Jumeirah at Etihad Towers highly acclaimed Japanese restaurant, Tori No Su offers a multitude of gourmet Japanese cuisine, carefully crafted by kaiseki-trained Chef de Cuisine, Takashi Ando. Kaiseki is the meticulous preparation of exquisite multi-course Japanese cuisine, traditionally prepared for royal families. It is unique to find a chef in the city with this skill set, this adds to the anticipation of our dining experience this evening. Tori No Su is a stylish and modern venue, prominent lighting fixtures hang from the ceiling, exuding luxury and sophistication, whilst the open kitchen adds a sense of theatre. Although modern, small authentic Japanese touches can be seen throughout the restaurant, such as the red origami themed wall art. Tori No Su now offers guests an option of a paper or digital (iPad) menus. This simple addition makes a big difference to our dining experience. The cuisine is authentic Japanese and when we had previously visited we had felt slightly overwhelmed by the selection of diverse dishes. However, this time we are able to view images and descriptions of the dishes on the iPad whilst ordering, allowing us to choose dishes that better suit our requirements. Admittedly we do order more than planned but with dishes looking this appetizing we find it hard to resist. Now onto the food, for starters we select the Edamame; Japanese beans seasoned with salt, Miso Soup; tofu, seaweed, spring onion, mushroom and miso and the Hotate Ebi Gyoza; pan fried dumplings, with prawn, scallop, shiitake, onion and cabbage. Both the Edamame and Miso Soup are enjoyable but the Hotate Ebi Gyoza is delightful, lightly fried, the Gyoza offers a soft yet crisp texture, inside a sensational mouthful of thick succulent prawn and scallop. Moving onto intermediates, we select the Duck Kuwayaki; duck breast, Japanese leeks, in sweet soya sauce alongside the Ebi Tempura; deep fried tempura battered prawns served with tempura sauce. The Duck Kuwayaki is exceptional, it’s a pleasure to enjoy a duck dish that isn’t fatty. The thick pieces of buttery duck melt in our mouth and the sweet soya sauce perfectly compliments the duck. For the main course we select the Lobster Rolls: lobster, unagi tempura, avocado, cucumber, egg, spring onion, shiso leaves, tobiko and wasabi mayonnaise, Gindara Miso Yaki; grilled black cod marinated in miso, Lobster in Tomato Miso Sauce; lobster, baby corn, cherry tomatoes, green beans and a side of Seafood Fried Rice; prawn, squid, egg, carrot, onion, spring onion, zucchini and sweet soya sauce. The Gindara Miso Yaki, is delectable, perfectly grilled the black cod flakes off our fork, the crisp fish skin adds texture, whilst the rich miso offers a sweet taste. It is evident that the black cod is of high quality, however we do wish the portion was slightly larger. The lobster dishes are our favourite, the Lobster Rolls burst with flavour, from the rich lobster, to the cool avocado, to the tangy wasabi, superb. The Lobster in Tomato Miso Sauce is infused with flavour, the miso has more of a paste texture emphasising its bold taste. To conclude our dining experience at Tori No Su we enjoy the warm Banana Fritter served atop of a caramel pumpkin pudding with strawberry ice-cream, my dining partner opts for the traditional Mochi Ice Cream. Overall, we thoroughly enjoyed our dining experience at Tori No Su. This venue provides the perfect dining option for a get together with family and friends or a romantic meal. ThEATre by Rhodes This evening we are excited to be experiencing ThEATre by Rhodes at VOX Cinemas in Nation Galleria, nestled at the foot of the stunning Nation Towers. As we enter VOX Cinemas we are welcomed to the private ThEATre by Rhodes entrance and shown to the private lounge. The private lounge features plush leather sofas, fresh boutiques of red roses and a private kitchen and bar. As part of the ThEATre by Rhodes experience guests can select dishes from a bespoke menu that has been created by Michelin Star, celebrity Chef Gary Rhodes and his team. The menu offers a wide variety of dishes from English afternoon tea, mezze platter, salads, seafood platters to desserts. The menu is split into three sections, The Preview (starters), The Movie (mains) and The Credits (dessert), a fun twist. The movie theatre we will be enjoying today features just 18 large, comfortable, reclining armchairs that all come with a blanket and a pillow, ensuring movie fans can enjoy comfortable interactive cinema seating and table service. For the preview I order the Peppered Beef Sticks with sweet chilli and pomegranate jam whilst my movie companion selects the Nachos with spicy tomato salsa, guacamole and cheese sauce. The Peppered Beef Sticks are delightful and offer bite after bite of succulent flavourful beef. The Nachos may seem like an obvious choice however the spicy tomato salsa, guacamole and cheese sauce are of much higher quality than what you can expect from your regular cinema experience. Up next, the main movie, we both select the Fish and Chips with tartare sauce. The Fish and Chips arrive piping hot and about 20 minutes after we have finished our starters, ensuring that we have enough time between courses. The Fish and Chips taste delicious, the fish has been served in bite size portions, ensuring we are easily able to enjoy them whilst watching the movie. For the credits we enjoy the Date and Banana French Toast along with the Knickerbocker Glory. A satisfying end to a unique dining experience. Overall ThEATre by Rhodes offers an exclusive cinema experience unlike any other. JW Steakhouse

Nestled in the popular Marriott Hotel Downtown, Abu Dhabi you will find Marriott’s global signature steakhouse, JW Steakhouse. Renowned amongst Abu Dhabi residents, JW Steakhouse features stylish interiors, comfortable leather seating, cowhide rugs and a glass show kitchen, allowing guests to watch as their dishes are created by the talented culinary team. As we browse through the menu we are presented with a selection of warm breads, one onion the other cornbread, accompanied by a variety of infused butters; salted, smoked and chili. Shortly after chef sends the amuse-bouche, a fantastic start to our dining experience. To begin I order the Prawn Cocktail; blue prawns, marie rose, baby gem, fresh horseradish and borage and my dining companion selects the Jumbo Lump Crab Cake; avocado, cucumber, lime, tomato and old bay spices. The Prawn Cocktail is beautifully presented, and the horseradish offers a unique zesty twist to this classic dish. The Jumbo Lump Crab Cake is scrumptious, unlike most places JW Steakhouse hasn’t cheaped out on the crab. From the moment we cut into the Jumbo Lump Crab Cake, layers of thick crab begin to flake off our fork. For entrees I select the Loch Fyne Salmon; crispy skin and cured, green peas, turkey bacon, with lemon and mint and for sides I choose the Hand-Cut Fat Fries with red onion and blackcurrant jam and the Sweet Potato Fritters with maple syrup and chili. My dining companion opts for the Australian Grade 7+ Wagyu Tenderloin 500g which comes with two sides plus the Grilled Canadian Lobster Tail and Foie Gras. The Wagyu Tenderloin is cooked well done, as requested, chef has done exceptionally well to ensure it withholds its natural juices, remaining succulent to taste. With the first bite the quality of the cut is undeniable. The Loch Fyne Salmon is so well presented we spend just as much time Instagraming it as we do eating it. The green pea puree is the perfect accompaniment to the crisp salmon and the mint foams adds just the right amount of freshness, elevating the tasteful dish. The Canadian Lobster Tail is impeccably grilled and makes for a welcomed side. 12 | Dining and Nightlife Abu Dhabi


The Hand-Cut Fat Fries are a quirky change from the usual French Fries and the red onion and blackcurrant jam really gives our taste buds a treat. The Sweet Potato Fritters are also a fun twist on regular Sweet Potato Fries. The service at JW Steakhouse is friendly and informative, the team make an effort to learn about our dietary requirements and advise on dishes they feel we would enjoy. They also make light and cheerful conversation without intruding on our dining experience. Worth noting is that I personally don’t eat meat, my dining companion does, however at no point during our visit to JW Steakhouse did I feel awkward, the menu caters well, not only to meat lovers but those wishing to enjoy a selection of delicious seafood or even vegetarian dishes. No visit to JW Steakhouse would be complete without enjoying their unique and flavourful New York Cheesecake, a perfect ending to a fantastic dining experience. If you are looking for a relaxed dining experience that goes beyond a typical steakhouse we would highly recommend a visit to JW Steakhouse at Marriott Hotel Downtown, Abu Dhabi. Origins Friday Brunch Taking on a fresh identity, the newly named Origins Brunch features highlights from the popular Pit Stop Brunch, whilst dialling up the fun factor with the addition of an after-brunch party with complimentary pool access at Longitude. Origins Brunch offers a vibrant world of live cooking stations and specialist food counters, featuring an array of international and regional cuisine from the hotel’s much-acclaimed restaurants. As we enter Yas Hotel Abu Dhabi the atmosphere is buzzing, and a queue of highly anticipant foodies has already formed. We drop our bags at our table and begin to explore the various offerings. To start we enjoy a selection of fresh seafood; poached crab leg, poached shrimps and poached lobster, alongside a beautifully presented salad; palm heart and barley with fresh figs. We are unable to resist a helping of the fresh pasta which is being made before our eyes. The pasta comes in four options, eggplant tortellini, lemon tagliolini, saffron tagliatelle and beef cheek ravioli. Feeling adventurous we try the lemon tagliolini, and we are not disappointed, the subtle lemon zest works perfectly. We adore the Hawaiian poke fish bar, which allows us to tailor make our own poke bowls, something very unique to Origins Brunch. The sushi also gets a big thumbs up from the team. Next, we sample dishes from the Indian station, those who have dined at Yas Hotel Abu Dhabi’s Indian restaurant, Angar will know that they serve some of the best tasting Indian food in town. We enjoy tandoori shrimp and saffron rice, the aroma is enough to ensure we return for a second portion. Finally, when it comes to ending our brunch we head over to the desserts, sticky toffee pudding, chocolate molten cake and vanilla sauce, bliss. For those wanting to end their brunch on a savoury note Origins Brunch offers a wide selection of cheeses from Gorgonzola to Coulommiers to name a few. Brunch highlights range from succulent BBQ grilled lobster, make-your-own poke stations, tender beef wellington with all the trimmings, and a spread of Arabic and Indian delicacies, alongside free-flowing beverages. A decadent dessert room tops off the experience, complete with a show stopping liquid nitrogen bar. Meanwhile, a live DJ provides an upbeat soundtrack set against the breathtaking backdrop of the globally famous Yas Marina Circuit. Located in the heart of the Mediterranean Sea, Malta sits just south of Sicily. Its warm climate, friendly islanders, magnificent restaurants and historical monuments welcome over two million tourists a year, making Malta one of the most popular European countries to visit.

Flights and Accommodation Flights are available from Abu Dhabi and Dubai with prices averaging around AED 2,500, however currently no direct flights fly to Malta, meaning that you will have to make 1 stop. Malta offers a variety of accommodation which varies in rating and price. Visitors can choose to stay in hotels such as Le Méridien St Julian’s Hotel and Spa, historical buildings like Hotel Phoenicia or even self-serviced apartments. The type of accommodation will vary given the location you choose; the more popular tourist areas offer larger hotel brands, whilst in quieter areas you will find small independent B&B’s. Climate Malta has a subtropical–Mediterranean climate and therefore has very mild winters and hot summers. Throughout the year you can expect temperatures to average 23 Celsius dropping to 17 Celsius at night. Summer starts from mid-April with temperatures averaging 19 Celsius in the day and rising steadily throughout the 8 months. The warmest month is August where temperatures rise to 35 Celsius. November is the start of the winter season with temperatures dropping to 17 Celsius and most of the rainfall happens in this month. The sea temperature averages 20 Celsius throughout the year making having a swim a tempting prospect. Malta also boasts the highest sunshine duration in Europe with over 3,000 hours per year, doubling that of northern European cities. 20 | Dining and Nightlife Abu Dhabi

History and Culture Malta boasts three UNESCO World Heritage Sites, Ħal Saflieni Hypogeum, Valletta and seven Megalithic Temples, which are some of the oldest free-standing structures in the world and even outdate Stonehenge and the Egyptian pyramids. Today, Malta is one of the friendliest countries you will ever visit. Family is very important, and you will find many families still sit around the table every evening to enjoy a meal together. Valletta Valletta, currently the European Capital of Culture, is the capital city of Malta and the commercial heart of the island. As you enter the city you will instantly be mesmerized by its sheer beauty. Small winding streets lined with boutique coffee shops and stunning cathedrals make for a timeless elegance. The best way to explore Valletta is by foot, so make sure you wear comfortable footwear as there is so much to see and do you will not want to miss a thing. When in Valletta be sure to pay a visit to Caffé Cordina, one of Malta’s most acclaimed coffee shops. Founded in 1837 Caffé Cordina comprises of a restaurant, tea rooms, pasticceria, coffee bar and gelateria. If you can find a seat, be sure to sit outside and enjoy the old palazzo. Caffé Cordina produces its own hand-made,


traditional sweets and pastries in-house. These are some of the best on the island and in our opinion the world. Wanting to experience a local dessert we opt for a small honey ring. The small honey ring is delicious, made with black treacle, marmalade, orange peel, spices and honey it offers a variety of flavours and textures. In need of a walk we head towards the Upper Barrakka Gardens built in the 1560’s the public gardens offer a panoramic view of the Grand Harbour and the Three Cities. This is a great place to relax and unwind. The terrace below is occupied by the saluting battery. It is perhaps the oldest saluting battery still in operation anywhere in the world. For almost 500 years, its guns protected the harbour against naval assault. Its prominent position also ensured it becoming the island’s principal saluting platform. From here, gun salutes were fired on occasions of state, to mark anniversaries and religious feasts and also to greet visiting dignitaries and vessels. From the 1820’s a gun was also fired at mid-day to signal out the exact hour of the day by which Ship Masters would calibrate their chronographs on board. These time pieces were used up to the early part of the 20th century to find the longitude at sea. Later that evening we return to Valletta for dinner. We decide to visit Valletta Waterfront, originally built in the 18th century the waterfront now plays host to a selection of restaurants, retail outlets and bars. The front of the buildings are wonderfully decorated in a variety of colours. The colour of the door signifies

what the merchants there would have sold, for example those selling iron would have had a red door whilst those selling crops would have had a green door, it enabled them to communicate when language was once a barrier. After a short stroll down the waterfront we decide to visit Browns, one of the many dining venues located here. We decide to order one of their mouth-watering pizzas, handcrafted and baked fresh in the pizza oven. Topped with tomato sauce, tuna, black olives and onions the Al Tonno delivered a satisfying experience.

Food Maltese cuisine is the result of a long relationship between the islanders and the many conquerors who occupied the Maltese Islands over the centuries. This marriage of tastes has given local gastronomy a Mediterranean character all of its own, and nowhere is this mixture of culture and cuisine more strongly felt than in Malta. Be sure to try these unique culinary delights when visiting Malta. Pastizzi The nations favourite snack, pastizzi can only be found in Malta. These delightful super flaky pastries are traditionally filled with either ricotta cheese or mushy peas. Served hot the scrumptious pastizzi can be purchased for a mere 4 dirhams. You can buy pastizzi everywhere, shops, cafés but the best ones are from pastizzerias, normally run by families who bake them fresh throughout the day. Bajtar Prickly pears are typically available during the summer months, traditionally peeled and then eaten by itself. The delicious fruit comes in a variety of colours ranging from red to purple and green to yellow and has a sweet, melon-like aroma.

Bigilla This traditional dish is often used like a spread or dip. Its ingredients and texture are like hummus. Bigilla is a staple part of any Maltese diet. A delicious, versatile condiment, it’s usually eaten with salad, platters, or just on its own. Made from mashed up brown or broad beans with lashings of garlic and herbs. Seafood Being an island, Malta benefits from some of the tastiest and freshest seafood available. You’ll be able to find all sorts of catch of the day served fresh at local restaurants. Try the locally caught swordfish, often grilled or baked and drizzled in olive oil, superb. Maltese Bread That’s right Malta even has its own bread. Located in Khalidiya Palace Rayhaan by Rotana, Kamoon serves classic Arabic cuisine. The restaurant offers indoor and outdoor seating. During the cooler months, be sure to enjoy Kamoon’s spanning outdoor patio which boasts fantastic views of the city and the tranquil Arabian Gulf. Indoor the restaurants decor is clean and minimalistic, we take a table by the window and begin to review the menu. The menu at Kamoon offers a wide variety of Arabic favourites from cold to hot mezza, soups, charcoal grills, seafood to desserts. To start we order a selection of mocktails, although the hotel is dry the beverages are that creative, it won’t make the slightest bit of difference to your dining experience. From the Cold Mezza we select the Baba Ghanouj; puree of grilled eggplant with tomatoes, capsicum, pomegranate sauce, lemon, onion, garlic and parsley alongside the Rayhaan Tabbouleh; parsley, pineapple, white onion, red quinoa, basil, mint, strawberry and lemon and the Fattoush; lettuce, tomatoes, cucumber, mint, sumac, onion, zaatar, walnut, radish, pomegranate seeds with fried Arabic bread. Not only does chef cover the basics well, but he also takes it up a notch by implementing his own unique twist to these classic favourites, strawberry in the Tabbouleh and pomegranate seeds in the Fattoush, these ingredients offer a surprise twist much to our enjoyment. From the Hot Mezza we enjoy a Falafel Platter; deep fried chickpea falafel with sliced tomato and tarator sauce plus the Cheese Sticks; deep fried pastry roll filled with halloumi cheese. The Cheese Sticks are tasty, but the Falafel Platter is what wins us over. Perfectly cooked, as we bite into the Falafel our mouth is filled with aromatic flavours, dip in the tarator sauce and the taste is perfection. For the mains we select the Kamoon Tawooq; grilled chicken marinated with cumin, served with French fries and garlic sauce and the Eraydess Meshwi; charcoal grilled jumbo shrimps, with French fries and tarator sauce. Again, the mains do not disappoint, the light smoky grill flavour ascends throughout the chicken, giving a ‘mmm’ moment with every bite. The jumbo shrimps are probably our favourite dish of the night, plump and flavourful. The portions are extremely generous, and most can easily be shared by two people, even the jumbo shrimps come as a portion of four. To conclude our evening, we make our way to Kamoon’s Tent which has remained during the summer months to offer guests an alternative dining space. Here we enjoy a Moroccan tea and start to decide upon our dessert. The team, who have been exceptional throughout the evening with their recommendations, suggest we try the Kanafa. The Kanafa arrives, as our fork breaks through the crisp outer dough it reveals the creamy sweet cheese. Quite possibly the best Kanafa in town! In a city filled with Arabic restaurants offering a tempting array of cuisine, selecting one can sometimes be a chore. However, if you haven’t dined at Kamoon we would highly recommend adding this restaurant to your list of Arabic restaurants to try, you won’t be disappointed. This evening we are visiting the award-winning Remède Spa, the first in the UAE, located at the stunning St. Regis Abu Dhabi. Stretching over 3,200 square meters, the tranquil spa overlooks the picturesque Corniche and the azure waters of the Arabian Gulf. Remède Spa boasts 11 private treatment rooms including a couple’s room and VIP suite, each decorated with natural materials and earth tones, as well as candles, plush throws, wooden floors and handcrafted mosaics. Guests are also able to make use of the luxury facilities, including a steam room and jacuzzi. In addition, the spa offers an outdoor terrace and a nourishing menu of refreshing juices and tonics, herbal elixirs, tea, coffee and light bites. As one of the UAE’s largest spas, Remède Spa offers 25 different bespoke facials, massages, body treatments and spa packages for both ladies and gentlemen, delivered by highly trained masseurs and aestheticians. Highlights include Elemis facials, Remède massages and locally inspired treatments, featuring techniques and ingredients influenced by the region’s distinct characteristics and traditions. As we arrive we are warmly greeted by the spa team and welcomed with a fresh juice and warm towel. We then take a moment to discuss the various treatments and problem areas we wish to address during our visit. I decide upon the Remède Customised Facial and my colleague decides to try the Remède Customised Massage, we are both guided into different rooms to begin our treatments. The Remède Customised Facial begins with a one-on-one consultation and skin analysis. My therapist then designs a facial based upon my individual needs. The treatment can address several issues, from reducing fine lines to addressing acne-prone skin. To begin a warm paraffin foot wrap, this aids in the relaxation process. My therapist then proceeds to cleansing and exfoliating my skin, this is then followed by the microdermabrasion. Microdermabrasion is extremely good for removing the outer layer of dead or dry skin and revealing the fresh skin underneath. Finally, my therapist then proceeds to complete the face massage, face mask and moisturize. The treatment is concluded with a foot and scalp massage. On the other side of the spa my colleague is blissfully enjoying the Remède Customised Massage. By customising their massage treatment guests can focus on overexerted muscles, or simply relax and unwind in a calm setting. Specialty products including aromatherapy blends and warm paraffin add to the relaxing experience. Overall, we left Remède Spa feeling de-stressed and rejuvenated. Being able to tailor our treatments to our requirements made a big difference to our experience. Fresh Homemade Pasta Recipe Serves: 4 People Cook Time: 3-5 mins

Prep Time: 35 mins Total Time: 40 mins

Ingredients 1 2/3 cups Italian “00” flour 2 medium or large eggs 1 tablespoon olive oil Pinch of salt

Method • Take the flour and sift onto a clean work surface, use your fist to make a well in the centre. • Break the eggs into the well, add the olive oil and a pinch of salt. • Take a fork and gradually mix the flour into the eggs, creating a firm dough. If the dough is too dry add a few drops of water. Be sure not to add too much water, if so add some additional flour. • Knead the pasta until smooth then cover with cling film and leave to rest at room temperature for 30 minutes. • Take the pasta out of the cling film and feed a fist full of pasta through the pasta machine. For those without a pasta machine roll the pasta with a wooden rolling pin until you achieve the desired thickness. You should be able to see your hand through the pasta when you hold it up to the light. Leave to air dry until the pasta doesn’t feel sticky to touch. • Fold the pasta into a wide flat roll and cut into strands. Then take the strands and shake loosely with flour. • Bring a large pan of salted water to the boil and add the pasta. Stir the pasta once just to ensure it does not stick. Do not cover the pasta. Note that fresh pasta cooks much faster than dried pasta, therefore it will only require 3 to 4 minutes to boil. • Drain the pasta, add your desired sauce and serve piping hot!
