performed in reclining or sitting positions is an added bonus for people not wanting to exert unnecessary pressure on their joints, and adopting Pilates as part of their lifestyle significantly improves their chances of remaining healthy, both physically and mentally, for many more years to come.

Ray Kurshals, the founder and director pf Pilates Santa Fe, was a professional dancer in New York City for over 20 years, and being very familiar with the practice and its benefits, decided to become a certified Pilates instructor as well. “It builds strength without sacrificing flexibility, and flexibility without sacrificing strength,” he explains.

As it turns out, research has shown that Pilates also has the ability to help with a wide range of health issues, including back and neck pain, osteoarthritis, hypertension, Alzheimer’s, dementia, and high blood pressure, to name just a few. Since moving to Santa Fe

“Human beings have a physical, mental, emotional and spiritual body, and all need to be addressed, because everything is connected.”

30 years ago, Kurshals has focused on how to bring the benefits of Pilates to people dealing with the challenges of their older years. “I have worked with disabled veterans, people with cerebral palsy, Parkinson’s disease, and those in retirement homes,” he says, “and the benefits are quite remarkable. People also learn skills that they can continue to practice at home.”

Kurshals has also worked with famous movie stars, athletes, golfers, swimmers, skiers and basketball players, and has the distinction of being the first Pilates instructor to be invited to work as an Olympic coach.

Pilates Santa Fe is one of the few studios in the world that focuses on the importance of the union between body, mind and spirit, and the only studio with fully certified teachers who are also licensed and certified in many other healing arts. Kurshals himself is a certified nutritionist, with training in osteopathic and chiropractic medicine, neurology, and homeopathy, and the studio offers more than just the basics. It also includes the latest technologies, such as cold light lasers, pulse electrical magnetic frequencies, and infra-red sauna. These services are available, by appointment, to both Pilates clients and the general public.

The studio also offers gift certificates, which can be used for private sessions and couples training, as well as group classes. So what better way to kick start your own, or someone else’s healthy new year? The benefits of Pilates can truly add years to your life and life to your years; in other words, live young longer!

“I just turned 85 and can’t imagine my life without Pilates. I feel great and attribute my well-being to Pilates. All the trainers and staff at Pilates Santa Fe are amazing.”

“I’ve been blessed to attend twice-a-week sessions at Pilates Santa Fe for at least 20 years. I credit that with improving my strength, flexibility and balance, and with the fact that, at 87, I’m still able to do just about everything I’ve always enjoyed, including hiking and dancing. Ray’s talented and committed staff is a pleasure to work with and I always leave with my mood brightened!”

Carlos and Nohemi consult with prospective clients in their spacious showroom located on Cordova Place. They offer a wide selection of tables, table settings, flatware, glassware, and catering equipment for clients to choose from.

Eighty percent of their clients come in with an idea of who they want to cater their event or use for entertainment. For those who don’t, Carlos can provide a long list of trusted companies they have worked with in the past.

“Some of the local events we’ve supported include Izanami’s Annual Wine vs. Sake Challenge, the Taos Art Museum Gala, Santa Fe Tradfest, the Los Alamos National Lab Cyber Tech Event, and various Santa Fe Museum events,” Carlos shares.

Santa Fe Party Rentals has extensive experience in organizing corporate events, graduations, Quinceañeras, and setups for film crews. However, their most requested events are weddings.

Carlos notes, “New Mexico is a popular destination for exchanging vows, with many beautiful locations. We offer setup and breakdown services anywhere in the state—and we’ve even handled weddings in Colorado.”

When it comes to providing a beautiful setting and a seamless experience for any event, Santa Fe Party Rentals is the company to choose!

Carlos and Nohemi went above and beyond to ensure that mine and my husband’s wedding was a success. I can’t say enough amazing things about them. We hired a wedding planner that forgot our chairs for our ceremony, and Carlos came right away to deliver us chairs from SF Party Rentals. It was so last minute, but he made sure to get it done for us. They truly are amazing people to work with! Highly recommend.

Working with Santa Fe Party Rentals has always been a seamless experience for Casa Nova Custom Catering. They provide a wide range of high-quality equipment that matches the upscale events we cater. Their attention to detail with everything from table settings to tents ensures that we can focus on delivering the best culinary experience for our clients without worrying about the logistics. ALPENGLOW LIVING

IN TOUCH WITH THE CHANGING SEASONS

As fall gives way to winter, we stock up the pantry, pull out the wool blankets, inhale the earthy scent of wood smoke, and begin cooking soups. We enter the season of quiet in the mountain West as the alpenglow turns the sky pink over snowy vistas at sunset. “Winter generates a rhythm of restoration, silent purpose, and quiet reflection,” proposes Alpenglow author Hillary Munro. “This time of quiet making – working with my hands, experimenting with preserves, dipping and pouring candles, planting paperwhites, and sewing – fills my soul.”

This coffee-table book from a Wyoming-based author-photographer duo offers ideas for winter rituals so we can live in sync with the seasons, like foraging for juniper greens with berries to decorate a home or twist into a wreath. Recipes with winter themes include a classic Swiss fondue, chestnut soup, fire-grilled oysters, and hot chocolate to go. The accompanying photos by Lisa Flood are sublimely atmospheric. Besides being soulful and gorgeous, the content is approachable. For a wreath? Assemble a wreath frame, varied greens, green paddle wire, and ribbon with clippers and a hot glue gun. Perhaps add pinecones, dried oranges, feathers, or an antler. As for that fondue, it can be made with garlic, white wine, Gruyere cheese, Emmentaler cheese, cornstarch, lemon juice, and nutmeg. Baking powder biscuits consist of just flour, salt, baking powder, sugar, butter, and milk or buttermilk.

Alpenglow is a romanticized view of Western life, sure, but one that is seductively inclusive. Some winter rituals are easier (like, build puzzles in front of the fire) and others more daunting (such as, an ice-fishing expedition on a frozen lake). As the frigid days pass, Munro observes, “The intense storms swirl and bluster, balanced by days of soft and peaceful calm.” Then comes springtime, when beanies are swapped for straw hats.

HILLARY MUNRO is an entertaining and craft expert, home cook, collector of cowboy boots, and loves to throw a party. She and her husband own a garden and home store, Graze, where she gets to use her creativity daily. She lives with her husband, two young children, two dogs, two horses, and a small flock of chickens. She lives in Jackson, Wyoming.

ELIZABETH (LISA) CLAIR FLOOD, a writer and photographer, has been telling stories out West for over twenty-five years. The author of six western design and lifestyle books, her articles have appeared in Architectural Digest, House & Garden in London, Cowboys & Indians, House Beautiful, Elle Decor, Mountain Living, and others. She lives with her family (two dogs, a cat, two kids, and a husband) in Wilson, Wyoming.

Notes from a Local Wine Lover

THE WINES OF VALTELLINA: A Hidden Gem of Northern Italy

Nestled in the breathtaking Italian Alps, Valtellina is a lesser-known yet remarkable wine region that offers a unique blend of tradition, innovation, and exceptional terroir. Located in Lombardy, Valtellina is characterized by its steep terraced vineyards that cling to the mountainsides and benefit from a unique microclimate, where warm air from Lake Como meets the cooler alpine winds.

The region is renowned for its Nebbiolo grapes, locally known as Chiavennasca. These grapes produce wines that are elegant, complex, and often compared to those from the more famous Barolo and Barbaresco regions. Valtellina wines are known for their bright acidity, refined tannins, and flavors of cherry, rose petals, and earthy undertones, making them excellent candidates for aging.

Valtellina’s most celebrated wine, Valtellina Superiore DOCG, showcases the best of the region’s offerings. With strict production regulations, only grapes from specific areas within Valtellina can be used for this designation. The wine must age for a minimum of 24 months, with at least 12 months in wood, giving it depth and character. The wines of Ar Pe Pe and Dirupi are exceptional. Try the Chiavennasca, Ar.Pe.Pe., Sassella Ultima Raggi Riserva, Lombardy, 2009 or the Chiavennasca, Dirupi, Valtellina Riserva Grumello, Lombardy, 2017

Another noteworthy wine from the region is Sforzato di Valtellina, a unique passito wine made from partially dried Nebbiolo grapes. This process concentrates the flavors and results in a rich, robust wine that is perfect for pairing with strong cheeses or dark chocolate desserts. Try the Chiavennasca, Nino Negri Sfursat, ‘Cinque Stelle’. Mr. Negri is a master of Valtellina wines.

In addition to its exceptional wines, Valtellina offers stunning landscapes and rich cultural heritage, making it a perfect destination for wine lovers and travelers. The blend of impressive natural beauty, fine cuisine, and renowned wines makes Valtellina a hidden gem waiting to be discovered.

The Italian restaurant is already well known for its award-winning wine list, and special dinners featuring exceptional and rare vintages are held throughout the. year. “We are huge fans of Sicilian wines,” says coowner Lawrence Becerra, “but although they have achieved international recognition, they are still unfamiliar to most people here.”

That is about to change. Sassella has partnered with long-time associate, Stemmari Winery, to offer a special event featuring two award-winning, sustainably produced Sicilian wines. “We are offering our famous

He goes on to explain that the purpose is not only to introduce Sicilian wines to the community, but also to offer people the opportunity to experience excellent fine dining without an intimidating price tag. The event is scheduled to continue throughout fall and winter, Sunday to Wednesday. Further details can be found on the restaurant’s website.

The regular restaurant menus reflect seasonal change, including specialty cocktails, so dishes can vary, together with their presentation. Included in the current offerings are yellow fin tuna, and a very distinctive Mushroom Carbonara.

If you don’t have time for a sit-down meal, there is always the Sassella Deli. There you can pick up something to heat in the oven, or you can take home a complete dinner. The Deli also offers a wide selection of meats, cheeses, sauces and soups, gelatos and sorbets, as well as specialty items, all of the highest quality, shipped directly from Italy.

SAZÓN AWARD-WINING CULINARY ARTISTRY

Foodies, far and wide, know that Sazón is famous for chef Fernando Olea’s unique interpretation of contemporary and traditional Mexican dishes. His culinary artistry has earned him a number of accolades, including the distinction of being a James Beard Award winner for Best Chef of the Southwest, in 2022. That has now been followed, this year, by Sazón becoming one of the few restaurants in the US to receive the Distinguished Restaurants of North America (DiR ō NA) Achievement of Distinction in Dining award. Roughly comparable to the prestigious Michelin 3-star designation, this is an honor granted to less than 800 fine dining establishments.

The restaurant’s core dishes remain pretty constant throughout the year, with ‘specials’ added from time to time, to reflect a change in the seasons. All ‘specials’ are designed to showcase Chef Fernando’s signature moles, and wine pairings can be requested as well. Visitors are offered a sample tasting of a selection of the home-made moles when they arrive, and are given the option to choose which ones they would like to accompany their chosen entrées. A select few can also be purchased to take home.

Skillful presentation is always a priority, and plating at Sazón is truly a work of art, with eye appeal so exceptional that it makes dishes look almost too good to eat. Sauces frequently add their colorful contribution to the final design, and it is not unusual for diners to photograph their chosen dishes, as a keepsake, before taking their first bite.

An evening at Sazón is a truly memorable experience, not only because of the outstanding cuisine, but also because of the authentic atmosphere and surroundings. The restaurant is proud to feature the work of some of Mexico’s finest artists, notably Julio de Rita, Tanya Talamante and Fragoso Maiz, whose impressive and distinctive canvases are prominently displayed on walls throughout the restaurant. Some of the pieces are available for sale. The unique environment, beautiful paintings and warm welcome, together with the exceptional cuisine, makes a visit to Sazón a special occasion as soon as you walk in the door.

JOSEPH’S CULINARY PUB Has Something for Everyone

Back in the day it would never have occurred to a host or hostess to consider allergies, dietary restrictions, or food preferences, when putting together a dinner party. Fast forward to now and it’s almost considered a necessity.

“Just think about it for a moment,” points out Joseph Wrede, the chef/ owner of Joseph’s Culinary Pub. “In addition to carnivores, there are now vegetarians, vegans, pescatarians, flexitarians... and that’s before you start including things like gluten-free and dairy-free. Not only has the world changed, food has changed too, so feeding large numbers of people is challenging, to say the least.”

Since Joseph’s is not a ‘specialty’ dining establishment, like a steakhouse, and is not restricted to a particular kind of cuisine, he has the freedom to take a broad-brush approach. “I make a point of putting together a menu that covers all tastes and satisfies as many common dietary requirements as possible,” he says, ‘and I try to make it inclusive, so no-one feels left out. For example, we no longer bring bread to the table when guests arrive. With so many people trying to avoid gluten these days, it just seemed unnecessary.” The restaurant offers a plate of specialty olives and duck-fat-fried potato chips instead.

As a traditional chef, well-known for his artistic bent, Joseph’s menu features distinctive dishes you will find nowhere else, and his vegetarian dishes really are entrées, not afterthoughts. Joseph’s Vegetable Enchilada, for instance, consists of seven different ingredients, all woven together to create a unique taste, and it is also gluten-free. In fact, most of the menu items are now gluten-free as well, as are all the house-made desserts.

For fish lovers there is a ‘special’ that changes daily. All fish is wild-caught, never farmed, and the dishes are so exceptional that regulars sometimes come in two or three times a week just to sample the latest offering.

Although the menu changes with the seasons, some dishes are so much in demand that removing them would provoke an outcry. One notable item is duck, prepared in various ways, including the unique and hugely popular Duck Pad Thai. “Maybe that has something to do with the fact that people don’t cook duck at home,” suggests Joseph. “It’s always nice to try something different when eating out.”

Whatever dishes he is inspired to create – vegetarian, vegan, meat, fish, or gluten-free – all have to satisfy one basic requirement. “Food has to taste good,” says Joseph simply. “That’s what keeps people coming back, and it’s why I’m still here after almost 30 years.”

SCAN TO WATCH A DAY IN THE LIFE WITH EXECUTIVE CHEF

Good food requires good ingredients and that has always been a priority for Joseph. He works with local farms and ranches, using pasture-raised, organic, top-quality ingredients, creating dishes that reflect the changing seasons. The end of the year inspires more upbeat, festive ideas, designed to catch the holiday spirit, like Joseph’s signature turkey roulade. Early reservations are strongly recommended!

Wine-lovers are not forgotten either and the restaurant hosts elegant wine dinners about every 3 months (see website for details.) “Santa Fe has very sophisticated wine enthusiasts,” declares Joseph, “and our wine dinners are wonderful occasions that always sell out.” The standard wine list not only features a carefully chosen selection of wines, but also includes beer, sake, local spirits, cocktails and even non-alcoholic mocktails.

So whatever you, your family, friends, or co-workers are feeling in the mood for, you can be sure that Joseph’s Culinary Pub has you covered.

TerraCotta Wine Bistro

Same Name... New Dining Experience!

José Rodriguez is a perfect embodiment of the American dream. He started out as a dishwasher when he arrived in the US at the age of 17 and now, 26 years later, has just become the new chef/ owner of TerraCotta Wine Bistro.

“I fell in love with Santa Fe the first time I came here,” he says, “and I was lucky enough to rise up through the ranks by working with master chefs of fine dining, like Mark Kiffin, Eric Distefano at Geronimo, and Martin Rios, among others.”

His brother, Eduardo, enjoyed a similar career path, and opened his first restaurant, Zacatlán, in 2020. Jose was then working as Executive Chef at the Casa Sena restaurant, downtown, and started thinking that maybe the time had come for him to do the same. When he heard that TerraCotta was available, it seemed like the perfect opportunity. The business changed hands in July this year, but the name remains the same. “I liked the name, the restaurant was well-known and it had a good reputation,” explains José, “so changing the name could have been confusing.”

The menu, however, is very much his own. Made with high quality ingredients, it could best be described as his personal interpretation of global cuisine, in creative combinations that change with the seasons. For example, dishes include Caesar salad with kimchi dressing, Lamb Tagine, and Grilled Octopus with hummus and habanero sausage. Needless to say, the wine list is, of course, exceptional.

The reinvigorated restaurant has an ambiance which is upbeat, informal and welcoming, and TerraCotta will be offering prix-fixe dinner menus for the holidays. It is also open for lunch, Thursday to Sunday, from 11:30 to 2:30. So do make a point of checking out this exciting new addition to Santa Fe’s culinary scene, and raise a glass to TerraCotta Wine Bistro’s continued success.

ZACATLÁN

Fine Dining with a Mexican Flair

In just four years Zacatlán has made a name for itself as a casual fine dining establishment with a difference. Chef/ owner Eduardo Rodriguez even had the distinction of being nominated for a James Beard award for Best Chef in the South West earlier this year. “I trained with some of the best fine dining chefs in Santa Fe over the years,” he says, “so when I opened my own place, I was inspired to add my own native culinary heritage to what I had learned.”

The result is fine dining with an original Mexican twist. How about Duck Legs Confit, with huitlacoche succotash, house-made mole poblano and fried plantains? Or Pork Belly Carnitas, with strawberry and rhubarb tamale and date mole? You get the idea!

Everything is made in-house, including the desserts, and the menu caters to vegetarians as well as meat-lovers. That applies to holiday dishes as well. Zacatlán remains open for Thanksgiving, Christmas and New Year, with special prix fixe menus for all three. A classic turkey dish is included for Thanksgiving, but Christmas and New Year depart from the traditional, featuring items like lobster, lamb, caviar and foie gras with honeycomb, date mole and cornbread.

The originality extends to drinks as well, with house margaritas, made to order, a particularly popular specialty. Nowhere else will you find a hibiscus margarita, or, in celebration of fall and winter, one spiced with cinnamon, apple and rum.

Zacatlán will be closed for two weeks in January, to recover from the holiday rush, and to review and revise menus for the new year. “We aim to get better day by day, to offer the best food and service possible,” explains Eduardo. “That is our goal.”

My Favorite Holiday Cocktail

by by

Native to Mexico and Central America, the Poinsettia was first documented by Europeans in 1834. Renowned for its vibrant red and green leaves, it is a popular choice for the Holiday floral arrangements. The plant gets its common English name from Joel Roberts Poinsett, the first minister to Mexico, who is recognized for bringing it to wider attention.

With its effervescent texture and invigorating qualities, this drink strikes a delightful balance between tart and sweet flavors thanks to its three main ingredients: cranberry juice, lemon juice and simple syrup. Additionally, it features subtle hints of juniper, courtesy of its gin base.

I hope you enjoy!

CHEFS’ FAVORITE INTERNATIONAL HOLIDAY DISHES

Chef Fernando Olea’s Mexican Bacalao

When I was little, I would go with my mother to the local abarrote, or specialty store to buy dried salt cod, olives, capers, parsley and sweet almonds. She would prepare a huge amount of bacalao before Christmas Eve. When friends would come to visit between Christmas and New Year, we would all eat bacalao. Like many Mexican dishes, when bacalao is reheated, the flavors get better. At the end of that week on January 1 was the end of the bacalao and the best flavor.

Chef Cristian Pontiggia’s Cotechino & Lentils

Cotechino and Lentils was one of my favorite holiday dishes growing up in Italy.

Cotechino is a traditional Italian sausage known for its rich flavor and unique texture. It originates from the Modena region in Northern Italy.

Making cotechino with lentils is simple and easy! Soak the lentils, boil the cotechino, and sauté onions, carrots, and celery. Add the lentils, season, and pour in tomato and herbs for flavor. Cook with vegetable stock until everything’s tender. Finally, slice the cotechino, place it over the lentils, and serve.

Chef Joseph Wrede’s Rabbit Lasagna

Rabbits have for centuries been associated with fertility and abundance, and in many cultures consuming rabbit meat was believed to enhance fertility and promote a bountiful harvest. It is still favored as a delicacy around the world, from Rome to Taos Pueblo. Our rabbit lasagna is different from the classic dish, with variations on sauce Bolognese. Perfect for cold weather, we serve it through the fall and winter.

Chef Angel Estrada’s Chilean Sea Bass

When Chef Estrada wants to enjoy a special holiday dish with his family he chooses Chilean Sea Bass. This very tender fish comes from the cool waters off the coast of Chile. Like many other white fish, Chilean sea bass is a low-calorie, protein-dense fish. Chef Estrada likes to finish the plate with Mussels, Clams, Risotto, Rainbow Churd and Saffron Beurre Blank. The combination of flavors is a joy to the palate!

Chef Ziggy’s Tamales de Pollo

Salvadoran Tamales de Pollo

(Tamales wrapped in Banana leaves). “Growing up in El Salvador, tamales was one our favorite meals during the holidays. Tamales de Pollo con Salsa Verde (Tamales with Chicken and Green Salsa) Filled with shredded chicken that’s tossed in a refreshing green salsa loaded with tomatillos, garlic, and fresh cilantro, these tamales are inspired by my family recipe and a fantastic addition during the holidays.”

Chef Alex’s Chile Relleno Roll

Growing up in Guatemala, one of our favorite holiday meals to fix was a Chile Relleno Roll.

We would stuff the roll with spicy tuna, tempura, cucumber, daikon sprouts, topped with eel sauce and spicy aioli. This was one family tradition during the holidays!

Chef Eduardo Rodriguez’s Robin Egg

I was introduced to this wonderful dessert by a chef in Mexico City. It’s made with coconut cream, biscochitos crumbles and chocolate mousse, with mango purée as the ‘egg yolk.’ Everything is completely edible. What I love about it is not only the creativity, but also the meaning. The robin egg is a symbol of good fortune, dedication and renewal, which makes it perfect for the new year.

Chef Jose Rodriguez’s Lamb Tagine

The lamb tagine is our specialty dish. The stew itself originated in Northern Africa, but is characterized by Arab, Ottoman, Moorish and French influences.

As a global influenced chef, I was intrigued and intimidated to taste this dish, because every spice and flavor represents each one of those cultures. In my eyes, the lamb tagine represents a perfect combination of the art and science of cooking.

EXPERT ADVICE

pil·low: [ˈpilō]

a little bed for your head

It may seem like just a little thing, a “puff piece” if you will, but a pillow is an integral element to a proper night’s sleep. It truly is the “little bed for your head” in that it preforms several functions:

• Proper support for your head

• Keeping weight off of your bottom shoulder if you are a side sleeper

• Helping with spinal alignment

• Keeping your airway open

Pillows, like people, come in all shapes and sizes. The important thing to remember is that you need to test them in the store on a mattress that is similar to the one you sleep on at home, on the side of the bed you usually sleep on and in the position that you normally sleep. This will help you to identify the pillow that is just right and eliminate the ones that don’t meet all of your requirements. Why settle for less?

The materials that the little puffy pillow is stuffed with matters.

DOWN (not just feathers…there’s a difference)

Goose and duck down are the most preferred fillings in down pillows and the softest elements to have in a pillow. Goose is lighter and duck is heavier when it comes down to down. Fill power also comes into play and can help in determining the better quality, loftiness and the longer retention of the pillow’s firmness or shape. The fill power measurements include 650, 750, 800 and 850. The higher the number, the higher the quality, bloom or loft the pillow will have.

MULBERRY SILK

An opulent, calming, cuddly, health-conscious fiber that molds to the shape of your head offering subtle support. Because of its natural abilities, it is a great natural choice for minimizing allergies.

WOOL

A haircut or shearing is necessary to keep sheep happy and healthy so why not use this wonderful material to sleep on? Different varieties of sheep each produce wool with unique qualities, but similarities exist. Wool is a renewable, natural fiber with the ability to last for years. Wool is an excellent choice for people who like a firmer feeling pillow with fibers that stay in place. It will keep you cool in the summer yet warm in the winter…temperature regulating at its finest!

LATEX

If you like a pillow that is soft, bouncy, making your head feel like it is buoyantly floating on a cloud, then a natural rubber pillow is for you. Latex is made from the material tapped from a rubber tree grown in tropical regions of the world. This wonderful material is processed to be used in rubber bands, elastic and bedding making this pillow a distinctive choice alternative.

At Sleep & Dream Luxury Bed Store we have over 70 different types of pillows with a variety of filling materials. They come in traditional shapes and sizes, as well as a few uniquely shaped and contoured pillows, some designed by doctors for their patients. We value quality sleep and offer a pillow fit for our clients to help you find your perfect pillow so you too can “Wake up to a Great Day!”

But before that, come in first to…experience the rest!

EXPERIENCE GRANADA

An Ancient City Both Mesmerizing and Mysterious

“Give her alms, woman, there is nothing in life like the pity of being blind in Granada.” Strong words by Mexican poet Francisco de Icasa summarize the stunning beauty of Granada, one of the most charismatic cities in Spain. Both mesmerizing and mysterious, this ancient city is steeped in a history shaped by diverse cultural influences for over two thousand years.

Perched at the Mirador de San Nicolás, you might find it hard not to contemplate the complexities of the palace that dominates your view. It’s amazing to consider the incredible vision of Muhammad I, leader of the Nasrid dynasty, who in 1248 began what is today one of Spain’s most visited UNESCO sites—the Alhambra. The experience is enough to transport you away from those around you, away from the clicking of cameras, the strumming of flamenco guitars, and the palmas, the melodic clapping, that sets the stage for your imagination to run freely. There is a subtle spell that enchants anyone who stays there long enough.

The Alhambra is Granada’s—and Europe’s—love letter to Moorish culture. Set against the brooding Sierra Nevada peaks, this fortified palace began life as a walled citadel before becoming the opulent seat of Granada’s Nasrid emirs. Their showpiece palaces, the 14th-century Palacios Nazaríes, are among the finest Islamic buildings in Europe, and together with the Generalife gardens, form the Alhambra’s greatest highlights.

The Generalife gardens are fit for a king, with colorful and carefully curated flowers, perfectly manicured greens, and the gentle, soothing sound of flowing water at every turn.

GENERALIFE GARDENS
ALHAMBRA

Again, your imagination kicks into high gear. The water—could it be the many tears shed by King Boabdil when he lost his hold on Spain after 800 years of Moorish rule?

The history and beauty of Granada are astounding. The last stronghold of Arabic rule in Spain, Granada exemplifies the intricate cross-cultural ties evident in its architecture, art, and ambiance. Moorish tea houses lure visitors as they enter the oldest part of town, the Albaicín. Its whitewashed cármenes (buildings) and cobblestone cuestas (slopes) are an artist’s playground, unlocking a spellbinding sense of curiosity and creativity. Ferdinand and Isabella, the Catholic king and queen credited with reclaiming Spain from the Moors in 1492, are buried in Granada.

The very essence of stereotypical Spain is alive and well in Granada—sun, flamenco, bullfights, gypsies, tapas—yet the experience is much more impactful than expected.

The song that encapsulates Granada was written by a Mexican composer, Agustín Lara, as he sings about the fantasy and allure of Granada and the infamous spell it casts.

So, if you’re wondering why foreigners like Mr. Icaza describe being blind in Granada as the greatest pity in life, or why Mr. Lara sings of the spell cast by Moorish eyes, or why the Frenchman Alexandre Dumas pondered whether there is a greater pleasure in life than visiting Granada, concluding that there is—visiting Granada again—then we encourage you to visit and see for yourself.

Adam’s Automotive, which opened just a few months ago, works on Japanese cars of all kinds, except for electric ones. He shares the workload with Jonathan Jaramillo, a young man who grew up in Santa Fe with a father who owned a car repair shop. “I built race cars and raced stock cars with my dad when I was 13,” he says. Jonathan now has over 16 years’ experience and is excited to be a part of Adam’s Automotive, declaring, “I look forward to serving the community with honest and reliable automotive repair.”

Giving back to the community is a major priority for Adam as well. He is a member of the Justice Advisory and Accountability Board to the ACLU, the largest civil liberties organization in the state, and also belongs to Olé New Mexico, a non-profit, grass roots

member organization, working to benefit New Mexico families with issue-based campaigns and electoral engagement.

“I love what I do,” he says simply. “As I said, it’s all about relationships, making people feel safe and comfortable. The greatest satisfaction for me is when people get in their cars and say, ‘Thank you, you did a wonderful job.’
