JOHNNIE WALKER HIGHBALL TEA COCKTAIL RECIPES

Dilmah Tea, in collaboration with the Path Bar School (Dubai) and Johnnie Walker,

proudly present the highlights of our jointly organized highball competition celebrating tea and liquor to induce harmony on the palate and produce a work of art.

Tea mixology is the art of respectfully combining nature’s most indulgent herbal beverage with other ingredients to produce tea inspired cocktails, mocktails and shooters.

The stunning recipes in this booklet are the Top 30 shortlisted tea mixology submissions which were recognized for their ability to bring out the component of liquor and display a robust understanding of the unique identities of each of their chosen teas at the competition. Among them is recipe creator Jose’s brilliant concoction titled ‘The Gem of Ceylon’ featuring Dilmah Earl Grey Tea, homemade Mango Kombucha and Johnnie Walker Black Label, which bagged the first prize!.

• 50ML Johnnie Walker Black Label

• 90ML Homemade Dilmah Earl Grey Tea and Mango Kombucha

• Top up: Homemade sparkling Whey

Homemade Dilmah Earl Grey Tea and Mango Kombucha:

• 7 cups (1.6 L) filtered water

• Half cup (100 g) white sugar

4 bags of Dilmah Earl Grey Tea

1 Mango

1 SCOBY Method

• Boil water with the tea bags in it for 15 minutes

• Add sugar

• Let the mixture cool down to room temperature

• Add the SCOBY and let it sit for a week

• For the second fermentation, remove the SCOBY and add the liquid into a clean bottle. Cut the mango into small cubes and add it to the bottle. Let it ferment for 4 days. Open the bottle every day to release CO2. If the result is very acidic, add more sugar. For more flavor, add a few drops of Dilmah black tea extract

Homemade Sparkling Whey

• 1kg Natural Yoghurt

• Cloth

• Strainer

Method

• Line the strainer with cloth, place the yoghurt on it and let it strain; this will take a couple of hours

• After that, take the liquid in the siphon with a co2 charger

• 90ml Chardonnay reduction with The First Ceylon Oolong

• Top‐up: Saffron and Honey carbonation

• Oolong leaf dust

• Ginger coin

Method (build up)

• Add all ingredients except the carbonated liquid, into a highball glass

• Add ice and then the carbonated liquid

• Give it a gentle stir

• Garnish with tea dust and a ginger coin

For preparation of wine reduction with tea:

• Bring about 300ml of dry Chardonnay wine to boil

• Once wine is reduced to 2/3rd of its volume, add tea (5 gm)

• Briefly boil tea for about 5 min with Ginger juliennes (ginger adds warmth) until the tea leaves

For preparation of saffron and honey carbonation:

• Bring water to boil (500 ml, one serve)

• Add honey until it dissolves (100ml)

• Add saffron for bright colour and aroma (few threads)

• Carbonate in Soda Siphon

Mix - Dilmah Moroccan Mint Green Tea & Dilmah English Breakfast Tea Soda (Perlini Method):

• Brew 1 bag of Dilmah Moroccan Mint Green Tea with 200 ML Hot Water (4 Minutes)

• Brew 1 Bag of Dilmah English Breakfast Tea with 200 ML Hot Water (4 Minutes)

• Chill both brews

Mix 180 ML of Dilmah Moroccan Mint Tea and 120 ML Dilmah English Breakfast Tea

Add 50 ML Sugar Syrup 1:1 Ratio

Place all mixture in a perlini shaker with ice and shake. Charge twice with a 15 second break

in between

Rest for 5 Minutes and serve

Method

Build and top up with homemade Tea soda, gently stir.

1L Coconut Milk (from a carton)

45ml Fresh lime juice

50g Dilmah Opatha Estate Oolong

Place Dilmah Opatha Estate Oolong Tea and coconut milk on a saucepan ‐ warm it between

50 to 55C

Remove from the heat and add the lime juice. Stir. The coconut will start to split and

separate

Strain the mix using a super bag. It is IMPORTANT to refrigerate both the Siphon and the

Liquid mixture before charging it with 01 CO2 cartridge

Fig Leaf Syrup

10g Fresh Fig Leaf

500ml Sugar Syrup

Place the Fresh Fig Leaf and Sugar Syrup into a vacuum bag and seal

Place the bag in a sous vide machine set to 60C for 90mins

Apply Ice bath on the bag once the cooking is over. Strain. Measure the quantity of syrup

collected and add a 1% ratio of malic acid. Stir to dissolve.
