Cladys Magagna

Executive Chef Fairmont Bab Al Bahr

Tell us about yourself. My name is Cladys Magagna and I am the Executive Chef at Fairmont Bab Al Bahr. I am responsible for the entire culinary operation at the hotel. This consists of seven restaurants and lounges, which includes the multi award winning Marco Pierre White Steakhouse and Grill, Frankie’s Italian Restaurant and Bar, the Friday brunch epicurean experience at CuiScene and the banqueting operation for 30,000 square feet of meeting space. What is the most challenging aspect of your role? From a guest perspective the key challenge is meeting our guest’s expectations. We are extremely fortunate to have guests visiting from all over the world and their tastes and needs are extremely varied. It’s important we understand the different expectations in order to exceed them at every opportunity. From a business perspective, it’s imperative we provide consistent training to our kitchen team at all times. However when the hotel is busy and at high occupancy, we have to have all hands on deck, and it becomes difficult to find time for training. Do you cater for vegetarians and gluten free? Yes, we are very understanding of dietary requirements. In Frankie’s we have dedicated menus for our vegetarian, vegan, diabetic and celiac guests and pretty much all of our dishes on the general menu can be made to requirement, including our Tiramisu that can be easily adapted to gluten free! In CuiScene, the Gluten free station includes, different varieties of gluten free pastries, cookies and breads and are available every day for breakfast and on request for lunch and dinner. Have you recently added any new dishes to the menus? We have changed the Marco Pierre White Steakhouse and Grill menu and it now offers dishes such as caviar, lobster, but we haven’t compromised on the fine quality beef. Instead we have increased the variety and the overall price structure, making it more accessible to all of our guests. Items such as the Gourmet Burger and Crispy Soft Shell Crab are some of the bestselling items on the menu! How have the menus evolved? We are extremely keen on keeping an eye on external trends and also look closely internally at what the bestselling items are. We make sure that these dishes are always highlighted and represent our menu. Each of our menus has a combination of vegetables, seafood, meat, healthy options and kid’s components which are equally as important in order to achieve a full variety for our guests. Our city is mutli-ethnic and our menus represent that with Japanese, Chinese, Arabic, British, Italian cuisine. What are the current dining trends you are seeing in Abu Dhabi and are you adjusting to these? I have seen three key trends recently, the first is the pull towards tapas style dining. Guests want to try a bit of everything to really get an idea of the essence of the restaurant and the 3 course meal is just not as desirable. The second trend is the need for complementary amenities on the table before you even order. We have noticed that this adds huge value to the guest experience – the quality of these items whether olives, canapés or breads, dips, oils and sauces that are offered complementary at the table is also key, they are the first impression of the restaurant. How would you describe your cooking style? Emotional. My cooking style really depends on my mood. The way I feel can really affect my dishes. I have created some amazing dishes and not been able to recreate them again in the same way, because of my emotions on that day. But more so I feel that love is the main ingredient and being Italian I have a lot of love and feed that love into creating my dishes! Fairmont Bab Al Bahr 02 654 3238

Michel Aramouni

Founder of Lebanese Brasserie BouBouffe

BouBouffe Lebanese Brasserie recently opened in Yas Mall marking the very first BouBouffe UAE to open internationally. We speak to Michel Aramouni the man behind BouBouffe. What was your motivation behind starting your own restaurant? My passion and love towards traditional cuisine and especially our rich Lebanese cuisine motivated me to create a new concept. I made sure to provide only seasonal and fresh local products of high quality in order to maintain the authentic traditional Lebanese cuisine. How would you describe being a restaurateur? Being a restaurateur is driven by passion and devotion. You cannot succeed in the hospitality industry if you are not emotionally attached. Why should people visit BouBouffe? Diners at BouBouffe appreciate our preservation of the real, authentic and traditional Lebanese cuisine along with our promise to serve the finest and freshest Lebanese products. We go the extra mile to ensure we use high quality, fresh ingredients, as this is the foundation that BouBouffe has been built upon. Through our full-fledged, tailor-made menu we ensure satisfaction for all types of tastes. How did you select the name BouBouffe for your restaurant? BouBouffe originates from the word “bouffe” which means “food” in French. Can you describe the cuisine at BouBouffe? The cuisine at BouBouffe is traditional and authentic Lebanese cuisine with a variety of International dishes. It has a homemade feel, reminiscent of our grandparents’ heritage. How involved are you with creating the menu? I am fully involved in the creation of BouBouffe’s menu and its development. Each item on the menu was created and tasted by myself with the help and support of my team. Until today, I continue to taste every item in the kitchen to make sure of the consistency of my product. This way, we can ensure the same unique taste that is enjoyed in Beirut, is also enjoyed in the UAE. What is your personal favourite dish on the menu? Tabbouleh is by far my preferred item on the menu, due to its freshness and healthy touch. The freshly squeezed lemon juice and the finest, high quality virgin olive oil are the essential elements to a successful Tabbouleh. The tabbouleh at BouBouffe is freshly prepared and mixed upon every order. What made you choose the UAE as your first location outside Lebanon? We chose the UAE as an optimal start to our expansion plan for many different reasons; the UAE is the top business-oriented destination in the region; there is a strong presence of Lebanese expats in the UAE seeking food that ‘tastes like home’. In addition, we found an ideal franchisee in the Addmind group. All these elements made our decisions rightful. BouBouffe Yas Mall, near Ferrari World entrance 02 448 7474

PUNJAB GRILL serves

Indian cuisine at its finest

10 | DINING AND NIGHTLIFE ABU DHABI

Globally renowned Punjab Grill opened its doors in December at the Venetian Village, Ritz Carlton Grand Canal in Abu Dhabi. Venetian Village hosts a coveted roster of F&B concepts and Punjab Grill adds to the allure of the sought-after venue. The Punjab Grill dining experience brings the grandeur of contemporary India to the UAE and has received much applauds from patrons since its recent opening. Renowned Chef Gurpreet Singh, Corporate Chef at Punjab Grill, has worked on creating an innovative dining experience that pushes the boundaries of Indian cuisine while retaining authenticity in taste. Since its inception, Punjab Grill has become one of the most critically acclaimed gourmet fine dining restaurants in India and is considered by many to be a crown jewel of North Indian Frontier gourmet cuisine. To start our experience we are given a selection of freshly prepared poppadums’ and chutneys. We order the Aneeka, one of the gorgeous mocktails on the menu, made with pomegranate juice, mint leaves, lime juice, and vanilla syrup served with chunky ice cubes and mint leaves. From the small plates menu we select the watermelon slider, a healthy bite of watermelon served with palak patta chaat and glazed in herb lime. This may not sound that exciting but I can assure you this dish is a show stopper. Next the dal ka shorba, a lentil soup with palak crisp. Warm lentil soup is poured over crispy spinach allowing us to enjoy a wonderful blend of thick warm lentil soup with a crunch, a modern twist on classic croutons. For the rest of the dining experience chef has created a tasting menu, allowing us to sample a wide variety of dishes from the menu. We happily oblige. Next a trio of laban ka kebab, delicate yogurt kebabs that melt in your mouth, hara kebab, spinach patties drizzled in mango preserve, both from the small palates menu, complimented by the paneer multani, smoked cottage cheese piccatas with spices, from the tandoor menu. All taste phenomenal, the hara kebab, our favourite is a thick large patty filled to the brim with rich creamy spinach, drizzled in mango preserve adding a kaleidoscope of taste. Now for the protein, bites of chicken seekh kebab, raunaqeen-seekhan, lamb kebab skewers and zaffrani jhinga, a saffron flavoured jumbo shrimp are presented. The jumbo shrimp is thick succulent and bursting with flavour. A light sorbet is served allowing us to cleanse our palate before the main course. For the main course we enjoy a tasting menu comprising of Punjab Grill’s delicious dal, laccha palak panner, creamy panner in shredded spinach sauce, the popular butter chicken, chicken tikka in classic tomato and fenugreek sauce and meat Punjab Grill, tender mutton simmered with root vegetables and spices. To accompany the above a beautifully presented prawn biryani, a selection of naan, parantha kulcha breads and kurkuri bhindi, deliciously crispy fried okra. Again all are delicious but our favourites are the meat Punjab Grill and the crispy fried okra. The meat Punjab Grill has been cooked to perfection and the mutton literally melts in your mouth. As for the okra, fabulous crispy and flavourful this side dish is ever so moreish. Finally to finish the dessert, kulfi with figs and ras malai, both sensational. Punjab Grill takes you on a culinary journey into the grandeur of undivided Punjab. The experience is an exploration of the extraordinary diversity of the Frontier region’s food and the rich influences of Pathani, Punjabi and Haryanvi cuisine. If you are looking for a fusion of Indian cuisine set in sophisticated and elegant modern décor, look no further than Punjab Grill. Punjab Grill 02 449 9839

Seven culinary trends to look out for in 2016 Dining has evolved from an ‘eat, and go’ experience to one that is increasingly prized by consumers, chefs and media. Today’s diners want good quality food, in a unique, organic and relaxed environment. Manhal Naser, CEO and Co-Founder, AWJ Investments shares his seven culinary trend predictions that will hit the plates in 2016. Trend 1, The complete dining experience When diners decide they want to eat out, they are looking for a complete dining experience. From creative décor to live entertainment, diners will seek an experience that will be remembered long after the meal is complete. This is where those stylistic creative flourishes come into play, table setting details, fresh flowers, bottles as décor and even music. As much as customers value food quality, a restaurant offering a unique experience will be a crowd pleaser. Trend 2, Diverse and cultural connections 2016 will see an expansion in the delivery of different heritage cuisines. Consumers are willing to explore and try new places which offer a cultural cuisine coupled with the perfect ambience. Trend 3, The fusion revolution Diners are always on a culinary quest for the next interesting taste that will enrich their palates. With the advent of the internet, consumers are more knowledgeable and curious about the different foods and are therefore more than willing to taste the next fusion creation. While some may see this as a loss of authenticity, others have embraced the fusion revolution. Many ingredients such as jalapenos, chili and hummus have even become household staples, facilitating fusion cuisine’s popularity with diners. Trend 4, Digital technology Digital technology has made it possible for restaurants to build delivery fleets at a fraction of the cost previously incurred. With technology enabling consumers to track food deliveries by the minute, this additional option will soon be a norm in 2016. In addition to tracking food deliveries, consumers have come to expect certain connectivity attached to their dining experiences, be it the ability to order restaurant delivery with a smartphone app, or check in online on social media. Trend 5, The popularity of smart casual dining Smart casual dining is a concept that has been gaining popularity every year. These restaurants offer the quality of fine dining combined with the speed of fast food at affordable prices. The simplicity, taste and affordability will make smart casual dining more popular this year for consumers. Trend 6, Food Trucks on the rise Food trucks are no longer just a fancy idea and are a trend that is catching on in the region. Most food trucks started out serving just sandwiches and burgers for consumers on the move. Today, more sophisticated foods are being added. Gourmet food trucks are starting to appear as part of the evolution of the new culinary trend. Trend 7, Scrambling for healthy options A greater awareness of healthy eating is changing the eating habits of consumers in the Middle East. There is a constant need for balance between selecting food that is fresh and healthy versus food that is tempting and exciting. With more and more consumers gravitating towards health claims of natural, organic, whole wheat and gluten free, healthy dining will be a key driver for people wanting to dine out. The vegetable side dishes will be the hero of the plate for 2016.

A new property Capital Centre Arjaan by Rotana offers rooms ranging from classic studios to two bedroom suites, the hotel is an ideal destination for long-term guests seeking a hassle free experience. Room We are staying in one of the premium one bedroom suites. The room is bright, airy and spacious. As you enter the room to your right you have a closet and to your left a restroom. Walk into the main living room and enjoy the large L shaped sofa, finish your emails on a dedicated work desk, watch your favorite program on the flat screen TV or enjoy a relaxing coffee as you take in the city views. Which are even more beautiful at night. The modern en suite bathroom features an enormous bathtub, a bidet, separate walk in rain shower, sink and a large well-lit mirror. The kitchen is fully equipped with a washing machine, sink, fridge, kitchenware and an electric stove. In the bedroom you will find a second large closet, one large double bed, two side tables and a flat screen TV. This place is immaculate, you would struggle to find one speck of dust. Capital Centre Arjaan by Rotana also gets extra points for the design of the room, the large windows ensure that guests can enjoy an abundance of natural light. At this point we start considering vacating our apartments and moving in, fully furnished, no bills (as it’s all included in the price) someone to come and clean our room, refresh our towels and the best part would be that you would never need to find a maintenance guy again, you’d just have to call the super helpful receptionist. Tempted? We certainly are! Other room amenities include a safety deposit box, air conditioning, high-speed internet and ironing facilities.

Spa After settling into our room we make our way to the spa. We are the first people to review the spa as it has not yet opened to the public. We arrive early so we can explore our surroundings. The relaxation room is wonderful and overlooks the rooftop pool. We order a ginger tea and begin to relax. Shortly after we are escorted to our treatment room. The treatment room is softly lit by candle light and sets the tone for a relaxing experience. The room features a massage bed, small table, chair and a shower. Today we have selected a Balinese massage. Balinese massage is known for providing deep relaxation and the unblocking of blocked pathways. The treatment includes soft long strokes, reflexology and aromatherapy. The massage is performed well and we have to stop ourselves from falling asleep.

Dining Now onto our favourite part, the dining options. Capital Centre Arjaan by Rotana offers three dining experiences. Firstly Tamarind, the hotel’s all-day dining restaurant. Tamarind offers international buffet selections for breakfast, lunch and dinner and also includes an à la carte menu. The décor is trendy, modern, with plush cream seating emphasized by deep red lighting. Tamarind also offers an outdoor seating area for those wanting to make the most of the cooler weather. Secondly Aroma Lobby Lounge, perfect for a light meal or for those looking for a grab and go option. Aroma Lobby Lounge serves a selection of teas, coffees, pastries, desserts and light meals. The desserts look amazing, forget the light meal go straight for the coffee and cake. And finally those staying in the hotel can make the most of the in room dining option. We will come back to this later as we enjoyed a hearty breakfast in our room before checking out. Tonight we are dining in Tamarind. We are excited to see the menu and what Tamarind has to offer. Before we begin our dining experience we are warmly greeted by Executive Chef, Anahita Y Gustaspi. Anahita’s passion and enthusiasm is infectious. A knowledgeable chef that isn’t scared to push the boundaries. To begin our experience we are presented with a delicate amuse bouche consisting of sliced peach, brie, radish, bean sprouts, a selection of crushed nuts with mint leaves. The dish is a work of art and does well to amuse the mouth and invigorate the palate. The combination of brie and peach is light, refreshing and unique. For the soup we select the zuppa di frutti di mare. An Italian seafood soup with basil. The soup offers a surprising kick, chef hasn’t held back on the seafood and we enjoy mouthfuls of chucky seafood bites. Chef recommends we try the baby spinach salad and promises we will not be disappointed. As the salad arrives we can already see that this is far from your average salad. Baby spinach has been tossed with thick cuts of apple, handfuls of cranberries, sprinkled with nuts and topped with honey lemon dressing. If salads tasted this good everywhere eating healthy would be easy. From the hot bites section of the menu we select the fried calamari and signature Tamarind soy chicken wings. The fried calamari has been cut into small bites and is served with a citrus mayo and chunky marinera sauce. Zesty to the taste the calamari is light and flavourful. However the star of the show has to be the signature Tamarind soy chicken wings. Fried wings smothered in hot Tamarind sauce, scallions and sesame. The wings are moist and the tenacious soy can be tasted throughout. As we gaze over our options for the main course we are spoiled for choice. Eventually we select the corn-fed chicken breast, lamb dum biryani and the harissa buttered prawns. The corn-fed chicken breast is served on the bone and on top of a bed of sundried tomatoes, artichokes, onions, Tuscan olives and new potatoes. The attention to detail of this dish is wonderful to see and taste, from corn-fed chicken to Tuscan olives, every element of this dish has been well thought through. The lamb dum biryani is served with a selection of chutneys and poppadoms. A vibrant and colourful dish the lamb dum biryani tastes fantastic. The tender aromatic lamb has been cooked to perfection and tastes divine. Our favourite dish has to be the harissa buttered prawns. Four large prawns are served on a bed of freekeh risotto, saffron butter and rocca salad. Unusually refreshing is the freekeh risotto, lighter than the usual rice based risotto it allows us to enjoy the entire dish without feeling like we have overeaten. The harissa buttered prawns add a contrast of taste to the freekeh risotto and do well to elevate the dish.

Finally onto the dessert we enjoy a selection of rich chocolate spoon cake, salted caramel cheesecake and a selection of Tamarind and Arabic coffee ice cream. Overall Tamarind provided a fantastic dining experience. And we will definitely be back to see what Executive Chef, Anahita Y Gustaspi and her team are creating. The next day, before checking out we enjoy a hearty in room breakfast. Grilled tomato, beans, scrambled eggs, fresh fruit salad and a selection of pastries, a generous portion that sets us up nicely for the day ahead. The Verdict Overall Capital Centre Arjaan by Rotana provided a wonderful stay. I would recommend this hotel for those on business, long term stays and even those looking for a leisure break. The hotel offers business facilities and leisure facilities alike, ensuring all that visit enjoy a pleasurable stay. Capital Centre Arjaan by Rotana is perfectly situated for work or leisure and in close proximity to all major tourist attractions. For residence I would highly recommend dining in Tamarind, this restaurant is truly a hidden gem and we can guarantee you will not leave disappointed. Asia de Cuba One of Abu Dhabi’s most popular venues, Asia de Cuba has grown from strength to strength since its debut. Located at the St. Regis’ prestigious Nation Towers beachfront, the multi-faceted space encompasses a lounge, restaurant and beach deck complete with outdoor bar and stately cabanas, boasting mesmerizing views of the Arabian Gulf. Popular for its perfect blend of Asian and Latin flavors the menu features an extensive selection of shareable ceviche, small plates, salads, signature dishes and entrées as well as a remarkable selection of handcrafted mixers and cleansers. As we enter Asia de Cuba we are warmly greeted by the hostess and shown to our table. To begin we select the red snapper from the ceviche bar. Thick cuts of red snapper are tossed in a light Thai chilli, red onion and cilantro mix and served with a handful of plantains. A gustatory delight, the red snapper is light and the dish offers a zestful taste. Also from the ceviche menu we select the tuna, which consists of seared foie gras, orange, Asian pear, Malanga chips. This dish is luscious and everything you would expect from Asia de Cuba. From the mouthwatering tuna to the bittersweet orange this dish is a firm favorite amongst the team. From the small plates, we cannot resist ordering the casabe cakes, made with flakes of guava bbq veal, onion mojo and fresno pepper. This dish is delectable, made with the highest quality ingredients the veal flakes into your mouth as the flavors ignite your taste buds. To follow the Wagyu ropa vieja spring rolls, made with butter lettuce, pickled vegetables, rocoto sweet and sour sauce. The Wagyu ropa vieja spring rolls are flavorful and full of thick cuts of Wagyu beef. From the entrees we decide to order the rocoto miso glazed black cod with avocado poblano puree and orange mojo. For this dish I will use the phrase ‘gustatorial sensations’. The black cod proves a divine experience as it offers bite after bite of infused black cod. Our last dish from the menu is the seven spice chicken with creamy congri, snow peas, shiitake mushroom, maduros and pan jus. Served on a wide dish, the chicken has been beautifully marinated in a selection of spices, which transpire with every bite. Finally for dessert we indulge in the guava whipped layered cheesecake with coconut tuile. If you haven’t tried this dessert yet you are missing out. Words cannot even begin to describe how delicious this dessert is. You need to taste it for yourself. Overall our experience at Asia de Cuba proved to be an epicurean feast and one I would definitely recommend. From the service to the carefully crafted cuisine Asia de Cuba out does itself every time. Not to be missed is Asia de Cuba’s popular brunch starting from AED 325. This brunch is a must! Asia de Cuba Nation Riviera Beach Club 02 699 3333 26 | DINING AND NIGHTLIFE ABU DHABI

Unity to play at Jazz Bar and Dining

Hilton Abu Dhabi is proud to present the arrival of their new resident jazz band Unity. Unity will be performing live in the popular Jazz Bar and Dining until June 2016. Three energetic and charismatic singers, supported by four skilled and gifted musicians, originating from South Africa, Canada and Trinidad & Tobago, will take the Abu Dhabi crowd on a journey among the biggest hit songs of the last four decades. Tell us your names and your role in the band. We have our multitalented bandleader Alex who is from Canada and plays the keyboard and saxophone, three energetic singers Zach who is from South Africa, Judy from Canada and Trina from Trinidad and Tobago. On the guitars we have Sebastian and Jeff both from Canada and Hugo who is from Paraguay is our drummer. Why did you decide to play the genres you do? These kind of gigs give us a chance to travel the world and meet new people and experience new cultures which is our main reason for performing. By covering many different genres we also have the chance to communicate our passion for music to a wide range of happy, dancing feet! What is your favourite song to perform and why? Not an easy question! “What goes around comes around” by Justin Timberlake may not be our most well known song but it is definitely a great one to play because of the way it makes us, and the crowd, feel. The way it builds up, the vocal arrangements. It’s the kind of song we all look forward to playing on a set! How would you describe your style? Versatility is our strength. We play Latin, R&B, Rock, Pop, our crowd is always from all around the world and we want to appeal to all of them. So I guess our style is versatility! What makes a great gig? What makes a great gig is being surrounded by great people. Band members, bar and hotel staff and of course the guests. Put the best band in the best hotel, if the crowd is not there or not responsive, it can’t be a great gig. So, people are what make a great gig for us. So far we are loving the crowd at Jazz Bar and Dining and the team at Hilton Abu Dhabi couldn’t have made us feel more welcome. We look forward to spending the next six months here. What can the crowd expect to see from your performance? Energy, energy, energy, with just the right touch of craziness! Unity will play in Hilton Abu Dhabi’s Jazz Bar & Dining Sunday to Wednesday 8.45pm to 12.30am as well as Thursday and Friday 8.45pm to 1.30 am. For more information or bookings, please call 02 692 4247

Any new year’s resolutions for 2016? Just keep doing my best. Where do you currently DJ? I am a Resident DJ at Catch, Abu Dhabi. How long have you been DJing at Catch? Since Catch opened, so for one year. What nights do you DJ at Catch? I am a Resident DJ at Catch, so I DJ at Catch almost every night, except Monday and Wednesday, which are my days off. What type of music do you play? Tech house mostly. Plus deep house and Nu disco. It also depends on the particular night at Catch, as each night requires different type of music. What do you like most about DJing at Catch? I love my job. I really do and I feel blessed to be able to share my creativity and music with guests at Catch. The crowd at Catch understand me and my music. It inspires me to do more and more. If someone was new to Abu Dhabi where would you recommend they go for a good night out? Most definitely, I will recommend Catch! What made you want to become a DJ? I was a dancer before and music was around me all the time. I wanted to share my favourite tunes at every party that I was invited to. As a result, becoming a DJ was the next natural step for me. I see myself as very creative and naturally tuned to music. If you weren't DJing what would you be doing? I have no idea, I never thought about that. I can paint. Maybe I could become a painter but not singer, my singing is awful. Chinese New Year menu at Hakkasan Abu Dhabi With a view of the glimmering city lights of Abu Dhabi in the background, Hakkasan is celebrating the Year of the Monkey with a limited edition menu created by International Executive Chef, Ho Chee Boon. The sleek and private interior of the restaurant is splashed with red papers, written with wishes from fellow diners. Each wish hangs gently from its thin red string, dangling from the ornately carved, dark wood paneling and slightly shimmering in the low light. Chinese New Year is a time of warmth, joy, and positivity for the future year ahead, all of which are felt in the relaxed yet elegant set menu. The dinner begins with a complementary drink exhibiting Hakkasan’s mastery of libation: tropical fruit, sour lemon and a subtle fizzy ginger. The meal then starts gently with a delicate ginseng soup. The dish seems so simple, but yet so warming. The almost clear broth exudes flavor. Dip in your spoon to pull up a chunk of moist white chicken, a geometrical rectangle of mountain yam, or a floating tube of dried bamboo. It feels like a soup that could solve all of your worries. As the bowls are cleared, the first course arrives. A small selection of Hakkasan’s superb dumplings are accompanied by four “Golden Cups” of diced Wagyu beef. The bite-sized Golden Cups are constructed of a very delicately fried noodle, filled with caramelized bites of beef, a selection of Chinese vegetables and golden roasted pine nuts. The light and crispy dish is perfectly complimented by the chewy, pillowy dumplings.

34 | DINING AND NIGHTLIFE ABU DHABI

For the entrée course, Hakkasan pulls out some of their top preparations to highlight five dishes that exude the restaurant’s intimate perfection. Lobster, duck, seabass, Chinese stir-fried vegetables and crab and scallop fried rice. Large pieces of wok-fried lobster are presented ready to eat on a base of firm egg white with a light truffle sauce. The dish is decorated magnificently with the hollowed lobster himself, so that he looks as if he is diving through the egg, as if it were the white waves of the ocean. The pipa duck comes thinly sliced, still attached to its perfectly crispy skin and sitting atop, a brushing of a perfectly sweet and tangy plum sauce. The grilled Chilean seabass, my favorite, is a large piece of caramelized fish that is so buttery and tender that it melts in your mouth. The vegetables are crispy and refreshing between bites of the rich seafood, while it is easy to eat bowl after bowl of the fluffy, meaty fried rice. There is a dichotomy to Hakkasan’s food. It is masterfully elegant and yet soothing and comforting to the soul. The final course is a luscious soy caramel, banana, with crunchy peanuts and wafers of chocolate. Not cloyingly sweet, the dish instead brings out the natural flavors of the fruit and the rich nuttiness of the peanut and soy. It is exciting to eat the play of texture and flavors. The cold banana ice cream and the fluffy cake balance the creamy caramel and chunks of salty banana. No matter how full you are, you will find a way to clean your plate. After the celebratory meal, as each diner writes his or her red paper wishes to be hung with those already displayed, there is the presentation of a parting gift of a commemorative Hakkasan golden coin, engraved with the words Gung Hay Fa Choy! Happy New Year! The Chinese New Year menu showcases dishes that will bring joy, luck and prosperity in 2016 and is available at AED 488* per person until 22nd February. The night before, combine 1/3 cup of rolled oats, ½ a cup blackberries, ½ a cup low fat milk, ½ a cup raspberries, add a pinch of cinnamon, cover and leave overnight in the fridge. In the morning grab a spoon and tuck in or put in the oats in a jar and take them to work. 38 | DINING AND NIGHTLIFE ABU DHABI Yummy!
