W Abu Dhabi – Yas Island makes its highly anticipated mark on Abu Dhabi’s hospitality scene. The curtain has been lifted to unveil the best of Hollywood glamor at the newly opened Paramount Hotel Dubai. A seasoned Chef with over a decade of experience, Ezequiel has been working with Paramount Hotel Dubai since the pre-opening phase. Airbnb Experiences Launches “Cooking”

Two things that are guaranteed to bring a smile to our face, food and travel (in that order) so imagine our joy when we found out that Airbnb have launched Cooking on Airbnb Experiences - a brand new category of bookable experiences that gives people access to recipes and traditions typically reserved for friends and family in local communities around the world.

To ensure that no two recipes are the same, each experience has been vetted against guidelines inspired by Slow Food, a grassroots organization whose mission is to prevent the disappearance of local food cultures and traditions. Through this vetting process, Airbnb have verified that each host of an Airbnb Experience communicates the unique nature of every dish through their personal stories, and has proven a deep knowledge of the heritage of the cuisine that they share. To complement this partnership, Slow Food is also introducing over 20 special Airbnb Cooking Experiences that perfectly align with its principles of good, clean and fair - including Walk Cook & Eat in the Amalfi Coast and ‘Let’s Rescue Food’ in Cartagena, Colombia. We caught up with Vineet Bhatia, Michelin star chef and one of India’s greatest exports at his new restaurant Rasoi by Vineet at Jumeirah at Etihad Towers, Abu Dhabi.

What you didn’t see was that it took the panel 1.5 hours to decide the winner. But ‘Twist of Taste’ remains my favourite as I got to host it with my wife.

Leanne: Tell us about your new restaurant, Rasoi by Vineet, how does it vary from other restaurant concepts you have?

Leanne: Talk us through your journey in becoming a chef, is there anything you regret?

Vineet: Every one of our twelve restaurants are different, it’s like a child, they all have their own identity. All our restaurant layouts vary, when you come to Abu Dhabi you have a sense of space. Similar ethos, in regard to food styling but even the décor varies greatly, we don’t do copy paste, that is very important. When we came to Abu Dhabi it was a very big space, many designers recommended we make cabanas with lots of closed off spaces, but we felt that we wanted a large open colorful space. All the restaurants we have are an extension of our living room, it’s a home away from home. Our Abu Dhabi restaurant is very vibrant with prints on the sofas, bright cushions and graffiti art on the wall, it’s a fun space.

Vineet: I wouldn’t change anything, and I wouldn’t mind doing it all again, it was a hard grind, but it got me to where I am. I originally wanted to be a pilot, my brother and I would walk home from school and pass the airport. I loved to watch the planes. In India you can apply for defence exams, when I applied my first choice was the air force but at the final interview they offered me army or navy, and said I was too short to fly a plane. So, I ended up going to hotel school. All my family were from a professional background, so they thought I was joking when I said I wanted to go into hospitality. I remember the movie with Tom Cruise, and I wanted to work behind a bar and be that cool, but I was too short, so I was put in the kitchen. The kitchen was where they put all the discards. But, when I walked into the kitchen I was so impressed I said I want to learn to cook, this was in 1985. I picked it up very fast. The first kitchen I worked in is now my restaurant in the same hotel, the Oberoi in India. Imagine I started pealing potatoes in that restaurant and now it’s my restaurant.

Leanne: How important is Abu Dhabi as a location? Vineet: Very. We have been looking for a space for a while now. We are really happy to have found such a great location in Abu Dhabi. Jumeirah at Etihad Towers doesn’t have an Indian restaurant, so we are adding value to their offering which is important to us. We’ve been looking for an Abu Dhabi location for years and had people approach us but never found a good fit until now. At Jumeirah at Etihad Towers we liked the setup, location and room, so it felt right. It has taken 15-16 months to get the restaurant up and running.

Leanne: London cemented your career, is London still a big focus for your brand?

Vineet: In 1993 I moved to London. I had four options and London was one of them, I choose London because one, Heathrow airport, I could see planes and two, the weather was cold, I love the cold grey weather. What I also enjoyed was Netflix’s ‘The Final Table’ that was tough. The calibre of talent was impressive which made judging the contestants tough.

Vineet: The star helps, but I don’t think any level headed chef would do a restaurant to get a star, you do restaurants because you believe in them. Getting a star is not easy and keeping it is even worse. Michelin stars are nice to have but it shouldn’t change you as a person. My motivation is that I want to leave something good behind for the industry and those in it. As for our recipe for success, we believe in people and help nurture them, many of our team have been with us for years and have grown with us, that helps. Also having a vision and staying ahead of the curve. I came to Dubai when it was very much up and coming, I could see the potential.

Vineet: Yes, I hold back. I do tend to lash out sometimes, but I tend not to so much on social media. Long-time residents of Dubai may already know the secret of Meliá Desert Palm, and horse-loving visitors need look no further for equine-related activities. A quick 20-minute drive, we arrive at the sanctuary of the palm-lined road to the main building of the resort. With a suitable amount of horse art and sculpture in the main building and check-in area, we’re given keys to our nearby Polo Suite. One of the things that immediately stands out to us is the amount of greenery and planting across the property. Lush bougainvillea, bubbling fountains, and clean slate marble pathways mark this as unique and private property. We also love the truly boutique quality -- there are only 40 rooms and villas available, so the hotel never feels crowded. Our suite is spacious and includes a large freestanding tub, and an outdoor porch overlooking one of the main polo fields. We’re steps away from the pool and other amenities of the property.

After exploring our room, we head to the front desk, and a golf cart is arranged for us. It’s a short drive to the stables and Desert Palm Riding School. I meet with Ms. Kiara Hinterdorfer, the General Manager of the riding school. We discuss what my comfort level is with riding (I rode for most of my childhood, but the instructors can start with any degree of riding capability, for both adults and children). After ensuring I have the proper safety equipment for my experience (the riding hat was provided by the stables, and I wore jeans and flat bottomed boots), I met my horse, the lovely bay, April. The stablehands were helpful in patiently assisting me to get my stirrups arranged, then we were out for a tack around the massive property. Kiara was fantastic as an instructor -- patient, professional, and she had plenty of practical advice. If possible, depending on the schedule, I would recommend riding near sunset.


Thanking Kiara and her team for a wonderful (and educational) evening, after cleaning up, we opted for dinner at onsite Rare, just a few steps from our Polo Suite. Although a pre-dinner drink at the Red Bar was tempting, instead, we’re seated by the window of the restaurant. In cooler months, we could easily see ourselves enjoying dinner or drinks on the extensive terrace, which also has stunning views of the polo fields and on clear nights you can see the twinkling lights of the Burj Khalifa.

combinations of texture, mixed with the creamy yolk of the egg, make this a memorable dish. Next up is a beautifully cooked Cod, served with delicate greens. The piece de resistance is a lovely portion of Ribeye Steak, delicately sliced, and served with some grilled vegetables. We’re full, but not too full, as an individual Cheesecake with dulce de leche arrives at the table. Service is attentive, and we’re happy with the pacing of the meal.

It was also a delight to speak with Chef throughout the meal. Having visited Rare three times in the past few years, we feel When asked if it’s okay if the new head of the kitchen, Chef Gaston Silva Herrera, can send out dishes, we’re happy to oblige. Gaston is the overall best fit for the restaurant and would look forward to future meals with him at the helm. Served with freshly baked bread and homemade butter (three kinds!), we’re first treated to a bowl of moreish Mushroom Soup. The portion size is perfect, and we appreciate the warm start to the meal. Next is our favourite course, the deceptively simple (and yet absolutely delicious) Quinoa and Egg. Something about the December | 33


For larger groups, we recommend The Family Style approach, a menu which includes Tapas, Salads, Entrees, Sides, and a Dessert Tasting. The following morning, after a workout in the wonderfully modern gym, we enjoy a late breakfast al fresco by the pool at Epicurean. While the fare is a straightforward menu (with both indulgent and healthier options), we’re happy with a beautifully prepared Avocado Toast with Eggs. With that, it’s back to the room for one final look at the property, and then checking out and driving back to reality. Would we return to Melia Desert Palm? Yes! As busy and hectic as Dubai can be, it’s good to know that a private sanctuary is just a few minutes away. Personally, we love the ultimate privacy of the one or two-bedroom villas -- complete with private pools, but

not every day is payday. Of course, after our amazing experience at the stables, are we tempted to take up horseback riding again? We are! For the size of the property, Meliá Desert Palm offers several unique experiences -- spa treatments, Friday brunch and polo matches, all of which are worth stopping by. Few properties in the world evoke glamour and history like the Beverly Hilton. Located in the iconic Beverly Hills, the Beverly Hilton is close to the high-end shops of Rodeo Drive. Opened in 1955, this hotel has seen countless celebrities walk through their doors, as the property is home to the famous Golden Globe Awards, taking place every winter. The location is an excellent jumping-off point to explore Beverly Hills or as a respite from the hectic chaos of the city. On arrival, we walk through the bustling lobby, nearly at its peak on a Sunday morning. Although our room isn’t quite ready, our bags are whisked away (to meet us in our room once it’s

prepared -- I receive a call from reception to advise me once my room is available). My guest and I head downstairs to the iconic Aqua Star pool, where we decide to try the weekend brunch at the all-day dining outlet, Circa 55. Underneath palm trees, our waiter points us towards the inside buffet stations and outdoor grilling stand. For Middle Eastern guests used to a Friday brunch, the focus at Circa 55 is much more based around breakfast foods (we approve). There is also a cold station for seafood, child-friendly offers for younger guests, and an array of desserts. Our waiter is seamless in his topping up of beverage (yes, for a Sunday brunch, we felt bubbles were appropriate). The scene is eclectic, and much like the lobby, the people watching is unique. Our suggestions are limited -- perhaps we’re used to the liveliness of a UAE Friday brunch, but we would love to hear a DJ, or a more exciting soundtrack. The brunch, whether or not you are a guest of the hotel, is an easy way to spend a leisurely weekend afternoon. With a variety of room categories, guests can take their pick on which style and space work for them. We’re placed in a newly refurbished Premier King. Hallways are long, and decorated in a soft blue palate, with subtle stars and other designs. Our room looks back towards the hills, rather than towards the more recognizable buildings and stores of Beverly Hills. While on the smaller size, the room is immaculately appointed. We love the clean and minimalist approach, but think the point is taken a bit far with a coffee machine being something on request, and not standard. We love the incredibly soft linens and L’Occitane toiletries. We appreciate the USB and power ports near the bed and the iPad, where we can control just about everything. This technology is especially helpful when we’re able to press a button and ring through to valet to have our car waiting. Speaking of valet, we love the attention to detail in the form of cold bottles of water placed in our car when it pulls up. 38 | Dining and Nightlife Middle East

The hotel is also home to Upgrade Labs, which lists itself as the ‘first-ever biohacking human upgrade facility.’ No, we didn’t get to try any of the treatments, but there are over 15 customized high-tech experiences for the brain and body, should you be interested. While we love the Beverly Hilton and all the history the hotel represents, on a return trip, we might just have to check out the newly opened neighbour, the luxurious Waldorf Astoria. As we enter Butcher and Still, the popular steakhouse at the opulent Four Seasons Hotel Abu Dhabi, we feel as if we’ve just stepped back in time. Transport yourself back to 1920s Chicago, gangsters ran the streets and speakeasys were the trend. This prohibition era themed restaurant boasts leather banquettes, rich wood floors, specially selected prime cuts of American beef and prohibition -era beverages, shaken to perfection. The restaurant is full of customers, which is impressive considering it’s a weekday. Wanting to be amongst the hustle and bustle we take a seat next to the open kitchen. As we browse through the menu the team presents us with warm truffle bread, the engraved Butcher and Still butcher’s knife that is presented alongside the bread is a nice touch. Still piping hot, we enjoy a few bites before placing our order.

The portion is extremely generous, what seems like a mountain of salad is topped with a thick layer of finely grated parmesan cheese and voluptuous crisp to the bite croutons, delicious. Wanting to move away from the obvious, for mains, I order the Lobster Thermidor with mushrooms and gruyere cheese. My dining partner, an avid steak connoisseur opts for the Ribeye 14oz 400g Chicago Style Prime Steak. For sides we select the Mashed Potatoes, Crab Mac and Cheese, Steamed Broccoli and Roasted Cauliflower. The Ribeye is full of flavour, the knife glides through the succulent cut, and the taste is superb. Meanwhile I am finding my way around the Lobster Thermidor. The thick lobster meat works perfectly with the mushrooms and gruyere is an excellent cheese, it offers a slightly salty taste.

Later we meet the man behind the menu, Chef Marshall Roth, full of passion and enthusiasm, chef insists we try the desserts, it doesn’t take much to convince us. Whilst we wait for the desserts we go for a stroll around the restaurant. Keeping with the speakeasy theme chef shows us a secret entrance to the restaurant, which would have been similar to the unmarked doors of a speakeasy back in the 1920s. We walk through a narrow corridor lined with images of famed gangsters like Al Capone. We finally get to an elevator which takes us down to a secret dining room and bar. The secret dining room is ideal for a group of guests wanting to enjoy themselves in their own privacy. Also, for a great photo op, ladies are able to wear a selection of jewellery that would have been worn at the time from the private collection at Butcher and Still.

Butcher and Still is a fantastic restaurant, from the design to the menu, the attention to detail is evident, nothing here is coincidence, everything is thoroughly thought through. If you are looking for an all-out American experience from the cuts of beef to the portion sizes and even chef himself, Butcher and Still will give you that and so much more. Our tip leave room for dessert, the Cherry Pie will change your life, and quite possibly your waistline. New Wicked Mexican Eatery, Chingón

Chingón, a Mexican slang word meaning ‘wicked’ or ‘cool’, is the newest sophisticated modern Mexican eatery to open, located on the rooftop floor of Grand Millennium Hotel Business Bay. At the heart of Chingón lies an expertly crafted experience bound to excite the senses. With co-founder and chef Rene Millan bringing his Mexican culture to life though his menu, Chingón is set to be a welcomed addition to Dubai’s dining and nightlife scene. Chef Rene Millan has created an extensive menu bursting with creativity, passion and flavour. Chingón starts off its offering with a raw bar selection that includes Mexican twists on a variety of fish, Crudo and Tartares, whilst also enabling guests to choose from a plethora of dishes including Seafood Tostadas and Tiraditos, Traditional Tamales, Grilled Octopus and Whole Roasted Baby Chicken, as well as a healthy selection of both vegan and vegetarian options. Serving larger portions, guests will be encouraged to embark on a culinary journey of traditional family style dining and can even order from a specially curated taco menu which features the signature Chingón Taco “El Dorado”; a black corn tortilla that is pressed with 24k Gold Leaf, with a thick slice of A9 Wagyu and finished with fresh truffle. Of course, there are also masterfully created beverages, each with a story or link to the ancient empires of Mesoamerica and South America. This menu has a focus on Agave and Cane beverages which are meticulously crafted and prepared using Mexican herbs, spices, fruits and other ingredients.

At Chingón food isn’t just about serving fancy dishes, chefs dedication extends further to sourcing good quality, authentic produce. The venue pays homage to Mexico and the bounty of its lands as many of the ingredients are sourced from one of the country’s largest family farms. From seedless lime, hass avocado and blue corn masa flour to an abundance of chilis including dry ancho chili, hoja santa and the renowned habanero pepper, every flavour is guaranteed to impress. Behind every corner an experience awaits to be uncovered as the symmetry in the interior design is interrupted with pockets of warm light, textures such as rope, green foliage and plant boxes, and a story of Mexican heritage awaits to be discovered. Begin your evening at the bar, with a beverage, set in front of a wall lined with shelves of metallic, golden skulls and a line of dancing flames. 99 Sushi Bar and Restaurant has established itself as one of the most significant references of Japanese haute cuisine within the UAE. Today we are visiting 99 Sushi Bar and Restaurant at their Abu Dhabi outlet, located within the stunning Four Seasons Hotel Abu Dhabi.

The dĂŠcor of the restaurant can be described as modern and sophisticated, with plush velvet seating, golden tinted lighting features, an open sushi bar and a romantic outdoor terrace. We take a seat indoors next to the window, allowing us to enjoy the view across the canal.

Whilst we are enjoying the Tuna Tataki the Lobster Maki arrives. Note, dishes arrive to the table once ready at 99 Sushi, which means they always arrive fresh. Should you want the pace slower or faster you may advise your server, for us the pace is perfect. The Lobster Maki with wakame seaweed, cucumber and yuzu is served as eight pieces. The thick lobster meat pairs perfectly with the yuzu.

We order a portion of salted Edamame to start, allowing us to leisurely browse through the menu and make our selections. A few new dishes have recently been added to the menu such as Lava Rock Grilled Scallops with umeboshi sauce made from preserved plums and mentaiko, the Obsiblue Carpaccio, that proves that the 99 Sushi team never compromise on their choice of premium produce and the Seared Salmon served with yuzu and shiso guacamole, which hints at the Spanish heritage of the restaurant.

Next, the Golden Bricks, my favourite dish since 99 Sushi opened and one, I am happy to see is still on the menu. A light toro tartare, avocado, tobiko and golden leaves, a playful dish brimming with textures and flavours, and of course would we be in the UAE if we didn’t have a touch of gold somewhere on the menu?

The star of our dining experience has to be the 99 Black Cod, au gratin with two layers of red miso. I struggle to find the words to explain just how sensational this dish is. The black cod flakes off the fork and as it begins to melt in our mouth the rich flavours of the red miso come forth and reignite our palate. Exceptional.

99 KŌ Sushi Bar, the group’s flagship restaurant in Madrid, was recently awarded a Michelin star in the 2020 edition, in appreciation of its two sampling menus based on hot food and traditional sushi, respecting Japanese flavours and techniques. Anantara Spa located within the tranquil Eastern Mangroves Hotel and Spa by Anantara promises an afternoon of relaxation. The spa has a separate side entrance allowing you to by-pass the hustle and bustle of the popular hotel and instantly begin your relaxation journey. As we enter the spa, we are warmly greeted by the team who explain the treatments on the spa menu and ask us about our areas of concern. We take a moment to review the menu. Eventually we decide to try the 90-minute Anantara Signature Massage and 90-minute Arabian Massage. Before we enter the treatment room, we are presented with a selection of fragrant oils to select for our treatment. Each oil has a different benefit from stress relief, muscle relief to relaxation. We select the relaxing massage oil made with lavender, chamomile and bergamot, perfect for relaxing muscles and easing insomnia. We then make our way to the treatment room, here we are greeted by the therapists, who are professional and welcoming. The treatment room has authentic Thai and Arabic elements, deep purples and golds add a sense of luxury. The changing area is light, spacious and separate to the massage area allowing privacy for each guest. Our treatment begins by our therapists scrubbing our feet with salt and rinsing with milk. Shortly after the treatment begins, the Arabian Massage is a medium to firm pressure with a focus on the body’s pressure points, using fore-arm techniques and Thai stretches, this massage releases muscle tension and pain and enhances vital energy levels. The Anantara Signature Massage is a light to medium pressure, using a signature blend of oils, combined with wringing, kneading and stretching techniques, the

massage stimulates the circulation and promotes deep relaxation of the muscles, whilst restoring the flow of energy along the meridian lines. The spa offers a wide variety of treatments that caters to guests with various needs, from facials, massages to slimming treatments.
