Tea can be served as a palate cleanser between dishes or between mouthfuls of a dish; it can be a flavour bridge from one course to the next. It refreshes and readies the palate for the next course or bite.

SIX PROMINENT TASTES / CONSTITUENTS To the uninitiated, it can seem complex to pair tea and food, and there seems to be so much to learn. In reality there are simple rules of logic that you can use to achieve the pairing. Whenever you’re preparing a recipe or choosing a dish, think of its main ingredients and choose your tea based on them. The idea is to complement or contrast the tastes found in tea / food. Here’s a structured method to pair tea with food;

COMPONENTS: You might pair a sweet dish with a sweetened tea or seek to contrast the sweetness with a tea that has bitter elements.

FLAVOUR: Imagine a fruity tea that works to contrast and highlight the herbal flavours in a dish.

TEXTURES: What would you pair with a creamy cheese? A tea that has some astringency that will ‘cut through’ and reduce the richness of the cheese, so that you want to take another morsel of the cheese – somewhat like how wine interacts with cheese.

SENSATIONS: If your dish features chilli, perhaps you might opt for a tea that is rich as the tea can handle the piquant sensation and will not be overcome.

TEMPERATURE: You can get playful with temperature contrasts – for example, serve a hot tea with a cold dessert; serve an iced tea with a warm salad and so on.

BODY: Increase or add body to your tea with milk or honey and perhaps it might just stand up to heavy foods such as stews.

Some of the best pairings occur when you have a complement or contrast of 2 - 3 constituents. Pairing (complement or contrast) for 1 constituent = acceptable match Pairing (complement or contrast) for 2 constituents = good match Pairing (complement or contrast) for 3 constituents = excellent match

PAIRINGS OF VARIOUS CONSTITUENTS Here are some examples:

1

Nuwara Eliya Pekoe (high grown tea) + Chocolate Cake Component Match: Bitter tea and bitter chocolate Component Contrast: Sweet cake contrast with bitterness of tea Textural Contrast: Fine tannins with rich cake

2

Ceylon Souchong + Smoked Salmon Strong Flavours mirrored: Smoky tea and smoky, fishy dish Textural contrast: Cleansing astringency cuts through fish oil

3

Yata Watte (low grown) + Roast Lamb Textural Pairing: Drying puckering sensation of astringency with protein / fat of meat Component Match: Bitterness of tea with bitterness of seared meat (Maillard reaction)

4

Galle District Tea + Häagen-Dazs Strawberry Ice Cream Temperature Contrast: Hot and cold Component Contrast : Light, bitter tea and sweet ice cream Flavour Contrast: Honey nuanced tea and strawberry Textural Match : Rich, round tea and creamy dessert with strawberry chunks

4

#teainspired

5

Sencha Green + Red Velvet Cheesecake Body: Light bodied tea with a creamy, heavy cake Texture: Clean tasting green tea with cheese Component: Sweet savoury sour cake, unsweetened tea Temperature Contrast: Hot tea, cold cake

6

Earl Grey + Thai Green Curry Sensations: Rich, tea and chilli piquant curry Flavours: Aromatic tea and herb-aromatic dish Textural Contrast: Astringent tea cuts through rich coconut cream Temperature Match: Hot tea and hot dish, or use iced tea for contrast

COOKING TECHNIQUE CAN INFLUENCE PAIRING Depending on how food is prepared, you can influence its taste, texture, body and flavour so that you can find a suitable pairing with the tea you have chosen.

#teainspired

Steaming

Delicate and helps food retain freshness, flavour and texture.

Poaching

Gentle simmer, for a delicate dish regardless of flavourings.

Boiling

Does not add flavour but develops food textures.

Stir-frying

The delicate and light flavour of food is preserved.

Deep-frying

Well executed, the dish will not be oily or soggy but quite light.

Braising / Stewing

The flavours of the food are intensified.

Grilling

Intense smoky flavours from grilling.

Roasting

Flavours are intensified, concentrated and slightly caramalised, especially when there is a crusty surface.

Do not be afraid to venture pairings and explore possibilities.

Pairing relies greatly on an individual’s palate in an exploration of the natural interplay between food and tea. “In the end, goodness is for the mouth to decide,” wrote Lu Yu in the Cha l’ Ching, the classic “Book of Tea,” 789 AD.

A rare handmade white tea from the Nuwara Eliya region of Ceylon, grown at 6,000 feet elevation. The tender buds of the tea plant are handpicked at dawn, carefully carried in a silk pouch and entirely handmade. The buds are sun dried and carefully hand rolled, producing the characteristic silver, needle-like buds, with a velvety texture. Their pale brew is surpassingly light and delicate, elusive and mild on the palate with a touch of a ‘greenish’ seasonal high grown character in the finish. The beauty of the infused buds adds to the pleasure of this unique brew

Tightly rolled balls of tea in the style of White Dragon Eye, with natural Jasmine petals. The hand rolled tea infuses with water to reveal the young bud and tender leaf with natural Jasmine petals. A surpassingly light brew, pale yellow in the cup, makes this a tea that is as pleasing to the eye as the palate. The elusive floral character is a delight, combining perfectly with the characteristic lightness of white tea.

A handmade white tea, each leaf hand tied into a bow, with the appearance of a butterfly. The pale green leaf with prominent white tip, produces a light golden brew. A delicate and gentle cup, very slightly ‘woody complemented by fruitiness and a smooth finish. This is a tea for a connoisseur - very subtle yet sophisticated and refreshing.

WHITE LITCHEE NO. 1 HAND ROLLED TEA - rare, subtle flavour

2-3 mins

White Tea is the rarest form of tea, consisting of the bud of the tea leaf, the most tender part of the two leaves and bud which are hand-picked to produce tea. Song Dynasty ‘Tea Emperor’ Hui Zong relished white tea for having the most rare and subtle flavour. White Litchee is hand made from tea buds which are an inch or so long and then tied into a large ‘pearl’ which unfurls when infused. The enjoyment of this Very Special Rare Tea requires the observation of the pearl unfurling, one bud at a time, transforming over 30 seconds or so into a flower of buds.

This is a delicate and gentle tea, more earthy than typical green teas, yet more fragrant and lighter than most black teas.

The tea leaves are withered over pine or cypress wood fires producing a distinctive tarry note. This process originated in China’s Fujian Province. This is a very traditional and distinctive tea with depth, body and a prominent wood smoke character.

Tea grown in India’s Assam region is typically strong and malty. This Special Finest Tippy Golden Flowery Orange Pekoe is made in the traditional manner and is more delicate than Assam teas made in the CTC style. Wiry, dark brown leaf with some golden tip produces a coppery brown infusion and a bright, rich brew, with depth and medium strength. An earthy note enhanced by a touch of spice complements a refined and bright tea.

Tea from Nuwara Eliya, the highest elevation tea growing region in Sri Lanka, also called ‘Little England’, combines sophisticated flavour, with a delicate, golden infusion. This tea country ‘capital’ is at the centre of the four premier tea growing regions of Ceylon. Her teas are relished by connoisseurs for their brightness and distinctive flavour. This seasonal Nuwara Eliya tea is distinctive amongst Ceylon Teas, recognizable by the delicate and gentle character, the golden glow of the tea, and its soft aroma.

A princely, high grown Ceylon Single Region Tea, with a beautiful golden brew. This is a delicate tea, with a light and bright personality that displays a touch of the prized Ceylon seasonal character. It is the perfect Afternoon Tea, a wonderful accompaniment to light cakes, pastries and scone. It is a delight on the eye as much as on the taste buds. It should be brewed using spring water.

Ceylon Tea was recognized as the finest since the late 1800s when its bright, brisk and full bodied teas made tea and Ceylon famous throughout Europe. There was good reason for this as the island produces teas to please every palate - from the earthy and rich low elevation teas, to the light, delicate high elevation teas. This Ceylon Broken Orange Pekoe is the perfect Ceylon Tea, offering body, brightness, structure, strength and colour; the features that made Ceylon the home of the finest teas. A bright, brisk and bold tea. Intense and majestic, this tea offers body, strength, colour and pungency representing the essence of a fine Ceylon tea. Grown in the Dimbula Valley, the Broken Orange Pekoe leaf yields a burgundy coloured brew which is robust and strong yet bright with an energetic personality. The fine BOP grade of tea with its small particle size produces the strength in this tea.

Ceylon is renowned as the home of the finest teas in the world and for its ability to produce teas of extraordinary variety - full bodied low elevation teas grown at sea level right through to the light and delicate high elevation teas from the Nuwara Eliya region. Galle is a historic seaport and this Orange Pekoe 1 (OP1) is grown in the northern part of the Galle District. The leaf is clean, wiry and black, characteristic of a typical low elevation tea. The infused leaf reveals a coppery hue, yielding a bright, and pleasingly light brew. Deep golden orange in the cup, this tea has a malt, slightly raw aroma and a peaty finish.

A regal Ceylon Single Estate Tea. Flowery Broken Orange Pekoe from our Kataboola Estate in the Nawalapitiya Region offers clean, black leaf, with some silvery ‘tip’. Its infusion is clean and open, with a coppery tone indicative of brightness. The brew shows character and depth, with some strength, but generally mellow for a very pleasing yet bright tea. Teas from this region are known for their gentle, yet firm personality.

To the Chinese Lapsang Souchong, with its distinctive, oakey flavour, was a prized tea and the penalty for divulging its secret was death. Having somehow avoided this penalty, First Ceylon Souchong is a uniquely Ceylon Souchong, offering the same strong, smoky character, but with an interesting difference. Ceylon Souchong is a Single Estate Tea produced in the Galle District, and gently panfired using Cinnamon wood. The result a prominent woodsmoke note with a touch of juiciness and sweetness in its finish.

Considered the finest amongst China black teas, Keemun Tea, from the Qimen precinct of Anhui province, produces a deep red brown brew. The medium strength brew displays a hint of fruit and a gentle earthiness, with a touch of fruit. It is rounded off in its finish with a characteristic hint of orchid for which Keemun Tea is noted.

A special tea renowned in China for its medicinal value. Grown in the Yunnan province, Pu-erh tea has been popular in that region since the Tang Dynasty when Pu-erh was taken for relief of indigestion and more recently reducing cholesterol. This tea is semi fermented with a typically earthy taste. Its prominent woody character, with hints of herb and elemental flavour, is unusual amongst China Teas which are usually light and floral. This is the result of the post-fermentation process unique to Pu-Erh

The famed Island of Ceylon was sought by ancient explorers for its spices and, since the late 1800s, also for its tea. This tea is a combination of Ceylon’s finest produce – a Single Region Tea, grown at 4,000 feet elevation in the Dimbula valley, and Ceylon Cinnamon, known as ‘true Cinnamon’. When infused, the brew appears golden brown and offers brightness, medium body and a sweet piquancy. The woody note in Cinnamon, with its pervasive fragrance, is enlivening, and complements the tea perfectly with a spicy finish.

A delicious union – a medium strength Ceylon Single Region Tea from the Nawalapitiya region, fused with the bittersweet flavor of Italian Almond. Fragrant and rich, the almond and the mellow, malty note that is typical of teas from this region, combine in indulgent harmony, to produce a deep amber infusion. The tea is enveloped by a deliciously piquant aroma of almond, producing an engaging brew with a nutty, sweet edge and mellow but prominent character.

Ceylon was famous for centuries for the quality of her spices and her tea. This is an energetic and authentic combination of the two.The spice ‘hotness’ of Ginger partners beautifully with a Ceylon Single Region Tea grown at an elevation of 5,000 feet, to offer a deliciously different and refreshing tea. Ceylon Ginger with its prominent flavour is prized as a digestive aid and as a ‘pick me up’. The tea and spice are in authentic harmony with the fresh tea, balancing the piquancy of the Ginger to produce a reviving and enjoyable tea.

A gentle fruity aroma with the softly sweet fragrance yielding an elegant and bright tea with a touch of peach. The high grown Ceylon Pekoe from Dilmah Tea Gardens in the Dimbula Valley, produces a medium bodied tea that deliciously complements the soft flavour of peach.

A fragrant tea with notes of Mango and Strawberry combining in fine balance with the high grown Ceylon Pekoe Leaf Tea. A refreshing and deliciously different composition that combines a bright, medium bodied Ceylon Tea with the sweet, fruity notes. A harmonious combination that is aromatic and pleasingly different.

A bright Ceylon Single Region Tea from the Western High Elevation region, finely infused with the tart and woody sweetness of Pomegranate, then beautifully complemented with the soft, fruity sweetness of Blueberry. In combination, the berry note in the two fruits mingles harmoniously with the brisk Ceylon Pekoe. Bright, medium bodied with notes of fruit and a wonderful fragrance, a deliciously piquant tea.

A bright Western High Grown Ceylon Pekoe in a wonderfully aromatic marriage of flavours. The medium bodied Ceylon Pekoe is deliciously complemented by the complex bouquet and fusion of Lychee, Almond and Rose in combination. The soft sweetness of Rose dominates on first sip, giving way on the palate to Almond, eventually embraced by the fruity, fragrant Lychee. A delightful tea with flavours that offer a wonderfully aromatic and delicious experience.

A bright & elegant Ceylon Western Pekoe from the Dimbula Valley, in a fragrant fusion with flavours of Rose, Marzipan and Mint. The sensuous Rose offers a floral note whilst a nutty Marzipan and Mint complete the tea. This handpicked Ceylon Single Region tea gently complements the trio of flavours in an aromatic Christmas tea

Savoured as a refreshing beverage since Roman times, our pure Peppermint infusion is naturally caffeine free and ideally enjoyed after a meal, to cleanse the palate and aid digestion. The natural peppermint oil in the leaves imparts a menthol aroma and adds sparkle to the infusion of the leaf, making it a cooling and energizing experience. Try the infusion of peppermint leaves with a touch of honey as a mild and delicious accompaniment to your day. Also enjoyable taken chilled or as a sorbet.

Chamomile is a gentle and relaxing herb enjoyed by Europeans as a tonic for centuries. The daisy-like Chamomile flower has an uplifting aroma reminiscent of apples. Its subtle flavour is concentrated in the flower and this infusion therefore offers the infusion of the Chamomile flower. Chamomile has a serene character and wonderful aroma. It is often enjoyed as a gentle, naturally caffeine free infusion in the evening.

The English have enjoyed rosehips as a herbal beverage for centuries. Its characteristic tart flavour is softened here with Hibiscus flowers. Reputedly a rich source of natural antioxidants, Rosehips and Hibiscus Flowers produce a red infusion with a strong fruity aroma. The beverage is rich in Vitamin C and is best taken without sugar. Try it with a touch of honey to keep the infusion all natural.

Rooibos is a traditional South African herbal beverage that produces a clean and pleasant infusion. It is naturally caffeine free and said to offer potent health benefits. The flavour is mild and slightly nutty, with a touch of sweetness. Rooibos infusion can be enjoyed with a twist of lemon or sliver of ginger. Try honey as a natural sweetener.

A special infusion of fruit and spice, with a dark red intensity producing a rich combination of forest fruit and a princely Ceylon Clove. The tangy berry dominates with its light floral, and woody notes, leading the palate to the very mildly spicy sweetness of natural clove. Intense, caffeine-free with a fragrant and naturally sweet finish.

With the fragrance of freshly baked apple pie, this naturally caffeine-free infusion blends apple and cinnamon with the summery, floral character of elderflower. The sweet, sour, floral and spice notes balance elegantly into a deliciously complex natural infusion. Gentle and aromatic with a lingering floral finish.

Richly fragrant when brewed, the natural infusion is delicate with a light, minty sparkle, leaving the palate refreshed with the gentle piquancy of clove. The combination of herbs and spices produce a complex and delicious infusion that is naturally caffeine-free. Bright and medium-bodied with a minty finish.

Golden orange colour. Elegant structure, like a fine Champagne. Smooth, with a pinch of spiciness and a fine aroma with some peach and other citrus fruit. High grown (6,000 feet above sea level), delicate infusion, light and mellow. In the style of fine Champagne!

Medium brown with tints of orange. An almost savoury taste. Fruity, exotic perfume with a ‘balance’ in taste from the ample tannins, strong but not brooding. Comparable to a Pinot Noir wine made from grapes grown in cool climates. A tea that is delicate, radiant and elegant. High Grown (4,000-5,000 feet above sea level). Full-bodied, rounded and refreshing. In the style of Pinot Noir

An immediate sensation of strong, rich and full bodied flavor with an extra dimension of complexity and extract leading to a very satisfying mouth feel. Mid Grown (2,000-3,000 feet above sea level). Strong, rich & full-bodied. In the style of Shiraz!

The expressiveness of a good Cabernet Sauvignon can be experienced in this dark brown tea. It tastes round, full, almost muscular, and juicy, with elements of ever so slightly sweet – spices and bayleaf. Very restoring indeed. And, like a good Cabernet, with a long, harmonious finale. Low Grown (upto 1,000 feet above sea level). Heavy, robust and deep in colour. In the style of Cabernet Sauvignon
