Currently the hottest address in Abu Dhabi, Saadiyat Rotana Resort and Villas is making waves across the hospitality industry. This property offers plush interiors, extensive dining options, a large swimming pool, a pristine beach, a spa and the ultimate clubhouse for youngsters, all whilst still managing to incorporate a warm Rotana welcome. Tonight we are dining at Saadiyat Rotana Resort and Villas signature restaurant, Turtle Bay Bar & Grill. This pool front restaurant offers guests the opportunity to sit indoors amongst the cool interiors and enjoy views of the open kitchen or outdoors on the deck next to the water feature. Once open guests will also be able to conclude their dining experience at the stunning rooftop bar. The weather is perfect this evening and we take the opportunity to sit outside on the deck. Turtle Bay Bar & Grill serves a selection of surf, turf and grilled delicacies however the menu also boasts a range of splendid ceviches and chilled seafood options. During the day guests are invited to relax and enjoy the views whilst in casual attire, come the evening the restaurant is transformed, the menu becomes more upscale, with mouth-watering grills and locally-caught fish amongst the star dishes. To start we select the Lobster and Scallop Ceviche with Coconut, Tamarind and Chilli and the Poached Lobster Salad and Herb Crème Fraiche with Asparagus, Edamame, Peas and Leeks. Both dishes taste sensational, but the Lobster and Scallop Ceviche is divine. The juxtaposition of the ingredients work amazingly well, the understated creamy coconut contrasts the sharp chilli tang. For our mains we select the Angus USDA Prime, USA 350g Tenderloin, served as ordered, medium-rare and the Scottish Salmon. The Tenderloin is thick and juicy, this cut offers very little fat, exactly how we like our steak. The Scottish Salmon tastes fantastic but what really impresses us is the bespoke way we can order our Salmon, we opt for baked throughout and flash pan seared for a few minutes, to ensure a crispy skin. It’s this level of attention to detail that separates a great dining experience from a good dining experience. For sides we order the Sour Cream Mashed Potatoes and Grilled Asparagus, both are very generous portions. To conclude we enjoy the Raspberries and Lemon Creme Brûlée and the Chocolate Fondant. The Chocolate Fondant hits the spot, the culinary team have managed to thin the Fondants spongy exterior just enough to contain its layers of oozy chocolate. The Brûlée is sublime, thick and creamy, the raspberries add an element of sweetness that does well to refresh the palate. It’s not very often that we find a restaurant that is able to deliver high quality seafoods and steaks under one roof, usually we find one is better than the other, but not at Turtle Bay Bar & Grill. Here the culinary team ensures that whatever you order from the menu will be sure to tantalize your taste buds. Smoking Doll

Today we are dining at Smoking Doll’s, Boutik Mall, Al Reem Island outlet. Smoking Doll, offers guests the opportunity to indulge in fine Thai and Japanese cuisine, as it effortlessly brings the Far East to the Middle East. Thai dishes offer the perfect harmony of sweet, sour, salty and spicy flavors, whilst Japanese dishes will excite you with their tasteful creativity, both are guaranteed to thrill your taste buds. With elegant yet modern interiors inspired by origami and ancient hand fans, Smoking Doll offers a minimalistic casual atmosphere.

We move onto our mains, the Sushi. We select The Doll Rolls, Spider Rolls and California Rolls, classic Maki rolls served in eight pieces. The Doll Rolls are our favorite, made with Tempura Prawns, Unagi, Wasabi Mayonnaise, Togarashi and Cucumber. For those perhaps trying sushi for the first time we’d suggest keeping it simple and ordering The California Rolls which are made with Crab, Avocado, Roasted Sesame and Tobiko. Offering an alternative are the Spider Rolls, made with Crispy Fired Soft-Shell Crab, Avocado, Cucumber, Mayonnaise and Tobiko. These are much more elaborate.

As we enter the restaurant we are warmly greeted by the waitress and shown to a table by the window. For starters we order the Bangkok Tom Yum soup, a Traditional Hot and Sour Soup with Lemongrass and Lime Leaves, we opt to have it with prawns. The soup has just the right consistency, despite its amber appearance the soup is infused with lemongrass.

We also enjoy the Pad Nampeung, Honey and Soy Stir Fry, Morning Glory, Carrots and Broccoli, we order ours with tofu. Don’t be fooled into thinking this dish is bland, chef has brilliantly balanced the honey and soy to give this dish a luscious flavor.

Our next pick is the Satay Nuea, Sate Marinated Beef Strips with Peanut Sauce. The Satay Nuea is delicious, we dip the thick chunks of beef generously into the peanut sauce, take a bite and allow it to flake off into our mouth. The classic chicken satay is available for those who prefer chicken. Keeping it healthy we decide to try the Som Tum Thai salad, A Spicy Green Papaya Salad with Beans, Tomato and Chilli. Admittedly first time round we underestimate just how spicy the salad would be and we send it back to the kitchen. Once the salad re-arrives it is much better and tastes superb. The team are very accommodating to our requirements.

Being located inside a mall doesn’t take away from the quality of the food, it just means you can enjoy a more relaxed dining experience. If you are looking for somewhere to enjoy a selection of great Thai and Japanese cuisine, without breaking the bank we would recommend Smoking Doll. Hakkasan Set in the majestic Emirates Palace, Hakkasan Abu Dhabi comprises of a restaurant, bar, lounge, four private dining rooms and a newly launched terrace. The new 108-seat terrace boasts a stylish bar area complete with a bespoke beverage menu and laid-back cabanas overlooking the city-skyline. Following the extension, the Abu Dhabi restaurant is now the biggest Hakkasan outpost in the world. Inside, carved wooden screens and latticing echo the rich interiors of its London flagship restaurant. The main dining area is crafted to offer an open space, yet small panels give those seeking privacy the option. Blue dimly lit walls give the restaurant a cool and trendy vibe. The menu is a modern interpretation of authentic Cantonese cuisine, created by world-class Michelin-starred chefs: Executive Head Chef Tong Chee Hwee and International Executive Chef Ho Chee Boon. We begin with the Vegetarian Steamed Dim Sum Platter, Crispy Duck Rolls and Sesame Prawn Toast. The Vegetarian Steamed Dim Sum Platter comprises of four varying flavours, Yam Bean Carrot Wrap, King Oyster Mushroom Dumpling, Chive Dumpling and Sweetcorn Dumpling. The Dim Sum is pleasing, but we really enjoy the Crispy Duck Rolls and Sesame Prawn Toast. Perfectly pulled duck is enclosed in the large crispy rolls, making each bite as flavourful as the next. The Sesame Prawn Toast tastes exceptional and its unique presentation shows off the culinary teams’ innovative style. Up next another vegetarian dish this time from the salad section of the menu, the Sesame Lettuce Salad with Yam Bean and Pomelo. The salad offers a movement of subtle flavours to bitter zest, light and flavourful this salad would serve well as a lunchtime dish.

For the main course we are surprised to see such a wide selection of great options. From the fish section I opt for the signature Charcoal Grilled Silver Cod with Bubbly and Chinese Honey whilst my dining companion selects the Charcoal Grilled Wagyu Rib Eye Beef with Sea Salt and Lime Dressing. To accompany our mains, we select the Edamame Egg Fried Rice. The Charcoal Grilled Silver Cod with Bubbly and Chinese Honey leaves us in awe. The fish beautifully flakes off the fork and the Bubbly and Chinese Honey adds a deliciously sweet taste, whilst the Charcoal Grilled Wagyu Rib Eye Beef focuses more on the texture, we are taken on a journey of mouth watering Wagyu moments. The Edamame Egg Fried Rice is an ideal side as its relaxed flavours do well not to overwhelm our palate. For dessert, we select the Apple and Vanilla Crème Brûlée with Apple Sorbet and the Lemon Tart. The Lemon tart is sensational perfectly zesty without the bitterness, this is the perfect dish to end our dining experience. If its been a while since you visited Hakkasan Abu Dhabi we would suggest its time to go back, since our last visit the food and service has improved tremendously. Introducing our readers to a unique new dining experience to Abu Dhabi, The Warehouse, grape and tapas bar, featuring stylish, urban chic interiors, a lively roster of global grapes and an irresistible menu of small plates, sure to tempt even the most discerning palate. We make our way through the small winding corridor and emerge into The Warehouse where we are warmly greeted by the team and shown to our table. We are introduced to the menu by the team who share their recommendations with great enthusiasm. The food options are clearly displayed on one page, as the concept is sharing style we decide to order a wide variety of dishes. The light bites offer irresistible options, we opt for the Maple Glazed Smoked Duck with Rucola, Citrus Segments, Toasted Peanuts and Balsamic Vinaigrette, the Avocado Hummus with Vegetable Crudités and Pita Crisps and the Spicy Tuna Poke Tacos with Toasted Sesame, Soy Ginger Salad and Red Radish. The Spicy Tuna Poke Tacos are delightful and by far our favorite dish, the crisp taco shell adds the texture whilst the marinated tuna filling brings all the flavor you could ask for. The Avocado Hummus is a must for avocado lovers, rich and creamy we cannot resist slightly overindulging. The Classic Cheeseburger with Angus Patty and Dill Pickles comes served as six mini sliders we have to pull apart, again emphasizing the sharing concept. To compliment the Cheeseburger, we decide to order some fries. Options range from Halloumi Fries, Battered Parmesan Fries and Sweet Potato Fries. We eventually decide on the Sweet Potato Fries with House Dips. It’s refreshing to see that even simple fries come in so many options at The Warehouse. From the Fondue section of the menu we choose the Classic Swiss Fondue with Gruyere and Emmental Cheese served with all the filings. The Fondue tastes delicious, the rich and creamy cheese offers a fragrant aroma, given the richness of the cheese we opt for the bread as our dipping option. The Fondue is great fun and makes for a talking point during the evening. From the Sweet Endings, we select the Strawberry Yum, Two Chocolate Dipped Strawberries, Popping Candy, Melted Chocolate, Whipped Cream and Strawberry Ice-Cream, served on crushed ice in a wooden box, make for a posh ice-cream sundae. This dish is yummy and the perfect ending to a great dining experience. Overall the food at The Warehouse is fantastic. Don’t let the tapas style fool you, portions are generous and more than enough to be shared by two if not three people. The menu is dynamic and offers unique and creative tapas style options ensuring something for everyone. Located at the heart of Abu Dhabi’s business district, the 4-star Pearl Rotana Capital Centre is a modern deluxe hotel. Inspired by Mediterranean-style dining, paired with warehouse-stimulated design, The Warehouse at Pearl Rotana Capital Centre is sure to become the hippest hangout in the city. SushiSan Thursday Night Fusion Brunch

Located at the Holiday Inn Abu Dhabi, SushiSan boasts bold red walls, cozy hidden booths and an open sushi counter, making this one trendy Japanese eatery. Tonight, we are visiting SushiSan to try their Thursday night Fusion Brunch. As we enter SushiSan we instantly get into the weekend mood, the DJ is spinning the tunes and the atmosphere is electric. We are welcomed by the team and escorted to our table. Our waitress explains the concept to us, we are shown a menu which features eight Maki Roll options and three Nigiri options, we can select either three or six pieces of each option. Guests simply tick their preferred sushi option and how many pieces they would like, and the talented chefs freshly prepare the selected sushi. Whilst we wait for our fresh sushi to arrive we have the option to graze from the open Asian buffet. The buffet features an array of delightful Asian delicacies from Asian Slaw, Crab Stick Pizza, Ramen Soup, Prawn Tempura, San Chow Bow, SushiSan Mini Salmon Burgers, Shanghai Dumplings, Miso Soup and Vegetable Spring Rolls to name a few. Not wanting to overindulge before the sushi arrives we select a small helping of the Prawn Tempura and Vegetable Spring Rolls both are delightful and piping hot. Shortly after our bespoke sushi platter arrives. Our selection consists of three pieces of five varieties of Maki Rolls and two varieties of Nigiri Rolls. The Maki Rolls selected are, California Rolls with Avocado, Cucumber and Crabstick Tobiko, Philadelphia Rolls with Smoked Salmon, Avocado and Cream Cheese, Tiger Tempura Rolls with Carrot, Cucumber, Parmesan and Sesame Seeds, Dynamite Rolls with Tempura Shrimp, Tobiko, Mayonnaise and Avocado and the unique Beetroot Rolls, with Beetroot, Goats Cheese, Celery, Grapes, Nuts and Apples.

All are delicious, its impressive to see that even though the restaurant is busy the chefs have managed to consistently deliver a high quality of sushi. The Beetroot Rolls are not to be dismissed, the slight sweet taste is so intriguing we place another order. Our Nigiri Rolls are simple yet pleasing, although we are hard pressed to decide which is the best, the Salmon or the Tuna. After we finish our sushi platter the waitress asks us if we would like to try some of the sashimi, we opt for a small helping of the Salmon and Tuna. With each bite the Tuna melts in our mouth, it’s some of the best fresh Tuna we have tasted in a while. For those feeling more adventurous you can also order Octopus, Red Snapper, Squid, or Eel sashimi. For dessert we head back to the buffet, although many tasty desserts are on offer from Coconut Truffle, Chili Chocolate Fountain, Mango Macaroons to Pandan Panna Cotta, it’s the Japanese Cheesecake that gets our vote. The Thursday Night Fusion Brunch at SushiSan, Holiday Inn Abu Dhabi is the perfect way to start the weekend. What sets this Thursday night brunch apart from all the others in the city is its vibrant atmosphere, excellent quality food, friendly staff and affordable price point. A Symphony Of Fine Dining At Roberto’s Abu Dhabi Renowned Italian Chef and Culinary Advisor to Roberto’s Group, Enrico Bartolini has created a series of events, Bartolini & Friends, each event sees the introduction of a new concept, ensuring that guests at Roberto’s Abu Dhabi can always experience something new. The last Bartolini & Friends series took place at Roberto’s Abu Dhabi on April 25th. Chef Enrico Bartolini was joined by Italian Master Pianist Scipione Sangiovanni. Sangiovanni is a multiple award-winning pianist and one of the most distinguished of his generation, he has performed on prestigious stages around the world. Chef Enrico worked closely with Chef Francesco Guarracino, Executive Chef of Roberto’s Abu Dhabi to curate a menu that employed the finest contemporary Italian flavours with the unique experience of expert musical accompaniment. Each course was served with a live performance by Scipione Sangiovanni. To start we enjoyed an appetizer of Caviale, Mandorle e Fave, Caviar, Almonds and Broad Beans. The Caviar was delicious, the Almonds and Broad Beans were made into a paste allowing the flavours to blend effortlessly with the Caviar. We enjoyed this to the backdrop of with Vivaldi’s Primavera ed Inverno-Da le Quattro Stagioni. Another highlight of our evening was the main course of Agnello in Crosta Tartufo Nero con Salsa Genovese, Slow-Cooked Baby Lamb Shoulder with Black Truffles in Genovese Pesto sauce, which was matched by Wagner-Liszt: Isolde’s Liebestod. We spoke to Chef Enrico and Pianist Scipione Sangiovanni ahead of the event. What made you decide to collaborate? Enrico: We’ve known each other for years and when Francesco had the idea to create a piano concert during one of my evenings in Abu Dhabi I was pleased to get in touch with Scipione to create this experience. Scipione: Working with Enrico is always a pleasure, first and foremost he is a friend and a great Chef, so I was happy to collaborate with him. How does the music relate to the cuisine? Enrico: Music is everywhere at any moment, all over the world, in a restaurant you will have a live performance or background music, depending on the type of restaurant. Music creates an ambience that can amplify or ruin your experience. So, I think it’s very important for restaurants to have a proper balance of ambience and music selection. Scipione: The music and the cuisine are expressions of two artists, so I think they can work and complement each other. Bartolini & Friends has gathered quite the following in the city, what can we expect from future events? Enrico: My collaboration with Francesco is always exciting, we look to create new experiences and something magical for our guest, he usually comes up with some interesting ideas, like when Alfio e Antonio came to visit. I don’t want to spoil the surprise, so you’ll just have to wait and see what we are planning next. Many people are adopting a vegan lifestyle will Roberto’s be adding vegan items to its menu? Francesco: Since its inception Roberto’s Abu Dhabi, has created a selection of dishes from our a la carte menu that are vegan. It is a different menu that guests can have upon request. Our customers are really pleased about this, we have a full a la carte where all the dishes are suitable for vegans. Kunafa Recipe

Ingredients 454g Mozzarella Cheese 400g White Sugar 1 cup Water 1 tbsp Lemon Juice 1 tsp Rose Water 120g Ricotta Cheese 1 tbsp Unsalted Butter, melted, for the pan ½ tsp Kunafa Pastry colouring or orange food colouring 454g Kataifi shredded dough ½ cup Milk ¾ cup Unsalted Butter, melted and lukewarm 3 tbsp Ground Pistachio Method Cut the Mozzarella Cheese into 1-inch cubes and soak in cold water for 6 hours, ensure the cheese is kept cool by storing it in the refrigerator. This can be done overnight. In the morning remove from the refrigerator and rinse with cold water. Dab dry and shred the Mozzarella Cheese, then add the Ricotta Cheese. On a medium heat place the White Sugar, Water and Lemon Juice on a boil for 10 minutes then add the Rose Water. Turn off the heat and leave cool. This will be your syrup. Take the Butter and Orange Food Colouring and spread around a 10-inch round, 2-inch deep pan. Take the Kataifi Shredded Dough and part into 4 equal pieces add the Milk, warm the Butter till lukewarm and add to the mixture. Ensure that the Kataifi is fluffy. Place ⅔ of the Kataifi in the pan and press down and along the sides of the pan. Place all the Cheese on top and press down. Cover with the remaining ⅓ of the Kataifi. Press down well. Preheat the oven to 350°F/177°C and bake for 40 minutes. When done, remove from the oven and let the Kunafa cool down for 15 minutes before moving it to a large plate. Take the Ground Pistachios and sprinkle all over. Pour the cool syrup over the entire Kunafa or pour on individual servings. Enjoy!

Park Hyatt Masters Of Food

Recently we visited Park Hyatt Abu Dhabi Hotel and Villas to experience their annual Masters of Food. Park Hyatt Masters of Food is a series of global sophisticated culinary and beverage experiences. It endeavours to create uncommon engaging events, where residents and visiting gourmands can connect. This year the hotel was excited to welcome, talented French Chef, Thomas Progeas from Michelin Star restaurant Pur’ by Jean Francois Roquette in Park Hyatt Paris Vendome. Thomas together with Martim Moreau from Brazil, Chef de Cuisine of The Park Bar and Grill, and the hotels Colombian Pastry Chef Julian Mejia, prepared a menu that was a celebration of universal creativity and craft. Masters of Food took place at The Park Bar and Grill, Park Hyatt Abu Dhabi Hotel and Villas signature restaurant. The restaurant is spread across two levels, a bar area upstairs, perfect for a relaxing pre-meal beverage and the restaurant downstairs. The restaurant boasts an open kitchen, an indoor and outdoor seating area and stylish interiors. For our experience we opted for the 3 course chefs choice menu at AED 350, it was at the chefs’ discretion what dishes were sent to our table. Our first dish arrived, it was the Herbs Ravioli with Asparagus, Green Peas, Citronella Emulsion. The Herbs Ravioli was delectable, full of flavour the medley of Asparagus worked surprisingly well with the Green Peas. The presentation as expected was excellent, this dish was full of creativity and the Emulsion was a superb touch adding a dynamic form of texture. Our second dish was the Bluefin Tuna Ventresca with Green Almonds, White Asparagus, Fromage Blanc, Broad Beans and Tuna Bottarga. The Bluefin Tuna has the fattiest flesh of all the tuna. It has a distinctive medium-full flavour and firm, “meaty” texture. It is best cooked rare to medium-rare. Our dish was served medium-rare. The thin cuts of Tuna allowed the other flavours on the plate to be explored. It’s not every day a chef combines these creative flavours into one dish, but it worked and worked well. Creative, flavourful and delightful, this dish was a big hit. Our third dish was the Masters of Food signature dish, the Atlantic Lobster ‘Aiguillettes’ which consisted of Peanuts, thinly sliced Baby Carrots, Coral Dentelle Biscuit and Fine Herbs. The Atlantic Lobster had a distinct flavour of its own, when contrasted with the Peanuts the taste was sublime. We would never have though Peanuts would have worked so well with seafood. What we really enjoyed about this dish was the journey of flavours from the meaty Lobster to the gritty Dentelle Biscuit to the aroma of the Fine Herbs this dish was exceptional and by far our favourite. To conclude our dining experience, we were able to select our dessert from the dessert trolley. We enjoyed this approach it was much more interactive. We opted for the strawberry tart which had been baked fresh that morning. Overall, we would highly recommend Park Hyatt Masters of Food, this unique experience is something that any seasoned foodie would not want to miss.
