GK: I think the most important thing for my staff to see is that their chef is very passionate about what he does. It’s a craft. Of course it’s a business in the end, but it starts off as a craft. It starts off as the love of cooking—creating your art and of having a philosophy and then following that philosophy and perfecting it. For me, it’s very important that the staff not necessarily do what I say, but really appreciate how much passion I have for my work. I can then help them understand the importance of the basics, because Japanese food is very basic. When you think about sushi—traditionally

The walls should be a basic neutral color. Shades of white are becoming very popular now and a grey shade that leans toward taupe is still very appropriate if you are planning on painting. An accent wall with color is a great addition but adding a bold color to the entire room can be overpowering. Add color, especially for photos with items like pillows, throws, rugs, artwork, and vases. An accent chair in a pop color is great. Be sure to stick to a color theme when doing this.
