Tea Mixology is about tea in drinks, tea gastronomy is about tea in food, and tea inspired is about anything… but it must have an element of tea in it. It is where tea infused masterpieces are brought to life. Our exploration of ‘tea gastronomy’ began in 1999 with roast chicken marinated in Ceylon Tea. Over the years, it became apparent that the sensorial and functional justification for the combination of tea and food was more than just a coincidence. There is a tea for every moment, for every mood, and for every occasion. There is a tea for every fruit, vegetable and meat, a tea for every culinary style and a tea whose unique personality matches every person’s individual taste.
As part of a dish, as an element in mixology or an ingredient as a part of savoury and sweet morsels and spirits, there can be no doubt of it. In the sensations that tea offers- its taste, mouthfeel, and in its natural goodness, there is a delicious harmony in the union of sea and food. Our School of Tea sessions also include in-depth training in this aspect.

At the recently held Camellia Epicurean dinner to celebrate the World’s Most Experience Teamaker, Merrill J. Fernando, ‘Tea in the Five Senses’, yet another concept by Dilmah was explored by all guests. From tea inspired gastronomy that respected tea for its flavour, aroma and goodness, the event flowed into a rhythmic tribute by Maestro Ravibandhu Vidyapathy, followed by unique drumming compositions paired with the spirit of each brew. Here the drums being created with natural material similar to a cup of tea is an expression of nature, which when combined enables the tea drinker to enter a new dimension of taste and sound.
This is the idea being Tea in Five senses: the fact that we discover tea at its most sublime when tea is experienced in our fifth sense. Music inspired by the character, the mood and the complexity of tea rounds up an already near-perfect moment making it complete.

Dilmah tea had made a mark with its fresh, single origin, 100% pure Ceylon tea. However, we needed to produce something spectacular to celebrate 25 years infused in the goodness of Dilmah tea; to explore its diverse varieties whilst remaining true to its origins, and giving this 5000 year old herb a touch of the 21st century whilst embracing the time of its ancestors. We introduced the Silver Jubilee Gourmet range in 2013; a fitting celebration for the tapestry of tea Dilmah has woven across over two decades. Revel in the flavours of Blood Orange & Eucalyptus, Mandarin & Marzipan Pekoe and Pure Darjeeling Singe Region Tea.
True lovers of tea know that together with an explosion of flavours, pure tea bursts in colour, painting its own story in the process. BRILLIANT BREAKFAST TEA
A bright, brisk and bold tea. Intense and majestic, this tea offers body, strength, colour and pungency representing the essence of a fine Ceylon tea. Grown in the Dimbula Valley, the Broken Orange Pekoe leaf yields a burgundy coloured brew which is robust and strong yet bright with an energetic personality. The fine BOP grade of tea with its small particle size produces the strength in this tea. Brew for at least 3 minutes in spring water. Brewed for 4-5 minutes for added strength, this tea then allows the addition of warm, dairy milk if desired.

DOMBAGASTALAWA SINGLE ESTATE FBOP
A regal Ceylon Single Estate Tea. Flowery Broken Orange Pekoe from our Kataboola Estate in the Nawalapitiya Region offers clean, black leaf, with some silvery ‘tip’. Its infusion is clean and open, with a coppery tone indicative of brightness. The brew shows character and depth, with some strength, but generally mellow for a very pleasing yet bright tea. Teas from this region are known for their gentle, yet firm personality.
GALLE DISTRICT OP1
Ceylon is renowned as the home of the finest teas in the world and for its ability to produce teas of extraordinary variety - full bodied low elevation teas grown at sea level right through to the light and delicate high elevation teas from the Nuwara Eliya region. Galle is a historic seaport and this Orange Pekoe 1 (OP1) is grown in the northern part of the Galle District. The leaf is clean, wiry and black, characteristic of a typical low elevation tea. The infused leaf reveals a coppery hue, yielding a bright, and pleasingly light brew. Deep golden orange in the cup, this tea has a malt, slightly raw aroma and a peaty finish.

SINGLE ESTATE ASSAM
Tea grown in India’s Assam region is typically strong and malty. This Special Finest Tippy Golden Flowery Orange Pekoe is made in the traditional manner and is more delicate than Assam teas made in the CTC style. Wiry, dark brown leaf with some golden tip produces a coppery brown infusion and a bright, rich brew, with depth and medium strength. An earthy note enhanced by a touch of spice complements a refined and bright tea.
KEEMUN SPECIAL LEAF TEA
Considered the finest amongst China black teas, Keemun Tea, from the Qimen precinct of Anhui province, produces a deep red brown brew. The medium strength brew displays a hint of fruit and a gentle earthiness, with a touch of fruit. It is rounded off in its finish with a characteristic hint of orchid for which Keemun Tea is noted.
PU-ERH NO. 1 LEAF TEA
A special tea renowned in China for its medicinal value. Grown in the Yunnan province, Pu-erh tea has been popular in that region since the Tang Dynasty when Pu-erh was taken for relief of indigestion and more recently reducing cholesterol. This tea is semi fermented with a typically earthy taste. Its prominent woody character, with hints of herb and elemental flavour, is unusual amongst China Teas which are usually light and floral. This is the result of the post-fermentation process unique to Pu-Erh.
SINGLE ESTATE DARJEELING
A distinctive and refined experience in tea, fine Darjeeling comes from India’s most famous Darjeeling . This is a Single Estate Darjeeling Tea, grown at 7,000 feet above sea level and within sight of Mount Everest. It offers the characteristically subtle, delicate and sophisticated taste of the best of Darjeeling. The leaf is dark brown with hints of olive, developing to a golden infusion when brewed. The light brew is slightly floral and has a prominent Muscatel note in its finish. The brew maintains a slight piquancy and character whilst overall being soft and gentle.
LAPSANG SOUCHONG
A gently smoked gourmet black tea produced in a traditional process that originates in the Qing Dynasty in China. The tea leaves are withered over pine or cypress wood fires producing a distinctive tarry note. This process originated in China’s Fujian Province. The black strips of leaf produce a dark brown infusion and a brew that is dark burgundy, reflecting its strength and body. This is a very traditional and distinctive tea with depth, body and a prominent wood smoke character.
THE FIRST CEYLON SOUCHONG
To the Chinese Lapsang Souchong, with its distinctive, oakey flavour, was a prized tea and the penalty for divulging its secret was death. Having somehow avoided this penalty, First Ceylon Souchong is a uniquely Ceylon Souchong, offering the same strong, smoky character, but with an interesting difference. Ceylon Souchong is a Single Estate Tea produced in the Galle District, and gently panfired using Cinnamon wood. The result a prominent woodsmoke note with a touch of juiciness and sweetness in its finish.

Producing Oolong – known as Black Dragon Tea in China - is an especially demanding art. This semi fermented tea is a midpoint between green and black teas, offering the lightness of green and the character of black tea. Oolong originated in 18th Century Fujian and its dark green, well twisted leaf produces a mellow, pleasing brew when brewed. This is a delicate and gentle tea, more earthy than typical green teas, yet more fragrant and lighter than most black teas.

A rare handmade white tea from the Nuwara Eliya region of Ceylon, grown at 6,000 feet elevation. The tender buds of the tea plant are hand picked at dawn, carefully carried in a silk pouch and entirely handmade. The buds are sun dried and carefully hand rolled, producing the characteristic silver, needle-like buds, with a velvety texture. Their pale brew is surpassingly light and delicate, elusive and mild on the palate with a touch of a ‘greenish’ seasonal high grown character in the finish. The beauty of the infused buds adds to the pleasure of this unique brew.

WHITE LITCHEE NO. 1 HAND ROLLED TEA
White Tea is the rarest form of tea, consisting of the bud of the tea leaf, the most tender part of the two leaves and bud which are hand-picked to produce tea. Song Dynasty ‘Tea Emperor’ Hui Zong relished white tea for having the most rare and subtle flavour. White Litchee is hand made from tea buds which are an inch or so long and then tied into a large ‘pearl’ which unfurls when infused. The enjoyment of this Very Special Rare Tea requires the observation of the pearl unfurling, one bud at a time, transforming over 30 seconds or so into a flower of buds.

ONE PLANT, MANY TEAS
The diversity in tea is elegantly expressed visually, in the leaf, infusion of the brewed leaf and the brewed liquor, continuing through the fragrance of the tea both leaf and liquor and finally in the flavour, texture and strength of each tea. The variety in tea is without equal amongst any beverage on account of the subtle variations that exist even within a single tea garden and the dramatic differences between tea from different regions and tea made in different styles. This variety is at the heart of luxury in tea and made especially unique by the fact that the variations on the eye, nose and tongue come from the leaves of one plant –Camellia sinensis.

WHITE TEA
White tea, known in Sri Lanka as Silver Tips, is amongst the most rare and refined of teas for the discerning tea drinker. Whilst most of the tea labelled “White Tea” around the world is in fact a mix of a nominal amount of white tea and green or black teas, real white tea maintains a specific appearance with a silvery leaf and a velvety texture, and produces a bright, golden liquor when brewed.
Silver Tips or real white tea is made from the handpicked buds of the Camellia sinensis plant. The picking is restricted to the most experienced tea pickers as it requires gentleness to avoid damaging the cells within the bud, causing fermentation and therefore bitterness to develop within the bud. White tea is unique in being entirely handmade, with the carefully harvested buds being hand-sorted under the supervision of the teamaker - to ensure that the batch contains only the undamaged buds. The buds are then lightly baked in filtered sunlight before packed into foil-lined boxes for transport. Silver Tips are typically picked early in the morning, before sunlight causes photosynthesis to begin and food to be transported from the leaves of the plant. A single tea picker can typically harvest 200- 250 grams of buds each day whilst he or she would usually pick 16-20 kg of tea – two leaves and a bud – normally.
GREEN TEA
Green Tea originates from China and is grown in Japan, Vietnam, Taiwan, India and Sri Lanka. Green Tea is unfermented, maintaining mild and light, while sometimes astringent, characteristics. The leaf is picked. Several different methods reflect unique traditions for green tea making in parts of China, Taiwan and Japan. The most popular tea in Japan is Sencha, made by a method unique to Japan
OOLONG TEA
Oolong teas varying from light “Springtime Oolong Teas” which have a gentle, floral and mild sweetness to the heavier and darker Oolongs which are woody, sometimes earthy with heavy fruit, and occasionally caramelised notes. Oolong teas are partly oxidised or fermented. The teas are picked, often 3 leaves and a bud, withered, fermented, then heated, rolled and dried.
BLACK TEA
Black teas are fully fermented, the most common type of tea from Sri Lanka, India, Kenya and other former British colonies. Black tea is picked, withered to reduce moisture and to make the leaf pliable, then rolled, fermented and baked (or dried) before sifting.
CTC vs. Orthodox
CTC TEA AND AUTHENTIC, TRADITIONAL ORTHODOX TEA
CTC tea is a diversion from the authentic, traditional, orthodox method of making tea. CTC abandoned centuries’ old method of making tea, for commercial gain in meeting demand for a quicker brew from tea bags. It sacrificed much of the character and real taste of tea. It also created a sharp reduction in the variety of grades of tea to just three - Broken Pekoe (BP), Pekoe Fannings (PF), and Pekoe Dust (PD) from over 30, old established and much loved grades of traditional tea.
Traditional tea, preserves the exquisite appearance, character and taste of a variety of grades. Dilmah stands firmly behind tradition in using exclusively, specific grades of traditional tea. That explains why Dilmah tea tastes so different to every other brand of tea.
MANUFACTURING PROCESS
There is a story in tea that is inspiring in its expression. It is a tale that starts with a tiny seedling which evolves through the influence of soil, rainfall, sunshine, temperature and the skill of the tea planter.
Eventually it offers the tender green shoots of the now matured Camellia sinensis plant, which are then skillfully harvested by hand. The story spans thousands of hectares and millions of lives in Ceylon’s famous tea country, known as the home of the world’s finest tea. Major brands have abandoned the traditional, centuries-old method of making tea for a new “fast track” process, which sacrifices the character and taste of real tea.

13 Reasons Tea Is Good for You
TEA & YOUR HEALTH
Tea can boost exercise endurance.
Scientists have found that the catechins(antioxidants) in green tea extract increase the body’s ability to burn fat as fuel, which accounts for improved muscle endurance.
Drinking tea could help reduce the risk of heart attack. Tea might also help protect against cardiovascular and degenerative diseases.
The antioxidants in tea might help protect against a boatload of cancers, including breast, colon, colorectal, skin, lung, esophagus, stomach, small intestine, pancreas, liver, ovarian, prostate and oral cancers.
Tea helps fight free radicals. Tea is high in oxygen radical absorbance capacity (“ORAC” to its friends), which is a fancy way of saying that it helps destroy free radicals (which can damage DNA) in the body. While our bodies are designed to fight free radicals on their own, they’re not 100 percent effective —and since damage from these radical oxygen ninjas has been linked to cancer, heart disease and neurological degeneration, we’ll take all the help we can get.
Tea is hydrating to the body. It’s caffeine content is less than half of that in coffee.
Drinking tea is linked with a lower risk of Parkinson’s disease. When considered with other factors like smoking, physical activity, age and body mass index, regular tea drinking was associated with a lowered risk of Parkinson’s disease in both men and women.
Tea might provide protection from ultraviolet rays. We know it’s important to limit exposure to UV rays, and we all know what it’s like to feel the burn.
The good news is that green tea may act as a back-up sunscreen
Tea could keep waist circumference in check. In one study, participants who regularly consumed hot tea had lower waist circumference and lower BMI than non-consuming participants. Scientists speculate that regular tea drinking lowers the risk of metabolic syndrome (which increases the risk of diabetes, artery disease and stroke), although it’s important to remember that correlation does not equal causation.
Regular tea drinking might also counteract some of the negative effects of smoking and might even lessen the risk of lung cancer.
Tea can help the body recover from radiation. One study found that tea helped protect against cellular degeneration upon exposure to radiation, while another found that tea can help skin bounce back postexposure.
Tea could be beneficial to people with Type 2 diabetes. Studies suggest that compounds in green tea could help diabetics better process sugars.
Tea might be an effective agent in the prevention and treatment of neurological diseases, especially degenerative diseases (think Alzheimer’s). While many factors influence brain health, polyphenols in green tea may help maintain the parts of the brain that regulate learning and memory.
Green tea has been found to improve bone mineral density and strength.
